					<![CDATA[<p>Earlier this week, Eater LA <a href="http://la.eater.com/archives/2009/06/30/kitchen_not_so_confidential_the_must.php">posted the contents of an email tip</a> purporting to detail behind-the-scenes doings at the restaurant <b>The Must</b>. We ran this tip without contacting the owners of the restaurant, who have since refuted the tip in its entirety. We apologize to the owners of the restaurant, and our readers, for not investigating our source's claims before airing them on the site. The resulting post didn't rise to our standards, and we shouldn't have published it.</p>

<p>We offered the owners of The Must a chance to respond here, and promised we'd print, unedited, their words. Their response follows.</p>

<p><b>EATER LA &#8220;MUST&#8221; LISTEN TO DOUCHEBAGS</b></p>

<p>On Tuesday, June 30th, the website Eater LA posted a &#8220;story&#8221; about our bar/restaurant entitled &#8220;The Must Bar- Kitchen Not so Confidential.&#8221; In this story, the writer, Kat Odell quoted a &#8220;tipster&#8221; as her source.  However this in no way shape or form gives this publication the right to post these fabricated &#8220;tips&#8221; without ANY intention of verifying these allegations.  Eater LA did not make any effort to contact us, which leads us to believe that both Eater LA and Kat Odell lack in basic journalistic ethics and codes of conduct. Elina Shatkin called us after hearing about the Eater LA post and, with us, reviewed the allegations, one at a time, asking us which, if any, were true. <a href="http://latimesblogs.latimes.com/dailydish/2009/06/must-wine-bar-eater-la-threaten-legal-action.html">Here is the link to the LA Times blog providing our side of the story</a>. As previously stated, we are APPALLED at Eater LA for such a posting and would like nothing more to do with them or any affiliated sites.  </p>

<p>We love our customers and know that anyone who has actually been to our establishment would know the genuine labor of love that The Must is for our entire staff and us. We are quite busy right now, sitting on deck, sipping on our house made sangria, nibbling on Humboldt Fog and enjoying the beauty of all these amazing ice caps.</p>

<p>Mozza fans waited with baited breath and now, finally,<strong>Mozza 2Go</strong> has officially started serving up (or, out) its famed pies. The market/to go shop/pizza school officially opened yesterday afternoon on Melrose (W. of Highland) with a grinning <strong>Nancy Silverton</strong> bustling behind the counter, offering the A-Z in gourmet Italian products, including the newly launched line of Mozza-brand edibles. Need some EVOO? Dried pasta with unpronounceable names? Canned tomatoes? Or even a cookbook? No problemo.</p>

<p>The Batali-Bastianich-Silverton joint venture number three encompasses a <strong>small retail area plus counter where the hungry can place takeout orders from a condensed pizza menu, and/or choose from several grab-and-go salads and desserts</strong> out of a refrigerated case. Adjacent to the retail space is a large room with seating, though this area will be used for private events and the Scuola di Pizza. Mozza 2Go offers both takeout/delivery, with the first order accepted at noon and the last order at 11:00 pm, Tuesday-Sunday. Once cooked, the fish is served alongside "hot tortillas, limes and an umami-rich marmalade of onions," resulting in what Gold describes as a<strong> " bone-intensive but sublime"</strong> meal. Though the hotel hasn't completely finished its remodel, the ground-floor restaurant, Hash, will occupy two separate dining areas. The colorful room above will serve as the main dining space, with an additional al fresco patio steps away by the hotel driveway. <strong>Chef Micah Fields</strong> (Gordon Ramsay, Patina Group) describes his menu as <strong>"twisted comfort food,"</strong> with breakfast dishes like Green Eggs & Ham and Cap'n's French Toast, and slightly more traditional dinner offerings like a Kobe Beef Burger and Fish n' Chips. By creating a moderately priced ($8-$18) and approachable menu, he hopes Hash will attract Venice locals in addition to hotel guests. <br />

Right off the bat she describes some of the interior design elements as a "collaboration between Louis XV (Louie?) and Gianni Versace," but her biggest gripe is the noise level which is "punishing" in the huge space. As for food, BL serves "generous portions at moderate prices" of all-Italian fare, and <strong>though "it's not the best Italian food in town...it's generally fresh and pretty good." </strong>Thin crust pizzas are "not particularly inventive but fine," and some salads tend to be overdressed. SIV was not a fan of the pastas either, which she described as "workmanlike," "stodgy," and sometimes devoid of sauce. On the bright side, "fried calamari is beautifully crunchy and not at all greasy," and the osso buco is huge and "quite delicious," with extra tender meat and a sauce with some complexity. By Gold's standards, Bottega Louie "aims to be all things to all people" with its large space and varied dining options. However, according to SIV, the restaurant's potential success lies in its price point. "The place looks expensive, but it isn't." Conny Andersson  claimed to be taking the AK concept elsewhere due to "creative differences" with financiers, but back on Abbott Kinney a new chef plus restaurant concept has taken over. <strong>The Tasting Kitchen</strong>, headed by <strong>Chef Casey Lane</strong>, will feature an experimental dining concept over the next eight weeks. Starting tomorrow, the restaurant will open for dinner amidst interior and exterior modifications, and serve a paired down local, market-driven <a href="http://www.akinvenice.com/">menu</a> with 8-12 dishes. During the two month period Chef Casey will take diners' feedback and continually tweak the menu, and the kitchen and dining room <strong>will emerge with a new menu, new look, and new name this Fall</strong>.<br />

The organic cafe offers bagels, oatmeal, omelets, plus an espresso bar that uses fair-trade beans, in addition to the full lunch regalia: sandwiches, salads, paninis, quesadillas, pizza, and soups. On to, <strong>The Must</strong>.  Owner Coly Haan <a href="http://la.eater.com/archives/2008/12/18/the_dish_the_must_salute_wine_bar_opens_more.php">once</a> described her menu as "white trash food with a twist," apparently now it's erring more on the "trash" side. Per a tipster:<blockquote>The Must Wine Bar in downtown: Cheese plates are not as advertised - Double Glouster Chedder, Explorateur Triple Cream Brie, Point Reyes, etc. are all in fact US Foods low-budget generic. You are paying $15 for $4 worth of generic cheese. House Made Beer Pretzels are in fact US Foods Super Pretzel brand nuggets. House Made Tater Tots are also US Foods Generic. House Made Peanut Butter is US Foods Generic. See the pattern?</p>

<p>US Foods? Every other vendor bridge has been burned in less than six months. All orders are strictly C.O.D. or no delivery.<strong> Besides not adhering to simple food saftey standards, such as soap, sanitizing, and throwing out chicken salad that's 2 weeks old, 90% of all 'fresh' menu items are cooked days beforehand and sit in the fridge,</strong> including all vegetables; even the ones that would take 5 minutes to cook per order. The Must, even with friends in the publicity industry, is <strong>sinking faster than the Titanic in an ice field</strong>, and long-time customers are duped into paying the same price for an inferior product.</blockquote><b>UPDATE:</b> The proprietors of said establishment dispute the above. We've offered them the chance to respond here, with the response of their choice reprinted in full with no editing, but so far, they've demurred. Further updates as events warrant. </p>

In true sushi style the restaurant is situated in a mini strip-mall-esque space on San Vicente, just east of Barrington. Hours:  Mon-Sat, 11:30a-10p and Sunday 12p - 9p.<br />

The double-feature (Visual Acoustics:<em> The Modernism of Julius Shulman</em> and <em>The Greening of Southie</em>) will be preceded by the creme de la creme of mobile dining:  <strong>Let's Be Frank, Barbie's Q, Cool Haus, Sprinkles, Locali, Green Truck and Tacos Ariza.</strong>  Rumor has it that <strong>Kogi</strong> will make an appearance, but this is still unconfirmed. <a href="http://dwellondesign.com/index.php?option=com_content&view=article&id=134&Itemid=230">Tickets</a> start at $15 and the event takes place at The Geffen. <p><em><strong>HOLLYWOOD</strong></em>&#8212; More Hollywood news today. <strong>Victor Drai</strong>, owner of <strong>Tryst</strong> and <strong>XS</strong> nightclubs in Vegas, has partnered up with W Hotels and will open <strong>Drai's Hollywood within the new W Hollywood</strong>, which opens in December. The multi-level club will span more than 20,000 square feet of indoor and outdoor space with a ground-floor lounge, rooftop nightclub, and open-air rooftop pool bar. Just what we need. And, in its place comes <strong>Cache</strong>, opened by <em>some</em> of the same investors behind Hidden, with a fresh new look and simply one cuisine. American. The group was able to score Executive Chef <strong>Josiah Citrin</strong>, known for his French fare at Melisse, in addition to his protege, Nyesha Arrington, as Chef de Cuisine. The pair created a <strong>market-based menu of contemporary American dishes</strong>, and they plan to  feature a changing menu of six wood-fired flatbreads. Bar/lounge items will be served in Mason jars, and a garden with fresh herbs will exist in the restaurant's lounge. As far as construction, the space is being renovated by design firm Shubin & Donaldson to create a more open and casual indoor/outdoor California lifestyle feel with a garden patio, mahogany paneling, and stone accents. Speculation ranged from the Abode space to L.A. Farm to a spot on Abbott Kinney, and we just got confirmation that as of June 12, Stefan Richter officially co-owns L.A. Farm (with original owner Alex Winitsky), making the new name <strong>Stefan's at L.A Farm</strong>. Even though he took over the kitchen last Friday, Stefan plus Chef de Cuisine and longtime friend <strong>Leo Bongaro</strong> have been serving the restaurant's old menu. However, starting tomorrow, June 26, the restaurant will close for renovations, and Stefan will host a garage sale spanning this weekend, selling items from the "old" L.A. Farm. </p>

<p>Additional details per a tipster: "I had lunch there last Friday, Stefan's first day supervising, and a spinach ravioli for $14 was delicious, as was my companion's steak/frites for $16. Hosea, 2008's Top Chef winner, came in with a small entourage and could be overheard trying to coax Stefan into joining them at the Viceroy for late night drinks. Stefan's reply: 'Buddy, I'm a working chef now. I can't play around like you.' The staff appears caught up in the excitement of a new chef/owner who is clearly determined to make his business a success. (He had spent the early part of his first day cleaning out the drains in front of the restaurant.)" After its temporary shutter tomorrow, Stefan's at L.A. Farm will <strong>reopen August 4</strong>. The concept is<strong> tapas-style small plates starting at $3 with a limited entree section</strong>, a small affordable wine list, and a traditional lunch menu. [EaterWire]<br />

<strong>Hollywood:</strong> Unfortunately, <strong>Essex</strong> didn't open on June 23 as <a href="http://la.eater.com/archives/2009/06/08/plywood_update_essex_sets_opening_date.php">planned</a>, however co-owners <strong>Greg Link</strong> and <strong>Hunter H. Hensley</strong> are preparing the space for a<strong> post-July 4 weekend debut.</strong> Interiors are currently 99% in place and beer taps from Shock Top to Stone were recently installed. The restaurant appears to show an abundance of deep-brown wood and exposed brick, with a long wooden bar along the left wall, and an opposing banquette plus dining tables. A secondary dining area boasts brick from floor to wall, in addition to a secondary light-colored wood L-shaped banquette. As previously mentioned, Chef Chris Ennis will manage the kitchen and serve gastropub fare with Christina Perozzi's selection of 20 beers on tap, plus 20 in bottle. [EaterWire]<br />

<p><strong>You're on Top Chef Masters. Who do you think is your biggest competition on the show? </strong><br />
Hubert Keller by far.</p>

<p><strong>What can you tell us about the show that most people don't know. Any secrets?</strong><br />
We are bound by confidentially agreements, so there is not a lot I can share. But, I can say that 30 minutes in Top Chef Masters time is much less than 30 minutes in the real world. Seriously though, it was a very challenging experience. Also, there is no shortage of craziness. Without the "bleeps," it might not be PG-13. </p>

<p><strong>Any ingredients you would dread to work with?</strong><br />
Unfortunately, the one I got. In real life and at LudoBites I am open to trying everything, just don't make me cook it in the middle of an amusement park.</p>]]>
			<![CDATA[<p><strong>As far as LA restaurants go, where do you like to eat when you are not cooking?</strong><br />
There is always something interesting to try. Unfortunately, many of the good restaurants just can't seem to stick around. I had a great "off-the menu" meal at Bond Street last night. Very surprising. The chef had some great technique. I would push them to put some of it on the real menu. I always like Sushi Roku, and Typhoon is great. I want to try Paul Martin's American Bistro, I hear they are doing some interesting things.</p>

<p><strong>Have you been to In-N-Out Burger?</strong><br />
In-N-Out is my favorite!!!! If I can't have some home roasted chicken and potatoes on my day off, I go for a double double with fries. Yummmm.</p>

<p><strong>So, you have Ludo Bites temporarily in LA. What's next?</strong><br />
Still figuring it out. LudoBites is a labor of love. It is not about money. I just want to cook!! It is my passion. I hope to be able to continue to provide a culinary experience and opportunity  for people to try different things.</p>
