This is a great family friendly recipe that uses Quinoa which is a protein rich seed in place of white rice. It is also gluten-free and dairy-free. If you are vegan you could use flax as a replacement for the eggs. I really like spicy food but try to leave the spice out so that my daughter will eat what I cook. My husband made some spicy Chinese mustard for the side which was delicious.

Recipe:

Serves 4

1 cup quinoa (cooked) I like to cook quinoa in 1/2 vegetable broth and 1/2 water for extra flavor

1 small onion, chopped

2 carrots, peeled and chopped

5 scallions, chopped and divided

3 garlic cloves, diced

a bit of fresh ginger

1 tablespoon olive oil

2 eggs

½ cup frozen peas

A splash of Teriyaki sauce or Hoison sauce

A splash of soy sauce or tamari sauce

Heat olive oil in a pan over a high heat. Add onion and carrot and cook until soft. Add 3 scallions, garlic and ginger to the pan. Cook for about 2 minutes. Add in the cooked quinoa and mix around. Add in frozne peas. Add a splash of the Teriyaki and a splash of the Tamari sauce depending on how flavorful you want it. Add in eggs, let scramble, and mix around it. Let cook until egg is fully mixed in and cooked through. Add additional tamari sauce or olive oil if it gets too dry. Once done add extra scallions to the top and spicy Chinese mustard if desired.

All throughout my childhood and early adult life I had been plagued with sinus related issues. When I was an infant, I suffered from the Croup. I battled with Bronchitis on an annual basis, sometimes even more than once a year. I was susceptible to seasonal allergies that were prevalent in both the Spring and Fall, and was also highly allergic to indoor allergy stimulus like dust and pet hair. I was constantly getting colds and sinus infections. I was always sneezing and blowing my nose, and if not for the discovery of Puffs Plus, I would have likely had a nose redder than Rudolph. At different times in my life I had seen specialists with the hopes of addressing and resolving my problems, but I had just become so used to it all that it was easier for me to deal with things than it was for me to follow a regiment of shots and medications. I also lived on over the counter allergy medication and was pretty much miserable without it.

That all changed 3 years ago when I started to improve my nutrition though all natural supplementation. Since that time, my allergy issues (both indoor and outdoor) are hardly noticeable to me or those around me. I have had bronchitis only once, and I no longer am constantly sick battling a cold or sinus infection. Most importantly of all, the quality of my life has greatly improved.

The news did not come as a huge shock since Hashimoto disease runs in my family. I figured I would make whatever dietary changes possible to help improve my thyroid health but was most likely sentenced to a lifetime on medication.

Around this time I also found out I was pregnant with my now 2.5 year old daughter, Olivia. I went in search of a prenatal vitamin that I could trust to not have any chemicals or heavy metals in it and was introduced to Shaklee vitamins. I switched over to Shaklee vitalizer immediately and would go on to take it religiously for the next 3 years. I also began drinking a Shaklee 180 smoothie every morning for breakfast.

About a year ago I went off of my medication. This is not something that I would recommend someone else doing, but nevertheless I did it. Two weeks ago I went to the doctor to have blood work done and was expecting a lecture for going off of my meds. Much to my surprise (and my doctors) my thyroid function is completely normal, not even borderline. Seeing as I am now pregnant with my second child they will be watching my thyroid very closely, but I am still completely stunned and amazed by the fact that my thyroid is healthy and I am thrilled that I do not have to go back on medication.

What I find most amazing is that your body knows how to heal itself when given proper nutrition. Once given the nutrition that my body needed my hormones balanced and my thyroid began to function normally. I am so thankful that Shaklee products came into my life when they did and that I stuck with it and allowed my body to heal itself. I am thrilled to be able to share my story with others who are also looking for natural solutions to thyroid health.

We haven’t had a kitchen for a little over a month now which makes cooking nearly impossible. We are in the midst of renovating our house and our makeshift kitchen is limited to a fridge, a microwave, and a toaster oven, which all now live in our dining room. The word chaos is an understatement when describing having a two-year old and living without a kitchen. Rather than ordering take-out every night and throwing away tons of money we have searched high and low for healthy ways to eat with limited resources. One of my favorite options comes from Trader Joes. You can’t get much better than Frozen Super Foods. We like to pair this with a veggie burger or 2 -3 turkey meatballs. Yum!

I am not saying they are bad for you. All I am saying is that I know first hand from gaining a ton of weight while living in Italy, (thanks to my unhealthy addiction to pasta), that there can be too much of a good thing. My favorite healthy substitution for pasta is Spaghetti Squash. When cooked perfectly it looks just like spaghetti and tastes pretty damn good too. You can make it with your favorite tomato sauce, but one of my favorite things to do is to make a asian inspired noodle dish with it. We had some friends over for lunch yesterday and I made spaghetti squash with my favorite <a title="NO more excuses! Cooking is easy! Line an oven tray with aluminum foil or parchment paper. Place flesh side down and roast for 45 minutes to one hour until fully cooked. Remove from the oven and let rest until cool enough to handle. You want it to be cooked but not mushy for the right texture. Once cool enough to handle use a fork to scrape out squash. <a title="NO more excuses! Cooking is easy!
I made these insanely delicious peanut butter cups last night. It was HARD to only eat 2, they were so good. They also happen to be detox friendly, jam packed with protein, vegan, gluten free, and healthy. Huge score in my book!

Ingredients:

1 Cup Peanut Butter, Almond Butter, or any nut or seed butter.

2/3 cup raw honey or agave

1/2 cup flax meal

2 cups gluten free oats

1 cup Shaklee 180 Vanilla protein

Dark Chocolate chips

Directions:

Mix all ingredients into a large mixing bowl. Roll into 1 inch balls. Press down on a plate or cookie sheet until slightly flattened. Press a large, dark chocolate chip into the middle of each cookie. Refrigerate or keep at room temperature.
