Mushrooms in Onion Gravy

Ingredients :
200 gm Mushrooms
3 Onions
2 Tomatoes, finely chopped or pureed
3 Green chillies, finely chopped
Coriander leaves
Salt as per taste
Red chili powder as per taste
A pinch of garam masala powder
A pinch of cardamom powder
Oil

Preparation :
1. Slice mushrooms, boil them and keep aside.
2. Make a paste of the onions.
3. Heat oil in a wok and add the onion paste; cook till the paste turns golden brown.
4. Add the tomatoes, green chilies, salt and red chilli powder.
5. Cook the tomatoes till the gravy leaves the sides of the wok.
6. Add water if required.
7. Add the mushrooms and cook for a while.
8. Season with garam masala powder, cardamom powder and coriander leaves.

Karanji

Ingredients :
For Filling:
1 cup grated Dry Coconut
1 cup Powdered Sugar
1 pinch Nutmeg Powder
1 pinch dry Ginger Powder
4 Elaichi
2 tsp Maida
2 tsp Poppy Seeds
2 tbsp Mixed Dry fruit pieces

For Dough:
1 cup maida
1 tsp Ghee
Salt to taste
Warm milk to prepare dough

Preparation :
1. Roast Dry coconut.
2. Roast maida in ghee.
3. Roast poppy seeds.
4. Mix all the above ingredients & grind them.

For Dough:
Mix all the dough ingredients & prepare dough (a little hard).

For Karanji:
1. Make small oval shaped puris from dough.
2. Fill the prepared stuffing inside.
3. Apply some water or milk so that it will seal properly (don't apply too much of water as it will not seal properly).
4. Deep fry it till it becomes brownish colour.
5. Serve it hot or cold.
6. Karanjis can be stored for weeks.

Dhanteras is popularly known as the first day of Diwali and it is the day chosen by many people to make investments in gold or silver. Dhanteras 2009 date is October 15. It is observed two days before Diwali and falls on the thirteenth day of the dark fortnight of Kartik Month. In Gujarat, Karnataka, Andhra Pradesh and Maharashtra, the same period is the thirteenth day of Ashwina month.

Dhanvantari Jayanti, Dhantrayodashi and Yamdeepdan are also observed on the day.

Gujia

Gujia is a favorite festival sweet prepared at the time of almost all the grand festivals in almost all parts of north India. Though gujias are known to be prepared during the time of holi but nowadays gujias are prepared during the time of Diwali also. These gujias differ from region to region particularly in the sense of the filling in the gujias like in Uttar Pradesh, the fillin of the gujias are made with khoya while in Goa this filling is made with shredded coconut and nuts. Here is the recipe for the Gujia in simple steps and language just for you.

Ingredients

250 grams of flour
500 grams of Khoya
Few Raisins
100 grams of Almonds
3 tablespoon of cooking oil
100 ml of water
250 grams of sugar

Instructions

Mix the oil and flour properly to form a binding consistency of breadcrumbs. Add some water and knead lightly the entire mixture. Make it soft dough and set it aside with a damp cloth covering it. Fry the khoya in cooking oil till it becomes light brown and then mix the sugar in it properly. Add the almonds and raisins, and fry for a few more minutes. Remove from fire and let it cool. Make small thick chapattis out of that kneaded dough. Fill half of the chapatti with the khoya mixture and, rolling it, seal the sides of the chapatti keeping the khoya inside it. Make the sealing look decorated by giving a look of hemming. Deep-fry these gujias until it becomes light golden brown, keeping the flame at low. Take out the gujias on a paper napkin and let the oil get soaked.

Kheer

Kheer is the most common dessert among the Indians prepared at the time of all the major festivals and celebrations. Kheer can be made with either rice or vermicelli and the essential ingredients of kheer are supposed to be milk and sugar. Kheer is one such pudding, which is fairly easy and quick to prepare and many kheer recipes have evolved according to the regional preferences. Well, we here provide you with the most common way of preparing kheer, which not only lets you prepare the yummiest Kheer but also saves a lot of your time.

Kheer
(Serves 4-5)

Ingredients

1 liter of milk
200 grams of Rice (Soak the rice for ½ an hour before cooking)
Sugar
Finely chopped Cashew nuts
4-5 pieces of Cardamom
Few Raisins

Instructions

Put the milk in a pan and let it boil for a few minutes. Keep the flame at low. Stir the milk continuously until it becomes a little thick. Next put some sugar in the milk and stir it continuously until the sugar melts in the milk. When the milk is ready, put the rice in it and let it boil for some time, while stirring it at intervals. When the rice is cooked, garnish it with chopped cashew nuts, cardamoms and raisins.

The word Diwali derives from the word ' Deepavali'. Diyas are inseparable parts of Diwali. Illuminitating Diyas outside houses is the most common scene in this day. Though in these days electric lights are replacing earthen Diyas ,still the charm of traditional Diwali Hindu Lamps is there.

A Diya is a small earthen lamp that is lit especially at Diwali. They are usually made of clay. Ghee or oil is used as the fuel and cotton wool as the wick. Sometimes they are made by part filling a glass with colored water, Ghee is floated on top, and again cotton wool used as a wick. Children could make there own Diya with air-dried clay or play dough. For safety reason these diyas should not be lit with Ghee and cotton wool.

There are different kinds of Diwali Diyas available in the market. They can be in different shapes even in the shape of Parvati. One can buy the simple earthen ones and decorate it in house. It can be painted in different shades of single colour. Special Diwali motifs can be painted on the diyas too. The earthen diya used on the occasion of Diwali, reflects ancient design sense that is simple and stunning in concept and universal in appeal. Diyas can be ornamented with mirror-work or Jaris. They can be embellished with fragrant dried flowers. Diya Decoration is a common practice in Hindu families during Diwali.

Here are some tips to make a simple diya look beautiful and colorful.

Diyas look more beautiful by coloring them with different colors.

Give leafy and floral patterns over the diyas using different colors.

Use shells, beads, sequins, glass pices, golden laces, zaris and stick them on diyas.

If you want you can make your own diya by using ceramic or Plaster of Paris (POP).

You can make simple bowl shape for a diya and decorate it or you will get diya moulds easily available in markets. Make beautiful diya out of it.

Happy Diwali, Diwali Celebrations in US

Every year we eagerly wait for this special day, according to Hindu religion, called Diwali i.e. festival of lights. No matter where you live, but all Indians feel a different vibe on Diwali. After living in States for about 10 years, we have developed our own way of celebration and keeping the tradition alive.

Our Diwali starts on the first day of Diwali, Dhanteras, by cleaning up the whole house and prepare or buy sweets from Indian stores. In the evening the true essence of Diwali comes with lighting the Diwali Diyas and decorating the home with them. Buying some Gold/Silver on this auspicious day of the year is a custom.

Diwali bring joy and happiness in our lives. It rejuvenates our enthusiasm to live and look forward to it. By telling the stories behind Diwali celebration to our kids is the tradition we started and will be done each year.

The whole family's involvement is the key to this festival. That's what we have seen since our childhood. On Diwali night we perform Laxmi poojan wearing new clothes and gathering all possible Poojan samagree (puja items). Diwali sweets and mouthwatering snacks are main attractions of Diwali. After Laxmi poojan at our places , we have a tradition from many years to gather at any of our friends' place for Dinner or playing with firecrackers. The Dinner is usually Potluck to try delicious recipes of everyone participating.

The Dinner is followed by the fun tradition, playing cards or any other game as a group. This is one festival that we all celebrate the very same day, the Diwali is, regardless of weeknight/weekend night.

We all hope to enjoy Diwali every year together keeping all the traditions alive. Happy Diwali.

Celebrating Diwali in London

Thousands of people from all walks of life thronged the famous Trafalgar Square in the heart of the city to share the spirit of Indian culture showcased during celebration of Diwali - the festival of lights.

Over 30,000 people, including locals, gathered to witness the four-hour long function in which several Indian artists such as dancers, singers and television star presented their performances.

The entire square was illuminated with sparkling lights and bright colours during the event organised jointly by Diwali in London Committee, Greater London Authority and finance firm Barclays.

The programme which started with a Garba dance performance was followed by various classical performances, including Kathak, Odissi, Bharat Natyam and Bhangra.

Bollywood playback singer Rahul Vaidya regaled the packed gathering crooning several popular bollywood numbers from good-old classics to the latest Indian-pop fusion.

The surprise packages at the event include television star Sakshi Talwar of Kahani Ghar-Ghar Ki fame, who compeered the latter part of the show, and brilliant musical performance by NRI singer Raghav, who became popular with his maiden album selling millions of its copies.

Sakshi described the show as "spectacular".

Performing artists from several institutes such as Saraswati Academy of Indian Dance, Encee Academy of Performing Arts, Apsara Dancers, Mudralaya and Kala - the Arts participated at the show.

Musical medleys were presented from Chinmaya Mission with a special live performance of Jay Kumar's Diwali song.
