los dias,pero cuando hay unos "kilos",tengan seguro que hay pelea.&lt;br /&gt;

En nuestro caso, hoy Maruja las pescatera de Ribeira que ofrece los productos&lt;br /&gt;
de su lonja,ofrecia cinco kilos de huevas al mejor postor,cuestion que solo&lt;br /&gt;
pude escoger 800 gr,pero que eran suficientes para elaborar el salpicon del dia.&lt;br /&gt;

&lt;/div&gt;&lt;br /&gt;La verdad que el clima en Galicia,esta desconcertante_ me decia&lt;br /&gt;don Roberto,mi vecino de comercio,y es que aunque estemos en&lt;br /&gt;invierno,este año hace un frio de "carallo",que hace que la gente&lt;br /&gt;no les apetezca salir de casa,solo un dato,cuando les escribo este&lt;br /&gt;post,fuera esta diluviando como si tuviesemos un monzon tropical,&lt;br /&gt;y la casi la totalidad de las reservas de mesas han sido anuladas&lt;br /&gt;ante las alertas de que era peligroso salir de casa en coche.&lt;br /&gt;Para quitar el mal dia,mi suegra en la Lareira de su casa esta haciendo&lt;br /&gt;las primeras Filloas del año y su nieta Rocio esta liada con el horno haciendo&lt;br /&gt;Magdalenas segun vieja receta de la famila que hacia la abuela Rosalia.&lt;br /&gt;Se acompañara con una Queimada de " aguardente da casa",viendo&lt;br /&gt;llover por los cristales de la casa,y sintiendo el crepitar de la leña arder en la lareira del pazo familiar,es la simplicidad del lujo.&lt;div style='clear:both; &lt;strong&gt;Las primeras Fresas con un cremoso de Mascarpone.&lt;/strong&gt;&lt;br /&gt;
Nos llegan las primeras Fresas de Lepe a la plaza de Abastos,&lt;br /&gt;
despues de que el otoño pasado la mayoria de las fresas que se vendian&lt;br /&gt;
eran Chilenas y Peruanas (nada que objetar,ya que estos dias hay&lt;br /&gt;
promociones de comercio sortenible,con los paises sudamericanos&lt;br /&gt;
promovidos por la Xunta,he asitido a esos cursos y encima te dan&lt;br /&gt;
un diploma¿debe ser para justificar la subvencion?),pero la realidad&lt;br /&gt;
es que el publico en general no esta por la labor,y prefiere esperar a&lt;br /&gt;
las que nos llegan del sur del pais.por que saben que apuetas a caballo ganador.&lt;br /&gt;
Eso si siempre hay detractotes ,conozco a mas de un colega "taliban gastronomico"&lt;br /&gt;
de esos de que se dan el puño en el pecho,de que lo de "aqui",solo lo de "aqui"&lt;br /&gt;
y siempre lo "de aqui".Que luego eso si presumen de tener una carta de aguas&lt;br /&gt;
cosmopolita ,y de casi todos los acuiferos del planeta.&lt;br /&gt;

Mise en place de la preparacion de unos de los bocados que se degustan&lt;br /&gt;
en la noche de la Tapa+copa de vino,de los viernes noche en la temporada&lt;br /&gt;
invernal,este en concreto es una Xoubas (son de la Real conservera española,&lt;br /&gt;
de Ramon Peña/calibre 25-35) sobre escalibada de pimiento y berengena,terminado&lt;br /&gt;
con olivas negras y cebollino,como base una tosta de pan gallego.&lt;br /&gt;
Algo importante ante nuestros clientes es que el pincho tenga una base&lt;br /&gt;
de pan y se pueda degustar entre dos y tres bocados,algo ya mas grande&lt;br /&gt;
no es Tapa se considera ya plato.&lt;br /&gt;

1.500gr de Langostinos cocidos de maxima calidad.&lt;br /&gt;
500gr de carne de Centolla y Buey de mar (la hay preparada)&lt;br /&gt;
250gr de Huevas de Salmon o Trucha en su defecto.&lt;br /&gt;
1 manojo de cebollino.&lt;br /&gt;
Pimienta Blanca al gusto.&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;PASOS A SEGUIR.&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;Corte finamente los langostinos y desmenuce la carne&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;de los mariscos para introducirlos en un bol,donde se&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;trabajara el conjunto.&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;Agregar los huevos de trucha y el cebollino bien picado,&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;mezclar delicadamente con una "lengua" de silicona.&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;Espolvorear con la pimienta blanca a gusto.&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;&lt;br /&gt;&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;En este momento salta la duda...si le parece que la&amp;nbsp;&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;salsa coktel es demasiado potente o alguien es alergico a ella,&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;pase al planB. Un salpicon de mariscos"xeitoso".&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;En ese momento al bol que tiene toda la mezcla,le agrega&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;picado muy fino,un pimiento rojo y otro amarillo,mas tres&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;huevos cocidos de los que usara solo dos yemas y las claras&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;cocidas.vuelva a mezclar todo con sutileza,&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;Ahora falta el aliño.Una vinagreta con 250 cl de aceite de oliva,&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;1 cucharada de cafe de mostaza de Dijon y el zumo de 1 limon,&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;emulsione con una varilla en un bol (si quiere puede poner una chalota&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;picada,pero con el cebollino,tendra un sabor demasiado invasibo).&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;Vuelva a mezclar todo bien para que se impregne &amp;nbsp;el salpicon&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;de la vinagreta,con una cuchara de postre deguste el conjunto por&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;si le falta algo mas de sabor..... y guarde seguidamente tapado con&amp;nbsp;&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;un papel film en la nevera hasta el servicio.&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;&lt;br /&gt;&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;BON APETIT.&lt;/b&gt;&lt;br /&gt;

amplio margen gano la de la "monjitas",despues de una epifanica sobremesa donde&lt;br /&gt;
se la acompaño a la tarta de almendras de aguardientes gallegos.&lt;br /&gt;
Hay que advertir que es un convento de clausura,donde se tiene que guardar el&lt;br /&gt;
respeto pertinente,asi que no dare la direccion real aqui,esto funciona por el boca-oreja.&lt;br /&gt;
&lt;br /&gt;
POSDATA / aunque hay cientos de versiones y hasta los mismos pasteleros no&lt;br /&gt;
&amp;nbsp; se ponen de acuerdo,la tarta de Santiago,se delimita a la que se hace&lt;br /&gt;
&amp;nbsp; &amp;nbsp;en Santiago de Compostela,todo lo demas se llama tarta de Almendras.&lt;br /&gt;
&amp;nbsp; Y jamas de los jamases,nunca "riege" o deje regar por algun camarero&lt;br /&gt;
&amp;nbsp; falto de escrupulos y desaprensivo, con "vino Meus Amores",es un sacrilegio.&lt;br /&gt;

&amp;nbsp; &amp;nbsp; &amp;nbsp;de sus propuestas de "cocina miuda",y todo por el modico precio&lt;br /&gt;
&amp;nbsp; &amp;nbsp; &amp;nbsp;&amp;nbsp;de copa de vino+tapa de 7.60€.Cocina con estrella este pequeño&lt;br /&gt;
