<div style="color:#fff">In terms of revenue, DUB's best 3 months in business were Jan - Mar of 2020.... the three months prior to the pandemic.</div>
<br>
<div style="color:#fff">Like countless other food service businesses; lockdowns and the resulting turndown in business saw the closure of our Brooklyn-based cafe, forced the sale of our catering food truck and closure of our wholesale and catering programs.   By April, 2020 revenue had reduced by 90%. </div>
<br>
<div style="color:#fff">We pivoted to 100% online sales and worked hard to stay operational.  We saw massive increases in the online sales and by mid 2021 catering and wholesale started trickling back in.  </div>
<br>
<div style="color:#fff">That growth, along with government assistance in the form of the<span> </span><a href="https://www.sba.gov/funding-programs/loans/covid-19-relief-options/paycheck-protection-program" target="_blank" data-saferedirecturl="https://www.google.com/url?q=https://www.sba.gov/funding-programs/loans/covid-19-relief-options/paycheck-protection-program&amp;source=gmail&amp;ust=1664204280485000&amp;usg=AOvVaw1Dwm6b_I-mT-ZxsKyy8a_6" rel="noopener noreferrer">PPP</a> and the<span> </span><a href="https://www.sba.gov/funding-programs/loans/covid-19-relief-options/covid-19-economic-injury-disaster-loan/about-covid-19-eidl" target="_blank" data-saferedirecturl="https://www.google.com/url?q=https://www.sba.gov/funding-programs/loans/covid-19-relief-options/covid-19-economic-injury-disaster-loan/about-covid-19-eidl&amp;source=gmail&amp;ust=1664204280485000&amp;usg=AOvVaw2rrRPQluAMrjOjX9Ssefhi" rel="noopener noreferrer">EIDL</a> meant we were able to keep a skeleton crew of staff working..</div>

<div style="color:#fff">By early 2021, it became evident we were fighting a losing battle.  But then a bright glimmer of hope in the form of the <a href="https://www.sba.gov/funding-programs/loans/covid-19-relief-options/restaurant-revitalization-fund" target="_blank" data-saferedirecturl="https://www.google.com/url?q=https://www.sba.gov/funding-programs/loans/covid-19-relief-options/restaurant-revitalization-fund&amp;source=gmail&amp;ust=1664204280485000&amp;usg=AOvVaw2aIV_mVcD-Ig3VY7jofq5G" rel="noopener noreferrer">Restaurant Revitalisation Fund</a> (RRF) was launched as part of the American Rescue Act.  Along with around 277,000 other small, large &amp; very large food-service businesses - DUB applied &amp; qualified for a very significant bailout. </div>
<br>
<div style="color:#fff">However, instead of dividing up the $75B in an equitable manner amongst all qualified applicants,<a href="https://www.nytimes.com/2021/12/24/business/restaurant-revitalization-fund-problems.html" target="_blank" data-saferedirecturl="https://www.google.com/url?q=https://www.nytimes.com/2021/12/24/business/restaurant-revitalization-fund-problems.html&amp;source=gmail&amp;ust=1664204280485000&amp;usg=AOvVaw3sjpfiw65fdGAp7lTOsvfC" rel="noopener noreferrer"><span> </span>the fund management was woeful.</a> 101,000 grants were provided - including to many businesses who received the maximum payout of $10M. </div>
<br>
<div style="color:#fff">177,000 qualified businesses received nothing. The fund was depleted with a little over a third of applicants receiving funds.  </div>
<span color="#fff"><span color="#fff"><br></span></span>
<div style="color:#fff">Many members of Congress promised replenishment of the fund and spoke of the first $75B as just the "down-payment".  <a href="https://www.fsrmagazine.com/legal/restaurant-revitalization-fund-wont-be-replenished" target="_blank" data-saferedirecturl="https://www.google.com/url?q=https://www.fsrmagazine.com/legal/restaurant-revitalization-fund-wont-be-replenished&amp;source=gmail&amp;ust=1664204280485000&amp;usg=AOvVaw1GFZTjoshslRNvAhWPQvpI" rel="noopener noreferrer">A year later, the promise to replenish was reneged on</a>. </div>

    <title>DUB Pies, the Pandemic, and the Restaurant Revitalisation Fund.</title>

<p><br><span style="color: #ffffff;"><span color="#000000">The last couple of years have been our most difficult as a small business, as they have been for so many all over the US.  Like countless foodservice businesses nationwide - we squeaked through 2020 and 2021 by drastically downsizing and finding a way to pivot our operations. <br><br>Our Brooklyn cafe closed because our landlord would not negotiate early in the pandemic. Catering and wholesale evaporated, then came back briefly this year before all but disappearing again with the rise of Omicron. With no catering, our food truck became an expense we couldn't carry. <br><br>Our pivot to an e-commerce model, in relative terms, has been a roaring success - but it simply hasn't been enough. <br><br>The increased e-commerce sales and the </span><a href="https://www.gosite.com/blog/eidl-vs-ppp?utm_term=&amp;utm_campaign=DN+-+Search+-+DSA&amp;utm_source=adwords&amp;utm_medium=ppc&amp;hsa_tgt=dsa-19959388920&amp;hsa_grp=127334545916&amp;hsa_src=g&amp;hsa_net=adwords&amp;hsa_mt=&amp;hsa_ver=3&amp;hsa_ad=545919815907&amp;hsa_acc=8573699873&amp;hsa_kw=&amp;hsa_cam=14653460079&amp;gclid=CjwKCAiAiKuOBhBQEiwAId_sK2YqkT3_nIZDvTupxnakRiCw51xgjzL72XB77jsh_57ClCPKLqUP9hoCjYMQAvD_BwE" target="_blank" rel="noopener noreferrer" style="color: #ffffff;">PPP and EIDL loans</a><span color="#000000"> (for which we're forever thankful) got us this far. And then the </span><a href="https://www.saverestaurants.com/advocate/" target="_blank" rel="noopener noreferrer" style="color: #ffffff;">Restaurant Revitalisation Fund</a><span color="#000000"> gave us - and many others - an amazing amount of hope.  But those hopes are being dashed.<br><br>Back in May of 2021, as part of the American Rescue Act, we were told that we qualified for the Restaurant Revitalisation Fund (RRF).  This was meant to be a full bail-out of the foodservice industry.  <br><br>We qualified and applied. But we were among the 2/3rds of the applicants (over 177,000 small, food businesses) to miss out when the fund was quickly depleted due to inconceivably bad management. <br><br>Congress has been discussing replenishment of the RRF for the last 8 months but that notion has been all but lost amongst the political "horse-trading" - despite the situation deteriorating further with the rise of Omicron. Many businesses, like us, have taken on more debt - hoping for the promised RRF replenishment.<br><br>By funding 1/3rd of RRF applicants, the bailout saved these businesses - and made it possible for them to more easily cope with ingredient price increases, to pay back-rent etc AND to pay their staff a more competitive wage. Meanwhile, those of us that missed out watched in disbelief.  Surely, Congress wouldn't simply let the rest of us die on vine?.... but that's exactly what has happened.  Surveys show over 80% of those that missed out on the RRF will fail in the coming months.  That includes us, unfortunately.<br><br>There's an increasing amount of press on this subject - but any effect the coverage might have is likely to come too late for most.  Here's a good </span><a href="https://www.nytimes.com/2021/12/24/business/restaurant-revitalization-fund-problems.html" target="_blank" rel="noopener noreferrer" style="color: #ffffff;">New York Times article</a> from a few weeks ago that summarizes the mess that was the Restaurant Revitalisation Fund. And this deeper dive is great coverage from <a href="https://www.motherjones.com/food/2022/02/national-restaurant-association-relief-revitalization-fund-pandemic-mcdonalds-subway-nra/" style="color: #ffffff;">Mother Jones</a>. </span></p>

<p>We appreciate all of you beyond what we can express for enabling us to live our dream of serving delicious pies for a taste of home away from home. Below is the story of DUB Pies and milestones throughout the past 18 years.</p>
<p>In 2003, DUB Pies was born of a passion for pies &amp; flat whites, and a desire to share that passion with New Yorkers (and beyond that, all Americans). Another undeniable goal was to get the Pie Boy (the owner's son) through school and into college<strong>. </strong></p>
<p>Well, we're stoked to report that we just unlocked that achievement level! Pie Boy is matriculating upstate at a State University and is quickly becoming an (almost) independent being! Very exciting!!</p>
<p>Given the challenges of the last 18 months - we're taking stock and having a quick look back a<strong>t</strong> what we've done throughout our 18 ambassadorial years where we've kept the classic down-under-style pie and flat white as our singular focus. </p>
<p><strong>Late 2003 - </strong>Sold our first pies/rolls to be consumed by attendees of the premiere of "The Return Of The King". A very fitting beginning, we feel.</p>
<p><strong>2004 - 2005 - </strong>Started shipping pies nationwide and providing pies to bars/pubs/cafes around NYC.</p>
<p><strong>Late 2005 - </strong>Added retail cafe to our small wholesale business and began dabbling in coffee (flat whites being the focus).</p>
<p><strong>2006 - 2008 - </strong>We began offering catering services as well as expanded nationwide shipping.</p>
<p><strong>2009 - 2011 - </strong>Grew our wholesale business, Brooklyn cafe quickly became a popular community hub.</p>
<p><strong>2012 - 2014 - </strong>Thanks to the incredible generosity of our crowd-funding patrons, we raised half the money needed for a pie and flat white truck. We borrowed the rest of the money, built the truck, and set about introducing down-under-style pies and coffee to the people of NYC. We opened (and closed) a West 4th St, West Village, Manhattan cafe which turned out not to be the ideal location we'd thought. </p>
<p><strong>2015 - 2019 - </strong>We worked to consolidate revenue streams and optimize operations to focus on the Brooklyn cafe, catering, food truck, wholesale, and e-commerce. We also became a boutique coffee roaster.</p>
<p><strong>2020 - </strong>The pandemic hit our business very hard and resulted in the closure of our Brooklyn cafe (of 12 years), so we pivoted to focus on e-commerce to sell directly to our customers nationwide.</p>
<p><strong>2021 - </strong>We're doubling our effort on e-commerce for both one-time orders and recurring subscriptions. We've expanded our offering to include Aussie-Kiwi packaged sweets and treats.</p>

      <![CDATA[<p><em>National Pie Day and Australia Day have arrived and we have news about our supertasty Afghan</em><br><em>biscuits which still taste the same great way but which have had a bit of a name change.</em></p>

<p><strong>Australia Day</strong><br>It’s here again: Australia Day is on Tuesday, January 26 th ! It’s the official national day of Australia<br>and marks the anniversary of the arrival of the First Fleet of British ships at Port Jackson in New South Wales in 1788. Thankfully, over the years, it has become to mean more than that and is now a<br>culturally diverse celebration of all that’s great about Australia.</p>
<p>Here in the States, Aussies celebrate it by getting together with other Aussies and having a beer or two and getting in some Aussie pies and treats. You might even find a New Zealander or two in the mix as well.</p>

<p><br><strong>‘Roughs’</strong><br>We wanted to share some info with you on one of our most popular biscuits: the Rough, or the Afghan as it has always been known. This is a traditional New Zealand cookie and is very popular back home. We New Zealanders tend to do the sweet stuff pretty well as you may have noticed. (“Your savory pies and rolls are also bloody amazing!” we hear you shout. Which is a very fair point.)</p>
<p><br>The <a href="https://en.wikipedia.org/wiki/Afghan_biscuit" target="_blank" rel="noopener noreferrer">Afghan cookie </a>is usually made with flour, butter, corn flakes, sugar and cocoa powder and then<br>topped with chocolate icing and a half walnut. We use a traditional, home-made recipe to make ours,<br>resulting in a biscuit that is a little bit bitter (the cocoa) but also sweetly offset by the chocolate icing.<br>It’s smooth and quite dense but also quite crunchy thanks to the corn flakes. So it kind of has it all!</p>

<p style="text-align: left;">Then, this year <a href="https://www.griffinsfoodcompany.com" target="_blank" rel="noopener noreferrer">Griffin’s Food Company</a>, a big New Zealand snack producer, who do a commercial<br>version of the Afghan, changed its name to the ‘Rough’. They did this in the wake of the Black Lives<br>Matter movement as there had been controversy over the name ‘Afghan’ being a possible reference to the 19th century Anglo-Afghan Wars. Others say it’s called an Afghan because it has a rough texture similar to the landscape of Afghanistan.</p>
<p><br>Anyway, the point is we decided to change it to the Rough too. New name, same taste!</p>

    <title>Who Is The Pie Man?</title>

<p style="text-align: center;">"Remember, never trust a skinny pie man!"</p>
<p>Some of you I see regularly in the café, others I see out and about in Windsor Terrace, where I’ve lived for twelve years. But I don’t often get the chance to <a href="http://www.dubpies.com/pages/the-story-of-dub-pies">share the story</a> of how I came to be living in the Northern Hemisphere with a passion for spreading the gospel of the meat pie. Bear with me while I tell you my tale of odd jobs, soul-searching, and achieving success on the five-pie-a-day-diet.</p>
<p>After two weeks of working the AM shift as a taxi driver in NYC, September 11 happened. Before this, I had been living in California &amp; Oregon, biding my time in the corporate world, dreaming of writing a book, and generally feeling pretty adrift. New York can make you feel more adrift than anywhere else on earth—especially after a tragedy—but it can also give you a sense of belonging you never knew you could feel. I immediately swapped the taxi gig to become a manager of the counselors working directly with survivors at one of the disaster assistance centers (I had received my Master’s in Psychology back in New Zealand).</p>
<p>But after a year I was completely drained—emotionally and mentally. I needed the comforts of home. Some people need to spend 40 days and 40 nights in the desert for answers, others need to sit under a tree and meditate all night long. I had to eat five meat pies a day for several months to attain enlightenment and discover that the answer to every question is “meat pies.” I knew my duty was to return to my adopted hometown and share the love that is the humble yet mighty meat pie.</p>
<p>After a crash course in pie-making with some of my favorite pie men in New Zealand, I came back to New York, opened DUB (Down Under Bakery) Pies in 2003, and have been bringing the ultimate comfort food to the masses ever since.</p>

<p>I don’t just want to make pies because they’re tasty and remind me of home. The beauty of a meat pie is that it can be eaten down the pub with your friends while you unwind over a <a href="http://meninblazers.com/page/piedontlie">match</a>,  keep you warm while you walk around the park with a loved one, or shared with your six-year-old who invariably ends up with crumbs all over his face. All the jobs I’ve had have been about bringing joy and comfort to peoples’ lives—from radio DJ to counselor—but this one has been the most meaningful. Food feeds the soul, even more so if it’s a delicious meat pie.</p>

<p>That's right... each Monday night you can now see our pies imbue Davo, Rog and their guest(s) of the week with the ability to predict the score of the following weekend's games. </p>
<p>The ink had barely dried on our agreement to work with the Men In Blazers when we were invited to vend our pies at the extraordinarily successful, inaugural <a href="http://blazercon.splashthat.com/">#Blazercon</a>.  We sold more pies in the 2 days of this event than we have in any 2 days since we started making pies 12 years ago.</p>
<p>But why do the Men In Blazers eat our pies on their show? Indeed, what's the basis of the relationship of savory pies and English football?  Answers to these questions (&amp; more) are proffered by our fearless leader (&amp; boss), Gareth Hughes, in a segment called "Three Questions" originally published in the Men In Blazers newsletter - <a href="http://us4.campaign-archive1.com/?u=ec06b7423aa656279552ca69e&amp;id=55d6c65767&amp;e=3227415094">The Raven.</a></p>

<p class="ng-scope">Men in Blazers is an operation fueled by pie and Guinness. The reason Rog shuts outs the light at the end of each television show is so he can pocket whatever part of the guest’s pie they’ve not eaten. For a snack later on. Gareth Hughes is the founder of <a href="https://twitter.com/dubpies" target="_blank">Dub Pies</a>, a New York City-based pie purveyor that we’ve partnered with for <a href="http://blazercon.splashthat.com/" target="_blank">BlazerCon</a>. In this issue’s <em>Three Questions</em> we go inside the mind of the Liverpool-born, New Zealand-raised Hughes and ask about pie’s history, its place in football culture, and how he actually gets the science inside each pie.</p>
<p class="ng-scope"><em>MiB:</em> Give us your personal story. At what point in life did pie loom so large you knew you wanted to devote yourself to them professionally? #SubmitToPie</p>
<p class="ng-scope"><em>Hughes:</em> As a British-born Kiwi I'm the result of two melded pie-centric cultures. The (meat aka savory) pie is king in the UK &amp; New Zealand, so pies have always loomed large for me personally.</p>
<p class="ng-scope">My New Zealand master's degree led to recruitment work in the corporate sector and a transfer to the pie-barren culture of the USA in 1996. Green card in hand I made my way from the West Coast to NYC in 2000, working odd jobs - bartending, yellow cab driving - until Sept 11. I then managed a disaster assistance center on Chambers Street for a year before the emotional burnout sent me back to New Zealand to recover. With recovery came the desire to operate my own business, so I looked for New Zealand-based ideas that might transfer well to NYC. While doing this I repeatedly heard the mantra - "do what you're passionate about."</p>
<p class="ng-scope">Figuring no-one's more passionate about pies than me and believing NYC deserved pies as part of their food landscape - I did a quick crash-course in pie-making and started the business in NYC at the end of 2003.</p>
<p class="ng-scope"><em>MiB:</em> Tell us more about the history of a pie as a food.</p>
<p class="ng-scope"><em>Hughes:</em> Ancient Egyptians are credited with creating the first pies. Pie pastry wasn't meant to be eaten then - rather, it was a way to preserve the food inside. The ancient Greeks had pies too, as did the Romans. The Roman Empire brought pies to the UK and the British Empire took pies to the rest of the world. These early pies - particularly the British pie (forbearer of our New Zealand-style pie) - usually had meat-based fillings.</p>

<p class="ng-scope">Many countries - particularly the former British Empire - have strong savory pie cultures to this day. It's always seemed odd to many expatriates that the USA doesn't have a strong savory pie tradition and it has always been part of our mission is to change that. One popular theory posits that the success and power of the sugar industry in the USA meant pies were more likely to be made as sweet not savory items - so 'pie' became synonymous with dessert. The evocation of sweetness in the mind of Americans from the very word "pie" has meant that savory pies have - until very recently - remained anathema to American food culture.</p>
<p class="ng-scope"><em>MiB</em>: How has the rise of football impacted pie's profile and why do you believe football and pie are as inextricably connected as <a href="http://www.gstatic.com/tv/thumb/tvbanners/184377/p184377_b_v7_aa.jpg" target="_blank">Hart to Hart</a>?</p>
<p class="ng-scope"><em>Hughes:</em> Pies and football are riding the exact same wave crashing down on American popular culture.</p>
<p class="ng-scope">It's no coincidence that - as a rapidly increasing number of Americans become aware of the magic and wonder of (British) football, that a rapidly growing number of Americans are becoming conscious of the arrival of the mighty and equally wondrous (savory) pie as a food category in the USA through the valiant efforts of a growing number pie makers nationwide. These two populations are now growing at staggering speeds - but true nirvana lies within the overlap of these two new additions to American culture.</p>
<p class="ng-scope">As America's love affair with football finally waxes, more and more followers of the game realize the sweet spot of football fanaticism lies within the British football tradition of eating a pie while watching the game.</p>
<p class="ng-scope">It is perhaps a question for all the ages: why are pies and football so inextricably connected? Maybe it's the ease with which one can stand watching a game of footy while holding a beer (or a cup of bovril) in one hand and eating a pie from the other. Maybe it's more simple than that; we all deserve beauty in our lives - football is beautiful, pies are beautiful.</p>
<p class="ng-scope"><em>MiB:</em> What is the little known secret to master pie baking?</p>
<p class="ng-scope"><em>Hughes:</em> Competition is a good thing and from the bottom of our hearts we really, really want more pie makers to come and play with us here in the USA. We'll even help. Newcomers just need to ask and we'll share all sorts of information - but we aren't going to share our hard-earned pie-making secrets here, sorry.</p>
<p class="ng-scope"><em>MiB:</em> What kind of pie sounds terrible, but is unbelievably good and should be tasted by all?</p>
<p class="ng-scope"><em>Hughes:</em> We object to the premise of your question and we prefer to not answer hypothetical questions. No pie sounds terrible.</p>

      <![CDATA[<p>Once we made the decision to present our savory pies in a retail environment we knew we needed to offer great New Zealand espresso coffee too.</p>
<p>We've been serving great espresso coffee in NYC since 2005 and we were among the first to offer the authentic, properly made, world-changing, down under classic, the flat white. Put simply: if you drink milk in your coffee, once you’ve had your first flat white nothing else measures up. </p>
<p>Back in the early nineties, I was living and working at the legendary Auckland music venue The Gluepot. I drank coffee occasionally at DKD, a long-gone cafe reached by a perilous staircase behind the Civic Theatre. Many believe this is where Auckland’s modern coffee culture was born. It was some of the best coffee in town at the time, but the bolt of coffee-flavored lightning really hit me when I drank my first, stunning flat white at <a href="http://www.atomiccoffee.co.nz/" target="_blank">Atomic Coffee</a> , then on Ponsonby Road. I also recall swooning as a result of some my early experiences of <a href="http://www.sierracoffee.co.nz/" target="_blank">Sierra Coffee</a>. </p>
<p>Since then I’ve sought out people who put immense pride into their coffee preparation and at DUB we strive to do the same. </p>
<p>There are many definitions of the flat white. Ours, we believe, holds true to the majority of flat whites you’ll find in the flat white meccas of Wellington, New Zealand and Melbourne, Australia. That is, we start with a double shot of espresso made from the highest quality, freshly roasted beans available (for this we partner with <a href="http://www.counterculturecoffee.com/" target="_blank">Counter Culture Coffee</a> - for their the unparalleled back-up service and quality of beans). Into this, we pour a skillfully prepared organic milk in the form of a densely textured micro-foam (resulting in a silky mouth-feel) in such a way that the exceptional crema is lifted to the top of the cup. The size of the vessel is important too, we serve them in 6oz to 8oz ceramic cups - anything larger ceases to be a flat white, even if the ratios are maintained. Temperature is important too, flat whites can't be served too hot or the texture is lost.</p>
<p>The experience of many people passing through New York is that coffee here is substandard, the classic “cuppa joe”, but the coffee tide is coming in at a faster and faster rate and all cafe boats are being lifted with it. New Yorkers are rapidly becoming educated about all things coffee and we’re excited to be part of that. </p>
<p>At DUB Pies we keep it simple. We focus our attention on authentic down under-style savory pies and coffee (with flat whites a specialty) and we do them both well. Everything else follows. We’ve included our favorite parts of downunder, side-street, cafe culture: we make our own pies, we use a specialized coffee preparation, a musical aesthetic from New Zealand, down under-style sweets/pastries, we mix in New Zealand/Australian culture (while trying to avoid kitsch paraphernalia) with local Brooklyn visual artists on the cafe walls. We’re always promoting New Zealand and Australian-inspired brands, we <a href="http://thechoicelist.com/" target="_blank">actively promote New Zealanders in the arts in New York</a>, and occasionally we have NZ-made candy in-store. </p>
<p>And of course, with the help of our <a href="https://www.kickstarter.com/projects/dubtruck/the-dub-pies-food-truck" title="DUB Pies, The Pie Truck, Kickstarter campaign">Kickstarter whanau</a> we took the whole concept mobile a couple of years ago. More on that in later blog entry. </p>

      <![CDATA[<p>If you are what you eat, I'm most certainly a Steak &amp; Mushroom pie. </p>
<p>If you're not from the lands down under it might be difficult to fully comprehend the importance of the humble savory/meat pie to New Zealand and Australian food culture. To say that a pie is as important a staple down under as pizza, hot dogs and hamburgers are (collectively) to the American food landscape is not at all hyperbole. </p>
<p>Like most Kiwis, I grew up eating meat pies whenever the opportunity presented itself. We've always been intensely passionate about this wonderfully tasty, phenomenally convenient, protein packed, savory snack. While I enjoy a good Breakfast pie (bacon, egg and cheese, for instance) in my estimation any meat pie is good for any meal – including breakfast! </p>
<p>When the time came in my life to step away from the security of a corporate pay-check and have a crack at self-employment I paid heed to those who advised that I should I find something I was passionate about to base the business on. It was on a trip back to New Zealand to recuperate from what New Yorkers experienced in September, 2001 that I found my inspiration. In the middle of chowing down on perhaps my 5th pie of the day (making up for lost time!) – it hit me like a lightning bolt. Pies. The ultimate comfort food.</p>
<p>New York needs pies. Dammit, the USA needs pies! Every other civilized culture in the world has some sort of meat pie culture – why doesn't the USA? And so the DUB Pies mission was born. Down Under Bakery pies. Perfect. </p>
<p>From there it was just a matter of learning how to make them. I knew what great savory pies should be – I just needed to learn the process, pick up the baking/cooking skills, build a plan and set my mind to it. I then did informal crash courses with some of the best pie makers I could find in New Zealand, and in late 2003 we sold our first pies in NYC. There's been a series of ups and downs since then – the recession being perhaps the biggest hurdle – but we're hopefully here to stay, and with the success of our Brooklyn brick and mortar café, we're gaining traction.  </p>
<p>As the “tide” that is the US pie market gradually comes in we see “all [pie] boats are rising” and we believe the time is perfect to take our mission to the streets and spread the love to all 5 boroughs of NYC. </p>
<p>So, what makes the perfect down under style pie? Put simply, it's not simple. It really is about the gestalt of the pie. But some things I know to be true: pastry shouldn't be fussy. Attempts to be clever by adding fancy herbs and spices should be kept to a minimum. Less is often more with a good pie pastry. It needs to be delicate and yet robust enough to remain intact while the pie is eaten one-handed, even on the run. To really be a down under style pie, by definition it must be easily edible while the eating is not actually the principal behavior one is engaged in. For instance, pies are great food while driving or standing at the rugby supporting your team. </p>
<p>The filling must be just the right balance of vegetables and/or meat; whether the meat is chunky or ground is a personal preference which is why you find both steak and ground mince options pretty much everywhere in NZ and Australia. And the gravy must be flowing but not too thick. It must allow the meat to be suspended in it and yet it shouldn't be too runny or you're going to end up wearing it! </p>
<p>I take great pride in finding that ideal balance for DUB Pies. </p>

<p> "Says the Pie Man to Simple Simon."</p>
<p>Herein, we'll seek to inform and entertain all those that understand the importance of (savory) pies in any self-respecting food culture. We'll send missives from the front line of in our ongoing attempt to proselytize the faith of the savory (meat or vege) pie in our adopted hometown of, New York City &amp; ultimately beyond to the whole of the USA - where, relatively speaking, an horrendous dearth of savory pie culture still exists, even today!</p>
<p>We hope you'll come along for the ride.  If you want to hear any particular story about our inception, our struggles or our experiences building pie culture, let us know in the comments, we'll do what we can to fill in the gaps.</p>
