<p>If you have a curious soul like me, youre always planning your next trip as soon as you are back from one. I have a massive list of bucket list destinations that I want to visit and I am collecting tips from social media and friends, in readiness. The top destinations that I want to visit are Peru, South Korea, Taiwan, China and Vietnam. Of course, the main reason that these are my top choices is because of their food, history and culture.</p>



<p>South Korea is now moving to the top of the list as I have been caught up with the Korea Wave. After watching so many KDramas, all the BTS shows and not forgetting Culinary Class Wars, this has led to an ever-growing list of places to see and dishes to taste.</p>



<p>The travel bug, once bitten, is hard to ignore. There is an enormous thrill in visiting a new city, seeing famous landmarks or exploring fascinating historical and cultural sites.</p>



<p>It does cost a lot to be perpetually travelling. For many Brits, this has not deterred us from travelling. The demand for trips has not reduced despite rising holiday costs. Brits are <a href="https://www.ft.com/content/ac74fd00-07d4-4e2b-964d-cce09f5e6550" target="_blank" rel="noopener">still spending on their escape to the sun</a>, their weekend city breaks and dream destinations. There are of course ways to book smarter and practical ways you can stretch your budget and cut travel costs.</p>



<h3 class="wp-block-heading">Smarter Booking Tips</h3>



<p>The most expensive part of any trip is the accommodation and flights. If you don&#8217;t book package tours and like to tailor your own trips, use these booking tips to make your budget stretch further. </p>



<p>Booking hotels and flights early is one of the most obvious tips. If you don&#8217;t plan that far ahead and can&#8217;t do that, you can try this tip that has been much touted all over social media. Change your IP address to that of another country by using a VPN, as the cost of flights changes depending on where you book it from. VPNs allow you to spoof connectivity from another location, adding protection to your browsing and allowing you to circumvent regional data blocks or pricing systems. With a <a href="https://protonvpn.com/free-vpn/windows" target="_blank" rel="noopener">free VPN for PC</a>, you could find cheaper deals for flights and accommodation, even if just for preventing sites from dropping cookies on your local browser and charging you extra when you return to the site.</p>



<p>We&#8217;ve all experienced this when researching prices for flights and find that the price has gone up after we return to the booking site the next day. If you have not been cookied while browsing, the site won&#8217;t know that you were there before. </p>



<p>Flying midweek, on a Tuesday or Wednesday, can be significantly cheaper than weekends. Also,  check smaller regional airports nearby, even if you might need a short train ride to get there, the cheaper flights often outweigh the transit cost.</p>

<p>If you can avoid travelling during school holidays or peak season, you will be able to travel for less. Flights and accommodation will be cheaper and more easily available in these off peak times. </p>



<h3 class="wp-block-heading">Try &#8220;Coolcations&#8221; and Underrated Hubs</h3>



<p>Another way is to avoid the over-touristed destinations like Barcelona, Venice and Dubrovnik. Try other places like Ghent, Ljubljana or Ksamil in Albania as alternative up and coming destinations. </p>



<p>Also look at &#8220;longer short-haul&#8221; destinations like Egypt, Portugal or Poland. Not only is the cost of living lower, but these &#8220;coolcations&#8221; (colder or temperate climates) are trending as more affordable alternatives to the sweltering and more popular Mediterranean.</p>



<h3 class="wp-block-heading">Packing Tips for budget travel</h3>



<p>Airlines have become stricter with baggage allowances and fees. If you are good at packing light and can travel with only carry-on luggage, you save on paying extra baggage charges. This means limiting your packing to small-sized luggage that will fit all you need for your trip. I have only managed this once on a 2 week trip in the summer, so packing lightweight clothes made it easier to travel light. </p>



<p>The heaviest things are usually toiletries, so decant your stuff into travel-sized bottles. Don’t bother packing travel aids like a pillow or eye-masks, just use your existing clothing, and maybe bring a pillowcase to stuff them in. You could also use compression packing cubes to reduce the volume of your luggage, freeing space for more stuff. I like to wear utility trousers and jackets with lots of pockets too. </p>



<h3 class="wp-block-heading">Leverage &#8220;Stopover Programs&#8221;</h3>



<p>Many airlines, like Icelandair, Qatar or Singapore Airlines offer free or very cheap stopovers with airport transfers or free hotels. This allows you to visit two countries for the price of one flight. It’s the ultimate &#8220;two-for-one&#8221; deal for long-haul travelers. </p>



<h3 class="wp-block-heading">Travel spending tips</h3>



<p>When abroad, it can be hard to control and keep track of your spending. Create a separate digital wallet using an alternative online banking app, and load it up with your maximum allowed spend. I use a Wise card, which lets you have multiple wallets in different currencies. You transfer a fixed amount and using this reduces the risk of card fraud too. This way, you can avoid paying ridiculous ATM charges and unfavourable exchange rates. </p>



<p>This way, you can keep your spending to a fixed budget. You load just what you need each day, to be even more militant with your money. Using public transport instead of ride shares or taxis will save you a lot of money on travel in your destination.</p>



<p>Instead of paying for guided tours, find out about free walking tours in the cities you are visiting. Lots of places have free or reduced entry to museums and attractions on certain days, so do some research and plan ahead.</p>



<h3 class="wp-block-heading">Eating out when travelling</h3>

If tasting local food is an important part of all your trips, like it is for me, you can eat well on a budget too. Avoid restaurants with tourist menus. It doesn&#8217;t mean just eating at fast food places or packing your own sandwiches. Checking out food markets (especially in Europe) or street food stalls instead of restaurants and local eateries can give you the same experience without the added costs and a lot more fun. Sometimes, food tours are the best way to try the best local dishes with a guide. </p>

<h2 class="wp-block-heading">How to make Brown Butter Chocolate Chip cookies</h2>

<p>For this recipe, I used 2 types of Guittard Chocolate chips. They use ethically sourced cacao, which provides a superior, rich, and balanced flavour. <a href="https://www.thechocolateprofessor.com/blog/best-chocolate-for-chocolate-chip-cookies" target="_blank" rel="noopener">Amy Guittard</a>, the great-great-granddaughter of the founder recommends using chips instead of chocolate chunks and wafers in cookies as they have less cocoa butter. Their chips, chunks and wafers are designed to melt in the cookies and provides a structure to the finished cookie. Guittard chocolate is available in the UK it is currently stocked by Ocado, Whole Foods, Lakeland, Sous Chef and M&amp;S.</p>



<p>This brownie recipe is very easy, very forgiving, even for beginner and occasional bakers like me. This recipe makes some very rich and chocolatey brownies. And if you can eat more than one square at a time, you are a bigger chocoholic than me. The best time to eat them is a few minutes after they come out of the oven, when it is still warm and the chocolate bits are still melty. </p>

<h3 class="wp-block-heading">How to make these triple chocolate brownies</h3>



<p>Firstly, make sure you use good chocolate as you will taste it in the end product. I used Guittard chocolate chips as I had some to use up. You can use blocks of cooking chocolate if that is easier to get hold of. I prefer to use high percentage plain chocolate (over 60%). You can always use a mix of milk chocolate chips and dark chocolate chips. You can adjust the sweetness with the amount of sugar  you add to the recipe. I tend to reduce the sugar in my recipes. </p>

<h3 class="wp-block-heading">Making the brown butter</h3>



<p>The first step is to make brown butter, which is basically melting butter and going past the melted stage and heating it until the remaining milk solids turn nutty and golden brown.<br>You need to start this on medium heat and heat until the milk solids separate, continuously stirring. It will aslo foam and you won&#8217;t be able. Watch it carefully as it goes from golden to burnt quite quickly. You need to use your nose as the smell changes when it reaches the brown butter stage.</p>

<p>When ready set aside in a large bowl to cool down.<br>Then stir in the sugars. Add the eggs one at a time, whisking until smooth and combined. (I used 3 eggs and no separate egg yolks as I don&#8217;t want to separate eggs and throw away the whites). Add in the vanilla.</p>

<p>In a separate bowl, mix together the flour, baking powder and baking soda. Stir well. Then add in the melted butter. Mix well until it is evenly combined.</p>



<p>Add the chocolate chips and mix until evenly distributed. Cover the dough with clingfilm and chill in the fridge for about 4 hours or until the dough is firm but not rock solid.</p>

<p>Before baking, preheat the oven to 180C (170C fan) and line two baking sheets with parchment paper. As you scoop out the cookie dough, the oven has tome to get to the right temperature.</p>



<p>Using an ice cream scoop or a spoon, places the dough balls on the baking sheet, spread apart. They will melt and spread as it bakes.</p>

<p>Bake in the preheated oven for about 16-18 minutes or until golden brown at the edges but still a little paler and soft in the middle. This amount of cookie dough makes about 27 palm-sized cookies. I baked them in 3 batches of 9.</p>



<p>Once the cookies have been baked, leave to cool on the baking sheets for about 5 minutes and then transfer to a wire rack to cool completely.</p>



<p>These chocolate chip cookies can be kept in an airtight container for up to 5 days. They are best eaten warm out of the oven and best within 2 days.</p>

<p>Note: Don&#8217;t over bake it as the cookies will get very crunchy instead of chewy. My first batch was nice and crispy outside, chewy inside. The second batch was left in for 2 minutes longer and came out nicely brown but after cooling, it got quite hard. So set a timer and don&#8217;t over bake.</p>



<p>Edd&#8217;s tip to get ripple effect and texture on the cookies. (I tried it but I didn&#8217;t see much difference.) After baking for 10 minutes remove the tray from the oven and firm bang on the work surface to collapse the cookie.</p>

This amount of cookie dough makes about about 27 palm sized cookies. I baked them in 3 batches of 9.</div></li><li id="wprm-recipe-24436-step-1-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Once the cookies have been baked, leave to cool on the baking sheets for about 5 minutes and then transfer to a wire rack to cool completely. These chocolate chip cookies can be kept in an airtight container for up to 5 days. They are best eaten warm out of the oven and best within 2 days.</span></div></li></ul></div></div>

<p>As an alternative to the standard baked potato, try this Hasselback Potato with a twist. It will look really&nbsp;impressive if you are making this for friends. My dinosaur-loving nephew loves it as he says it looks like something-saurus.</p>



<p>You can make it plain and unadorned or you can pile on any filling or topping that you fancy. It is infinitely versatile and very easy. Just leave it to bake in the oven and go off and do something else. Make a few at a time and have them later.</p>



<h3 class="wp-block-heading">How to make Hasselback potatoes</h3>



<p>First, you need to prepare the potatoes, wash and dry them and cut slices like this. Use a wooden spoon or another kitchen implement to make sure that you don&#8217;t cut all the way through. Preheat the oven to 210 °C or Gas Mark 7.</p>

<p>Bake it at 210 °C for an hour. Check on it as different oven cook at different rates. If you are using an air fryer, you need to bake it for just 45 minutes and you get a much crispier result.</p>



<p>Once the potato has achieved its ideal golden brown colour, sprinkle the grated cheese liberally over the top. And bake for another 10 minutes until the cheese melts. In an airfryer, try 5 minutes. </p>



<p>Meanwhile, fry some bacon in a pan or use the air fryer. Fry for a few minutes until brown and crispy, then crumble. Set aside. </p>



<p>When the cheese has melted, sprinkle the bacon bits and if you like some garnish, some spring onions. </p>

<p>You can pimp this up with other flavours like a dash of Worcestershire sauce, chilli jam or your favourite hot sauce. You can also top it with baked beans or your favourite baked potato topping. </p>

<p>In this recipe, I used regular baking potatoes. You can use Maris Piper or any other. You can even make this with sweet potatoes too. </p>

If you use new potatoes, just use some rapeseed oil or butter to roast them. They will only need about 30 -40 minutes. You can do them in the bottom of a BBQ too.</div>

<p>Family travel can be fun and stress free and today, multi generation trips are getting more common. In our family, we often take family trips with my mum and my brother&#8217;s family. With a set of triplets and a toddler under 4, any trip can be an expedition. Whether you are dreaming of sun-soaked beaches, city adventures or long road trips through the countryside, travelling with little ones is one of the most rewarding things a family can do together. Every new sight, smell, and experience becomes a shared memory that deepens your bond in ways that everyday life simply cannot. Travelling with grandparents is great as there are more adults around to help out and help the kids to bond.</p>



<p>That said, travelling with children from babyhood through the toddler years does require a little extra planning. Here is what you need to know to make your family trip smooth, safe, and genuinely enjoyable.</p>



<h2 class="wp-block-heading">Plan Around Their Rhythms, Not Just Your Itinerary</h2>



<p>The most common mistake new travelling parents make is trying to fit children into an adult travel schedule. Babies and toddlers thrive on routine, and while travel will naturally disrupt that, working <em>with</em> their natural rhythms rather than against them makes a significant difference.</p>



<p>Book flights during nap times or bedtime when possible. On road trips, time your longer stretches for when little ones are most likely to sleep. Build in buffer time between activities, toddlers move at their own pace, and a rushed schedule quickly leads to meltdowns. Think of your itinerary as a loose guide rather than a rigid plan, and resist the urge to overpack your days.</p>



<h2 class="wp-block-heading">What to Bring: Packing Smart for Little Ones</h2>



<p>Packing for children can feel overwhelming, but the key is to bring versatile items and resist the urge to over-pack. For babies, essentials include nappies, a portable changing mat, a compact baby carrier or travel pushchair, and enough food for the trip.</p>



<p>For toddlers, always pack their favourite stuffed toy or blanket. A small backpack or ride on Trunki they can carry themselves gets them involved and keeps snacks and a change of clothes within easy reach.</p>



<h2 class="wp-block-heading">Flying with Babies and Toddlers</h2>

<p>When I travel with my family with lots of toddlers under 4, there are lots of moving parts. We had it &#8220;easy&#8221; as we had 4 adults to 4 kids. So there were enough hands and laps to deal with the kids. During the flight, toddlers probably won&#8217;t sit in their own seats. Our gang wanted to sit with the grown-ups and move around a lot. We had lots of snacks and little toys for distractions. Anytime one was about to cry, we had to use any trick to divert and distract. This surprisingly worked really well. Luckily, our flight was tantrum free. We could have been the family from hell.</p>



<p>Airlines are generally more family-friendly than many parents expect. Most major carriers allow you to breastfeed or bottle-feed on board without any issues, and cabin crew are usually happy to help with warm water, ice packs, or a little extra space. When it comes to bringing formula or breast milk through security, the TSA treats these as <a href="https://www.todaysparent.com/baby/baby-food/can-you-take-baby-food-on-a-plane/" target="_blank" rel="noopener">considered medically necessary</a> liquids, so they are exempt from the standard liquid restrictions. You can pack as much as your baby needs in both carry-on and checked luggage.</p>



<p>Ear pressure during take-off and landing can be uncomfortable for babies. Nursing, offering a dummy, or giving a bottle during these moments, encourages swallowing, which helps equalise the pressure. For toddlers, some sweets or snacks will do the same trick.</p>



<h2 class="wp-block-heading">Feeding on the Go: Keeping Little Tummies Happy</h2>



<p>Feeding is one of the biggest practical concerns for travelling parents and with good reason. Unfamiliar environments, disrupted routines, and different water supplies can all affect your child&#8217;s tummy.</p>



<p>For breastfeeding mothers, travelling actually simplifies feeding considerably, no equipment to carry or sterilise, and milk is always at the right temperature. For formula-fed babies, use clean boiled or bottled water to prepare feeds. Get rid of any prepared formula that has been left at room temperature for more than an hour.</p>



<p>Store breast milk in insulated cooler bags with ice packs to keep it below 4°C, which is safe for up to 24 hours. Powdered formula can be stored conveniently in its original container or pre-measured into a formula dispenser for easy preparation on the go.</p>



<p>If you&#8217;re using formula for babies, always mix it with clean, boiled water. It&#8217;s also worth knowing that some cow&#8217;s milk-based formulas have been linked to a serious intestinal condition called necrotising enterocolitis (NEC). The Enfamil and <a href="https://www.torhoermanlaw.com/toxic-baby-formula-nec-lawsuit/similac-lawsuit/" target="_blank" rel="noopener">Similac lawsuit</a> claims shed light on the manufacturer&#8217;s failure to inform parents about the dangers</p>



<p>For toddlers, stick to familiar foods during the trip rather than experimenting with anything new. Save the culinary adventures for when you&#8217;re back home, in case of any allergic reactions or stomach upsets. Some travel snacks ideas include soft banana slices, cheese sticks, yoghurt pouches and rice cakes, which are easy to pack.</p>



<h2 class="wp-block-heading">Hygiene on the Road</h2>



<p>Young children are more susceptible to illness from bacteria in unfamiliar environments, so maintaining hygiene standards while travelling is important, even when it requires a little extra effort.</p>



<p>Carry travel-sized wet wipes and hand sanitiser and use it consistently before feeding or preparing food. Bring a portable UV steriliser or sterilising tablets for bottles, teats, and sippy cups. Wipe down surfaces like aircraft tray tables and highchair straps with antibacterial wipes before your child touches them. Never dry bottles or feeding equipment on shared hand towels, lay them on a clean paper towel to air-dry instead.</p>



<p>If your toddler is at the stage of touching everything in sight (and putting it in their mouth), a pack of antibacterial wipes will be your best travel companion.</p>



<h2 class="wp-block-heading">Accommodation: What to Look For</h2>



<p>When booking accommodation with young children, prioritise practicality alongside comfort. Look for places that offer travel cots, but always check in advance, as availability is not always guaranteed and quality varies. Apartments or family rooms with a separate sleeping area give children somewhere to settle at bedtime without completely ending the adults&#8217; evening.</p>



<p>When we booked hotels, using the top-tier hotel status, we booked 2 rooms and got upgraded to the biggest family suite with 3 bedrooms, a large sitting room for the family to congregate and loads of room for the toddlers to run havoc. A suite or a small apartment is better than individual hotel rooms, is great as there is a lot of chance to hang out together and still have your own bedrooms to retreat to for some peace.  </p>



<p>Access to a fridge is invaluable for storing breast milk, formula, and fresh snacks. Ground-floor or lift-accessible rooms make navigating with a pushchair far less stressful. And if possible, choosing accommodation in a quieter area means less stimulation at bedtime and easier settling for tired little ones.</p>



<h2 class="wp-block-heading">Managing Jet Lag and Time Zones</h2>

<p>Toddlers have a notoriously low tolerance for waiting around, and travel involves a lot of it. The secret is variety, rotate activities and snacks regularly to keep things interesting. <h3 class="wp-block-heading">Les 2 Alpes Ski Terrain: Pistes, Parks &amp; Off-Piste Guide</h3>



<p>Les Deux Alpes has about 220km of ski runs with a vertical drop of 2300m. With a variety of easy cruising blues, technical reds, tricky blacks and a lot of off-piste skiing available, you can spend a week and not get bored skiing the same runs.</p>



<p>We skied at Les 2 Alpes in early December and were very lucky with the snow, as they just had a couple of weeks of snowfall. We arrived at the village to be greeted by 5 feet tall snow drifts along the roads and icy, slippery pavements.&nbsp;</p>



<p>Our first morning was foggy, visibility hampered by drifting snowflakes. As it was still early season, not all the lifts were in operation, so there were long queues for the ones that were.&nbsp;Our fabulous multi-lingual ski guide, Ginaluca, took us on the least busy route, which did not involve going straight to the top to avoid altitude sickness. </p>



<p>We took a chair lift and 2 cable cars to get to the top, above the clouds. As we got out, the sky had cleared and all you could see was the panoramic snow-covered mountains against a brilliant blue sky and the glistening, brilliant white snow. If you are a skiing junkie, you will know what a thrill this is.</p>



<p>With almost perfect ski conditions, we made the most of the first morning, finding our ski legs on a few blues and reds until it was time for lunch.</p>



<p>Our group was quite evenly matched and our Italian ski guide Gianluca did more guiding than teaching. He did try to help me get rid of some bad ski habits that I have picked up over the years.</p>

<p>Since 2020, there has been a lot of changes to the ski lifts and infrastructure when the SATA lift company took over. The Vallée Blanche chairlift has been replaced by a télémix which take skiers to 2,100m. The Super Venosc gondola has also been updated.  </p>



<p>The Diable chairlift has been replaced by a superfast 6-seat chairlift and this is the lift that takes you up to 2,410m in about 5 minutes. With this extra capacity, the queues were quite short. We did not have to wait for more than a few minutes to get on. </p>



<p>There will be a faster cable car replacing the current Jandry Express. This will take you from the village to the top in 15 minutes instead of the 40 minutes with the current old one. </p>



<p>Good news for beginners, not all the easy blue slopes are at the bottom. At the very top, you have a choice of cruisy blue runs, some red runs and off-piste choices too.</p>



<p>Snowparks can be found a bit further down in Vallee Blanche and there is a mix of skiers and snowboarders on the slopes. </p>

<p>There are mountain huts galore on the slopes and a fabulous choice of bars and restaurants around the resort. Here is a selection to try, where they serve great local cuisine like tartiflette (melting oozy Reblochon with potatoes and bacon) to fancy pasta dishes. </p>



<p><a href="https://www.lediableaucoeur.com/en/" data-type="URL" data-id="https://www.lediableaucoeur.com/en/" target="_blank" rel="noreferrer noopener">Restaurant Le Diable au cœur </a>(Ugo Mounier) This is a very stylish Alpine restaurant on the slopes that serves a bistro menu that features local Oisan products. The food is hearty and delicious and best of all, it is accessible to non-skiers too.</p>



<p><a href="https://www.hotel-cotebrune.fr/en/chambres-hotel-cote-brune-2-alpes/" data-type="URL" data-id="https://www.hotel-cotebrune.fr/en/chambres-hotel-cote-brune-2-alpes/" target="_blank" rel="noopener">Restaurant Le Côte Brune</a> is the restaurant in a very popular hotel, at the bottom of the slopes and very convenient for the ski lifts too. They serve a variety of alpine dishes with a regularly changing menu on their blackboard. It&#8217;s obviously a local favourite as the ski instructors seem to have a regular table here. For apres ski, their distinctive Umbrella bar is a very popular hub. It is busy in the summer too. The adjoining hotel and spa have been renovated and exude alpine charm with wood cabin decor, open fires, fur throws, the lot. </p>



<p><a href="https://www.facebook.com/profile.php?id=100067801759949" data-type="URL" data-id="https://www.facebook.com/profile.php?id=100067801759949" target="_blank" rel="noreferrer noopener">Bar tapas “Chez nous 2&#8243; </a>is an unlikely tapas bar, run by two sisters, Ophélie and Sophiem from the pays Basque, southwest of France. They are very popular for cocktails, local beers and a fab selection of bar snacks and tapas. </p>



<p><a href="https://www.facebook.com/profile.php?id=100039866598777" data-type="URL" data-id="https://www.facebook.com/profile.php?id=100039866598777" target="_blank" rel="noreferrer noopener">Restaurant Le Raisin d’Ours</a> is a well-established restaurant in Les Deux Alpes. There is a very comprehensive menu of local French favourites. Start off with a charcuterie board of local cured meats and cheeses. Be warned that the main courses are really massive.</p>



<p>For fine dining, try Chalet Mounier or something more casual, Crepes a Gogo, housed in the oldest building on the main stretch.</p>



<p>For bars and nightlife, there are quite a few bars and pubs scattered around the village. Apres ski is quite lively and during the Rise festival, everywhere was buzzing.</p>

<h3 class="wp-block-heading">Other non-snow related activities in Les Deux Alpes </h3>



<p>There are several spas in town that is great for soothing those ski-weary muscles. We went to the SPA Chamois Lodge along the main drag. The spa has 2 big hot tubs, one outdoor, a sauna and a steam room. Spend an hour here after a day on the slopes and you&#8217;d feel all set to tackle the black runs again the next day.</p>

<p>The best airport to fly to is Grenoble, with regular flights throughout the ski season. There are regular transfers from Grenoble to Les 2 Alpes or you can drive, which takes about 2 hours. About 120km. </p>



<p>Alternatively, you can fly to Geneva (220km), but it is a much longer transfer. By taxi, it will take about 4 hours and costs about €500. As a ski resort, the transfer from the airport to resort is much easier and shorter than from <a href="https://alpinefleet.com/destinations/chamonix/" target="_blank" rel="noopener">Chamonix to Geneva.</a> </p>

Although it calls itself a hostel, it is more like a nice ski hotel with the amenities. Besides dorm rooms, they have family rooms and regular double rooms too. My spacious double room had a very comfortable bed, TV, desk, a shower room with a big balcony and a sun terrace. The rooms have great views of the snowy mountains. You also have free access to the sauna and steam room facilities too. </p>



<p>The new refurbishment last year makes this seem more like a hotel than a hostel. There is a restaurant in the hotel which has an unexpectedly wide selection of dishes and they cater for vegans and vegetarians too. The breakfast buffet has a wide selection of choices or both hot and cold food. </p>

<p>Some say that this was originally a French recipe made with chicken and onions. It was first recorded in the 16th century with the first printed recipe dating back to 1598. <a href="https://en.wikipedia.org/wiki/Isabella_Beeton" target="_blank" rel="noopener">Mrs Beeton </a>had a version of this recipe in her cookbook that was thickened with porridge oats. Nowadays, it is often served as one of the courses for Burns Night Supper. </p>



<p>The original soup was a light consommé with a little bit of meat and vegetables. Barley or rice was added to make it more hearty. Unusually, it also had the addition of prunes. Today, this soup has more added vegetables and chicken.</p>

<p>You just need a handful of ingredients, chicken, leeks, peppercorns, barley or rice and prunes. I omitted prunes from my recipe. This recipe is designed to serve approximately six people. </p>



<p>This warming and comforting Scottish cock-a-leekie soup is very simple to make, and you can add more vegetables or other ingredients to make it a more substantial soup as you like. With only a few ingredients, slow-cooked for maximum extraction of nutrients. Unusually, the addition of prunes add a bit of sweetness to the finished soup.</p>



<p>You need to start with a big pot or slow cooker that will fit a whole chicken. Place the chicken and add enough stock or water to cover. If you are using rice or barley, you can add it to the pot at this stage and slow cooking it will thicken the soup. </p>



<p>You can add bay leaves if you like and bring to the boil on a high heat. If you are using a slow cooker, turn it to high. But if using a slow cooker, don&#8217;t keep opening the lid as this lengthens the cook time.<br></p>



<p>Cover and simmer for 1 1/2 hours or 2 &#8211; 3 hours in the slow cooker. Remove the chicken from the soup and check the juices run clear with no trace of pink when the thickest part of the leg, between the drumstick and the thigh, is pierced with a skewer (if not, cook for a little longer).<br></p>



<p>Add the leeks and carrots and prunes, if using, to the soup. The prunes will add a little sweetness to the soup. Bring to the boil again, then cover and cook for 20 minutes, or until the vegetables are tender. In the slow cooker, cook for another hour on high. By this stage, the leek will have melted into the soup, making it thicker. </p>

<p>Seattle was not the top of my list of cities to visit in the US, but I had an executive board meeting there. As per usual, I arranged to stay a few days and spend some time exploring Seattle.</p>



<p>My friends who lived there seemed to spend a lot of time <a href="https://www.eatcookexplore.com/easy-tandoori-salmon-recipe/" data-type="post" data-id="15017">salmon</a> fishing, especially King Salmon. They had freezers full of this fish. They lived on a houseboat (like in When Harry Met Sally) and had a very laid-back lifestyle. They suggested that I meet them at Wild Ginger, which at the time was in Pike Place Market. This Asian restaurant now has several outlets around Seattle.</p>



<p>It was one of the places I had on my list to visit, after my stop in the original Starbucks shop to buy some coffee beans. Seattle itself is not that big. I spent just one afternoon walking around &#8220;downtown&#8221;. But since my visit, a lot has changed, and I met a lovely chef at a press event who told me that he harvested wild rice by canoe for his restaurant and worked with indigenous farmers for produce.</p>
