Hold the bacon bits, and it also makes a good meatless Monday meal. The only problem is that my 3 year old usually only eats a few bites of her potato and I end up with almost an entire left over loaded baked potato. Here is what I did:&lt;br /&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;3/4-1 left over loaded baked potato-sour cream, cheese, bacon bits, chives, skin and all&lt;br /&gt;4 eggs beaten&lt;br /&gt;1 T olive oil&lt;br /&gt;&lt;br /&gt;Directions:&lt;br /&gt;Mash up the left over potato making sure to break the skin up into little pieces.&lt;br /&gt;Beat 4 eggs until fluffy&lt;br /&gt;Mix the potato mash in with the beaten eggs&lt;br /&gt;&lt;br /&gt;Meanwhile, heat a skillet with the olive oil on medium high heat. Once the oil is hot, add the egg and potato mixture. Let it sit and cook for 3-4 minutes. Once the edges are solid, flip the omelet and add shredded cheese to melt on top. If desired, the omelet is really good topped with sour cream, chives and bacon bits. Fry skin side down (no need to use oil) first for 4 minutes on medium-high heat; flip and fry for another 4 minutes. Remove from pan and set aside.&lt;br /&gt;&lt;/li&gt;&lt;li&gt;Stir onions into pan with drippings.  Turn heat down to medium.  Sprinkle onions with brown sugar and salt and pepper to taste. Pour broth, beer and vinegar over chicken. Speaking of time, it is now the time of the year to start thinking about using squash in weekly meal planning. Here is a great recipe that I got from a squash farmer a few years ago; every time I make it, I just can&#39;t get over how easy and tasty the recipe is.&lt;br /&gt;&lt;br /&gt;&lt;u&gt;Ingredients&lt;/u&gt;&lt;br /&gt;2 Tbsp olive oil&lt;br /&gt;&lt;div&gt;1 medium onion, diced&lt;div&gt;2 cups celery, sliced&lt;/div&gt;&lt;div&gt;2 cups carrots, sliced&lt;/div&gt;&lt;div&gt;1 clove minced garlic&lt;/div&gt;&lt;div&gt;3 cups cubed squash&lt;/div&gt;&lt;div&gt;3 Tbsp chili powder&lt;/div&gt;&lt;div&gt;2 (14-oz) cans stewed or diced tomatoes&lt;/div&gt;&lt;div&gt;2 cans undrained black beans&lt;/div&gt;&lt;div&gt;1 (4-oz) can mild chopped green chilis&lt;/div&gt;&lt;div&gt;4 cups chicken broth (or vegetable broth)&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;u&gt;Make-Ahead Preparation&lt;/u&gt;&lt;br /&gt;&lt;ul&gt;&lt;li&gt;Heat olive oil in a medium skillet. Place sausage (broken into chunks) onto a sheet pan and bake for 25 minutes or until done. Place onions and bacon in a large saucepan and cook over medium heat until onions are almost clear. Add garlic and cook an additional minute. Add chicken base, water and potatoes and simmer for 15 minutes. Add sausage, kale and cream and simmer 4 minutes.&lt;br /&gt;&lt;br /&gt;Serve right away or you can freeze the soup to serve on a later date.
