&lt;br /&gt;
Here's an &lt;strong&gt;easy barbecued salmon recipe&lt;/strong&gt; that is very simple to prepare and would be perfect as a main dish for this weekend's cookout!&lt;br /&gt;
&lt;br /&gt;
Ingredients:&lt;br /&gt;
&lt;br /&gt;
(4-6) lbs. of salmon, head &amp; tail removed&lt;br /&gt;
(3)   tablespoons of melted margarine&lt;br /&gt;
(3/4) cup of melted butter&lt;br /&gt;
(2)   minced garlic cloves&lt;br /&gt;
(1.5) tablespoons of soy sauce&lt;br /&gt;
(1.5) tablespoons of dry mustard&lt;br /&gt;
(1/3) cup of sherry&lt;br /&gt;
(3)   tablespoons of ketchup&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
Preparation:&lt;br /&gt;
&lt;br /&gt;
* Rinse fish and pat dry.&lt;br /&gt;
* Lay out salmon, skin side down, on heavy foil - cut the foil to match the outline of the salmon.&lt;br /&gt;
* Place the salmon on the grill, and brush generously with the melted margarine. Close the lid of the grill.&lt;br /&gt;
* Mix together the melted butter, garlic cloves, soy sauce, dry mustard, sherry and ketchup - this is the serving sauce for the barbecued salmon. Keep warm (on the grill if preferred).&lt;br /&gt;
* Check salmon after 30 minutes of grilling by flaking with a fork.&lt;br /&gt;
* Serve barbecued salmon with the serving sauce.&lt;br /&gt;

Bring to a boil, then simmer over medium heat for 5 minutes or until slightly thickened, stirring occaisionally.&lt;br /&gt;* Strain, then discard ginger root. Let the mixture cool.&lt;br /&gt;* Brush both sides of each salmon fillet with soy mixture, then place fillets on a rack coated with cooking spray. Place rack on broiler pan and broil 3 minutes. Turn over, baste, and broil an additional 2 minutes or until the salmon flakes easily. It's perfect as a main dish for tonight's dinner!.&lt;br /&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;&lt;br /&gt;(1) egg, beaten&lt;br /&gt;(1/4) cup of finely chopped onion&lt;br /&gt;(2) tablespoons of fine, dry bread crumbs &lt;br /&gt;(1) 6.75 ounces canned skinless, boneless salmon (canned salmon preferred, or tuna if necessary), drained&lt;br /&gt;(1) cup of fresh or frozen peas&lt;br /&gt;(2) tablespoons of water&lt;br /&gt;(1/4) cup of plain low fat yogurt&lt;br /&gt;(2) teaspoons of cornstarch&lt;br /&gt;(1/2) teaspoon of instant chicken bouillon granules&lt;br /&gt;(1/2) teaspoon of finely shredded lemon peel&lt;br /&gt;(1/3) cup of skim milk &lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Preparation:&lt;br /&gt;&lt;br /&gt;* Stir together the egg, onion and bread crumbs in a medium mixing bowl. Add in the salmon (or tuna) and mix well.&lt;br /&gt;* Divide the mixture into three 6-ounce custard cups. Press the mixture into the bottom, and 1.5 inches up the sides, of the cups and set aside.&lt;br /&gt;* Combine peas and water in a 1-quart casserole dish. Cook on high, covered, for 3-5 minutes or until tender - stirring once. Drain into a strainer and set aside.&lt;br /&gt;* In the now empty casserole dish, stir together the yogurt, cornstarch, bouillon granules and lemon peel - then stir in the milk all at once.&lt;br /&gt;* Cook, uncovered, on high for 2-5 minutes or until thickened and bubbly, stirring after 1 minute then every 30 seconds. Drain and set aside&lt;br /&gt;* Combine salmon, yogurt, cucumber, carrot, mayo(or salad dressing), dillweed, 1/4 tsp. salt &amp; 1/8 tsp. pepper - toss with the pasta - cover and chill a minimum of 4 hours.&lt;br /&gt;* For tomato cups, cut out 1/2 inch of the core of each tomato. Invert and cut from top to (but not quite through)the stem end, making a total of 6 wedges.&lt;br /&gt;* To serve, place the tomatoes on plates(4). I&lt;br /&gt;make this recipe at least twice per month.&lt;br /&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;&lt;br /&gt;(4)   4-ounce fresh or frozen salmon steaks, 3/4 inch thick&lt;br /&gt;(1)   cup chicken broth&lt;br /&gt;(1/4) cup dry white wine&lt;br /&gt;(4)   lemon slices&lt;br /&gt;(2)   tablespoons of water      &lt;br /&gt;(2)   teaspoons of cornstarch&lt;br /&gt;(2)   teaspoons of drained capers&lt;br /&gt;(2)   cups of shredded zucchini&lt;br /&gt;dash of pepper&lt;br /&gt;&lt;br /&gt;Preparation:&lt;br /&gt;&lt;br /&gt;*  Thaw salmon - rinse and pat dry with paper towels&lt;br /&gt;*  In a 10-inch skillet, combine chicken broth, wine and pepper.  Bring to a boil, then reduce heat.  Place salmon in the skillet, then place lemon slices on top of the salmon&lt;br /&gt;*  Cover, then simmer for 8-12 minutes or until the salmon flakes easily when fork-tested.  Remove salmon and lemon.  Keep the salmon warm and discard the lemon&lt;br /&gt;*  Gently boil the broth mixture, uncovered, for approx. 2 minutes until reduced to 3/4 of a cup&lt;br /&gt;*  Combine water and cornstarch, then stir into the broth mixture&lt;br /&gt;*  Stir in the capers, then cook and stir until thickened and bubbly - then cook and stir an additional minute&lt;br /&gt;*  Divide zucchini evenly onto 4 plates, then place salmon atop the zucchini&lt;br /&gt;*  Spoon broth sauce over the salmon&lt;br /&gt;&lt;br /&gt;Serves 4 - enjoy!
