Matcha Overnight Oats

After a cold spring, summer is finally here. And it sure came in with a bang! These 90+ degree days and humidity at least have been brutal. I've been trying to avoid cooking - haven't you? So last night I mixed up some overnight oats and they turned out so good I just had to share. And guess what? They are PERFECT for the upcoming July 4th weekend thanks to the pretty red, white and blue toppings.

Matcha Overnight Oats

1 cup rolled oats

1 cup milk of choice

1 cup plain Greek yogurt

2 t. matcha powder

2 t. honey, agave or maple syrup

1 t. vanilla

Dash of salt

2 T. chia seeds

2 T. hemp seeds

Toppings

10 fresh strawberries, diced

1 cup fresh blueberries

1/8 c. shredded coconut

1/8 c. chopped walnuts

Instructions

In a large bowl, whisk together milk, yogurt, matcha powder, sweetener, vanilla, and salt until smooth. Make sure there aren't any lumps of matcha. Then mix in the oats, hemp seeds and chia seeds. Pour into mason jars, or other containers with lids and refrigerate overnight.

When you're ready to eat, stir the mixture and add extra milk to adjust the consistency if needed.

Top with strawberries, blueberrries, shredded coconut, and nuts. You can add a dusting of matcha powder or cinnamon or if you want to make this a dessert, add mini chocolate chips. Serve chilled and enjoy!

Thai Butternut Squash Soup

This sunny soup is especially suited for blustery fall and winter days, but it will delight your tastebuds any time of year.

Thai Butternut Squash Soup

Ingredients:

2 T oil
1 large sweet onion, chopped

1/2 c. red bell pepper, chopped
3 cloves garlic, minced
1 T fresh ginger, minced
1 1/2 T Thai red curry paste
5 c. low-sodium chicken broth (or vegetable broth for a vegan version)
1 medium butternut squash (about 2 1/2 lbs./5 cups) cut into cubes
1 T brown sugar
Salt to taste
1/2 c. coconut milk, divided
1 T fresh lime juice
1/2 c. chopped peanuts
1/4 c. chopped fresh cilantro

thinly sliced hot pepper to taste

Instructions:

Sauté onions and peppers in oil until soft, about five minutes, then add garlic and ginger. Cook for one minute, making sure not to burn the garlic.
Add the curry paste, stirring constantly until fragrant. Add brown sugar.
Stir in the chicken broth while scrapping the bottom of pan.
Add butternut squash. Stir and season with salt to taste.
Bring to a boil over medium-high heat. Reduce heat, cover and simmer, stirring occasionally, until butternut squash is cooked through, about 15-20 minutes.
Remove from heat and immediately stir in 2/3 cup coconut milk and lime juice. Let cool slightly.
Puree soup using a blender or an immersion blender. Adjust seasoning as needed.
Garnish each bowl with a drizzle of coconut milk, peanuts, cilantro and hot pepper slices.

What Kind of Curry Paste Should I Use?

I prefer to use Maesri because of its authentic ingredients. You can find it at Asian markets in these small cans.

Summer is my favorite season. The sun, the food, the fun - and picnics and fireworks too! It always goes by way too fast and before you know it, it's Labor Day. Folks may be thinking of fall even though it's still officially summer, but no matter the season, I think of ice cream.

And many times that ice cream is actually frozen custard from Rosati's.

This family-owned business has been crafting soft serve custard for more than 20 years. In 2000, Jim & Marcia Rosati decided to expand their frozen dessert experience. As owners of the Honey Hut Ice Cream stores in Brecksville and Brunswick, they were able to build upon their ice cream expertise and master creating the finest frozen custard.

Ice Cream vs. Frozen Custard

Custard and ice cream are both made from essentially the same ingredients:

Milk
Cream
Sugar

The main difference is that to be considered custard, the frozen confection must also contain 1.4% pasteurized egg yolk according to the FDA. It's what gives frozen custard its unmistakable creamy and smooth taste.

Rosati's Frozen Custard Flavors

Rosati's is most widely known for their Higbee's Chocolate Malted, which is based on the drink at the legendary Higbee's department store. It's a Cleveland classic flavor that is a Must Do. Luckily it's available every Wednesday.

But they have created 150+ tasty flavors throughout the years! So many, it's nearly impossible to pick a favorite. But here are some of my top picks to help you get started.

I honestly haven't found a flavor that I won't eat, but some really stand out.

Half Chocolate/Half Vanilla with Krunch Kote

My go-to since I was a kid and still one of my favorites. Pro Tip: Get an extra cup of Krunch Kote on the side.

Bananas Foster

This combo is banana perfection! I just tried this one for the first time this year and I'm hooked. If they don't have it on the menu when you're there, try the Bananas Foster Parfait for a similar tasty experience.

I love that they offer this Italian classic! It's a hard-to-find flavor and they do it really well!

Italian Potato Salad

Every year my husband's bocce league has a picnic, and thanks to the members' wives bringing their favorite homemade dishes, I've discovered some amazing Italian food that you won't see in restaurants.

My absolute favorite is this mayo-free potato salad. With only 5 simple ingredients, it's a great addition to any picnic or potluck you attend.

Save this recipe and make it before the garden tomatoes and fresh basil are gone.

Italian Potato Salad

4 lbs Yukon Gold potatoes

4-6 large red bell peppers

4-6 large garden tomatoes

EVOO

1 c. fresh basil

S + P

* These quantities are just suggestions. You want an equal balance between the 🫑🥔🍅 so you might need to adjust the recipe accordingly.

Roast the Peppers

Roast peppers over gas stove or grill until charred on all sides. Remove and place in a large bowl. Cover with plastic wrap and set aside. Once cool enough to handle, remove charred skin and chop peppers into quarter-sized pieces. This can be done the day before.

You can substitute jarred roasted peppers, but be sure to drain them well.

Cook the Potatoes

Cook potatoes in salted water until tender. Remove and set aside. Once potatoes are cool enough to handle, peel and chop into large chunks.

Prepare the Potato Salad

Combine potatoes and roasted peppers in large bowl. Drizzle with olive oil. Stir to combine. Fold in coarsely chopped tomatoes and torn basil. Add s+p and additional olive oil to taste. Serve at room temperature.

--> If you have fresh green beans, they are a fantastic addition to this dish too.

Cordelia - A Midwest Nice Ode to Cleveland

From the moment you walk in the door, you can feel the love for CLE. From the locally-produced furnishings to the portrait wall of everyone's favorite Clevelanders, this place feels like home. They have definitely succeeded in bringing their concept of Midwest Nice to life.

The restaurant is named after partner Andrew Watts' grandmother and he and co-owner Vinnie Cimino created a Modern Granny aesthetic throughout the space and the menu.

I was invited for a sneak preview and I can honestly say that I was blown away! The food, the drinks, the service and the space are amazing!

It's a fun place that has a unique approach to classic flavors.

The drinks have a lot going on so it's really hard to choose. I picked the Fee Fi Fo Fum and it was a great addition to the meal. It was boozy, slightly creamy and not too sweet.

Everything was fantastic, but my absolute favorite was the Fat Noodles. I'm still dreaming of it. It's a Must Do! The Burger Box was another favorite. And you can't go wrong with the roasted Thaxton's Garlic and Warm Olives with orange peel.

For those who remember the Greenhouse Tavern's popcorn pot de crème, prepare to be blown away by the TB+J being served at Cordelia. It's a luscious teacup of tahini custard with a puddle of raspberry jam on top. To.Die.For.

Girls' Trip to Debonné Vineyards

I’ve been visiting the wineries in Lake and Ashtabula counties for more than a decade and absolutely love it! I have so many memories of road trips out east. My now husband and I had one of our earliest dates there so it always holds a special place in my heart. Even without my romantic connection, we are incredibly lucky to have such a gorgeous destination so close to home. I hadn’t taken my usual trips to the wineries in a couple of years, so I was really excited when Ohio.Find It Here. asked me if I wanted to visit Debonné. Three friends and I hit the road for what would turn out to be a girls' trip to remember — and one we can’t wait to repeat!

Sarah, Nikki, Lauren and I were looking forward to getting started, so we quickly checked into our hotel and hit the road. We took advantage of the hotel shuttle so we wouldn’t have to worry about drinking and driving. It was well worth the $25/person. We had some first-timers on this trip and I couldn't wait to show them how incredible our Ohio country is.

While I have been to the area many times in the past, it had been quite a few years since I last visited Debonné. When we pulled up, I was kicking myself for not visiting sooner. IT IS GORGEOUS! Lesson learned. There may be a ton of new places opening all the time, but the OG wineries have stood the test of time for a reason.

Debonné Winery

We started our visit with a tour that included the wine cellar and wine samples. And we learned about their impressive story - what started as a fruit farm in the early 1900s has evolved into 175+ acres of grapes that produce more than 85,000 gallons of wine per year. They are the largest estate winery in Ohio, but it doesn't feel overwhelming, and they truly have something for everyone. While they have a lot of history, they are constantly keeping things fresh.

Double Wing Brewery

A brewery at a winery? Well, when I said that Debonné has something for everyone, I meant it! We tried a couple beers and I fell in love with their Butter Pecan Porter. I definitely plan on going back with my hubby to explore the beer offerings a bit more. I love that they have non-wine options because there always seems to be at least one person in a group that doesn’t feel like wine — problem solved!

Music

One of the many reasons that people love Debonné is because they have great bands all year long. Bobby Hayes & The H2O Band was there during our visit and the dance floor was packed.

After all the dancing and wine tasting, you’ll be happy to know that they have plenty of food options for both inside and outdoor dining. You can choose from an assortment of appetizers, wood fired pizzas, cheese plates, salads and more. They have freshly popped popcorn too. We all got the freshly grilled burgers and a charcuterie plate and ate outside so we could enjoy the views. We all agreed that nothing tastes better than eating food hot off the grill, sitting outside on a beautiful day!

The outdoor space at the winery is incredible. There are many seating areas including a gazebo and covered pavilions. Be sure to check out the bocce courts and take some time to admire the extensive flower gardens.

Tip: There are lots of pretty spots for selfies. And if you’re lucky, you might catch a glimpse of the owner’s biplane buzzing overhead.

We visited in August at the peak of summer, but Debonné is a fantastic destination no matter the season. Autumn brings changing leaves and harvest crush season. Even when the temperatures dip, you can cozy up to the fireplace in the bar.

Throughout the month of October, you’re in for a spooktacular treat – or should I say Trick or Treat? The adult Trick or Treat Wine & Cocktail Trail is the perfect excuse to dress up and experience fall at the wineries. For only $8 per stop you’ll get drink samples and festive seasonal appetizers featuring fall favorites like apple cider and pumpkin spice. You’ll receive a card when you sign up – once it’s full you can submit it to win prizes.

In March, you can join Debonné and other local wineries for the Ice Wine Festival {link} and experience some of the best dessert wines in Ohio.

Things To Do Near Debonné

Before we headed home, we explored the Grand River Valley area. Besides having fabulous wineries, you can visit Lake Erie, covered bridges, orchards, the Geneva Strip, farm stands and more.

We had so much fun on our girls’ winery trip! It was great to hang out, try some new wines and enjoy the beautiful grounds. While there are many Instagram-worthy spots, the thing we enjoyed most was spending time together, talking and laughing and hanging out IRL. We were only gone one night, but we felt like our getaway was a lot longer thanks to all the quality girl time we had together. Midnight chats in your PJs are something we all need more of, right?

Bite Back Against Cancer Five Star Sensation

UH Bite Back Against Cancer

Cancer has unfortunately impacted each and every one of us in some way. This past year, it really punched us in the gut. My Mom was diagnosed with cholangiocarcinoma. What? You've never heard of it? Neither did we. Bile duct cancer is extremely rare - affecting less than 20,000 people each year. It's a very aggressive cancer with survival rates similar to the more common pancreatic cancer. 16% in five years.

My Mom's Battle With Cancer

My Mom thankfully qualified for Whipple surgery. Her team at UH Seidman Cancer Center was amazing, both incredibly talented and extremely kind and caring.

This extensive surgery removed not only the cancerous bile duct, but also more than a third of her stomach, the gallbladder, and part of the pancreas and intestines. Seventeen lymph nodes were also removed - one contained cancerous cells. Her surgery was an astonishing success, but now we have to wait to see if it and the chemo works to make her cancer free.

We were extremely lucky because UH allowed one visitor in spite of the COVID-19 pandemic. I was thankfully able to be with her throughout her surgery and visit her in rehab. Throughout the pandemic we were very careful and generally only went out for essentials or to outdoor spaces. But after her cancer diagnosis we were extra vigilant. Because of her impaired immune system, we didn't dine inside restaurants, but we still tried to support them as much as possible through ordering take out.

Impact of the Pandemic On the Restaurant Industry

As you know, our restaurants were affected by COVID more than most other businesses. You can't eat and drink with a mask on, so many people like us didn't feel safe dining indoors. This broke my heart because not only am I an advocate for local restaurants and businesses, but many of the owners, chefs, servers and bartenders are friends. So when UH reached out and asked if I wanted to help them promote a fundraiser that would benefit cancer treatment and the Cleveland restaurant scene, I jumped at the chance.

I Am - More Than a Slogan

I've always been a huge fan of the in depth arts & culture and locally produced content they provide. Their unbiased news and health & science reporting is my go to when I want to learn more. And this new campaign is especially meaningful with it's message of inclusion and access.

Ideastream begins and ends with “I am,” and the new slogan “I am Ideastream Public Media” embraces the notion that we all bolster each other. When I think of public radio and TV, these are the qualities that make me a supporter.

The Sound of Ideas on WCPN is one of my favorite shows because of the mix of topics featured. And I love that the cooking shows on WVIZ are just that - cooking - without all the crazy antics and challenges. And being able to listen to the Cleveland Orchestra from my couch is delight. These shows and Rick Steves' Europe helped get me through the seemingly never ending COVID hibernation. They were entertaining and enlightening and kept me hopeful that we would be able to return to normal again.

Chickpea, Sweet Potato and Kale Stoup

You may be thinking that the title of this blog contains a typo because what the heck is "Stoup?" Well Stoup is a soup that's not quite a stew. A thicker broth-based soup that is hearty and belly-filling. A one pot meal for sure.

If you happened to be one of the many lucky people who received a Dutch oven for a holiday gift, this is a wonderful recipe to break it in.

This one has a punch of flavor thanks to a generous amount of curry - both Thai paste and dried Madras.

I think cauliflower would be a perfect addition to this dish. If I had some I would have added a cup or two. If you have kefir lime leaves, throw a couple of those in too. For more spice add extra curry paste or a dash of cayenne pepper.

Curried Chickpea, Sweet Potato and Kale Stoup

1 t olive oil

1 T panang curry

1 large red onion, diced

1/2 sweet onion, chopped

1 T salt

2 medium red or yellow potatoes, cubed

2 sweet potatoes, cubed bigger than potatoes

1 stalk celery, sliced

4 oz baby bella mushrooms, sliced thick

1 t Madras curry powder

2 t turmeric

1 T grated fresh ginger

3 cloves garlic, minced

4 cups low-sodium chicken or vegetable broth

2 15-ounce cans chickpeas, drained and rinsed

2 medium bell peppers, diced

1 14-ounce can fire roasted diced tomatoes

1/2 teaspoon freshly ground black pepper

4 c chopped kale

1 can coconut milk

INSTRUCTIONS

Heat the oil in a Dutch oven over medium heat until shimmering. Add the curry paste and fry for 2 minutes. Add onion and sauté until translucent, about 5 minutes. Add the potatoes, celery, bell peppers and cauliflower (if using), toss well and sauté for 4 minutes.

Stir in the curry, ginger and garlic and cook until fragrant, about 30 seconds. Deglaze the pan with a splash of the broth, scraping up any bits.

Add the remaining broth, coconut milk, chickpeas, mushrooms, tomatoes with their juices, pepper and salt. Stir to combine. If you are adding the kefir lime leaves, do it now. Simmer until the vegetables are tender.

Stir in the kale. Taste and season with salt and other seasonings as needed.

Spoon Stoup over a scoop of rice or quinoa. Garnish with chopped fresh cilantro and peanuts.

Chewy Earl Grey Cookies

Hello! It's been awhile!

I don't know about you, but 2020 has been a year! I've been doing lots of cooking to pass the time and decided to bring back my cookie baking tradition.

I used to bake like a wild woman and would create cookie trays with at least 10 different kinds of cookies. I definitely scaled back these last few years because of how busy the holidays are. Well, with us quarantining hardcore, I'm back baby!

Instead of reverting back to my old standbys, I decided to shake things up a bit. And boy am I glad!

These Chewy Earl Grey Cookies with Lavender Sugar are a taste sensation! They are chewy with crispy edges -cookie perfection! And the bergamot and lavender are an intoxicating combo.

Earl Grey Cookies are perfect with a cup of tea obviously, but they also pair well with a champagne cocktail. If you host a tea party, make these to wow the guests!

Chewy Earl Grey Cookies with Lavender Sugar

Ingredients:

2 ¼ c all-purpose flour

4 tea bags or 1 T finely ground loose leaf Earl Grey

½ t baking powder

¼ t baking soda

½ t salt

1 ¼ c granulated sugar

1 c unsalted butter, softened

1 egg, large

2 t vanilla

Lavender Sugar Garnish:

2 T lavender sugar*

1 T course sugar

In a medium bowl, combine flour, tea leaves, baking powder, baking soda and salt.

Combine sugar and butter in mixer bowl. Beat on medium-high until light, fluffy and doubled in volume, approximately 2 or 3 minutes. Scrape down the bottom and sides of the bowl with a rubber spatula as needed.

Add the egg and mix at low until completely incorporated. Add the vanilla and mix until just combined. Scrape down the bottom and sides of the bowl.

Gradually add the dry ingredients while mixing at low speed. Beat until just combined. Scrape again and beat on low for 30 more seconds.

Refrigerate dough for 3 hours or overnight.

Preheat oven to 350°F. Line cookie sheet pans with parchment paper.

Scoop cookie dough and roll into walnut sized balls. Place the cookies at least 3 inches apart on the cookie sheets. Press the the tops of each ball with the lavender sugar garnish mixture.

Bake for 12 minutes, or until the edges have just set and the centers are still soft. The cookies will be slightly puffy initially, but will fall and as they cool.

Cool the cookies on the pan on a wire rack for 20 minutes, or until the edges and bottoms of the cookies have set and feel firm to the touch.

Stored in an airtight container at room temperature for up to 3 days. But I recommend freezing immediately if not going to be eaten to maintain optimal freshness.

*If you can't find lavender sugar you can make your own by combining regular granulated sugar with dried lavender. Make sure the lavender is culinary grade or organically grown.

Combine 2T sugar with 1T lavender and blend in a food processor until the lavender is finally ground.

Pie Iron Salted Caramel Apple Pies

Fall is in the air and it's officially apple season! Crispy, juicy and fresh from the orchard, apples are the perfect transition from summer into fall. As the nights get cooler, build a campfire and treat yourself to one of my fall favorites - Pie Iron Salted Caramel Apple Pies.

Pie irons are a great way to cook over a campfire and can be used to create virtually limitless recipes. They come in cast iron, aluminum, with a non-stick coating, round versions, and even doubles.

This sweet treat is a nice change from S'mores and is perfect for a Campfire Dinner Party.

Ingredients:

2 Apples, finely chopped
Juice from 1/2 lemon
1 t. Cinnamon
4 T Chopped nuts
Caramel dip or Kraft caramel bits
Maldon or course sea salt
Soft white bread
Stick of butter, softened

Create:

Mix apples, lemon juice, cinnamon, and nuts in a bowl. Butter two slices of bread. Place one slice of bread in the bottom of the pie iron, butter side down. Add 4 T of the apple mixture. Drizzle with caramel sauce or place 1 T of caramel bits on top of apples. Sprinkle with sea salt. Top with second slice of bread, butter side up. Carefully close pie iron and lock.

Place in coals of campfire, turning occasionally, until bread is golden brown (approximately 3-6 minutes depending on if the pie iron is already hot). Carefully flip apple pie onto wooden cutting board or plate. Eat as a handpie, or serve on a plate with a scoop of ice cream or whipped cream, caramel drizzle, and chopped nuts.

Black + Blue Peach Cake

Well, my 2020 obsession with peaches is still raging on. That's definitely not a bad thing!

Next up, is a simple yet utterly delicious cake that looks fancy enough for company, but is simple enough for a summer breakfast on the patio. Plus it's made with yogurt so you don't have to feel TOO bad if you decide to make it a single-serving. And trust me, you will! IF you have self-control, it serves 8 ~ which is perfect for a socially distanced brunch or dinner party.

Now why is this beautiful cake called Black + Blue? It's because of the combo of black and blue berries with the blush hued peaches. Don't worry - the only fighting will be over who gets the last slice!

Black + Blue Peach Cake

1 1/2 c. cake flour

1 t. baking powder

1/2 t. baking soda

1/4 t. salt

4 T. butter, softened

3/4 c. sugar

1/2 c. Greek yogurt

1 t. vanilla

2 eggs

2 peaches, peeled and sliced thin

1/2 c. blackberries

1/4 c. blueberries

2 T salted caramel sugar crystals, or Caramel Crème Brûlée sugar or other coarse sugar

Preheat oven to 350° Grease and flour a 9" round cake pan. My absolute favorite is these easy release pans - they make it SO easy to remove the cake from the pan! You can also use a regular 9" cake pan or springform pan. Line the bottom with parchment and grease parchment paper too.

Sift together dry ingredients and set aside.

Cream butter and sugar. Add eggs and beat well. Then add yogurt and vanilla. Beat until smooth, light in color, and fluffy. Gradually add flour mixture and mix until combined.

Place batter into prepared pan. Top with sliced peaches, then place blackberries and blueberries in gaps between peaches. Press fruit very gently into batter, but not enough to submerge the fruit. Sprinkle with sugar.

Bake for 1 hour, or until toothpick inserted into center comes out clean. Let cool, then invert onto cake plate. Serve with a scoop of ice cream or whipped cream.

Honeyed Peach Basil Goat Cheese Flatbread

In case you haven't heard, it's peach season in CLE! The Peach Truck came to town and local peaches are ready too. Definitely take advantage of peach season because the possibilities are limitless with this versatile fruit.

This is the 1st of several recipes I'll be sharing to help inspire you to get peachy. 🍑

Honeyed Peach Basil Goat Cheese Flatbread

1 crust of your choice (pre-made pizza dough, Naan, or pizza shell)

Goat cheese, softened

1 slice of prosciutto, bacon or Canadian bacon, diced

Green onion, sliced thin

1 medium peach, sliced thin

Fresh cracked black pepper

1 T grated Romano or parmesan

Salted honey or hot honey

Balsamic glaze

Fresh basil leaves

Prepare pizza dough and place on pizza pan or baking stone. (I used 1/2 of a ball of dough from Gallucci's.) Spread goat cheese on the crust. Sprinkle prosciutto and onion evenly over top. Press peach slices into goat cheese mixture. Top with grated cheese and black pepper.

Bake according to dough directions. For the pizza dough, I baked mine at 400° for about 12 minutes. This also works great on the grill. When crust is golden brown, remove flatbread from oven. Drizzle with honey and balsamic glaze. Sprinkle with basil.

Blackberries, thinly sliced jalapeno +/or chopped pistachios make great additions too.

Greek Orzo Salad

This recipe is so easy and perfect for summer! Make it once for the week so you aren't spending everyday in the hot kitchen. It's also great to bring to parties.

GREEK ORZO SALAD

Ingredients:

1lb box of orzo

1 c. pitted kalamata olives, cut in half

2 c. cucumber, cubed

2 c. chopped tomatoes

2 c. artichoke hearts

1/2 c. chopped parsley

1/4 c. EVOO

2 T red wine vinegar

juice and zest of 1/2 lemon

S+P

cubed feta or fresh mozzarella

Cook and drain orzo. While orzo is cooking, whisk together olive oil, vinegar and lemon juice. Adjust to taste if needed. Pour over cooked pasta and stir well. Fold in remaining ingredients. Garnish with more chopped parsley, oregano or basil.

You can add a can of drained and rinsed garbanzo beans, grilled chicken or shrimp.

Strawberry Gin Smash

Happy 4th of July!

It's a heat wave so we're mixing up this refreshing cocktail to help stay cool.

It's perfect for strawberry season. To make it extra festive, garnish with a few blueberries. This makes one large pitcher, approximately 8 cups.

Strawberry Gin Smash

1 lb strawberries, sliced

2 limes, zested, juiced and cut in quarters

2 T sugar

2 c. gin

Handful of fresh mint

4 c. seltzer (I used 2 cans of unflavored LaCroix)

Muddle strawberries, lime juice, lime wedges, mint and sugar until strawberries are smashed. Stir in gin and lime zest. Just before serving, stir in seltzer.

Garnish with a strawberry and a sprig of mint.

You can also blend the sugar, lime juice and zest, and strawberries in a Vitamix or other high powered blender with ice. Then add gin and seltzer.

Campfire Cocktail

This year more than ever, we are celebrating at home. We've been social distancing by having outdoor birthdays, dinners and happy hours in our backyard where we can safely socialize with friends and family.

Look at this cute set up!

If you are celebrating at home, here's a delicious cocktail to serve around the fire pit. It tastes like a marshmallow, but isn't too sweet. And it's healthy-ish thanks to the non-dairy milks used.

I like to make the cocktails ahead of time in individual Mason jars and place them in a cooler full of ice so guests can just grab one and shake it up themselves. You can also make this in a pitcher for easy serving.

Campfire Cocktail

Ingredients:

2 oz Buckeye Vodka

1 oz coconut milk

1 oz vanilla almond milk

Ice

Garnishes:

Chocolate

Graham crackers

Marshmallows

Melt chocolate and place on plate. Crush graham crackers and place on separate plate. Dip martini glass in chocolate to completely coat the rim, then dip in graham crackers. Set aside. Toast marshmallow.

Place all ingredients in 1 pint mason jar or cocktail shaker. Shake well. Either serve directly out of the jar or pour into martini glass. Garnish with marshmallow.

No Bake Toasted Coconut Icebox Cake

There may not be any fireworks this year, but we're still celebrating the 4th of July!

My husband's birthday is the 7th so it's always an extra special holiday for us. We'll be gathering with family and some friends over the long weekend and eating ALL the cookout food.

But the weather is steamy and ain't nobody turning on the oven over here. You don't have to either ~ treat your guests to this ah-mazing no bake Toasted Coconut Icebox Cake and it will be the star of the party!

What is an icebox cake? It's not really a cake at all! It's a light and creamy combination of cookies and whipped cream that you layer in a dish and pop in the fridge overnight. As it sits, the cookies absorb the moisture from the whipped cream and magically transform into a delicious cake-like treat.

There's no oven needed and you can make it ahead so it's the perfect dessert for all your summer parties!

Use gluten free cookies to make this GF friendly. You can also use dairy free whipping cream. Do not use Cool Whip or canned whipped cream.

Ingredients:

2 13.5 oz cans full fat coconut milk

2 c./ 16oz heavy whipping cream

1/4 sugar

2 t. vanilla

2 c. coconut flakes or shredded coconut, toasted

16 oz Coconut Thins cookies, or other unfilled coconut cookie

Directions:

Refrigerate coconut milk for 2 hours, or overnight.

Carefully scoop out the coconut cream solids (the white solids at the top of the can) and place in mixing bowl. Reserve the clear liquid for other use. You can add it to smoothies, oatmeal, or even soup.

Add the heavy cream, sugar and vanilla to the coconut cream and whip until soft peaks form.

Place a layer of the cream in a 9x13 pan or trifle bowl and spread to cover the entire bottom evenly. Place an evenly spaced layer of cookies on top of the cream. Break cookies into pieces if needed to fit into corners. Add a handful of coconut. Continue layering until all cookies and cream have been used, ending with the cream. You should have at least 3 layers, depending on the container used. Sprinkle coconut chips on top.

Cover loosely with waxed paper or plastic wrap and refrigerate at least 6 hours but preferably overnight. It is delicious as is, or you can serve with fresh fruit of your choice. Strawberries, blueberries, blackberries and bananas all are perfect compliments to the coconut flavor. You can also add fruit to each layer instead of serving them on the side.

Finding coconut cookies may be challenging. Here are a few different brands that you can look for: Voortman, Tate's, and Thinsters. I also found Benton's brand at Aldi and they are excellent. If you can't find coconut cookies, Lorna Doone, Pecan Sandies, Chessman, oatmeal or other cookies can be substituted.

This dessert is perfect to make in individuals servings, perfect for your social distancing, COVID19 friendly patio and driveway parties. Just layer ingredients in individual trifle dishes or dessert cups. These are my favorites and even come with a spoon!

Stay at Home Kitchen Essentials to Help Keep Your Food Fresh and Save You Money

If you are like me, you are spending A LOT more time in the kitchen since we are all staying home to help stop the spread of the coronavirus. Now that you are all stocked up and hunkered down, how do you keep all the food that you purchased fresh for as long as possible?

Here are some of my tried and true favorites that will help you be organized and save money. You can extend the life of your food and even grow fresh herbs right on the counter!

I have been using a Food Saver vacuum sealer for years. It helps your food last so much longer and is perfect for packaging meat individually for the freezer. I use it all the time to store chunks of cheese, lunch meat, and bacon. I also have a canister set that I use to store grains, crackers, cereal and more. You can also get containers that are perfect for the fridge or for marinating.

One of the things I struggle most with keeping fresh is herbs. Even though I've tried all the tricks to keep them fresh, they always go bad faster than we can eat them. The AeroGarden is an in-home hydroponic gardening system that easily fits on your counter or a small table or dresser. All you need is an outlet and the AeroGarden does the rest! This product is an absolute must - not just during a quarantine, but also during the winter or even year round if you don't feel like having a garden. It makes growing fresh herbs so easy!

A good set of storage containers is an absolute must. This glass set with snap on lids makes it easy to go from the fridge to the microwave without worrying about the plastic leaching into your food. They stack perfectly so your fridge is more organized and the space is maximized. This XL set is great for bigger quantities like a rotisserie chicken, lasagna or soup.

Reusable silicone bags and bowl covers are earth friendly alternatives to disposables and work great.

We absolutely love our Distillata water cooler! We have the bottom load model which makes it SO easy to refill. It holds a ton of water and they deliver it right to your door. If you don't want to invest in a machine, they also deliver gallon jugs and sparkling water in addition to being able to install whole house filters.

If you are using your time indoors to get organized, these airtight storage containers help keep your pantry items fresh, labeled, and looking good.

Instead of planning activities, I've been planning meals. This erasable white board is an easy way to keep track of what you're making. If you have kids, get them involved in menu planning and maybe have each person take turn picking the dishes that you make.

If you love fresh berries as much as I do, these produce keepers are a must! Your produce stays fresh much longer which reduces waste and saves you money. I have the whole set and use them for strawberries, blackberries, blueberries and lettuce and have really notices a difference. The large rectangle is perfect for asparagus.

A few years ago, my pantry was devastated by pantry moths. I literally lots HUNDREDS of dollars of food. Ever since then, I ALWAYS have these traps in my pantry. They are cheap and will protect you from an invasion. Especially now with every stockpiled because of the pandemic, these are an absolute must.

Coronavirus in CLE: 10 Ways You Can Make a Difference

As these past weeks have unfolded, each day seems to bring another wave of bad news. The impact of the coronavirus goes beyond the actual infection. It is spreading to our economy in ways that are unprecedented in our lifetimes.

Like you, my life has been completely altered. Plans that were made a year ago, have vanished. First the Cleveland International Film Festival. Then my annual tea party. St. Patrick's Day. A trip my husband was planning. All gone in a matter of days. Countless parties, dinner reservations, events and non-essential appointments have been canceled. I'm extremely concerned for three weddings that are scheduled for early summer. Add that to the fact that my unemployment is running out and it goes far beyond the disappointment and inconvenience of changed plans.

For our friends with small businesses and in the restaurant/food service/event business, their lives are completely altered. The social distancing measures have decimated these industries. I fear many may never recover.

What can we do to help?

1. Shop from local businesses when possible. The West Side Market, Old Brooklyn Cheese, Ohio City Provisions, Saucisson, and others have amazing food products available for purchase. I'll be featuring places on my Instagram stories and Facebook page regularly.

2. Order take out. Most restaurants, wine shops, breweries, and even coffee shops are offering grab and go or delivery options. Join the Cleveland Restaurant Take Out Facebook group or follow the establishments on social media for menus, hours, and other details. Eat Local Ohio + CLE Foodies have been doing a great job of sharing too.

3. Purchase gift cards. Even if an establishment is currently closed, you can stock up on gift cards for future purchases. This is especially true of your hair salon, yoga studio, museums, or art classes. But I recommend doing so wisely - some businesses will unfortunately not make it through this crisis and you could be out of pocket. Make sure you are ok with this so you aren't disappointed later.

4. Purchase merchandise. This is a great time to buy a shirt from a local shop or a growler from your favorite brewery or other establishment. Purchase some plants or fresh flowers to make working at home a little more pleasant. Cleveland International Film Fest just posted their CIFF44 merchandise online today.

5. Donate your time. There are many ways to give back that don't require spending money. Sign up to volunteer at the Greater Cleveland Food Bank. Download the Hunger Network app and help with food rescue. Shop for an elderly family member or neighbor. Offer to take care of the pets of someone who is still going to work.

6. Give back. Many non-profits and organizations are also being hit hard. A donation, no matter the size, will have a great impact. If you purchased tickets to a canceled event, consider donating the cost instead of asking for a refund. If you planned an event that is unable to be held, postpone it instead of canceling. If your company or organization has asked restaurants and businesses to donate to your fundraisers, it is your time to return the favor. Help those who have helped you all these years.

7. Be kind. Don't hoard groceries and supplies. Abide by the guidelines for social distancing. Check in on your friends and family. We have amazing technology that allows us to communicate face to face even while far apart - use it. Say thank you to the grocery store workers, delivery drivers and others who are working every day so we can all get the things we need. Tip well.

8. Remember to laugh. If we don't find some of the humor in this craziness, we will all go crazy. Share pictures of you pets, kids, crazy work at home fashion, or memes to help everyone smile a little bit. This has been one of my favorites. You can comment here or play along on my Instagram post.

9. Be there. Listen to your friends, family, coworkers and neighbors and let them vent. Everyone is scared, but those with mental health concerns are especially vulnerable at this time. If you know someone who is struggling with addiction or depression, pay special attention and see how you can help them. If you are in recovery, set up virtual meetings and check in regularly.

10. Last but certainly not least - Take this seriously. Even if you don't feel sick or have symptoms you may be infected and can spread it to others who may not be as lucky. Together we WILL get through this.

Carnival at Texas de Brazil

Carnival is an annual Brazilian festival held each year leading up to Ash Wednesday. It's a time to celebrate and enjoy wonderful food and drinks before Lent.

It's the perfect time of year to visit Cleveland's only Brazilian steakhouse Texas de Brazil.

In honor of Carnival, Texas de Brazil has two great ways to toast the holiday. In addition to their mouthwatering grilled meats and huge salad bar, they are mixing up some special drinks available through Saturday February 29th.

For folks looking for refreshing non-alcoholic options, Brazilian Limeade is available by the glass for $3 and by the pitcher for $12. Flavors include lime, coconut, mango and more. So tasty you won't even miss the booze!

If you want to add an extra kick to your meal, they have a special treat for you - $5 Passion Fruit Caipirinhas! The Cachaça-based cocktail is the national drink of Brazil and is absolutely delicious! Traditionally made with just three ingredients (Cachaça, lime, and sugar), the Carnival version is given a festive flare with Passion Fruit puree.

Texas de Brazil wants you to be able to continue the celebration all year long so they have shared the recipe with us. It's so refreshing and really easy to make at home.

Passion Fruit Caipirinhas

1½ oz. Cachaça

1 oz. simple syrup (make with 1 part water, 2 parts sugar)

9 lime wedges

1 oz. of Passion Fruit Puree

5 lime slices

Place lime and simple syrup in the shaker and muddle. Add ice, cachaça, fruit flavor and lime floaties to shaker.

Shake together, pour into rocks glass, garnish with a lime wheel.

Felicidades!

Even though you can make the Passion Fruit Caipirinhas as home, you'll be missing out on all these delicious grilled meats if you don't try it in person. SO GOOD! Even if you aren't a meat eater, the salad bar and cheesy bread alone are worth the trip.

2020 New Year, Trying New Things

Happy New Year!

We are about a week into 2020 - hopefully it's off to a good start for you!

If you made resolutions, I'm rooting for you to stick with them! I don't personally make resolutions. I prefer to think of my goals for the New Year as a stretch assignment. Every year I like to choose a few things that I would like to learn or things that I would like to experience and make it happen.

A few years ago I took a day off of work and went to the Cleveland International Film Festival to see movies by myself. I was really nervous but it was totally fine! I don't necessarily think seeing movies solo is something I will do regularly, but I was really proud of myself for trying it.

Last year I vowed to finally use the Kitchenaid food processor that had been sitting on a shelf for years. I'm REALLY glad I conquered my fear of this thing because I absolutely love it! I've made pasta dough in it and figured out how to use the slicing blade. Life changing! Now I make shredded Brussels sprout salads all the time.

I got laid off recently, so this year I'm focusing on ways to save money and using the extra time that I have to try new things in the kitchen. I'm going to be making bread a lot because it accomplishes both :) I'm also trying to make kombucha for the first time and plan on fermenting garlic and honey. If you have any tips, tricks or favorite recipes, please let me know!

Another thing I am focusing on is to drink more water. I have found that I don't drink enough throughout the day and tend to be slightly dehydrated. One thing that has really helped is our Distilatta water cooler.

It's highly visible so when I walk by it, it triggers me to think about drinking water. The model that we have has three temperatures of water (room temperature, cold and hot) so it's ready to go no matter what I plan on drinking. I especially love that it makes hot water at the perfect temperature for tea. Another great benefit is that it's super easy to fill up a reusable water bottle so I can stay hydrated on the run without being tempted by single use plastics.

Also, I received an Instapot for Christmas so add conquering my fear of pressure cookers to the list! I'll definitely be sharing how that goes - I know a lot of you have them sitting around unused because you are afraid of them too.
