Directions

Heat 1 teaspoon vegetable oil in a wok or large skillet over medium heat. Pour in beaten eggs and cook, without stirring, until firmed. Flip the eggs over and cook for an additional 20 seconds to firm the other side. Set egg pancake aside to cool, then slice into thin strips.

Heat the remaining vegetable oil in a wok or large skillet over high heat. Stir in cabbage and carrot; cook for 2 minutes to wilt. Add bamboo, mushroom, pork, green onions, soy sauce, salt, sugar, and MSG; continue cooking until the vegetables soften, about 6 minutes. Stir in sliced egg, then spread mixture out onto a pan, and refrigerate until cold, about 1 hour.

To assemble the egg rolls, place a wrapper onto your work surface with one corner pointing towards you. Place about 3 tablespoons of cooled filling in a heap onto the bottom third of the wrapper. Brush a little beaten egg white onto the top two edges of the wrapper, then fold the bottom corner over the filling and roll firmly to the halfway point. Fold the left and right sides snugly over the egg roll, then continue rolling until the top corners seal the egg roll with the egg white. Repeat with remaining egg roll wrappers, covering finished egg rolls with plastic wrap to keep from drying out.

                     Heat about 6-inches of oil in a wok or deep-fryer to 350 degrees F (175 degrees C).

Fry egg rolls 3 or 4 at a time until golden brown, 5 to 7 minutes. Drain on paper towels.

3 cloves garlic

½ medium onion, finely chopped

Sugar
Egg
Egg yolks
Vanilla
All-purpose flour
Baking powder
Pineapple (2 pounds)
Cinnamon

Oven Temp ~ 350° Baking Time ~ 55 - 60 Min. Pan Type ~ 10 x 2 inch round Pan

DIRECTIONS:

Preheat the oven to 350° - Grease Pan, line bottom with waxed paper.

In a large mixer bowl, beat 1 stick of the butter and 3/4 cup of the sugar until light and fluffy. Add the whole egg and continue beating until well blended. Gradually add the egg yolks, 1 at a time, beating well after each
addition. Beat in the vanilla.

Sift together 1 1/4 cups of the flour and the baking powder. Stir into the butter mixture. Turn the batter into the prepared pan and spread evenly.

Cut the skin and eyes from the pineapple. Quarter and core the pineapple. Cut the quarters crosswise into 1/2 inch thick slices. Layer the slices in concentric circles, on top of the batter, overlapping slightly and leaving a margin of about 1 inch around the edge.

In a small saucepan over low heat, melt the remaining 1 stick butter.
Let cool slightly.

In a medium bowl, combine the remaining 1/2 cup sugar, 1 1/4 cups flour and the cinnamon. Pour the melted butter over the flour mixture and rub together with your fingertips to form coarse, pea-size crumbs. Scatter the crumbs evenly over the pineapple and batter.

Bake the cake until a knife inserted in the center

In a saucepan, combine raspberries, 2 tablespoons sugar, cornstarch, and water.
                     Preheat oven to 325 degrees F (165 degrees C).

When there is an abundance of summer berry fruits one of the best ways of serving them is in an English Summer Pudding. A Summer Pudding Recipe is quick, easy and so delicious; all the tastes of summer in one dish.

Prep Time: 20 minutes

Total Time: 20 minutes

Ingredients:

2 tbsp water

5oz / 150g sugar

1lb/450g washed, mixed summer fruits as available - see note below

4 - 6oz/100 -150g thin sliced white bread, crusts removed

Whipped cream or custard sauce

Preparation:

Note
Soft summer fruits suitable for Summer Pudding must have a rich, strong, color and flavor. Great berries to use include raspberries, strawberries, red and bla
ckcurrants, damsons and blackberries.

Stir the water and sugar together and bring to a gentle boil. Add the berries and fruits and stew very gently until softened but still retain their shape.

Line a 1½ pint pudding basin with the bread slices ensuring there are no gaps. Fill with the stewed fruits and cover the top with more bread slices.

Place a saucer with a weight on top (a can of tomatoes or beans is ideal) and leave overnight in a cool place.

The next day, before serving, turn the pudding out onto a plate and serve with the whipped cream or custard sauce.

Heat the oven 325F/170C/Gas 3

Place the flour, butter and salt into a large clean bowl.

Rub the butter into the flour with your fingertips until the mixture resembles fine breadcrumbs, working as quickly as possible to prevent the dough becoming warm.

Add the water to the mixture and using a cold knife stir until the dough binds together, add more cold water a teaspoon at a time if the mixture is too dry.

Wrap the dough in Saran wrap/Clingfilm and chill for a minimum of 15 minutes, up to 30 minutes.

Tart

Roll out the pastry on a lightly floured board to ¼ inch/5mm thick. Grease and then line an 8 inch/20cm deep tart tin with the pastry. Prick the base all over with a fork. Chill in the refrigerator for 15 minutes.

Line the tart case with baking/greaseproof paper and fill with baking beans. Cook for 15 minutes or until the pastry is a pale golden color. Remove the baking beans, lightly brush the inside of the pastry case with a little egg white, cook for a further 5 minutes. Spread the raspberry jam onto the base of the pastry case. Leave to cool.

Cream the butter and sugar together until pale in color using an electric hand whisk. Add the beaten eggs and egg yolk a little at a time. Gently fold in the ground almonds and lemon zest.

Pour the mixture in to the pastry case and gently level the surface to ensure the whole case is filled. Bake for 20 minutes. Sprinkle the flaked almonds on to the surface and bake for a further 20 minutes or until golden and set.

Leave to cool and serve with custard sauce or cream.

        Garlic Bread

1 large loaf of Italian (or French) bread

1 stick of butter, at room temperature

Roughly 1/2 head of garlic (more or less depending on how much you like)

1/4 tsp dried Italian herbs

1 Tbsp of chopped Italian parsley (I used chives instead)

Optional: A few tablespoons of grated Parmesan cheese (as much or as little as you'd like)

Optional Step: To cut the harshness of raw garlic, you can dry toast it in a skillet. The garlic will not be as smooth and creamy as roasted garlic but it will be a little mellower. Heat a skillet over medium high heat. Add the garlic cloves with skins on to the skillet and toast, shaking occasionally, until the skins are golden brown. When the cloves are cool enough to handle, peel the garlic and use as you would raw garlic in this recipe.

Preheat the oven to 350 degrees F. Slice the loaf of bread in half horizontally.

Put the garlic cloves through a press or smash and finely mince them. Add the garlic, parsley, crumble in the Italian herbs with the softened room temperature butter and mix until combined. Spread the butter to both sides of the bread. If you don't use all of it, you can always freeze it for another time.

Bake the bread until it is warmed through, about 10 minutes. Sprinkle the Parmesan on top if using, then broil the bread until the garlic butter side is golden brown. Keep an eye on it to make sure it doesn't burn. Time will depend on the strength of your broiler, anywhere from 1 to 3 minutes.

Variation: Roasted Garlic Bread

How to roast garlic:
Slice off the top of a head of garlic exposing the cloves. Drizzle a bit of olive oil on the cloves, sprinkle with a bit of salt and pepper and wrap the whole head in some aluminum foil. Roast in a 400 degree oven for about half an hour or until the garlic is soft and and brown. Squeeze out the cloves and use in pasta, on pizza, baked in bread, or spread on bread, etc.

Creamy Garlic Sauce

1/2 cup golden raisins, soaked in hot water (optional)

1 cup semi-sweet morsels

Preheat oven to 375°F.

In a mixing bowl, cream together butter and sugars. Add eggs.

Sift flour and measure out 2 1/4 cups. After measuring the sifted flour, sift again with remaining dry ingredients. Add the flour mixture to the creamed butter and sugar mixture.

Stir in vanilla, nuts and semi-sweet morsels. (We like Macadamia nuts and almonds, but walnuts, pecans or peanuts may be used). Add raisins, if using. Craisins make a nice variation.

Drop the cookie batter by tablespoonfuls onto a parchment or silicone lined baking sheet.

Bake for 10-12 minutes or until cookies are set and firm and only lightly colored. Do not allow cookies to brown.

Transfer to wire racks to cool. Store in an airtight container. Cookies may be wrapped well and frozen.

1/2 cup ricotta cheese

1 10 oz can refrigerated pizza crust dough

How to make it

Put your chicken breast in a saucepan with enough water to submerge it. Bring the water to a boil and cook until the chicken is no longer pink (and the juices are clear...approximately 20 minutes). Drain the chicken then cut it into medium-sized strips.

Preheat your oven to 350 F (175 C).

Melt the butter, garlic, basil and onion in a skillet over medium heat. Pour this sauce into a dish and refrigerate it until it sets.

Now roll out your pizza dough nice and flat. Place it onto a baking sheet and evenly spread your herb butter sauce over the surface (the back of a spoon works nicely). Spread the chicken strips over the pizza then sprinkle with Ricotta. And finally finish the toppings off with slices of tomatoes, cilantro and Parmesan.

Bake for 15 to 20 minutes in the aforementioned preheated oven. The pizza crust will brown when it is finished. Let the pizza cool before slicing and serving.

It is a versatile pastry as it can be used for both savory and sweet dishes. Shortcrust pastry is a mixture of flour - usually all purpose/plain flour and a fat, either butter, lard or a mixture of both. These are bound together with either cold water or with egg for a richer pastry.

Prep Time: 15 minutes

Total Time: 15 minutes

Ingredients:

7 oz/200g all purpose/plain flour (see tip below)

pinch of salt

4 oz/ 110g butter, cubed or an equal mix of butter and lard

2-3 tbsp cold water

Preparation:
This quantity makes 10 oz/300g pastry.

The dough can also be made in a food processor by mixing the flour, butter and salt in the bowl of the processor on a pulse setting. When the mixture resembles breadcrumbs, add the water, slowly, through the funnel until the dough comes together in a ball.
