<p><a href="www.guylianbelgianchocolate.com">Guylian Belgian Chocolates</a> was founded by Guy Foubert. He made homemade chocolate truffles in Sint-Niklaas, Belgium. In 1958, Guy married Liliane, together they started a small chocolate company. They combined their names to get Guylian. Sounds like a bit of a love story to me, all that chocolate must have helped too! Now their chocolate is sold in over 100 countries. They still make their chocolate in small-batch copper kettles in Sint-Niklaas, Belgium. Guy&#8217;s signature chocolate truffle recipe has been unchanged for more than 50 years and is made with 100% pure cocoa butter.</p>
<p>Now onto the delicious details! First let me say that when they send you a sample its no small package! I was blown away with 9 bars/boxes of chocolate. Then came the best part: Opening them!  I started with the chocolate truffles. The chocolate looked beautiful, I&#8217;ve never seen chocolate displayed so wonderfully. Adorable little seahorses and shells, I thought for a second that I couldn&#8217;t eat a cute little sea horse. Ok, ok that second was gone, now onto the yummy part. The chocolate was soft on the inside, and smooth. It tasted like an amazing blend of chocolatey goodness. I couldn&#8217;t stop with just one! Each truffle is made with the finest chocolate with a unique blend of hazelnut preline filling. The quality is Guylian&#8217;s top priority, making sure every batch is perfect. To ensure each chocolate maintains its deliciousness Guylian uses a fast quality assurance delivery system. Mine was delivered in a cooler with an ice pack!</p>

<p>Next my husband tried the 54% dark chocolate bar.  He loved it, he thought is was the best dark chocolate he had ever had. He said it was different from other dark chocolate because it didn&#8217;t have a harsh bite to it like most do. Guylian makes two chocolate bars one dark and one milk chocolate. Both of them have no sugar added and Guylian writes that they are &#8220;suitable for diabetes!&#8221;</p>

<p>Although I always try to stick to somewhat healthy snacks, this time of the year (right before summer), I am even more inspired to not only be healthy, but to fit into my favorite shorts!  I was invited to take the &#8220;Healthy Snacking Challenge&#8221; where I would substitute <strong>Orville Redenbacher&#8217;s SmartPop</strong> popcorn for my usual snacks. Well, this sounded pretty easy, as I already love popcorn!</p>

<p>Not all popcorn brands taste the same though.  Believe me, I have tried just about every variety and brand available.  I love the butter flavored popcorn but some of them are disgustingly greasy.  Another thing that I dislike about some popcorn is that when popped, instead of being &#8220;big&#8221;, the popped corn is so tiny and &#8220;shriveled&#8221;.  Yuck.  The best kind of popcorn? Big kernels that pop into light and fluffy popcorn.  That is where <a href="http://www.orville.com/healthy-microwave-popcorn-smartpop">Orville Redenbacher&#8217;s</a> popcorn has many other brands beat.</p>
<p>I love eating snacks that I don&#8217;t have to feel guilty about. Orville Redenbacher&#8217;s SmartPop contains only 100 calories per six cups, and it is 94% fat free. I love that I don&#8217;t have to sacrifice flavor when trying to snack healthy. Orville Redenbacher&#8217;s Whole Grain SmartPop popcorn is a good source of fiber, and contains no trans-fat. Now THAT is something to be happy about.</p>

<p>There are so many snacking choices available these days, and I am just thrilled that I don&#8217;t have to feel guilty anymore. Previously I would snack on cheese and crackers usually (not terrible, but not incredibly healthy either). Cookies are typically the snack I would run to when was craving something sweet. Since I have discovered Orville Redenbacher&#8217;s SmartPop Kettle Corn, I don&#8217;t feel deprived and I actually prefer it over sweet snacks that contain loads of sugar and calories.</p>

<p>This was a really fun and easy challenge.  I thought I might miss my usual snacks a bit more, but I really don&#8217;t.  Of course other favorite snacks are fine in moderation, but if I&#8217;m not missing them, then I am not eating them!  I also feel good when I offer healthy snacks for my family.  SmartPop will definitely be a staple in our home from now on.</p>

<p>My son just turned three and has just discovered Mega Bloks! He loves to build towers and robots. He had a blast playing with this, and it was very easy for him to dump the blocks out, put them back in and roll the truck around making &#8220;driving&#8221; sounds.  I was happy to see that the handle was the perfect size for my son to grip. It really is a well thought out toy for little ones (and I wouldn&#8217;t expect less from Mega Bloks!).</p>

<p>My son often drinks milk alternatives, and I have on occasion as well.  I have never tried cooking with these products before, as I somehow thought that it wouldn&#8217;t work the same as milk in a recipe.  Boy, was I wrong!</p>
<p>I was asked to create a recipe using <strong>Blue Diamond Almond Breeze</strong> almond milk, and I gladly said, &#8220;yes&#8221;.  I am always up for a challenge, and trying healthier alternatives to my favorite foods. I decided to use the Chocolate Almond Breeze to make a yummy Tapioca pudding.  Previously I had only made tapioca with real milk, and I feared that the almond milk might not work the same.  It was actually really easy, and the taste?  Well, I&#8217;ll tell you about that after I show you the recipe and finished product.</p>

<p><strong>Almond Breeze Tapioca Pudding</strong></p>
<p>1/3 cup sugar<br />
2-3/4 cups Chocolate Almond Breeze (you could also use one of the other flavors instead, if desired)<br />
1 egg well beaten<br />
3 tablespoons tapioca<br />
1 tsp vanilla<br />
1/8 tsp salt<br />
1/4 cup white chocolate chips (optional)<br />
1/4 cup chopped macadamia nuts (optional)</p>
<p>Measure Almond Breeze and pour into large saucepan.</p>

<p>Mix in the sugar, beaten egg, Almond Breeze, salt and tapioca. Let sit for 3 or 4 minutes, then turn heat to medium-high and stir constantly. When mixture is boiling (still bubbling while stirring), remove from heat.</p>
<p>Add vanilla:</p>

<p>Add white chocolate chips and macadamia nuts (if desired):</p>

<p>Cool for about 20 minutes then put in bowl, or fill individual dessert cups. Refrigerate, add dairy-free whipped cream (if desired) and enjoy!</p>

<p>This was such an incredibly easy recipe, and I was really pleased with the results. I feared it might not &#8220;hold together&#8221; like tapioca with milk, but it held together just fine. It tasted SO good too. If I didn&#8217;t know that almond milk was used in place of regular milk, I would have never been able to tell. I also loved that it was so light tasting, and not too sweet (as tapioca often is).</p>

Well, I was super excited to review <a href="http://janetandgreta.com/cookbook/the-looneyspoons-collection/" target="_blank">The Looneyspoons Collection</a> by Janet &amp; Greta Podleski. With 400 pages and 325 recipes I was bound to find a few that tasted great, right? To tell you the truth I found more than a few on the first day cooking! We tried three recipes for dinner, two were out of this world yummy, one was a fail due to chef error (that would be me!). More about the recipes in a few minutes, but first let let me tell you about the chefs and the Looneyspoons background.</p>

<p>Back to recipes, we tried the Forever in Blue Cheese, Lord of the Wings, and Mr. Bean. Oh my goodness Forever in Blue Cheese was the best blue cheese dip I have ever tasted!! It was super easy to make with eight ingredients, most of which you have in your pantry already. All I had to buy was the blue cheese. My husband looked at me and said &#8220;MY WIFE CAN MAKE BLUE CHEESE DIP!!&#8221; I&#8217;m usually a ranch kind of gal but this was way better than ranch!</p>

<p>Next, we had Lord of the Wings which are buffalo wings, but much less fattening. They were delicious, best wings I&#8217;ve ever made at home. Although next time I might turn the oven down a bit cause the sauce in the pan was burning too quickly. The chicken however was perfect and yummy. My husband loved the name Lord of the Wings, since he is a big LOTR fan.</p>
<p>Lastly our side dish Mr. Bean which is green beans tossed with bacon, lemon, and honey mustard. I failed because I didn&#8217;t have a steamer basket. I thought they would be good cooked regularly, but they dried out. The sauce was great though, but the beans had the life sucked out of them. Steaming them would have contained the moisture in the beans much better.</p>

			<content:encoded><![CDATA[<p>I have been lucky, in that I lived near my parents for most of my life. There was a time, however, when I lived about 2 hours away when I was in my early twenties. Of course the internet wasn&#8217;t around then, but I often think how much I would have loved not only being online, but being able to use Skype to video chat with my parents.</p>

<p>Though my parents have both passed away, I have begun to use Skype to video chat with my BFF who lives about 3 hours away. She and I always have plenty to talk about, and we could do the normal Skype chat (more on that below), it is more fun for us to see each other&#8217;s expressions, and <em>hear</em> her laugh.</p>
<p>In addition to <strong>Skype Video Chat</strong>, I use the regular Skype chat to keep up with my blogging friends. I use this on a daily basis and I love it because it is so easy, and very reliable too.  I can either talk to my friend individually, and I also have a group, where we can all chime in and chat away, whether one of us has a question, wants to say hi, or we just want to tell each other good news.</p>
<p>Mother&#8217;s Day is almost here, and I can&#8217;t think of a better way to &#8220;see&#8221; your mom who might live thousands of miles away via video chat. Even if she is nearby, but you won&#8217;t be able to visit each other, there is Skype Video Chat!  Of course grandmothers, favorite aunts and even your own children might enjoy a face-to-face conversation with you, and to hear your lovely voice say, &#8220;I love you, Mom&#8221;!</p>

<p>You can visit the <a href="https://apps.facebook.com/sayitwithskype/?fb_source=bookmark_apps&amp;ref=bookmarks&amp;count=0&amp;fb_bmpos=2_0">Skype &#8220;Mom You Rock&#8221; Facebook page</a> to create a video of your own for that special mom in your life. Be creative &#8211; sing a song, make a sign to flash on the screen, feature the kids.  The possibilities are endless!</p>

<p>Skype supports Save the Children&#8217;s new campaign celebrating moms and motherhood with their &#8216;Mom you rock&#8217; video card. In addition to helping a great cause (Skype will donate $1.0 to Save the Children for every &#8216;Mom You Rock&#8217; video card that is created through May 14th), you can make a mother incredibly happy when she receives a video instead of a traditional card this year. If you are the forgetful type (and that would be REALLY bad to forget than Mother&#8217;s Day!), you can create your Mother&#8217;s Day Video Card early, and schedule it to be sent automatically on Sunday, May 13th. It doesn&#8217;t get easier than that!</p>

<p>Since I have been spending every other weekend at the lake home, I have been having a blast making my own decor.  I forgot how much I love doing crafts and how relaxing it is to listen to music and let the creative juices flow.  I recently posted about <a href="http://eightymphmom.com/2012/03/make-your-own-throw-pillows-out-of-placemats.html">making pillows out of placemats</a>, and I have made several more to match the colors in each room.</p>
<p>For the upstairs guest room, I bought a placemat with several colors in it, as I was intending to pull all of the colors for the room out of this one placemat pillow.  I ended up pulling two colors and didn&#8217;t use the placemat at all, but it did help guide me when decorating the room.</p>
<p>The walls are a bright but pale yellow/cream.  At first I didn&#8217;t like the color at all and considered painting it.  But once I started adding decor, the color is just fine.</p>

<p><strong>Handmade half quilt</strong></p>
<p>Where do I start?  Since I bought a plain comforter for the bed, I wanted to spice it up a bit with a half quilt.  I have no experience sewing or quilting, so this was definitely new territory for me.  I went to Hobby Lobby and purchased a thick fabric (approx. 2 1/2 yards) and some batting.  I spread the batting out in a single layer, then folded over once and cut out the size I would need for my half quilt. I used a fabric glue around the edges and held them together with clothes pins.  I am so pleased with the results and it makes the room &#8220;pop&#8221;.</p>
<p><strong>Pillows from placemats</strong></p>
<p>I made three pillows (one green, one purple, one multi-colored) out of placemats, and also purchased two round pillows at Ross ($7.99 each).</p>

<p><strong>Wall art from scrapbook paper</strong></p>
<p>I have been having a blast with decoupage, and have made several pieces to go in the room.  I purchased large and small square white canvases from Michael&#8217;s, as well as a couple of books with sheets of scrapbooking paper.  I used decoupage glue and cut out pieces of the paper to size for both size canvases.  I also found these cute little bitty easels at Michael&#8217;s, which I used for the small canvases, after I painted them with a blonde bronze paint:</p>

<p>I found this basket and decided to turn it over and place at an angle on the night stand to add a little color, and added some draping flowers (found at Pier 1).</p>
<p>Here is a larger canvas (there is one on either side of the bed).  They could also be used in groupings, if desired.</p>

<p><strong>Picture frames to match</strong></p>
<p>I found some $1.00 wooden frames (just bare wood) at a craft store, and painted them with a bronze color, then I cut more scrapbook paper to size and put in the frames. I chose small green and purple butterflies for these:</p>

<p>I also found a set of small hanging frames &#8211; the squares attached by small chains. I painted these the same bronze color, and cut more scrapbook paper to size to fit in the squares:</p>

<p><strong>The finishing touch &#8211; flowers</strong></p>
<p>Finally, I purchased a tan and muted purple pot, and found some artificial flowers that matched perfectly. I arranged the flowers and added them to the pot, which made a perfect centerpiece for the dresser.</p>

<p>Not only was it fun to create all of my own decor, there is a sense of pride when I walk into the room and know that I did it all myself. It was very inexpensive as well!</p>
<p>I am currently working on the other two guest rooms (and the master, but that is a little more difficult), and will share those with you when they are complete as well!</p>
