The secret to making this a truly quick stir fry is two-fold: first, I parboil the green beans to reduce the actual wok time, and second, I serve it over frozen sticky rice that heats up in just 5 minutes. We finally got our insurance approved so we hooked the stove back up (despite having no flooring and 2×4 posts holding up the counter and no lower cabinets. • Tomari Soy Sauce (Use: (Regular) Soy Sauce or Gluten-Free)

Seasoning and Browning the Chicken

Cut the chicken into bite-sized strips or chunks (of equal thickness). Heat oil in a non-stick pan. Season both sides with salt, pepper, garlic powder, and red pepper flakes. Brown lightly on medium-high heat while stirring.

The Secret to Fast Veggies: Parboiling Green Beans

Fill a pot halfway with water and beans; bring to a boil. Once boiling, remove with tongs and add directly to the slightly browned chicken

Combining the Sauce and Simmering

Add 1/4 cup of soy sauce to the chicken and green beans. At this point, simmer for a few minutes until the chicken reaches the proper internal temperature.

Adjust Seasoning to Taste

At this stage, taste your stir fry and add a pinch more red pepper flakes or garlic powder if you prefer a bolder flavor.

Cucumbers, cherry tomatoes, and red onion, it’s a versatile, budget-friendly recipe that works for dinner, a healthy lunch, or a potluck. It’s quick to make, with minimal prep—you just need to allow for the chill time for the best flavors to marry.

It comes together in just ten minutes, making it the perfect choice for meal prep. • 12 oz rotini pasta (whole wheat, slow dried), uncooked
  You can use whole wheat or (regular) rotini pasta, or gluten-free rotini pasta.
• 2 (5-ounce) cans chunk light tuna (packed in water), drained.
  (Or albacore tuna (packed in water), it costs a little more.)
• 1⁄4 tsp salt
• 1⁄4 tsp pepper

Fresh Produce

• Juice from 1⁄2 lemon
• 1 tbsp fresh parsley, chopped, plus extra for garnish
• 3 tbsp red onion, chopped
• 1 cup cherry tomatoes, halved
• 1 cup cucumber, chopped

Refrigerated Staples:

• 1⁄2 cup mayonnaise
• 1⁄2 cup Greek yogurt
• 1 tbsp Dijon mustard

It is easy to do a Target pickup order for things you might need. Or just shop for the groceries you need.

Instructions for Meal Prep and Storage

1. Bring a large pot of salted water to a boil. Cook the pasta until al dente according to package instructions. Drain and rinse under cold water to cool completely.
2. In a large mixing bowl, whisk together the mayonnaise, Greek yogurt, Dijon mustard, lemon juice, salt, and pepper.
3. Chop the vegetables and drain the tuna. Then add the cooled pasta, tuna, cucumber, tomatoes, red onion, and parsley into the bowl. Gently fold
   everything together until evenly coated.
