Messed up the last two meals. Here to confess.
Last night I wanted pasta in the worse way. So I made it. It was incredible. Of course it was G-free.

This morning I didn't have any fruit and was tired of eggs, so made g-free multi grain toast with butter. Oh wow. So good.

But new beginnings!

As of day 10 of 30 I will get back to walking/exercising daily.
As of day 10 of 30 I will eat more fruit.
I have only had grain 3 times in the first 9 days. Which is pretty incredible for me.

But, not seeing results.( had loss 1 1/2 pounds and holding) this morning it went back up.

Can pasta and a few Doritos really do that overnight? Okay, I have been having a few glasses of wine too. Maybe if I had been working out the first 9 days, I would have seen different results.

So there you go....
this is my commitment to myself.

Is it just me or does bagged lettuce taste and smell funny? I have thought this for sometime.
can't eat it!

I've got nothing tonight.
I'm hungry and I miss chocolate!

when I type that number above, I'm always shocked. I feel like I have been at this for weeks!

Something might be working. After 5 days I can say I'm down 1 1/2 pounds.
I have been using the bathroom over and over. I would say all the veggies and nuts.

My goal might be 10 pounds. I say that because I have been trying to lose the same 5 pounds for 10 years. So maybe I need to have the goal of 10 pounds and watch from there.

My daughter, Ali gave me a library book to read Food rules an eater's manual.
by Michael Pollan

His first book he said after researching, he felt all he needed to write was EAT FOOD. NOT TO MUCH. MOSTLY PLANTS. but his boss needed more words in a book than that.

In this book he gives us rules to follow. Some of those are:
1) No processed foods
2)Don't eat food that contain ingredients that no ordinary human would keep in the pantry
3)Avoid food products that contain high-fructose corn syrup
4) Avoid food that the top three ingredients is sugar.
5) Avoid food products with "low fat" or Nonfat in the names
6) Avoid foods that are advertised on TV
7) Shopping, stay out of middle, shop along the sides
8) Eat only foods that will eventually rot!
9) Buy your snacks at the Farmers' Market
10) If it came from a Plant, Eat it: if it was made in a Plant, don't.
(oh I hate this one: )11) It's not food if it arrived through the Window of Your Car. Rates
Those are 10 of their 21 rules.

What kind of foods can I eat. It says mostly plants. Treat Meat as a Flavoring or Special Occasion Food. (I could eat meat three times a day!)
Instead of 8 OZ steak and 4 OZ vegetables, serve 4 OZ of Beef and 8 OZ of veggies

Eat your colors

Eat animals that have themselves eaten well. (Hence the 100% grass fed meats)
(what about this one) Don't eat B'fast cereals that change the color of the milk (I thought all of them did)

I will leave you with one final thought: Avoid Sugary and Starch Foods if your concerned about your weight.

4/30 (4 days into my 30)

I can't believe it has only been 4 days I've been on this 30 day challenge. Seems like forever!

Weekends, I have come to find out, is a challenge. Or is it that Mark came home from being out of town. 5 o'clock rolls around and he says "Tangueray and Tonic"! who can say no to that?

So how do I feel after the 4th day? No real difference to tell you the truth.

My weight has changed from 128.5 to 127.5 this morning. 1 pound down in 4 days, I'll take it.

I can't say I've been 100% on this. Kristen said not to drink and I have been drinking.

I think I have had jelly and that has high fructose corn syrup in it, same with ketchup.
I should stop eating those two items.

Should I give up coffee (I do drink it black)? question is would hot tea be helpful? but when Mark is home, he brings me a cup of coffee each morning before I get out of bed. Again, who can turn that down?

I did get a lot of walking in yesterday. Lost my second fitbit so went by Mark's. Believe we were close to 10K steps. Walked to farmers market and back to jump start our walk.
I know I could kick start this program by working out harder but have not been in the mood.....

Mark is out all this week so this is my opportunity to kick it in....eat right and exercise.

At farmers market, I purchased more fresh veggies and 100% grass fed meats and chicken. Only 3 nights out this week, so maybe I can continue on for another week.

2/30

Skipped b'fast this morning. Not good, I know.

Had chicken twice today. I'm sure I will get burnt out on Chicken if I keep it up.

Chicken at lunch Farmhouse, was 100% grass fed but tonight at Ruby Tuesday, I didn't ask about it's making.

loved the meal for both however, at the Farmhouse I had grilled chicken on bed of cooked cabbage.
tonight at Ruby Tuesday was grilled chicken, zucchini and squash. Yummie.

I started my vitamin pack today. But I seem to always change the rules. Each of the three bottles says to take 3 per day! Not going to happen. Too many and too expensive. So hope I get benefits. I think it's way of getting us to purchase vitamins more often. I am certain I'm wrong.....

Some would say to eat the correct foods and you would not have to take vitamins. One of the vitamins is Omega 3. I could eat Salmon but I don't.

1/30

Well, I made it through day one, almost.....let you know tomorrow.

B'fast: 2 slices of bacon, 1 egg and hot tea
Lunch: salad with grilled chicken & water with doTerra lemon
Dinner: burger with fries.

I admit I could have done better but I still did no grain, no dairy, no processed food. That is big for me.

I need to snack, so will toast up mixed nuts for when I feel that urge. Like now......

I have not started the vitamins. but did a probiotic this morning.

One thing Kristen said was," corn is an inflammatory food. In case you're eating it. Maybe try eliminating or cutting back to see if you feel better. " So I'm excited to cut it back.
I want to feel better.....

When you get disappointing news, it makes you want to just say FORGET IT.

Mark and I are trying to get a move in date to Twelve Twelve in the Gulch. Third change, now it is January 1 they tell us we can move in.

At first I was upset not to be in our new condo by Thanksgiving but now we won't be there for Christmas. I miss my own furniture, I miss quiet neighbors, and I miss space.

But I am very grateful that we are experiencing new & fun things in our life. Pro's and Con's to it all.

Talk tomorrow

I met with Kristen Perdue, who worked with Middle TN Celiac Group over the past years.
Telling her I still feel I'm getting undesirable systems even following a G-Free Diet.

She has challenged me to try this for 30 days and then gradually add items back in to my diet but to give my gut a chance to heal itself.

She believes it all begins in the Gut.

To keep myself in line, I will blog daily for 30 days.

Thick in the middle for me.

I am!

In Oct, my husband bought us fitbit. We love it. It is helping me figure out how many calories to burn each day and how many calories to eat each day, to get down to my desired size.
I actually lost 5 pounds before the holidays and now gained it all back.
Darn. Now I have to figure out how I did that and do it again.

I lowered how many calories intake. I thought I would be starving. But I figured out, the more you move and excises, the more calories YOU GET TO EAT EACH DAY.

I stepped up working out at the Y to one hour at least 5 days a week.

As the day begins I only have 922 cals to each! Yikes. But if I go to the Y or walk or workout at home, I get more cals to each.

My goal is to walk 10,000 steps each day. My fitbit says I do an average of 960 steps per day.
What do I eat?
Yesterday I ate, Kind b'fast bar and coffee for b'fast.
Orange for a snack
Lunch was 1/2 Turkey Patty, with 1/2 slice of cheese and 1/4 cup of cottage cheese.
Snack was fist full of mixed nuts.
Dinner was Ruby Tuesday BQ Chicken with grilled veggies. Total 460 calories.
Snack before bed was popcorn and 3 squares of dark chocolate.

I felt very satisfied. But again, I got to eat that way because I worked out and walked 10,000 steps that day.
According to may scales this morning, I'm back down to my 5 pounds loss before the holidays.
I want 5 more to lose.
I know it doesn't sound allot to many people, but I have never had to lose weight. So I'm learning how it works.

Goals:
Water, 34 oz per day
Walking, 10,000 steps per day
breads, once a week
fried foods, once a week
soft drink or ice tea, once a week
desert, once a week
high protein, daily
low carbs, daily
work out one hour at least 5 days a week.
Cal intake, depends on how much I work out, ruffly 2000 per day.

It is a life style. We can do this.

They have really expanded since I have last eaten there.

It took them three trys to find a g-free pasta that every one liked but they feel they have it now.

The company makes sure each restuarant has a designated area to prepare and cook their g-free meals. A flag will be on the food to let the server know this is a g-free meal and there won't be any confusion at your table.

He said to be watching, he has come up with a specail soup for lunch each day and it will be g-free as well. Steve said on any given Saturday night, he will have 2% of their guest ask for gluten free meals.

Murfreesboro, TN

This darling restaurant on the square in Murfreesboro, Maple Street Grill, has their menu marked gf for the items we can eat. There were many salads to choose from (no g-free crackers) G-free soup of the day, jello and a desert. I choose the Briar Club Salad with white chicken, mandarin oranges, raisins and cashews. Served with yogurt dressing. It was very good.

Cooking at home with Celiac

Last night I was not feeling like eating out but most certainly didn't feel like cooking for one (my entire family was out) So I remembered I had some frozen Fish Fillets in the freezer.

Now you must know, I am not a fish eater but while living in London this year, I found some frozen Fish Fillets that I really liked.

It was incredible. Would have added a tomato but was all out. Added a salad and I was good to go.

<img border="0" height="240" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgNb4uHoQMND13yUEsGDct4haSg-G7d0_ZBLS3749R-_CC7m453inZRf8wBGqQG7YuwlBxwiGYAT3V9Dz5YaBPZFDBqZc7IzjYcrgzYqzSmn5KsSYzopIlv7CliEK8S3rtyhkh0nukclJuL/s320/gish+fillets+g-free+001.JPG" t$="true" width="320" />

Apple Spice Cake

I made Apple Spice Cake from this months Living Without to take to our Celiac Pool Party last night.
It was a big hit but a bit dry. I was given several tips to add moisture such as apple sauce or yogurt. I'll try that the next time.

I tasted some wonderful new dishes and hope to get the recipes soon. I will share them with you.

The pigs in a blanket were the favorite of what I took. They are so good. If you have not made them yet, you must.

On the way to the party, I stopped at my sisters to drop something off an took in three of the pigs in a blanket. They told me they ran out to the car to get more but I had already pulled out of the drive way.

Bacon Wrapped Chicken

Living Without magazine just came out and I've tried two things in it so far.
Today I made the Apple Spice Cake to take tomorrow to our Celiac Pool Party. I'll post the outcome after we cut into it. It looks yummie. I also made my pigs in a blanket and crunchy apple-pecan slaw, that I have blogged about in the past.

<img border="0" height="240" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgjathFt6PQWyCs6N7F_U6PLI_fXGUUEcZiK3E4BP1d9r5XQmR5kemTFtVbS3PSVzg5_Pw1ihYMOpVdlTvj0Lle6u5n9IiEAADXD6yTOzQIPuP0EgjwK3mNAvrj4ihF3OKJzPYG3Xj47AeX/s320/July+2011+022.JPG" t$="true" width="320" />
But tonight I made the Bacon Wrapped Chicken. I won't be making it again. It sounds good but you know how most g-free soy sause is very salty? Well with the bacon, it was double salty. Too much.
You can see I served this appetizer as my main dish with a side salad and brussel sprouts

If anyone else out there has made this, please let me know if you found a way to not make it so salty.

Breakfast Bars

I subscribe to Living Without and try many of their recipes. I love this magazine!

Last night I attempted to make "Budget Breakfast Bars". It says "Quick, easy and affordable".
Does anyone have a tip on how to make them firm?

This is the second time I have attempted to make B'fast bars and you have to eat them with a spoon!
These had a good flavor, so I am happy to share.

3 Cups gluten-free quick cooking oats
1 Cup unsweetened coconut
2 Cups raisins or cranberries or combination
pinch of salt
3/4 Cup honey
1/4 Cup vegetable oil
1/2 cup vanilla soy milk

1. Preheat oven to 350. Generously grease a 9x13 inch pan.
2. Mix dry ingredients together. Toss with honey and vegetable oil to coat. Add milk and blend well. Press mixture into prepared pan.
3.Place in preheated oven and bake 25 to 30 minutes. Remove from oven. Cool slightly and cut into squares. Return pan to oven for 10 minutes or until top is golden brown.

If anyone tries this and finds their bars actually were "bars", let me know what you did please.
