My son had a blood test three years ago that said he was a level 4 peanut allergy. The allergist at the time refused to do a skin test or an oral challenge because he believed the level 4 peanut allergy was a conclusive result that my son had a severe peanut allergy. Today, the new allergist decided to do a peanut skin test. I watched the bubbles on his arm appear and I prayed that none of them were the peanut test. To my amazement, they weren't.

The doctor then followed up that test with blood test. I'm waiting for results and wondering, what if the peanut blood test is negative? Then what? Do I allow him to have an oral peanut challenge? Could it really be possible that my son could one day soon be chowing down on a peanut butter and jelly sandwich?

I'm both nervous and excited. I'm nervous because what if I'm getting my hopes up and my prayers haven't been answered to cure his peanut allergy. I'm excited because this could open up a whole new world to my son both at his friends home and at school.

It might be important to note that my son has never had a peanut directly. He was exposed to peanuts while I was breast feeding. I completely avoided peanuts while I was pregnant and read a few articles that claimed eating nuts was a good idea for nursing mothers. The idea was to expose their children to nuts early on. Since my son's diagnosis of a peanut allergy, I have read several articles that claim the exact opposite!

I'll keep you posted and if anyone would like to share their story, please do!

Check out my son's allergy skin test picture.

Update: The blood test came back as a zero for peanuts. The allergist said that since there has been no clinical allergy to peanuts it should be fine to eat peanuts. I got off the phone crying tears of joy as you would imagine.

That afternoon I purchased a bag of peanut butter cups and allowed my son to try one as I stood inches from his body with my twin EpiPens ready to go, Benedryl and phone ready just in case there was an emergency. He ate a mini peanut butter cup and he was so happy. I was in a panic. Then he asked for another one. I made him wait five minutes before I would give him another one. Once again, no reaction. Soon after that, we ran down the block visiting all of his friends and had a peanut party. All of the children were so excited for him and he screamed, "I'M NOT ALLERGIC TO PEANUTS ANYMORE!" at every door. I followed him around with my purse packed with my emergency kit just in case.

Corn and bean salsa is a great snack and appetizer for those with an egg allergy. It is both easy to make and healthy.

1 cup fresh cooked or frozen corn kernels
1 small can of black eyed peas washed and drained
1 small can of black beans washed and drained
1 small can of diced tomatoes (or stew, peel, remove seeds and chop 6 fresh tomatoes)
2 limes juiced
2 tablespoons of chopped cilantro (fresh or dried)
1 tablespoon ground black pepper
1 chili pepper, finely chopped and seeds removed
1 teaspoon of garlic powder
1/2 medium onion finely diced

Mix all ingredients together and allow to marinate and chill for at least three hours before serving.

Serve corn and bean salsa with your favorite pita chips or corn tortillas chips. To make your own tortilla chips, cut a corn tortilla the same way you would slice a pizza and fry in your favorite light oil until lightly golden. Salt the chips to taste while still warm and serve.

The benefits of DHA/ARA in infant formula are still being discovered years after its introduction as a supplement that mimics an amino acid in mother's breast milk. While the use of DHA/ARA has become somewhat controversial in some circles, new evidence suggests that it may actually be helping babies overcome and outgrow food allergies to milk, egg, peanuts and other foods.

Some people believe that adding synthetic DHA/ARA may be doing more harm than good as babies are unable to digest the oil that the DHA/ARA delivered in. In that case, breast feeding may be the best option for giving babies the best DHA/ARA amino acids for the potential prevention of food allergies.

DHA and ARA supplements are typically derived from algae and mold which make them not identical to the DHA and ARA found in breast milk. One brand of DHA and ARA supplements for babies is extracted from egg yolks which may be of concern for those with a history of food allergies and especially egg allergies.

Is baby formula with synthetic DHA/ARA unhealthy? That's one question that remains to be clearly and factually unanswered. What is known for sure is that natural DHA/ARA promotes healthy brain and eye development. Let's just hope there really is a cure one day for food allergies using DHA/ARA supplements.

Ingredients:
2 Pounds of Chop Meat
1 Cup of Panko Bread Crumbs (Read Ingredients - some brands may contain eggs and seeds)
1/4 Cup of Milk
1 Table Spoon of Oregano
1 Teaspoon of Dried Garlic Powder
1 Pinch of Salt
1 Teaspoon of Ground Black Pepper

Directions:
Preheat the oven to 350F

In a small bowl, combine milk and bread crumbs. Allow the bread crumbs to absorb the milk for a few minutes.

In a large bowl, combine all of the ingredients well by hand. Form meatballs into 2 inch rounds or desired size. Place the meatballs on to baking sheet (preferably onto parchment paper but not necessary).

Allow to bake approximately 12 minutes, watch the meatballs so that they do not burn and always cut into one to see if it is fully cooked before eating.

These eggless meatballs are served great cooked in tomato sauce, on their own or in a gravy. If you make miniature meatballs you could make Italian Wedding soup like my Grandma makes.

Epi-Pen Cases and Travel Packs

For a lot of my life I've had to carry around Epi-Pens for myself. It is only until recently that I discovered you can buy Epi-Pen cases that descretely and safely carry your Epi-Pens and Benedryl with you. I just thought I'd write a little about this because I noticed that some of my friends are carrying Epi-Pens and Benedryl around without protective cases.

There was a girl here in town a few years back who carried two EpiPens, neither of them worked in her life threatening allergy emergency. She never made it to the hospital in time. Its never been made clear why her Epi-Pens didn't work when she needed them but one guess is that perhaps they got damaged in transportation.

That story is one of those reasons why I urge all of my friends who carry Epi-Pens to carry them safely in an Epi-Pen Case or Epi-Pen travel pack. We carry them for an emergency. In that emergency, they absoltely need to work.

Did you know you can carry your Benedryl in your Epi-Pen Case too?

One of the best things Benedryl has ever done since the invention of Benedryl is make single-serve doses of Benedryl that can easily be fit in most Epi-Pen travel cases and be transported from one place to the next without mess or worry. So often my bottle of benedryl for my kids would leak in my bag causing a huge mess. The single serve Benedryl for kids also reduces the chances of dosing errors.

For those of you who don't know, liquid Benedryl enters the blood stream faster than the alternatives which is why I carry the liquid Benedryl for children.

Sun Dried Tomato and Smoked Gouda Risotto Recipe

Sun dried tomatoes add a wonderful flavor to risotto and smoked gouda really rounds out the flavor for an amazing risotto. This is definitely one of those creamy risotto recipes you've been looking for!

Ingredients:
1.5 cups of aborio rice (risotto)
1 shallot diced
2 tablespoons of olive oil
1 cup white wine
4 cups of chicken broth
0.25 cups of diced smoked gouda cheese
0.25 cups of finely chopped sun dried tomato

Directions:
Saute shallot and olive oil until translucent. Add the aborio rice and continuously turn until the rice becomes translucent absorbing the oil.

On low heat: Pour in the cup of white wine and allow the risotto to absorb all of the liquid. Constantly stir to avoid burning the bottom.

Add chicken broth 1 cup at a time until all the liquid is absorbed before adding each additional cup.

After approximately 25 minutes, all of the liquid should be absorbed. Turn off the heat and slowly add the smoked gouda cheese, stirring until all the cheese is melted. Add the sundried tomato and mix well. Serve hot.

Egg Allergy Note: This side dish makes a great egg allergy alternative to pastas. Many pastas are either made with eggs or are produced on the same equipment as eggs. Obviously, egg noodles are simply out of the question.

Do Twins Have the Same Food Allergies?

As a mother of twins, that was something I was asking early on. Now science is backing up what parents have always believed.

According to a report from Melissa Teicher at Brynmawr, genetics has a lot to do with allergies but not everything. The study proves that only 65 percent of identical twins tested shared the same peanut allergy. Fraternal twins may share the same peanut allergy in only 7 percent of those studied.

One thing I have noticed in my allergy circles is that there seems to be a link between a particular food allergy and parents and their children. My child's allergist insisted there wasn't but my unofficial study in a small group of people disproves his untested theory.

In my own family, my daughter and I both have a severe sesame seed allergy. When I was a child I tested positive for an allergy to peanuts that I outgrew and my son is allergic to peanuts. In a friend's family, the father is allergic to peanuts and so is his son.

I also believe when I was younger I had an undiagnosed allergy to eggs as I would get severe abdominal cramping after eating eggs and had to run to the bathroom immediately. I was also allergic to milk until I was about 16 that caused severe asthma attacks that would put me in the hospital. My son was born allergic to milk and has since outgrown it.

Now I wonder, if I outgrew all of these allergies including milk, eggs and peanuts, will my son outgrow his allergy to peanuts too? Only time will tell if he shares the same gene to outgrow food allergies. He's already outgrown milk many years before I did. I haven't outgrown all food allergies but I have outgrown a few and that makes me optimistic.

So the big question still needs more answers. Do siblings have the same food allergies? If they do, is there anything we can do to prevent food allergies as babies?

Preheat Oven to 375F (convection baking) or 390 (conventional oven)

Directions:
Slowly add remaining ingredients with mixer until one large dough ball forms.

Remove and form into two balls.
Roll out the balls into 1/2 inch thick with a flour dusted rolling pin on floured surface

Cut out with cookie cutters (any size will do)
Place onto ungreased cookie sheet.
Bake until edges turn slightly golden (approximately 8 minutes) and remove from heat
Allow to dry on rack

It appears that Tamiflu may have serious side effects such as Stevens-Johnson's syndrome and Tamiflu may linked to several childhood behavioral issues. Tamiflu may also cause nausea and nightmares in children. All of that being said, I wouldn't make the decision lightly to give any child Tamiflu daily to prevent the flu or H1N1. I think Tamiflu may be a life safer for some people, I'm just hoping for a safer alternative to the flu shot than Tamiflu.
3 Cups of Confectioners Frosting
1 Tablespoon Vanilla Extract
4 Tablespoons of Whole Milk

Mix the butter until fluffy.
Add all the remaining ingredients in mixer until well blended and fluffy.
Frost the cake or cupcakes (they must be completely cooled or icing will melt).

For double layer cake icing, double the recipe.

Cookie Icing For Egg Allergy, the Royal Icing Substitute

Hard Cookie Icing is almost always made with egg whites, but not with this egg allergy recipe!

I will forewarn you, this hard icing for cookies takes a little practice and is a bit tricky. You must work very quickly and have all supplies immediately available for this to work.

1 cup of confectioners sugar
2 tablespoons of light corn syrup
4 tablespoons of full fat milk or heavy cream. Skim milk will not make the icing opaque.

Cook the above ingredients in a very small sauce pan on a medium flame while constantly stirring the ingredients. Remember, sugar burns very easily.

Pour the ingredients into either a pastry bag or a dessert decorator with a steel or plastic tip. (I use the Wilton brand dessert decorator)

Outline your cookies immediately while icing is hot and then flood the cookie. If you let get cold it will harden and not come out or stick to the cookies.

This recipe will only decorate 6 large cookies. Because the icing must be done while hot and reheating can burn, I recommend making small batches of icing rather than making large batches.

New Possible Cause for Peanut, Egg and Other Allergies

Parents, doctors and pharmaceutical companies are always asking, "What causes food allergies". Now there may just be one more possibility. There is a strong link between children with low vitamin D levels and food allergies. At this point, the link is not being called a cause but there is certainly room for suggestion that it may play a role in food allergies.

While the benefits of Vitamin D are still being discovered, one thing is clear, it certainly couldn't hurt to have your levels of vitamin D checked if you suffer from allergies. If you have low levels of vitamin D in the blood, your doctor can recommend a vitamin regimen that fits your specific needs.

One of the most dangerous side effects of potassium iodide pills is a severe allergic reaction called anaphylaxis. People who are allergic to shellfish such as shrimp or other fish such as codfish, may suffer from anaphylatic shock as a result of taking potassium iodide. While the potassium iodide does not contain shellfish or fish of any kind, both potassium iodide and some seafood contain proteins that are classified as parvalbumins. It is important to note that not everyone allergic to shellfish will be allergic to potassium iodide.

For more information on Potassium Iodide, visit the CDC website at: http://emergency.cdc.gov/radiation/ki.asp

Use your favorite vanilla or white cake batter to make cupcakes and allow to completely cool before icing and decorating. For dirty snowballs, use chocolate cake mix. Both eggless chocolate cake and vanilla can be found on this webpage.

Directions for Marshmallow Icing:

2 Sticks of Butter
1 tablespoon of vanilla.
4 cups of confectioners sugar
1/4 cup of milk while mixing
8 Regular Size Marshmallows (be sure to read ingredients, some brands use egg whites)

With a mixer, beat the butter and vanilla together until smooth. Add confectioners sugar and milk until fluffy.

In microwave, heat large marshmallows in a bowl in microwave for 18 seconds or until they fluff up without burning. Remove from microwave and add the marshmallows to the sugar mixture in the mixer, mix very well until fluffy.

Directions for Snowball Cupcakes:
Spoon on the marshmallow icing with a thick coat onto the top of each cooled cupcake.
Sprinkle dried coconut flakes onto each cupcake.
Place in the refrigerator for 30 minutes to stiffen the icing a bit and serve.

Christmas Dinner and the Egg Allergy

When the holidays come around, I can't help but think of my son's egg allergy. Everyone knows my son is allergic to eggs and peanuts but issues still arise. Visiting friends and family becomes a little frightening because not everyone's home is peanut safe. Our house is peanut safe so we never have to worry but friends and family that we don't visit often have no idea what exactly that means.

Our friends and family have nuts out on the table and offer cookies that contains both eggs and nuts. It gets a little nerve wracking trying to keep all the nuts and eggs away from my children. (By the way, did I ever mention I am allergic to tree nuts?)

Friends and family who do not have an egg allergy or nut allergy use the same sponge to clean all their dishes, or use wooden cutting boards to roll out cookie dough or make peanut butter sandwiches. This can be a very dangerous situation.

Here's how I handle all the Christmas dinners and visits with friends and family with our food allergies including eggs, peanuts and tree nuts.

1. I remind the host of our food allergies.

2. I always call ahead and find out what is being served. I do not ask them to change the menu, I simply tell them I will bring our own food. Most often they will change the recipe or the menu to accomodate the main course. Deserts are always another issue.

3. I tell the host I will bring the desert and I bring a few types of dessert that I know my family can eat and that our friends will enjoy. Most people do not know many egg free dessert recipes so they are pleasantly surprised with what I show up with.

4. Even though I have called ahead about the menu, I still bring turkey sandwiches or something else I know my family can eat. Sometimes the host doesn't realize that something they are baking contains eggs. Eggs are in so many foods and condiments that it is very easy to make a mistake.

5. Bring paper plates and juice boxes or water canteens to avoid cross contamination of eggs, peanuts and tree nuts.

6. Be prepared in case of an emergency. I bring EpiPens, Benedryl and asthma medications for all of us.

My favorite egg allergy desserts to bring to Christmas parties and dinners are: Cupcakes, Brownies, Sugar Cookies and Chocolate Chip Cookies.
This dip and chicken wings do not contain eggs or peanut oil so enjoy!

Buffalo Wing Recipe:

3 Pounds of chicken wings (family size pack)
1 Big kitchen knife (butcher knife, meat cleaver or santoko knife will work best)
Paprika (hot preferred)
1 Bottle of Tabasco sauce or hot pepper sauce (about two cups)
1 Large deep dish baking pan (glass or ceramic pans will be easier to clean and great from oven to table serving)
1 stick of butter

Preheat the oven to 425F degrees.

The chicken wing has three parts and two joints. Cut the chicken wings at all three joints. Discard the little tail or tip of the chicken wing (it is not used in this recipe but may be used for making chicken stock or other recipes).

Place the chicken in the baking dish and sprinkle paprika over the chicken. Pour 1/4 cup of hot sauce into the baking dish and toss the chicken to coat the chicken wings lightly.

Put the chicken in the oven and turn the chicken wings when they start to get golden about 30 minutes from the start.

Cook the chicken wings for approximately 1.5-2 hours without letting the chicken burn. Remove sooner if the chicken appears to be cooking quickly. (1.5 hours is a rough estimate. cooking time will really depend on the type of baking dish you have, convection cooking and thickness of the wings)

Remove the chicken wings from the oven when thoroughly cooked. In a separate dish, melt the butter and hot sauce together. Pour the hot melted butter and hot sauce over the wings in the baking dish and serve with the blue cheese dip.

Blue Cheese Dip Recipe:

1 Container of crumbled blue cheese (about 1 cup)
1/2 Cup of buttermilk
1/2 Cup Melted Cream Cheese

Mix together and serve!

Apple Crumb Pie Egg Allergy Recipe

If you are at high risk for complications from the H1N1 Swine flu virus and are allergic to eggs, it may be possible to receive the H1N1 vaccination. While the H1N1 vaccination is cultivated on ovalbumin (egg white protein) in the same manor as the standard or traditional flu vaccination, it may still be possible to receive the H1N1 vaccination with the help of your allergist.

Your allergist will perform several skin pricks to help determine your allergic reaction risk to the H1N1 flu vaccine. These skin prick tests are not 100% fail proof but do give your doctor a very good idea for allergic risk assessment.

If you pass the scratch test (skin prick test), your doctor may decide to administer the H1N1 vaccination in 10 mini doses over the course of 5 hours to carefully watch for any allergic reactions.

Allergic reactions may vary from minor irritation to severe. If your reaction is minor, Benedryl may be administered along with a steroid cream. If you have a severe reaction you may be given an epinephrine injection along with antihistamines and steroids depending on your situation.

It is important to have your allergist give you the vaccine if you are allergic to eggs because your allergist is prepared for emergency treatment should you need it. Do not attempt to get the H1N1 flu shot from a clinic or pharmacy as they may not be prepared to treat an allergic reaction in an emergency.

The Best Eggless Brownies for Egg Allergy

After trying multiple recipes for egg allergy brownies that actually taste like brownies, I came up with this version that will fool everyone!

Ingredients:
2 Cups All Purpose Flour
1 Cup Sugar
1 Cup Brown Sugar (any kind)
1/2 Cup Cocoa Powder (the better the cocoa, the better the brownie)
1/2 Teaspoon of Salt
1 Teaspoon of Baking Powder
1 Cup of Milk (substitute soy, oat or rice milk)
3/4 Cup Melted Butter
1 Teaspoon Madagascar Vanilla Bean Paste (substitute vanilla extract)

Instructions:
Preheat your oven to 350F
Add all the dry ingredients into bowl and mix well with a fork
Add the wet ingredients and mix until well blended with fork - do not use electric mixer
Pour into 9X12 baking pan (I prefer to line with parchment paper but it is not necessary)
Bake for 30 minutes
Let Cool for 15 minutes before serving.

To freeze, simply wrap baked brownies in wax paper. Thaw at room temperature for 30 minutes.

Macaroni and Cheese Egg Allergy Recipe

This macaroni and cheese recipe is so easy and fast that you will never bother making mac and cheese from a box again! All you need is a few basic ingredients from your kitchen.

*  2 ounces cheddar cheese
*  1 Tablespoon of butter
*  1 Tablespoon of flour
*  1/3 cup of Milk
* 4 cups of precooked pasta (your choice of egg free pasta - not all pasta is egg free)

Add 2 ounces of cubed cheddar cheese and 1 tablespoon butter to your medium sauce pan. I recommend using a stainless steel pot or enamel coated. I never recommend using aluminum or non-stick pans for health reasons.

Melt the cheese and butter down while constantly stirring with a whisk on very low heat so not to burn the cheese.

Whisk in 1 tablespoon of all purpose flour and then add 1/3 cup of milk and remain on low heat.

Add all 4 cups of well drained pasta to your cheese mixture and stir constantly while your sauce pan is remaining on low flame for only a minute and serve. Be creative with your pasta choices if making for children. Barilla has a great selection of small shape pasta including wagon wheels, mini shells and mini bow ties.

If serving to small children I suggest serving it warm rather than hot to avoid burns. Adults should eat this dish hot and use caution.

Oatmeal Raisin Cookies Egg Allergy Recipe

Ingredients:

Add the chocolate chips and mix briefly. Mixing too long will break up the chocolate chips.

Spoon cookie dough on to cookie sheet lined with parchment paper making individual rounds. Note that these will not be completely round, the dough will be thick. Do not worry, they flatten out when cooked!

Cook for approximately 8 minutes. Be sure to keep checking your oven so that the cookies do not burn, they will burn quickly!

Remove cookies from the cookie sheet with a spatula and let cool. Do not serve hot, the melted chocolate will burn. Serve warm or at room temperature.

Be sure to hide these cookies or they will be gone before you know it! They store great in the freezer as well!

If you decided not to use the parchment paper, be sure not to grease your baking sheet. The cookies will still come out delicious but the parchment paper reduces the browning on the edges and bottom. So basically you get a nicer cookie. I always recommend unbleached parchment paper when cooking.
