<p>As people made their way through Modernbook Gallery, you could hear them say &#8220;Newton&#8217;s Merlot is unlike any other&#8221; or &#8220;That&#8217;s John Prager from Prager Port over there! Have you tried his white port? It&#8217;s beautiful.&#8221; And on occasion you would hear &#8220;I can&#8217;t keep up!&#8221;</p>
<p>The sound of a saxophone lingered in the background and you could hear the winemakers&#8217; enthusiasm in conversations all over the room. And as people made their way upstairs, they found more excitement in having a picture taken by Beata Pevny behind a magical (and large sized) heart.</p>
<p>You always had a piece of Godiva chocolate in one hand, and a glass of wine in the other. We sipped it, we swirled it and we shared it with friends.</p>

<p>Few things can provoke such feelings and it may be why Valentine&#8217;s Day seems more than appropriate a time to ignite such sentiments of lust and divinity. Hagafen makes a late harvest wine to die for! Prager Winery and Port Works, well, they are California&#8217;s neighborhood port wine makers. And Cannonball makes the coolest, easiest Cabernet Sauvignon in California!</p>
<p>On top of all that, Godiva Chocolatier is bringing over 300 pieces of divine and succulent chocolates! Have you ever tried their gingerbread truffle chocolate? It rocks the pallet!</p>
<p>We have The Scott Hanan Quartet whose swinging music will be setting the mood. A special guest on vocals who will be doing a few classic jazz tunes to add to the fun!</p>

Our guests experienced Henry of Pelham’s ice wines from Canada and discovered that California’s very own Swanson Vineyards makes an ice wine that is to die for! Others were surprised to find that it is easy to reset your sweet pallet with a tasting of a red wine like Cannonball’s Cabernet Sauvignon. Hagafen Cellars and Baton Wines shared their Late Harvest Rieslings which all agree were a hit. Not to mention the dessert wines from Radee and Rimon, made of tropical fruits and pomegranates respectively!</h3>

			<content:encoded><![CDATA[<p>We have been getting lots of questions about ice wine. Most know that it is a dessert wine, but the appreciation for ice wine comes from knowing how it is made.</p>
<p>Ice wine grapes left on the vine long after harvest season to freeze into winter temperatures. The grapes are hand picked in the middle of the night, at a temperature of about -8 Celsius (17 degrees Fahrenheit) and the brave souls that pick the grapes usually have to make their way through lots of snow. </p>
<p>Since the grapes are frozen when pressed and have had a longer time to ferment on the vine, only droplets of juice are salvaged from each grape. The juice is very sweet, almost syrup-like. Only three countries typically produce ice wine: Austria, Germany and Canada. Canada is the largest producer of ice wine today. </p>
<p>Ice wine is more expensive than other wines and comes in smaller bottles because of the challenging production and the small amount that can actually be produced. So next time you have ice wine, think of the courageous troops of people in snowsuits who set out at lonely hours of the night solely for your enjoyment. Cheers!</p>
