Siempre que por estas fechas de año al comienzo de la temporada de los pimientos padroneses.Entre los&lt;br /&gt;
comensales que piden una racion como aperitivo,siempre surge la pregunta. ¿Pican?¿Que hago si sale&lt;br /&gt;
&amp;nbsp; uno picante?.&lt;br /&gt;
&amp;nbsp; Aunque hay comensales que disfrutan con cierto grado de picante,un porcentaje alto, temen que sus&lt;br /&gt;
&amp;nbsp; papilas gustativas aullen de dolor¿Pero como calmar una boca si te toca un pimiento de Padrón,&lt;br /&gt;
&amp;nbsp; crimimalmente picante? Veamos los metodos mas seguidos en nuestra "casa".&lt;br /&gt;

&amp;nbsp; El Agua / Podia pensarse que el agua produce un alivio instantaneo,pero no es asi la Capsaicina,no&lt;br /&gt;
&amp;nbsp; &amp;nbsp; es soluble al agua y esta solo hace que expandir el dolor.&lt;br /&gt;
El Pan / el pan al ser solido y rugoso distrae los nervios de la lengua con una señal distinta,dando&lt;br /&gt;
&amp;nbsp; &amp;nbsp; cierta sensacion de alivio,aunque no dura mucho.&lt;br /&gt;
La Cerveza/ Carbonizacion de la cervaza se pega a la Capsaicina y a las papilas gustativas,incre-&lt;br /&gt;
&amp;nbsp; &amp;nbsp; &amp;nbsp; mentando la sensacion de ardor.&lt;br /&gt;
El Vino /Sorprendentemente el alcohol,te adormece momentaneamente la boca,por lo cual tendriamos&lt;br /&gt;
&amp;nbsp; &amp;nbsp; &amp;nbsp; que beber ingentes cantidades de vino.&lt;br /&gt;
&lt;br /&gt;
&amp;nbsp; &amp;nbsp;La Solucion / La Leche.&lt;br /&gt;
&amp;nbsp; La leche contiene una proteina que se llama Caseina,que se pega con fuerza a la Capsaicina&lt;br /&gt;
&amp;nbsp;.Con mas fuerza que la Capsaicina se pega a las papilas gustativas.liberando y limpiando&lt;br /&gt;
&amp;nbsp; &amp;nbsp;la boca de todo rastro de picor.Ya desde antiguo y en diferentes partes del planeta gastronomico.&lt;br /&gt;
se usan los productos lacteos contra el picante. Como la crema agria en la comida mejicana,los&lt;br /&gt;
yoghures en los curris asiaticos....Pero como dice mi medico,si lo miramos desde un punto de&lt;br /&gt;
vista biologico la comida picante tiene sus efectos beneficiosos en el cuerpo humano,ya que&lt;br /&gt;
produce una hormonas que son las Endorfinas,que te dan un cierta sensacion de bienestar.&lt;br /&gt;
&lt;br /&gt;
Capsaicina / Es un molecula que llevan los pimientos y que le da su caracteristico grado de picor.&lt;br /&gt;
Por cierto estos dias que los noticiarios de television nos llenan de imagenes de manisfestaciones.&lt;br /&gt;
cuando la policia usa su disuasorio gas pimienta ,el ingrediente principal es la Capsaicina,si no que&lt;br /&gt;

&amp;nbsp; &amp;nbsp;Como aperitivo,hechas en casa con aceite de oliva suave en nuestra pota.El tipo de patata que usamos,&lt;br /&gt;
&amp;nbsp; &amp;nbsp;es la del tipo Monalisa por su bajo contenido en agua. (la Kenebec tan tradicional por estas latitudes&lt;br /&gt;
&amp;nbsp; no funciona) Y salamos cuando la patata esta "ya" fria.Pues salarla al teminar la fritura,se potencia mucho&lt;br /&gt;
&amp;nbsp; la sal en boca.El problema es la humedad ambiental (al no tener conservantes) hace que solo duren un &amp;nbsp; dia,ya que pasadas 24 horas,se vuelven de textura blandurria.&lt;br /&gt;
