mi-l moi în jumătate de pahar de apă, apoi pui 75 dramuri zahăr, mi-l topeşti
cu jumătate de pahar de apă; când va începe a fierbe amestecă cleiul şi un
albuş de ou şi apoi îl strecori printr’un şervet şi iei zeama de la 12
portocale, zama să fie strecurată, amestici zama cu zahărul şi îl torni în
calup şi îl pui în ghiaţa să se prindă. Să speli peptul de căprioară şi să tai
coastele şi să le sărezi, să le pui în tingire şi să pui: vin, oţet şi apă. Apoi
să pui o ceapă împănată cu cuişoare înăuntru, cimbru, rosmarin, piperi şi
(gh)imbir şi lasă peptul de căprioară acolo până s-a muia. Apoi îl scoate, pune
într’o tingire puţin unt, trei cepe mici tăiate şi pune peptul înauntru, şi
