In ancient times it was the gold of Romans: salt was fundamental to store and keep food in a safe and sane condition. It was also a payment way: taxes could be paid with it and even the Italian word “salario” comes from that. That is why its importance is even more ancient than the Roman age. Salt comes from water: a long process of evaporation let the salt come up so that can be harvested. The need of water-limited the areas where salt could be produced and moreover the production systems were not the same and consequently even the …

A nice, gentle man, with a lovely smile and an overwhelming talent: this is Silver Succi, the resident chef at QuartoPiano Suite Restaurant. I had the chance to meet him two years ago at Almeni, the food Circus of Chef Massimo Bottura, and I was surprised by his way of working. An excellent technique is hidden behind a simple and precise flow of steps. The result: a dish with its personality that speaks to you at first bite. My pleasure went beyond this: he took his time to explain to me how he realized some particular steps to obtain that …

This is a simple story, written by men and women of a Romagna that still exist, behind an embankment, beyond a row of vineyards, when the scent of a mulberry tree slips gently and takes you into the silence of a slow morning warm. I remember these days when I was a little girl. The countryside was a place full of sounds, smells (not always pleasant) and creatures to observe. Very tall strands of grass, flat white and foul-smelling flowers, white and dusty roads with sharp pebbles that splashed and rolled me on my torn knees. An inexorable beauty that …

Fast and Furious. Do you remember that famous film? A lot of beautiful and powerful cars, plenty of action and the thrill of speed in every scene. Well, there is a place in Emilia Romagna where you can live all this: the Imola “Enzo and Dino Ferrari” racing circuit. Inaugurated in 1953, in its early days, it was officially called CONI Prototype, but In 1970 he assumed the name of the Dino Ferrari racetrack in memory of the late son of Enzo Ferrari. At his death, in 1988, his name was joined to that of his son bringing the circuit …

Ravenna: a dream town. As a child, I was taken there many times, as many of the children attending the elementary school. At that time I realize that as Italian, I had a unique chance that nobody else has: learn history in the places history was created. But this time I will start my story from another point of view: the beach. Summer is a past memory by now, but still, gives space and time to breath the fresh air of the sea, listening to the seagulls and watching the Fishman, while preparing their fishing tackle. The slow pace at …

I still remember my afternoon in Piallassa Baiona, a wonderful water area near the town of Ravenna, in Emilia Romagna. The leaden sky and the absolute quiet made that experience unforgettable. Silence all over the beautiful mirror of water that goes from the town to the sea. Today I will explore another part of this natural wonder with a group of people. It’s a sunny day and we will ride our ebikes leaving from the restaurant Le Spighe in Alfonsine towards a very …

The best thing you can do to understand a place to visit is to star with eating some local food. And this is mostly the first thing I do when I have guests from abroad: I cook or, better, I take them to one of my favorite special places and let them enjoy Emilia Romagna food. It’s not anymore a surprise: people know a lot about Parmigiano Reggiano, tortellini and mortadella but surely less about the typical food of my area. Food from the tradition of Romagna Here food was something very basic. It came from the poor products of …

A few days ago, browsing my Instagram profile, I noticed the shots of a photographer. He wrote in his profile, photographer, as a profession. Generally speaking, I’m a curious girl, and as I always do in these cases, I decided to message him privately. And among the various exchanged messages, one impressed me: never transforming a passion into a profession. A contradiction, or rather a counter-tendency. How many times, by listening to a craftsman or a successful young man, his story begins like that: it was all about gambling and then I decided to turn a passion into a job. …
