Fall is in the air!!!

Pumpkin spice latte is back. The tree in my yard is just starting to turn. And the heavens have opened up and begun dumping what the news is calling "rain of biblical proportions" all over my city.

Here's a baseball field I saw on my way home from PT today, the dugouts were completely underwater.

Don't worry, we are fine. We are so fine that I'm still having to debate if I have to water my new sod because we haven't gotten enough rain where I'm at. But I digress.

So it's fallish at least and last night I decided I needed a fall muffin recipe. Several of my friends have been playing around with pumpkin recipes so that's where I started. Pumpkin muffins just wasn't sounding good enough. I know of a recipe that uses a can of pumpkin and a box of white cake mix, so that's where I started. But when I went to the store I found something even better! Spice cake mix!!! So now I present to you Pumpkin Spice Chocolate muffins (BTW these are soooo easy to make).

Ingredients:

1 box spice cake mix

1 can of pumpkin

Some heavy whipping cream

Chocolate chips

Directions:

Preheat your oven to 350*. Dump your cake mix into a bowl.

Dump your can of pumpkin into the bowl. Stir really well to get all the lumps out (super important or you end up with powdery bits in your muffins). At this point I added some heavy whipping cream, I didn't measure it, just added enough to make my batter about the consistency of soft serve ice cream so that I could get it into the muffin papers (realistically it was about 1/4 cup). Then I added chocolate chips. How many you ask? As many as you think is good. Fold those in.

(Those are the powdery chunks where I didn't stir enough at first)

Spoon your batter into lined muffin tins, about 3/4 full. Bake 15-20 minutes, or until a toothpick comes out clean. Eat, enjoy!

For me this made 18 muffins and they are amazing! I have had to limit my kids because they keep trying to devour them all! Enjoy!!!!

Fabric Wreath Tutorial!!!

I bought this wreath back before Christmas with the intention of making an awesome door hanging from ribbon - didn't happen! Oh well, I thought, I'll just save it until Valentine's Day.... or St. Patrick's Day... or Easter... Well last night I FINALLY did something with it. I made this beautiful fabric wreath for spring/summer!

We got rid of internet at our house years ago. I had been writing my blog on my breaks at work, but since Thanksgiving that hasn't been possible. So what's a blogger to do? I tried to use the iPhone blogger app to write from, but it doesn't work the same way and I'm really not a fan of it. Right now I am writing from my mom's house, using her internet.

We are going to have to get internet back at our house for me to keep up my blog and share all the wonderful things we have going on. Everyone is just going to have to bare with me until we do, and know that my post are going to be super sporadic at best right now. I have an awesome spring fabric wreath tutorial that I want to get up for you guys this week (hopefully) so I may be doing it from my phone app.

Sorry for the long interlude everyone, I promise I'll be fully functional really soon!

Fall Decorating

I love fall. I love the colors, the crunchy leaves, the cool chill in the air. I also love the fact I live in Colorado and get to watch the leaves on the aspen trees change from my house. I love sweaters and boots and I live for the day that Starbucks brings back the pumpkin spice latte. My days are filled with football and hot cocoa, playing in fallen leaves and taking pictures of all the colors.

Is it winter?

So, we have reports from the news that tomorrow (Wednesday) we are going to be under a blizzard warning here in Denver! After so many years here that really isn't all too surprising to me - but it does make me excited for the holidays - playing in the snow, sledding, snowmen, hot chocolate, cookies.... you get the idea. Plus this is the first year that Squeaky can really enjoy the snow, last year she was still too little. And to top off the blizzard warning, I stopped to get coffee this morning and was thrilled to find that it's that time of year where Starbucks is back to stocking Peppermint Mocha's and the red cups that are the pinnacle of the holiday season in my house. I guess this means I need to start decorating!

Meal Planning #3

I think I am just going to move this blog to being posted on Monday mornings since for some reason I can't seem to get it out on Thursday recently. How was your last two weeks? How is your meal planning going? I am also changing this to just just showcase one week at a time to simplify shopping on my part.

We are doing good here in my house. I do now have a toddler who has decided that the only things she wants to eat are tortillas and cheese or hot dogs (I thought they didn't do that until they were two), which has made things a bit more on the challenging side.

Meal Planning #2

Ok I know this post is about 4 days late, I apologize. I have been slacking off in my blog. I have a whole bunch of blogs half done that I really need to add pictures too (the worst part is I have the pics, they are edited, they just aren't added into the posts yet).

Anyway - how's your meal planning going? Our first week went great! I did realize when I went to the store that first Sunday that I was not going to be able to buy all my produce and have it keep for the two weeks, so I modified my grocery list and left off the produce for week two and picked that up the following Sunday.

Week two didn't go as well as week one for us. We ended up with some unplanned out of town guests at my parent's house on Thursday and Friday we had a party to go to that I had forgotten about. So you'll see our Thursday and Friday meals on this week's menu. Let's get down to the meals!

I have never been one of those incredibly organized, my-house-is-perfect, prim and proper moms. I want to be, I strive to be, but let's face it, it isn't going to happen. I try to be as organized and neat as is possible with 2 kiddos and working a full time + job, but sometimes housework falls by the wayside or dinner is peanut butter and jelly sandwiches. I know my kids aren't really suffering for it and they would rather blow bubbles and play peek-a-boo with me anyway than worry about cooking a 5 course meal, but something inside me wants to be that organized (if you ask the Man it's my OCD).

Advice to New Working Moms

I just found the most amazing article here. It is a ton of excellent tips and advice for new moms just going back to work, but I think it's also a great resource for moms on their second (or third or fourth) baby who are going back to work. I have alaways been a working mom, and didn't really have a hard time going back to work after Peanut was born, but for some reason after Squeaky was born I found it incredibly hard and hearth wrenching for me to go back to work. I wish I had this article then.

Peaches...

I am about to have an abundance of peaches. Every year my parents order peaches from a local lady who sells them for family that runs an orchard in Palisade, Colorado. Every year my parents go on vacation around labor day. Every year the peaches they order come in while they are gone and I have to pick them up and do something with them (OK maybe I am exaggerating a little bit, but it feels like it).
