Fish soup with monkfish and scorpion fish

Our delicious soup…

INGREDIENTS:
• Monkfish, scorpion fish or any other type for soup
• 3-4 carrots in cubes
• 3-4 potatoes in cubes
• 2 onions in cubes
• ½ bunch chopped celery
• ½ wine glass of rice
• 1 egg
• 1 ½ lemon, the juice
• Salt-pepper
• Olive oil

PREPARATION:
Once you’ve cleaned and washed the fishes add them in a pot with water and let them take a boil until they cook but don’t fall apart.

Remove the fishes on a platter, salt and pepper them then cover and keep them warm until the soup is ready.

Strain the broth just in case some bones from the fishes fell in. Once its strained add it back in the pot and throw in the veggies, oil, pepper and let them boil together in the broth.

Beat the egg in the multi, pour in the lemon juice and beat them together, add three scoops of soup in the egg-lemon mixture

and then pour it in the soup that you’ve removed from heat, stir and serve.

Daisy bread

A daisy on our table… Freshly baked and delicious bread on our table!

INGREDIENTS:
• 1 kg yellow flour for bread
• 2 sachets dry yeast
• 1 ½ tbsp. salt
• 1 tsp sugar
• 2 tsp oregano
• Lukewarm water
• Olive oil

PREPARATION:
In a large bowl add the flour, salt, yeast, sugar, oregano

and slowly combine while pouring in the lukewarm water.

Slowly knead the dough until it’s pliable and won’t stick to the sides of the bowl.

Then cover the dough with a towel and set aside for an hour to rise.

Afterwards, once the dough has risen,

Smear your hands with oil to give the dough your desired shape. For the daisy divide the dough in balls, oil a baking pan and place the balls stuck together.

Before you add the bread in the oven sprinkle it with water and then bake in a preheated oven at 180-200C for about an hour.

Individual chocolate pies with nuts and raisins

INGREDIENTS:
• 200 gr milk chocolate
• 200 gr double cream
• ½ packet crust phyllo (the ½ kg packet)
• 1 handful hazelnuts
• 1 handful almonds or walnuts or both
• 1 row of Papadopoulou biscuits
• maize oil for frying
• honey or chocolate syrup to garnish

PREPARATION:
Melt the chocolate in bain marie

and then add the double cream while on low heat and combine them together well.

Remove from heat and add the coarsely chopped nuts,

the finely crushed biscuits

and the raisins, then mix well together and set

Then layer a phyllo on your counter

and cut it in stripes.

With a tea spoon add mixture in the edge of the phyllo stripe

and fold it like a handkerchief, as you do for the individual cheese pies.

In a pan add the oil to warm up and place the chocolate pies in

to fry uniformly from both sides until they’re golden in color, on a medium heat so they won’t burn up.

Remove them once fried and place them on paper towels , then sprinkle them with honey or chocolate syrup and serve.

Perfect taste and something different…

Cheese croquettes

INGREDIENTS:
• 4 tbsp. butter
• 8 tbsp. flour
• 1 ½ tea cup milk
• 2 tea cup grates cheese(any salty cheese you like)
• 2 slices of ham chopped
• 4 eggs
• flour
• maize flour
• salt-pepper
• oil for frying

PREPARATION:

Warm the butter in a pot

and add the flour

while whisking continuously.

Add the milk partially each time

and once it begins to boil and thicken remove from heat

and add in the grated cheese, chopped ham,

2 whisked eggs, some salt and pepper and combine well together.

Cover up and let cool and stiffen in the fridge.

Then add flour in a bowl, crumbled top in another and 2 whisked eggs with one tea spoon of olive oil.

Form the dough in ball like croquettes,flour it,

egg it,

maize flour it and place in a plate until you finish all the dough. Add them in the fridge again until they stiffen.

Afterwards warm up some oil and fry the croquettes until they golden up in color and place them on paper towels to absorb the extra oil and serve them warm.

LENTEN SAMALI

Wonderful, tasty and very fragrant Lenten Samali. With an orange aroma and flavor!
Very simple and easy to make, and the ingredients don’t cost much.
It’s worth a try!!!

INGREDIENTS:
1/2 kg thick semolina
1/2 kg thin semolina
1 tsp mastic powder
2 sachets of baking powder
zest of 1 orange
1 water glass of fresh orange juice
2 glasses water
1/2 kg sugar

INGREDIENTS FOR THE SYRUP:
1kg sugar
4 glasses water
1 vanilla

PREPARATION:
In a big bowl add all the solid ingredients and mix together well.

lowly add the juice, the water

and mix together well until you have a thick porridge.

Pour the mixture in a non-stick 36x26 baking pan and bake for an hour at 150C until golden.

While the samali bakes prepare the syrup by boiling the ingredients for 4 minutes, then leave it aside to cool.

Once you remove the samali from the oven, cut it with caution in pieces

and slowly syrup it with a spoon until in absorbs all the syrup.

It’s better if you don’t remove a piece and let it syrup well over night. A long as it stays in the syrup the better it tastes.

Drunk pan-fried pork (Choirini tigania)

INGREDIENTS:
• 1 kg pork chopped for tigania (small chunks)
• 1 large onion
• 4 spring onions
• ½ can of mushrooms
• ½ pepper in 3 colors (green-yellow-red)
• 1 glass white wine
• salt, pepper, oregano
• 1 to 1 ½ lemons

PREPARATION:
Once you’ve told your butcher to cut the pork in small chunks, wash it and then add salt, pepper and oregano to it.

Add some oil in a deep pan and once it warms up sauté the pork chunks until it slightly browns.

Then lower the heat and add in the onions, peppers and mushrooms.

Sauté them all together until the veggies soften.

In the end add the wine and the lemon juice and let them slowly boil until the wine evaporates.

INGREDIENTS:
• 1 packet Farina flour
• 1 tsp. baking powder
• 5 slices ham or parizer
• 8 slices bacon
• 10 black olives sliced
• 3 half peppers (green, yellow, red) cut in cubes
• 1 cup grated kasseri cheese
• 1 cup grated gouda cheese
• 1 cup grated pecorino cheese
• ½ cup grated feta cheese
• 4 eggs
• 1 small onion cut in small cube
• 300 ml double cream
• 100 gr butter
• Some salt, pepper, paprika
• Oil for the pan

PREPARATION:
Add some oil in a small pan and slightly sauté the onion, peppers, ham, bacon and olives on a low heat to slightly soften and smoke them from the bacon.

Afterwards add the pepper, paprika and stir well, remove from heat and set aside. Whisk the butter in the mixer until white.

Then add the eggs

and then the flour and double cream consecutively.

Once they’re well whisked together stop the mixer and add the rest of the ingredients that we previously sauté in the pan, sprinkle some salt

and mix together.
Add the cheeses last and mix again. Remove the mixture and pour in a long baking form that you previously buttered and bake at 180C for an hour.

Variant risotto

INGREDIENTS:
• 3 colorful peppers (red, yellow, green), diced
• 1 onion, diced
• 3 spring onions, chopped
• 2 tomatoes diced or 1 can tomatoes
• 1/2 can mushrooms
• some tomato puree
• mint
• parsley
• 3 cloves garlic
• salt and pepper
• oregano-thyme
• vinegar
• oil
• water
• 2 bags long grain rice (uncle ben's) which is in portions, boil for 10’
• pork or chicken meat cut in cubes

PREPARATION:
Use a deep and wide pan to sauté the onions, garlic, peppers, mushrooms

and afterwards add the meat of your choice.

Add in the tomatoes, tomato puree, mint, parsley, pepper, oregano or thyme, 3 tbsp. vinegar, some water and let them slowly cook together.

Afterwards add some water and add in the rice and stir continuously so it won’t stick to the pan and add water once in a while when it needs, cook until the rice is ready and the sauce has thicken, then add in the salt.

NOTE: you can leave out the meat and eat it as it is… it’s very tasty.

Special chicken pie

INGREDIENTS:
• 1 chicken
• 3 onions
• 1 garlic clove
• 300-400 gr. feta cheese
• 300 gr different yellow cheeses that you prefer (savory types)
• 1 packet ready puff pastry (I prefer the KANAKH type for sure results)
• 1 egg
• salt-pepper

PREPARATION:
Wash the chicken and boil it.

Once it boils strain it and let it cool. Afterwards throw away the skin and remove the meat from the bones and cut it in small pieces.

In a deep pan add a little oil to warm up and sauté the onions (that you chopped in the multi to make them puree like) and chopped garlic over a low heat.

Once they’ve sauté add in the chicken pieces and combine together.

Let them sauté well together and den slowly add the cheeses and stir. Add a pinch of salt and pepper.

Once the ingredients become a uniformed maze,

butter a baking pan, layer a puff pastry phyllo and pour over the chicken mixture so it goes everywhere (notice to leave some extra phyllo on each side of the pan so you can fold over and close up the pie).

Layer with the second puff pastry phyllo as you did with the first one (so it exceeds), pinch the edges and turn until the pie is closed.
Smear the entire surface with egg

and bake in a preheated oven (at 180-200c) in the air function at 180C for 45 minutes until it’s golden in color.

When you see the pie puffin up then you remove it from the oven and cut it in slices (Caution: not pieces, slices) and pop it back in the oven to bake for another hour.

WE do this when we use puff pastry, with a homemade phyllo you would have cut it in pieces, oil it, sprinkle it with water and baked until golden.

NOTE: it’s a delicious recipe with a lot of functions on our tables. You can even make a homemade phyllo for better results and add colorful peppers in the filling that you’ll sauté with the onions and garlic.

Baked apples in the oven or grill with whipped cream

INGREDIENTS:
• 2 red apples
• Some cinnamon powder
• Sugar, as much as you want
• 60gr butter

PREPARATION:
Clean the apples

and cut them in 1 cm washers,

then remove the seeds and center with the special tool or a knife.

Melt the butter in a pot and remove from heat,

sunk the apples from both sides to butter them.

Then layer them on a grill or a baking pan (I used a baking pan) and bake them in the grill function for about 10 minutes top, while they’re cooking turn them around so they bake on both sides.

Once you remove them from the oven, sprinkle them with a mixture of cinnamon and sugar

and serve them with some whipped cream if you want.

You can even sprinkle them with the cinnamon and sugar prior the baking process so they come out caramelized.

The choice is yours!

Truffles…you can never eat just one!

You can t believe how easy and delicious is to make these truffles!Your kids will love'em...Just try them!

INGREDIENTS:
• 200 gr chocolate
• 200 ml double cream
• ½ glass icing sugar
• 3 tbsp. liquor of your liking…I used amaretto
• 2 handfuls of chopped walnuts
• 2 handfuls of chopped hazelnuts
• decorating truffle or nuts to sprinkle
• ½ packet of crushed petit beurre biscuits

PREPARATION:

In a small pot add the double cream to warm up on a low heat,

then add the chocolate and stir to melt it.

Remove it from heat and add the icing sugar in, whisking continuously.

Then add in the nuts and the biscuits.

Mix them together well until the mixture becomes porridge like in consistency.

Let it cool down and then pop it in the fridge for 30-45 minutes, so you can shape it in small balls.

Once it cools down shape the mixture in small balls

and sprinkle them with chocolate or colored truffle, crushed nuts or chocolate flakes.

Store them and preserve them in your fridge.

Tomato croquettes

Unique tomato croquettes,easy at preparation delicious to eat!

INGREDIENTS:
• 500 gr mature tomatoes
• 2 large onions chopped
• ½ bunch of mint chopped
• some dill
• salt
• pepper
• 1 pinch cinnamon
• 1 tbsp. oregano
• rising flour, as much as it takes
• oil for frying
• crumbled feta cheese + yellow cheeses of your preference, as much as you want in quantity

PREPARATION:
Wash and chop the tomatoes. Add all the chopped ingredients in a bowl, except the flour, and mix them together.
Add as much flour as it needs to become a very soft porridge like consistency.

Warm up the oil in a pan, pick some of the mixture with a spoon and add it to the pan.

Do that with all the mixture. Once the croquettes fry on one side turn them from the other to fry them. Remove them and place on paper towels.

They’re better served warm. If you Lenten you can remove the cheeses and make them plain.

Spicy stuffed chicken

Great and spicy stuffed chicken!The result of this recipe is very tasty!!

INGREDIENTS:
• 1 Chicken
• 200g savory kefalotiri
• 200g feta cheese
• 1 tomato
• 1 green bell pepper
• 1/2 head of garlic
• salt and pepper
• some olive oil

PREPARATION:
Wash and clean the chicken well, salt and pepper it inside the belly. Cut squares of kefalotiti, feta cheese, tomato, pepper and each garlic clove in half and stuff the belly with the ingredients.

Once you stuff the belly sew the hole or close it up with toothpicks.

Then puncture the chicken in different spots and add half garlic cloves in the openings.

Salt and pepper the chicken on top, place it in a pan, add some oil and water and cook in the air function for about 1 ½ hour.
If you want you can cut and add some potatoes in the pan around the chicken, they’ll become delicious from the stuffing and the chickens flavor.

I learned and ate this recipe from my dad who used to have a grill restaurant in Lamia, who we unfortunately lost…he used to make great meze and I definitely recommend you to try it…its perfect!!!

Instant cheese pie that’s easy and delicious

delicious cheese pie in no time!

INGREDIENTS:
• 500 gr crust phyllo
• 150-200 gr feta cheese
• 150-200 gr kasseri cheese
• 150-200 gr gouda cheese
• 150-200 gr pecorino cheese
• 4 eggs
• ½ liter fresh milk
• Pepper
• Olive oil

PREPARATION:
Grate and crumble the cheeses,

mix them all together and add some pepper.
Use a baking pan or cake form (I used cake form) and smear it with olive oil.

Take the phyllo one by one, oil it and layer it in the form.
Use 3 underneath,

top up with the cheese mixture and then take 3-4 phyllos and cut them up with your hands and place them inside with the cheeses.

If the phyllo exceeds when you use a form then turn it inside the form and cover the mixture. If you use a baking pan then add the rest of the phyllo on top oiling them one by one.

Whisk the eggs with the mil and pour it over the pie

and bake it in a preheated oven at 170C for about an hour.

An easy healthy and quick recipe!Dont forget to accompany with feta cheese!!

INGREDIENTS:
• 1 medium cabbage
• 2 onions
• 3 spring onions
• ½ bunch of dill
• 1 packet of tomato juice
• 1 tbsp. tomato puree
• 1 wine glass Carolina type rice
• Pinch of cinnamon
• Salt-pepper

• Olive oil

PREPARATION:
Clean the outer layer of cabbage leaves and cut them in squares, wash them well and let them sit in a strainer to strain.

Chop the onions and sauté them in a pan with oil,

then add the cabbage and sauté them together until the cabbage softens.

Throw in the dill, tomato juice, pepper, cinnamon and add some water and let it boil.

Once the cabbage is cooked add the rice and let it boil with the cabbage. Add the required amount of salt and the food is ready.
Accompany it with feta cheese and enjoy your meal!

Homemade peinirli (savory pastries)

Homemade peinirli (savory pastries) that you’ll love.Ideal snack for your guests!

INGREDIENTS:
For the dough
• ½ kg flour (from hard wheat,or if you dont have all purpose flour) that’s the one I use
• 1 sachet dry yeast
• 1 ½ tsp salt
• 1 tsp sugar
• 1 tsp baking powder
• Some warm water for the kneading
• Some melted butter

PREPARATION:
Add all the ingredients in a large bowl, except the water, mix them together

and slowly add the warm water

and knead the dough until its pliable and won’t stick to your fingers. Cover it and let it rest for 45 minutes.

Afterwards open the dough in a large phyllo about 5-6 mm thickness,

using your knife cut a slice and depending on the sizes of the peinirli you want to make divide it in pieces.

Then pinch the two edges and slightly stretch them while softly pushing the dough with your fingers to stick together until it looks like a boat’s shape.

Turn the sides inside by slightly pulling them up so you can fill them up with your filling.

Smear them with butter and pop them in a preheated oven to bake for about 15 minutes,

then remove them and fill them with the ingredients of your liking and pop them in the oven again for another 15 minutes.

Let me add here that you can leave the unfilled peinirli to cool down completely, store in a well closed food bag and store in your freezer so you’ll have ready make peinirli to fill every time you want one, you just fill them and bake them for 15 minutes.

Homemade chocolate paste

Homemade chocolate paste without preservatives of course.Your kids will love it!

INGREDIENTS:
• 1 Vitam butter
• 1 condensed milk
• 8 tbsp. cocoa
• 150 gr. chocolate
• ½ cup hazelnuts

PREPARATION:
Whisk the butter in the mixer.

Once it’s well whisked and white in color add in the condensed milk, the cocoa

and then melt the chocolate in a bain marie

and add it to the mixer.

Continue mixing the ingredients and add the crumbled hazelnuts.

Place the merenta in a tapper wear and after a while in the fridge, if you can manage since everyone will be waiting with bread and spoons in their hands.

Simple, easy and delicious recipe.

Pastichio with penne

béchamel,penne,minded meat,dancing in your mouth!MUST TRY!

INGREDIENTS:
• 1/2 kilo penne
• 1 kilo ground beef
• 2 big onions
• 3 cloves garlic
• 1 can cherry tomatoes (concasse)
• Yellow cheese of your choice
• oil
• salt-pepper
• nutmeg
• cinnamon
• some crumbled hardtack

For the béchamel:
• 1 liter fresh milk
• 1 can evaporated milk
• 1 tbsp. butter
• 2 eggs
• 12 sharp tbsp. corn flour
• salt-pepper
• nutmeg

PREPARATION:
Add some oil in a pot and sauté the chopped onions, garlic

and the ground beef until it picks some color.

Throw in the tomatoes, all the herbs, nutmeg, cinnamon, salt, pepper and some water, and then let the mixture slowly boil until it’s left with its oil.

In another pot boil some salted water and add the penne once it’s ready.

Once they boil strain the pasta.

Oil a baking pan, sprinkle some crumbled hardtack

and layer half the past in the pan, then sprinkle some grated yellow cheese on top.

Afterwards, once the minced beef is ready carefully pour it over the pasta so that it covers all the surface and add more grated cheeses,

then add the rest of the penne and sprinkle cheese on top again.

Prepare the béchamel cream. Add the milk in a pot to warm up with the butter and the half of the evaporated milk until start steaming

until it boils. Add the rest of the evaporated milk in a bowl and dissolve the 12 tbsp. of corn flour and then add the mixture in the pot.

Stir continuously over a low heat until the cream thickens.

Once it thickens pull the pan from the heat and add the whisked eggs,

salt, pepper, nutmeg and mix together.

Then pour the béchamel over the pasta.

Sprinkle some grated cheese and some crumbled hardtack. Pop it in the oven and bake in the air function for about 35-40 minutes.

Aromatic meatballs

Tradidional super aromatic greek meatballs!Dont miss the recipe!!

INGREDIENTS:
• 1/2 kilo ground beef
• 2 large onions
• 3-4 cloves garlic
• 1 egg
• 1/2 bunch parsley
• 1/2 bunch mint
• 1 quart of bread crumbs soaked in the water
• 2 soaked crackers
• flour for frying
• salt and pepper
• olive oil

PREPARATION:
In a bowl combine the ground beef, chopped onion and garlic,

chopped parsley and mint,

egg, breadcrumbs or the tope, salt, pepper and some olive oil.

Mix them well with your hands until the ingredients combine.

Add some oil in a pan and with a teaspoon pick some of the mixture at a time and make a ball, add them in flour, shake the excess flour

and pop them in the pan to fry.
Remove them on paper towels to absorb the excess oil. If they seem too dry, not a problem...

INGREDIENTS FOR SAUCE:
• 1 grated onion
• 1 pepper chopped
• 4-5 tomatoes grated or 1 can of concasse cherry
tomatoes
• Olive oil
• 1 cinnamon stick
• 3 allspice berries

• salt and pepper

PREPARATION:
Chop the onion in the multi, the pepper in thin slices and add them to a pan with some oil you previously warmed to sauté them.

Then add the tomato juice or the concasse tomatoes, the cinnamon, the allspice, salt and pepper and some water, and then let them slowly boil together for 15 minutes.

Then throw in as many meatballs as you want in the sauce and let them boil for 10 minutes maximum.

What could you serve them with? Fried potatoes, white rice, puree…a lovely Greek salad and a cold beer!!!

Minced meat and mushed potatoes in LOVE!!!Try this lovely combination.

INGREDIENTS:
• ½ minced beef meat
• 2 chopped onions
• 2 tbsp. chopped garlic
• 2 garlic parsley
• Some leaves fresh mint
• 1 ½ tea cup cut tomatoes or 1 can concasse tomatoes
• 3 tbsp. tomato puree
• 4-5 tea cup warm mushed boiled potatoes
• 1 pinch thyme
• 1 pinch nutmeg
• Salt-pepper
• Some melted butter
• Some grated cheese
• Some olive oil

PREPARATION:
Boil the potatoes in a pot and keep them warm until you’ll use them.

In a deep pan sauté the onions, garlic in some oil

and then add the meat and sauté them together for 2-3 minutes.

Continue adding the parsley, mint, thyme, nutmeg, salt, pepper,

tomatoes with the puree and let them cook on a low heat for 15 minutes.

Mush the potatoes some at a time with a fork

and layer half of them in the baking pan.

Add the meat on top

and then add the rest of the mushed potatoes on top.

Add some melted butter on top

and sprinkle some kefalotiri cheese or any other cheese you prefer and bake in a preheated oven at 190C for half an hour.

INGREDIENTS:

add in all the ingredients, chopped onions in the multi, parsley, mint, egg, tope, salt, pepper, oregano, some vinegar and some oil,

knead the ingredients well together until they combine.

Then add the beef mixture in a baking pan and spread it. Add the filling in the middle across the ground beef mixture

and fold it to close the filling inside.

Chop some potatoes, salt and pepper them, sprinkle with some oregano and add the in the baking pan around the beef role burger.

Afterwards whisk in the multi or a shaker the lemon juice, 2 tbsp. mustard, some oil and pour it over the food in the baking pan.

You can even add some grated cheese on top… I do as it makes a nice crust.

Add some water and bake at 180-200C for about 1 ½ hour.

very special brownies from a greek pastry chef stellios parliaros!Just try them...

INGREDIENTS:
• 300 gr. chocolate
• 160 gr. butter
• 4 eggs
• 300 gr. sugar
• 200 gr. flour

PREPARATION:
Melt the chocolate with the butter in a bain marie.

Whisk the eggs with the sugar in the mixer until they fluff up.

Combine the melted chocolate with the whisked eggs

by slowly stirring with a spatula.
Slowly add the flour while continuously stirring.

Butter and sugar a 10 x 27 cm cake tin. Preheat the oven at 200C, pour in the mixture and bake in the oven at 180C for 20 minutes.

The cake will turn our soft. Let it cool completely and then remove from cake tin. If you prefer the chocolate in the center to be soft then before serving the brownies you can warm it up in the oven.

Chocolate rocks

The easiest and quickest chokolates ever!!!

INGREDIENTS:
• 2 sheets of dark chocolate
• 300 g almonds raw
• 2 tbsp. icing sugar

• 2 tbsp. maize oil

PREPARATION:
Begin with the almonds. Add them in a small pot with some water and once they begin to boil remove them from the stove.
Drain them, remove their peel and add them in a baking pan, pop them in the oven and roast them using the grill function. I added some walnuts as well.

Melt the chocolate in a bain marie,

add the icing sugar,

oil...

and then the almonds and walnuts whole.

Mix the ingredients together and remove from fire.
Layer the counter with baking sheet of aluminum foil, take a teaspoon and divide the mixture forming little rocks. Let them stand for a bit and then pop them in the fridge.

NOTE: If you want you can add walnuts as well…if you don’t want to use the nuts whole chop them in the multi first. You can also make them in different shapes by using ice packs from silicone as I did.

Greek fasolada (bean soup)

The one and only traditional greek fasolada!!!

INGREDIENTS:
• ½ kg medium or big beans
• 4-5 carrots
• ½ bunch celery
• 2 onions
• 2 tbsp. tomato puree
• 1 can of concasse tomatoes
• salt-pepper
• olive oil

• If you want it spicy add a spicy pepper in or some chilly.

Add the beans in water and let them puff up overnight,

then wash them well the next day and add them in a pot with water to boil.

Once they’ve semi boiled add in the chopped veggies, I chop the celery, carrots and onions thickly.

Then pour in the tomato puree,

concasse tomatoes,

oil, pepper, hot pepper or chilly if you want, and let them boil until the sauce thickens.
At the end add the salt and serve.
Accompany the fasolada with smoked herring, salted sardines, olives, freshly baked bread and some wine.

Savory pumpkin pie with handmade phyllo

Savory pumpkin pie for every hour, made with homemade phyllo.

INGREDIENTS:
For the filling:
• 5 big courgettes
• 2 large onions
• 5 spring onions
• 1/2 bunch of dill
• 1/2 bunch of parsley
• mint
• 4 eggs
• 1 quart and some feta cheese
• salt and pepper
• oil

For the phyllo:
• 4 cups flour (all purpose)
• 2 tbsp. oil
• 1 tbsp. vinegar
• 1 tbsp. sugar
• 2 tsp salt

• 1 cup water lukewarm (depends, you might need to add another)

PREPARATION:
Wash and grate the courgettes, sprinkle some salt over them and let them aside to reduce their juices.

Afterwards move them to a large bowl with the rest of the ingredients, chopped dill, parley, mint, eggs, crumbled feta cheese, salt, pepper, olive oil and mix them all together.

For the dough, you can make it in the mixer as you can see in the photos. Add the flour and the rest of the ingredients in the mixer

leaving the lukewarm water last, start the mixer on a low speed and slowly pour in the water until the dough becomes soft.

Put it in a bowl and cover it with clinging film and let it rest for half an hour.

Then divide the dough in 6 balls cover with a sopped towel.

To open the phyllo flour your surface and take the dough balls one by one and mold it until they become thin phyllo that will stick out of the baking pan.

Smear the pan with oil and layer the phyllo then oil it on top and continue the process until you’ve layered the first 3 phyllo for the bottom.

Then pour in the courgettes mixture

and cover up with the rest of the phyllo that you’ll oil first. Turn all the phyllos that stick out towards the inside of the pan.

Then carve it, oil it and sprinkle it with water.

Preheat the oven and bake the pie at 200C in the air function for about an hour.

NOTE: to buy some time you can use a readymade crust phyllo. It deserves to be made, it’s fantastic!!!
