1891

It was announced that farmers were favourable in the proposal of a creamery to be built at the Avoca Forest and Burke’s Flat district, in connection with The Fresh Food and Frozen Storage Company, Melbourne.
It was estimated that it would cost £450 to erect and fit out a creamery.
A vote was taken at the meeting and it was decided to situate the creamery at Red Hill.
Shire Engineer of the Dunolly & Bet Bet Shire Councils, Mr Butler, made the discovery of a ten pound note in the lining of an old arm chair in the Shire Hall.
The ten pound note had been a deposit and nomination for Auditor To The Shire 9 years previously and the Shire Secretary, since deceased, had felt badly about misplacing the note from the nominee Mr Yates but his good name was now cleared with this find.

Parsnip Fritters-
Take 4 medium sized parsnips,
1 bacon rasher (from Dunolly Butchers),
2 eggs (from McIntyres Run),
1 tablespoon of grated cheese,
4oz of breadcrumbs,
1oz butter,
pepper and salt,
a little chopped parsley,
and the peel of one lemon grated finely.
Dice bacon rasher then fry, set aside.
Boil the parsnips then mash them and beat in the other ingredients adding one egg and enough milk to make a good dough.
Roll into small balls with a little bacon in each one, dip into egg and breadcrumbs and fry until golden brown.
Serve very hot with slices of lemon, a dusting of parsley and crusty buttered rolls from Dunolly Bakery .

Business was almost paralysed in Dunolly as both banks were suspended/closed pending reconstruction; there were very few withdrawals from local branches and only a few new deposits, the Bet Bet Shire and Dunolly Ladies Benevolent Society accounts were kept at the Bank of Victoria, which is now suspended from trading.
The Age reported that the Borough of Dunolly was faced with extinction as the revenue from a 1/ rate had fallen well below 300 pounds per annum which meant, according to a Local Govt Act, it should cease to exist.
Notice was served to include it in the Bet Bet Shire.

Potatoes "Al Forno."
Beat six well boiled potatoes to a cream with 2 tablespoons of butter, 3 tablespoons of cream, pepper and salt, and 2 well beaten eggs.
Put a layer into a buttered fireproof dish, then a layer of sliced hard-boiled eggs, pepper and salt, and repeat till the dish is full.
Make sure the top layer is of potatoes, sprinkle breadcrumbs over it, dot with butter, cover the dish, and bake till thoroughly hot.
Remove the lid and brown quickly, then serve.
Probably with a white <strike>whine</strike> wine, a smile, a crusty bread roll from Dunolly Bakery and finished with a delicious herbal cuppa tea from Judy's Homeopathy Shop.
