I got this from &lt;a href="http://southernfood.about.com/od/pecanpies/r/blbb489.htm"&gt;Southern Food here&lt;/a&gt; and I thought I'd bring it for Thanksgiving! I'll let you know how it goes.&lt;br /&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;&lt;br /&gt;2 pastry shells, 9-inch&lt;br /&gt;4 Granny Smith apples peeled and cored, thinly sliced&lt;br /&gt;1/2 cup Pecans chopped&lt;br /&gt;1/4 cup Sugar&lt;br /&gt;1/4 lb Caramels coarse chopped&lt;br /&gt;2 tb Flour&lt;br /&gt;1/4 cup Milk&lt;br /&gt;Milk for top&lt;br /&gt;Sugar for top&lt;br /&gt;Preparation:&lt;br /&gt;&lt;br /&gt;Preheat oven to 375°. Fit 1 round of rolled pastry into a 9-inch pie pan.&lt;br /&gt;In a large bowl, toss together apples, pecans, sugar, caramels, flour and milk. Spoon mixture into pie shell.&lt;br /&gt;&lt;br /&gt;Top with the remaining rolled pastry. Fold the edge of the top pastry under the bottom pastry. Pinch together and flute the edge all around with a fork. Cut several slits in the top so the steam can escape during baking. Brush top with milk and sprinkle with sugar.&lt;br /&gt;&lt;br /&gt;Bake until crust is golden brown, about 45 minutes. I'm pretty sure the smell should be bottled and sold. My friend gave me this recipe a couple of years ago and I forgot about it until now.  I'm so glad I found it for this season!&lt;br /&gt;&lt;br /&gt;Take note that you will need to chill the dough at least 2 hours but I like to toss it in the fridge overnight because I lack the control to wait 2 hours. If I pop it in before bed I let it actually let it sit. &lt;br /&gt;&lt;br /&gt;1 1/2 cups melter butter (3 sticks)&lt;br /&gt;2 cups sugar&lt;br /&gt;1/2 cup frozen orange juice concentrate (mix the rest of the tub with water for juice in the morning while you bake!)&lt;br /&gt;2 eggs&lt;br /&gt;4 tsp baking soda&lt;br /&gt;1 tsp salt&lt;br /&gt;1 tsp orange zest (about 1 orange to make it easier on the measurement side)&lt;br /&gt;4 cups flour&lt;br /&gt;a little extra sugar to coat&lt;br /&gt;&lt;br /&gt;Melt the butter in the microwave and mix in the sugar and orange juice concentrate. &lt;br /&gt;&lt;br /&gt;Once the mixture has cooled a little, add the eggs, baking soda, salt and orange zest. &lt;br /&gt;&lt;br /&gt;Add the flour one cup at a time and mix well.&lt;br /&gt;&lt;br /&gt;Let chill for 2+ hours.&lt;br /&gt;&lt;br /&gt;Preheat your oven to 350. Roll the dough with your hands into walnut size balls and roll in sugar.  Don't flatten the balls as they will spread out fine when baking.  Tip: they will roll when you transfer the sheet to the oven so squish them enough so you don't loose them on the transfer.&lt;br /&gt;&lt;br /&gt;Bake about 10 minutes and let them cool on a rack. How about a "cookie" that takes all of 10 minutes to make? It is Always a crowd pleaser, my kids love making them and the hardest part is unwrapping the Rolos!&lt;br /&gt;&lt;br /&gt;You'll need small twisted pretzels, Rolo candies and pecan halves (although any nut will probably be fine - pecans are nice because of their size).&lt;br /&gt;&lt;br /&gt;1. On a cookie sheet, spread flat the pretzels.  &lt;br /&gt;2. Place a Rolo on each pretzel.&lt;br /&gt;3. Put in the oven at 350 for 3 minutes just to soften the Rolos - they won't look melted but they are gooey enough. &lt;br /&gt;4. Remove from oven and immediately press a pecan half on top of the Rolo.  Don't press too hard or the chocolate seeps through the pretzel too much - just enough to look beautiful.&lt;br /&gt;5. Let cool and serve. &lt;br /&gt;&lt;br /&gt;That's it! I made the dough up to folding in the blueberries and then baked it in the morning.  By the time I was done with my shower the whole house smelled like fresh muffins and my kids thought I was a rock star mom! I didn't have the lemon on hand so I skipped it and it was great with the fresh blueberries we got on sale.  It made 20 medium size muffins for us but I also use paper so I don't have the tins to clean up.&lt;br /&gt;         &lt;span style="font-weight: bold;"&gt;&lt;br /&gt;&lt;/span&gt;Ingredients&lt;div id="recipe-ingredients"&gt;              &lt;p&gt;3 cups of all-purpose flour&lt;br /&gt;1 Tbsp baking powder&lt;br /&gt;1/2 teaspoon baking soda&lt;br /&gt;1/2 teaspoon salt&lt;br /&gt;10 Tbsp unsalted butter (1 1/4 stick), softened&lt;br /&gt;1 cup sugar&lt;br /&gt;2 large eggs&lt;br /&gt;1 1/2 cup plain yogurt&lt;br /&gt;1 teaspoon grated lemon peel&lt;br /&gt;1 1/2 cups blueberries&lt;br /&gt;1 Tbsp flour (if using defrosted frozen berries)&lt;/p&gt;         &lt;/div&gt;                           &lt;div id="recipe-method"&gt;          &lt;h3&gt;Method&lt;/h3&gt;          &lt;p&gt;&lt;b&gt;1&lt;/b&gt; Adjust the oven rack to the middle-lower part of the oven.  Preheat oven to 375°F.&lt;/p&gt;  &lt;p&gt;&lt;b&gt;2&lt;/b&gt; Whisk together the flour, baking powder, baking soda, and salt and set aside.&lt;/p&gt;  &lt;p&gt;&lt;b&gt;3&lt;/b&gt; In a large mixing bowl, cream butter and sugar together, beating until fluffy. Add eggs one at a time, beating until incorporated after each one. Beat in the grated lemon peel.&lt;/p&gt;  &lt;p&gt;&lt;b&gt;4&lt;/b&gt; Beat in one half of the dry ingredients until just incorporated. Beat in one third of the yogurt. Beat in half of the remaining dry ingredients. Beat in a second third of the yogurt. Beat in the remaining dry ingredients and then the remaining yogurt. Again be careful to beat until just incorporated. Do not over beat. Fold in the berries. If you are using frozen berries, defrost them first, drain the excess liquid, and then coat them in a light dusting of flour.&lt;/p&gt;  &lt;p&gt;&lt;b&gt;5&lt;/b&gt; Use a standard 12-muffin muffin pan. Coat each muffin cup lightly with olive oil or grapeseed oil using a pastry brush, or with a little butter. Or use one of those convenient vegetable oil sprays. Distribute the muffin dough equally among the cups. Bake until muffins are golden brown, about 25 to 30 minutes. Test with a long toothpick (we use a thin bamboo skewer) to make sure the center of the muffins are done. Set on wire rack to cool for 5 minutes. We've been making a version of this creamy bake for years now, although our version consists of kielbasa, an onion, chopped potatoes and a sweet potato in the over for 350 for an hour. Slice kielbasa sausage into rounds and mix them into the potatoes. Pour cream of chicken into a large mixing bowl with hot water, salt, and pepper. Stir with a wisk until cream of chicken is dissolved. Pour the mixture over the potatoes and sausage. Place in a shallow baking pan. Brown&lt;br /&gt;in oven 15 minutes. Set aside.&lt;/span&gt;&lt;/font&gt;&lt;/li&gt;&lt;li&gt;&lt;font size="2"&gt;Place an oven proof skillet or Dutch oven over medium heat and melt the butter. Add the potatoes and spread out in an even layer. Cover and cook for about 5 minutes. Season with garlic, paprika, salt and pepper; stir to coat potatoes evenly. &lt;/span&gt;&lt;/font&gt;&lt;/li&gt;&lt;li&gt;&lt;font size="2"&gt;&lt;span&gt; Cover and cook for another 15 minutes, turning potatoes occasionally. Remove cover, and mix in chives. Add flour to saucepan and cook 1 minute over medium heat, stirring constantly. Add drippings from pan and broth to saucepan, stirring constantly. Bring to a boil and cook until slightly thickened, 5 to 7 minutes. Stir in 1 teaspoon of the remaining sage and 1 tablespoons parsley.&lt;/li&gt;&lt;li&gt;&lt;b&gt;To serve:&lt;/b&gt; Arrange vegetables on platter with chicken. Sprinkle with remaining herbs. So the other night I had 6 chicken thighs and had no idea what to do with them.  My friend gave me the recipe on the phone and it sounded like something even I couldn't mess up.  So I tried it, served up some rice and a salad and my family all loved it.  I tossed the leftover rice in the sauce from the bottom of the pan and it made the best next day lunch ever.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;So Simple Chicken Thighs&lt;/span&gt;&lt;br /&gt;&lt;ul&gt;&lt;li&gt;6 chicken thighs&lt;br /&gt;&lt;/li&gt;&lt;li&gt;1/2 cup ketchup&lt;/li&gt;&lt;li&gt;1/4 cup water&lt;/li&gt;&lt;li&gt;1/4 cup packed brown sugar&lt;/li&gt;&lt;li&gt;1 (1 ounce) package dry onion soup mix&lt;/li&gt;&lt;/ul&gt;&lt;span&gt;Preheat oven to 350 degrees F (175 degrees C).&lt;/span&gt;&lt;span&gt;&lt;br /&gt;&lt;br /&gt;Place chicken pieces in a single layer in a baking dish.  I used a clay pie pan so the chicken fit fairly snug and covered it with foil.&lt;/span&gt;&lt;span&gt;&lt;br /&gt;&lt;br /&gt;In a medium bowl, combine the ketchup, water, brown sugar and dry soup mix. I usually don't have it in me to cook so we end up spending money and going out to eat or having what we call a 'scramble'.  A scramble is when we all grab leftovers or anything we can find and fend for ourselves.  That was until my girlfriend Rachel told me about her 'leftover soup'. &lt;br /&gt;&lt;span class="submitted"&gt;&lt;/span&gt;&lt;div class="content"&gt; &lt;div class="snap_preview"&gt;&lt;br /&gt;She uses the bits of meat and veggies that are left over from the week and throws them in the crock pot and Voila! Does it get much easier? She says that even left over brown gravy is good.&lt;br /&gt;&lt;p&gt;If you will be using a slow cooker, put all of your ingredients into it, then add water until it is 2/3 full. Cook on low for 5-6 hours and season about 30 minutes before serving.&lt;/p&gt; &lt;p&gt;You can cook it on the stove top as well for about an hour, but I like to dump it all in the crock pot and call it a day.  It makes making dinner easy and saves a ton of money as well. Cover and blend or process until smooth. Place &lt;/span&gt;&lt;span class="nlk"  style="font-size:85%;"&gt;bean puree&lt;/span&gt;&lt;span style="font-size:85%;"&gt; in pan used for cooking the pasta; bring to boiling. Return &lt;/span&gt;&lt;span class="nlk"  style="font-size:85%;"&gt;pasta&lt;/span&gt;&lt;span style="font-size:85%;"&gt; to pan. &lt;/span&gt;&lt;/p&gt;                       &lt;p&gt;&lt;span style="font-size:85%;"&gt;&lt;b&gt;3.&lt;/b&gt; Meanwhile, in a large skillet, cook &lt;/span&gt;&lt;span class="nlk"  style="font-size:85%;"&gt;garlic&lt;/span&gt;&lt;span style="font-size:85%;"&gt; in 1 tablespoon hot &lt;/span&gt;&lt;span class="nlk"  style="font-size:85%;"&gt;olive&lt;/span&gt;&lt;span style="font-size:85%;"&gt; oil for 1 minute. Add tomatoes; cook for 1 minute. Add the remaining &lt;/span&gt;&lt;span class="nlk"  style="font-size:85%;"&gt;beans&lt;/span&gt;&lt;span style="font-size:85%;"&gt;, shredded &lt;/span&gt;&lt;span class="nlk"  style="font-size:85%;"&gt;chicken&lt;/span&gt;&lt;span style="font-size:85%;"&gt;, snipped &lt;/span&gt;&lt;span class="nlk"  style="font-size:85%;"&gt;parsley&lt;/span&gt;&lt;span style="font-size:85%;"&gt;, pepper and &lt;/span&gt;&lt;span class="nlk"  style="font-size:85%;"&gt;salt&lt;/span&gt;&lt;span style="font-size:85%;"&gt;. Heat through. &lt;/span&gt;&lt;/p&gt;                       &lt;p&gt;&lt;span style="font-size:85%;"&gt;&lt;b&gt;4.&lt;/b&gt; Add the tomato mixture to hot pasta; toss to cost. It's quick, simple and makes burritos a little more interesting.&lt;br /&gt;&lt;br /&gt;4 Cups shredded cooked chicken (usually taken from a left over rotisserie chicken)&lt;br /&gt;1 Cup medium green tomatillo salsa, from the jar&lt;br /&gt;2 Cups shredded cheese, Mexican blends are the best&lt;br /&gt;8-10 8" flour tortillas&lt;br /&gt;2 10oz containers refrigerated alfredo sauce&lt;br /&gt;Shredded lettuce, avocado cubes, chopped tomatoes to top&lt;br /&gt;&lt;br /&gt;Preheat the oven to 375.&lt;br /&gt;&lt;br /&gt;Mix the chicken, salsa and 1/2 cup of the cheese.&lt;br /&gt;&lt;br /&gt;Spoon 1/2 to 3/4 cup down the center of the tortilla and roll like a burrito. I am a long time fan of Anne Byrne's "The Cake Mix Doctor" books, turning cake mixes into one of a kind creations.  I love to make cakes from scratch but, well you already know how busy I am.  Her baking recipes help me merge my need to bake with my lack of time.&lt;br /&gt;&lt;br /&gt;So when I first saw "The Dinner Doctor" I was excited.  Anne's recipes are simple, quick and the ingredients are not complicated.  Many of the ingredients are found in our pantry already or are easily attainable at the grocery store and involve very little prep time.  We buy the rotisserie chickens all the time but this book gave us so many great ideas to make countless numbers of delicious meals that we've already gotten our money's worth.&lt;br /&gt;&lt;br /&gt;This is not gourmet cooking.  This is real food for real families that thinks outside of the usual dinners we give our kids. That's right, I've taken over man's territory and I love it!&lt;br /&gt;&lt;br /&gt;Usually my husband does the grilling like it's some male ritual with fire.  Normally I'm just fine with him cooking on the grill because then I don't have to.  But a few weeks ago he broke his arm and had to have surgery (a metal plate and 5 screws).  In his recovery, I had to figure out how the lawn mower works.  It took my kids and me 1/2 hour just to get it started.   Then we were so excited that we gave each other high fives and let go of the handle and had to start it all over again.  Needless to say I have since hired an interim gardener.&lt;br /&gt;&lt;br /&gt;Having mastered the lawn mower and the art of delegation, I next decided that I was going to conquer the BBQ.  We have a gas grill.  I can figure this out, right? &lt;br /&gt;&lt;br /&gt;This experiment has turned out better than the lawn mower.  I still make the sides inside, but they usually are 20 minute quickies like rice and salad.&lt;br /&gt;&lt;br /&gt;Here are my simple tips for barbecuing  for the novice (please note, I know nothing about old fashioned grills, only gas).&lt;br /&gt;&lt;br /&gt;1. Marinate during the day.  In the morning I toss the meat or chicken into a storage size baggie and toss in some sauce.  Italian dressing works really nicely as does teriyaki sauce for both chicken or steak.  The baggies just gets tossed out and then there's no need to brush on extra sauce while cooking.  When I forget to marinate I don't worry about it.  My kids and I all like different dipping sauces that we put on our plates so it's like a custom meal.&lt;br /&gt;&lt;br /&gt;2. Pre-heat the grill.  I turn both sides on high for 5 minutes before I start grilling.  This ensures that my cooking times will be even on the top and the bottom.  I also use this time to clean off the grill from last night's dinner.  It's very efficient.&lt;br /&gt;&lt;br /&gt;3. Use different temperatures for each side.  The side I'm cooking on tends to be lower than the side I'm not using.  I do leave both on but the higher temperature of the non-cooking side tends to help cook my meat faster without the dangers of burning it over high flames.&lt;br /&gt;&lt;br /&gt;4. Get out your timers.  I don't stand by the grill enjoying a beer in the afternoon sun.  I get back inside and work on the rest of the dinner fixings to consolidate my time.  Therefore I tend to forget that there's something outside gilling (oops!) For a boneless anything, I go for 5 minutes a side on average (thin means 4 and thick means 6).  At the end of the 10 minutes, I press on the meat to test its' solidity.  If the chicken feels spongy, it's not done.  Wait until it is firm.  Same with steak, although fully firm means well and fully squishy means rare. &lt;br /&gt;&lt;br /&gt;5. Don't cut it right away.  Let your meat rest for 5 minutes once off of the grill so the juices can settle.  Your meal will be tastier and moister if you can show a little patience!&lt;br /&gt;&lt;br /&gt;Grilling really is about the easiest way to cook dinner. This will help you remember the odd items that come up (saran wrap gets me all the time) plus as you're doing your meal planning at the beginning of the week you can easily populate the items you need to make those dinners.&lt;br /&gt;&lt;br /&gt;Tip #3: Consolidate.  One grocery trip per week period.  Don't make life harder than it is.  When in doubt, refer to Tip #2 and be diligent with that.&lt;br /&gt;&lt;br /&gt;Tip #4: Get everyone else involved.  I have two children so they get to pick one meal every two weeks.  My daughter picks one week and then my son the next.  I find a day that looks good and ask for their choice ahead of time.  They get excited to for having dinner at home because it's their choice and I don't have to force anyone to eat anything.&lt;br /&gt;&lt;br /&gt;Tip #5: Get tech-y. Subscribe to blogs or websites that have great recipes emailed right to you each week.  I have been fortunate enough to subscribe to a program that helps me out tremendously.  Not only does it have a huge library of recipes to pick from, but it helps me put the recipes onto a list and then even makes a grocery list for me.  I don't know how I ever lived without it.  There are quite a few of these sites out there, but the one I use can be found &lt;a href="http://www.sendmerecipes.com/amember/go.php?r=1641" target="_blank" title="here" id="ciqy"&gt;here&lt;/a&gt;.&lt;br /&gt;&lt;br /&gt;Tip #6: Be flexible.  We're not perfect and even the best laid plans sometimes fall apart.  An occasional Pizza picked up in desperation is o.k..  We also have scramble nights when the plan has deteriorated and we get to just pick anything from the pantry we want - from a bowl of cereal to left over steak.
