<li class="ingredient">1 tbs extra vir­gin olive oil</li>
<li class="ingredient">1/3 cup of agave or honey</li>
<li class="ingredient">1 1/2 tbs of bal­samic vinegar</li>

<ol class="instructions">
<li>Bring large pot of water to boil and place whole cab­bage in the pot. Cover and let sim­mer for about 10 min­utes or until outer leaves eas­ily come off. After 10 min­utes, use a pair of tongs to remove as many of the soft­ened cab­bage leaves as you can until they start to show resis­tance. Place leaves aside and let the rest of the cab­bage con­tinue to sim­mer for another 10 min­utes. Con­tinue until you have desired num­ber of leaves (1 leaf can be split down the mid­dle to form two wraps).</li>
<li>While cab­bage is boil­ing, cook red quinoa accord­ing to direc­tions on the box. Once quinoa is close to being ready, place olive oil and shal­lots on small pan on medium to high heat and let sim­mer until shal­lots become translu­cent (about 5 min­utes). When quinoa is fin­ished cook­ing, mix in shal­lots and olive oil.</li>
<li>Place wraps on plate or cut­ting board and fill with a few crum­bles of soy cheese (about 2 tsps) and a spoon­ful of quinoa. Fill­ing should be placed closer to the bot­tom of the wrap for eas­ier rolling. Start­ing from the bot­tom, roll cab­bage into small wrap. In a small bowl, mix together agave or honey and bal­samic vine­gar and driz­zle on top of wrap (or on top of fill­ing if you prefer).</li>

				<content:encoded><![CDATA[<p>Quinoa, if you’ve never used it before, is a small circular grain. It is famous for it’s high protein content and it is also high in fibre. It is an ancient grain and is use is first use is attributed to the Incans of South America. You can actually find it in several different types (white, red, black) in some health food stores or <a title="buy quinoa" href="http://www.buyquinoahq.com" target="_blank">buy quinoa</a> straight off the shelf of the health food section in some grocery stores. My local one has it. Quinoa is gluten free and it is cooked like rice using an absorption method and can be eaten in many different ways. <span id="more-67"></span>It has a kind of nutty flavour, which I find is more pronounced in the red variety (I haven’t tried the black yet). AND it can be a substitute for some wheat things – like couscous or bulgar wheat – which is the way I first discovered it. I used to make a fantastic quinoa tabouleh.</p>
<p>SO, without further adue (drum roll pleeeaasse!):</p>
<h2>Quinoa Salad with Garlic and Lemon</h2>
<ul>
<li>1 cup quinoa</li>
<li>1/2 tsp salt</li>
<li>1 3/4 cup water</li>
<li>1/2 cup chopped celery</li>
<li>1/3 cup (or less) minced parsley</li>
<li>1/4 cup cashews or more</li>
</ul>
<h3>Dressing:</h3>
<ul>
<li>1 clove garlic, crushed</li>
<li>1/4 cup water</li>
<li>1/2 – 3/4 tsp citric acid</li>
<li>1/4 cup sunflower or canola oil</li>
<li>optional 1 tsp golden syrup</li>
</ul>
<h3>Method:</h3>
<ol>
<li>Rinse and drain quinoa. Stovetop: Place quinoa, salt and water in 2 litre pot. Bring to a boil, reduce heat, cover and simmer 15-20 minutes until all water is absorbed. Tilt the pan to make sure. Microwave: Place quinoa, salt and water in a 2 litre glass microwave safe vessel with a lid. Microwave on high approximately 8 minutes. When finished, microwave again on 50% power for approximately 10 minutes or till all water absorbed.</li>
<li>Stand, uncovered 5-10 minutes. Fluff with fork.</li>
<li>Put quinoa in a large bowl. Add celery, parsley, and nuts, mixing thoroughly.</li>
<li>Combine dressing ingredients. Pour over quinoa and toss well. Serve at room temperature or chilled.</li>
</ol>
<blockquote><p><span style="font-family: Georgia, 'Bitstream Charter', serif; line-height: 24px; font-size: 16px;"><strong>Notes:</strong> If you are not food chemical sensitive, replace 1/4 c water and the citric acid with 1/4 fresh lemon juice and the 1 tsp golden syrup with 1-2 Tbsp tamari (wheat free soy sauce). If you have nut allergies, omit cashews and replace with sunflower seeds (if you are not sensitive). It is worth noting that parsley does have some salicylates in it, so if you are very sensitive, reduce the amount in your salad.</span></p></blockquote>
<h3>Serving ideas:</h3>
<ul>
<li>straight up – as a salad</li>
<li>smear a wrap or tortilla (gluten free or flour if not gluten sensitive) with hummus, then top with quinoa salad and some iceberg lettuce, fold/roll up and enjoy</li>
<li>smear a Ryvita or similar ‘sandwich size’ cracker with hummus and top with the salad and some cheese if you’re not sensitive to amines.</li>
<li>use an iceberg lettuce leaf as a wrap and fill with the salad and some steamed chicken, wrap it up and enjoy</li>
</ul>

<p>Today i found some delicious quinoa recipe and it&#8217;s called: <strong>Quinoa Salad with Warm Shrimp &amp; Spinach</strong>. This weekend I go to taste him. For me as i&#8217;m on diet for now and must eat a lot of protein this salad exactly what i need.</p>

<li>2 scallions, chopped</li>
<li>1-2 c baby spinach</li>

<li class="ingredient">2 ½ cups vegetable stock</li>

<ol class="instructions">
<li>Wash the quinoa very well, scrubbing it between your hands and rinsing often<br />
until water comes out clear.</li>
<li>Place quinoa in a fine sieve colander and allow the water to drain well.</li>
<li>Heat a skillet over high heat until very hot. Add the quinoa and toast, stirring<br />
constantly, until quinoa turns golden and starts crackling, about 10 to 15 minutes.</li>
<li>Bring the vegetable stock to a boil in a separate pot.</li>
<li>Add the toasted quinoa and the nutmeg. Season with salt &amp; pepper and cover.<br />
Reduce heat and allow steaming for approximately 20 minutes.</li>
<li>While the quinoa is cooking, heat a skillet and add olive oil.</li>
<li>Add the zucchini and the garlic and cook, stirring often until zucchini is browned.</li>
<li>Add the curry and mix well.</li>
<li>Check your quinoa and add a little water if needed to continue cooking.</li>
<li>Place the cooked zucchini on top of the quinoa, without stirring and allow quinoa to finish cooking.</li>
<li>Mix the cooked quinoa with the zucchini and serve.</li>

<h3><span style="font-size: 23px; color: #000000; line-height: 35px;">Ingredients</span></h3>
<ul>
<li>1 cup organic quinoa, rinsed well (we used <a href="http://www.arrowheadmills.com/products/product.php?prod_id=393&amp;cat_id=229">Arrowhead Mills</a> brand from Wholefoods Store)</li>
<li>6  boneless, skinless chicken thighs (~ 2 lb)</li>
<li>1 medium onion, finely chopped</li>
<li>3 cups organic chicken broth</li>
<li>1/2 cup sweet peas, cooked</li>
<li>2 cloves garlic, finely chopped</li>
<li>3 tbsp extra virgin olive oil</li>
<li>1/2 tsp oregano</li>
<li>1 tsp dry parsley</li>
<li>1 tbsp white wine vinegar</li>
<li>2 tbsp tomato paste</li>
<li>Grated mozzarella or parmesan cheese, about 1/2 cup</li>
<li>salt and pepper to taste</li>
</ul>
<h3><span style="font-family: Georgia, 'Bitstream Charter', serif; line-height: 35px; font-size: 23px; color: #000000;">Method</span></h3>
<p>Wash chicken thoroughly and marinade with salt, black pepper, oregano, garlic, parsley and 1 tbsp of olive oil for about 30 minutes. Saute onion in 2 tbsp of olive oil on medium heat until soft, about 5 minutes. Add vinegar and tomato paste, mix well and saute for another 2 minutes. Add marinated chicken to the mix and cook covered for 25 minutes or until chicken is no longer pink inside. Turn the chicken pieces occasionally to coat them with the sauce. Add chicken broth and stir in quinoa and stir, reduce the heat and cook uncovered for 15 minutes. Before serving, garnish with peas and cheese. Let it sit a while for excess liquid to be absorbed.</p>
