However, I do like to use the milestone of a new year to prompt myself to reflect upon the past year and make a list, whether mentally or physically, of things I intend to do or work on for the next year.&lt;br /&gt;
&lt;br /&gt;
2011 was a good year. It brought me two successful semesters of college along with a summer class; a new job at Eastside Animal Health Center that I enjoy; good times with family, friends, and Josh; an awesome trip to Sea World; a cat miracle; a new church at Mount Olive; and much, much more.&lt;br /&gt;
&lt;br /&gt;
2012 seems promising. My goals?&lt;br /&gt;
Spiritual - read the Bible every day (iPhones are so handy for that!), learn to put God FIRST in my life, above everything and everyone else (I've learned that things don't go so well when I lose focus).&lt;br /&gt;
Academic - complete two more semesters of college with sweet grades and excel at my position as VP of Sigma Tau Delta (English Honors Society), submit lots of writing and (ultimately) be published. Speaking of which, please check out &lt;a href="http://emmakshockley.yolasite.com/"&gt;THIS WEBSITE&lt;/a&gt; that I created and click that little "Like" button in the left corner!&lt;br /&gt;
Fitness - get back to running and working out, doing yoga, and eating healthy. Thinking about trying vegetarian again for a while.&lt;br /&gt;
Organization - get rid of everything unnecessary!&lt;br /&gt;
&lt;br /&gt;

Especially to coffee. Not just coffee. But the really good coffee. My latest favorites are White Chocolate Mochas and, for the holidays, Peppermint Mochas. I first discovered these at Starbucks, but God knows I can only afford so many of those. I then learned that McDonalds has them, too, and they're not bad at all, but cheaper. Still, I'm a poor college kid. So I decided to see if I could make something similar at home.&lt;br /&gt;
My mom hates coffee, so we've never had a coffee maker. So I borrowed my boyfriend's coffee maker and started Googling. After reading several recipes, this is what I came up with.&lt;br /&gt;
&lt;br /&gt;
1. In a small bowl, combine equal parts warm water and sweetened cocoa powder. &lt;br /&gt;
&lt;br /&gt;
2. Stir until it forms a smooth syrup.  &lt;br /&gt;
&lt;br /&gt;
3. Pour 2 Tbsp. of the syrup into an 8 oz. cup.  &lt;br /&gt;
&lt;br /&gt;
4. Add a shot (1 oz.) of espresso or double-strength, dark-roasted  coffee. (To brew double-strength coffee, use 4 Tbsp. of ground coffee  for every 6 oz. of water.)  &lt;br /&gt;
&lt;br /&gt;
5. Fill the rest of your cup with steamed milk. (If you don't have a  milk steamer, heat milk on the stove to between 140 and 160 degrees.)  &lt;br /&gt;
&lt;br /&gt;
6. Top with whipped cream and enjoy!  &lt;br /&gt;

I also didn't have any whipped cream on hand, but I did add a drop of peppermint extract. Once again I went to old reliable Google. Chocolate Chocolate Chip Muffins and Creamy Hot Cocoa it was. Here's the delicious recipes I used.&lt;/div&gt;&lt;div style="background-color: white; border: medium none; color: black; overflow: hidden; text-align: left; text-decoration: none;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div style="background-color: white; border: medium none; color: black; overflow: hidden; text-align: left; text-decoration: none;"&gt;&lt;h2 class="kv-ingred"&gt;Ingredients&lt;/h2&gt;&lt;ul class="kv-ingred-list1"&gt;&lt;li class="ingredient"&gt;1 3/4 cups all-purpose flour &lt;/li&gt;
&lt;li class="ingredient"&gt;2 teaspoons baking powder &lt;/li&gt;
&lt;li class="ingredient"&gt;1/2 teaspoon baking soda &lt;/li&gt;
&lt;li class="ingredient"&gt;2 tablespoons best quality cocoa powder &lt;/li&gt;
&lt;li class="ingredient"&gt;3/4 cup superfine sugar &lt;/li&gt;
&lt;li class="ingredient"&gt;3/4 cup semisweet chocolate chips, plus 1/4 cup for sprinkling &lt;/li&gt;
&lt;li class="ingredient"&gt;1 cup milk &lt;/li&gt;
&lt;li class="ingredient"&gt;1/3 cup plus 2 teaspoons vegetable oil &lt;/li&gt;
&lt;li class="ingredient"&gt;1 egg &lt;/li&gt;
&lt;li class="ingredient"&gt;1 teaspoon pure vanilla extract&lt;/li&gt;
&lt;/ul&gt;&lt;h2&gt;Directions&lt;/h2&gt;&lt;div class="instructions"&gt;&lt;div class="instruction"&gt;Special equipment: Muffin tin with paper muffin cases &lt;/div&gt;&lt;br /&gt;
Preheat the oven to 400 degrees F. &lt;br /&gt;
&lt;br /&gt;
Put the flour, baking powder, baking soda, cocoa, sugar, and 3/4  cup of the chocolate chips into a large bowl. Pour all the liquid  ingredients into a measuring jug. Mix the dry and wet ingredients  together, remembering that a lumpy batter makes the best muffins. Spoon  into the prepared muffin cases. Sprinkle the remaining 1/4 cup chocolate  chips on top and then bake for 20 minutes or until the muffins are  dark, risen and springy.&lt;br /&gt;
&lt;br /&gt;

&lt;li class="plaincharacterwrap ingredient"&gt;                     3/4 teaspoon vanilla extract&lt;/li&gt;
&lt;li class="plaincharacterwrap ingredient"&gt;                     1/2 cup half-and-half cream&lt;/li&gt;
&lt;/ul&gt;&lt;/div&gt;&lt;div style="border-top: 1px #ccc dotted; margin-top: 20px; width: 300px;"&gt;&lt;/div&gt;&lt;div class="directions" style="margin-top: 10px;"&gt;&lt;h3&gt;Directions&lt;/h3&gt;&lt;ol&gt;&lt;li&gt;&lt;span class="plaincharacterwrap break"&gt;                     Combine the cocoa, sugar and pinch of salt in a  saucepan.  Blend in the boiling water.  Bring this mixture to an easy  boil while you stir.  Simmer and stir for about 2 minutes.  Watch that  it doesn't scorch.  Stir in 3 1/2 cups of milk and heat until very hot,  but do not boil!  Remove from heat and add vanilla.  Divide between 4  mugs. Add the cream to the mugs of cocoa to cool it to drinking  temperature.                 &lt;/span&gt;&lt;/li&gt;

Besides the name-brand appliances, expensive paintings, and the fact that for the purpose of the picture the only things present are those which are attractive, the big thing is organization. That's why they want to sell you all those assorted baskets and metal boxes with built-in labels to put everything in. Those would completely solve your life's problems! All of your magazines, books, craft supplies, and yarn would have their own place. But what about everything else?&lt;br /&gt;
The truth is, there is no need to spend a ton of money on things to help you organize the things you have already spent money on. With a little creativity, you, too, can have organized and attractive rooms.&lt;br /&gt;
&lt;br /&gt;
Shoes are one of my biggest problems. I have probably a dozen pairs too many. And that shelf at the bottom of the closet? Just not enough room. I invested several dollars (you could even make your own!) in some hanging shoe holders that go on the back of closet doors. They're totally worth the sight of the hooks on the other side. They allow you to easily see and access every pair of shoes, without the others falling down.&lt;br /&gt;
&lt;br /&gt;
My bathroom is always a mess. Makeup, hair products, oral hygiene items, and facial products clutter my counter constantly, and throwing them in a drawer doesn't help with the organization factor. My solution? I took baskets, boxes, and bowls that I had from gift sets people had given me, and recycled them into good use. I have one basket with all of my hair products on a shelf; another on the counter holding my obsessive amount of mouthwash, floss, and toothpaste; a bowl in a drawer for all of my not-every-day makeup, and a divided box in another drawer separating everyday makeup, tweezers and nail clippers, and nail polish.&lt;br /&gt;
&lt;br /&gt;
My desk is my other huge problem. I do everything at my desk: homework, writing, painting. The problem is, this desk is only big enough for one project. Out came the baskets again. A divided basket holds my sharpies, pencils, notepads, staples. A file holder helps with my letters and paperwork. And the cutest thing? A glass coke bottle to hold my paintbrushes. They can't roll away or clutter my workspace, I never have to go looking for them, and it looks pretty neat.&lt;br /&gt;
&lt;br /&gt;
Another cheap alternative is those rolling, plastic drawers. I got a set of three at Wally World for less than ten dollars last year. It doesn't take up much space, but provides a place for me to store all of my old schoolwork and notebooks that I may need access to again.&lt;br /&gt;
&lt;br /&gt;
There are many other ways to keep your stuff organized that doesn't involve too much work or a lot of money. My latest project: homemade shampoo. I have naturally oily hair, so I have to wash it every day. Even if I wash it in the morning, it's sometimes greasy by that evening. Homemade shampoo cleans better (I used it for the first time last night, and I'm already happy with the results), doesn't contain chemicals, and is cheaper. You can do really easy homemade conditioner, too.&lt;br /&gt;
&lt;br /&gt;
Tonight I made sugar free healthy oatmeal cookies, and I'm making sugar free honey wheat bread. Yummy.&lt;br /&gt;

Yesterday Josh and I spent about 5 hours hiking about 14 miles of the Ozark Highlands Trail yesterday. It started out a little chilly but ended up feeling great. Other than a little soreness and stiffness - and the unfortunate face plant I did when I tripped over a large log - it was a lot of fun. The leaves are all changing and the scenery was beautiful. We found some neat big rocks that Josh climbed on, some old rock chimneys, and some sort of a spring well or something. I also found an old alcohol bottle full of mud, but Josh didn't think it had a message in it. :/ lol&lt;br /&gt;
I've only got about five weeks left of the semester. I registered for spring last week. Intermediate Spanish 1, Fiction Workshop, Textual Research Methods, History and Development of the English Language, Newspaper Staff, Applause (our literary magazine) Staff, and hopefully Free Verse are what's on the menu. &lt;br /&gt;
My latest writings have been a character journal from the perspective of Ichabod Crane about what really happened to him, a creative nonfiction essay about working at the vet, an essay on Americans' focus on material possessions, and an essay about a basement at one of my old houses. &lt;br /&gt;

My latest happenings: Everything has been crazy lately. School is in full swing, in fact we're in week 10 of 16 for the semester. I'm really enjoying my classes, all 17 hours of them, and I'm excited about these upper level writing classes and getting involved in the department. I'm taking Nonfiction Writing, Editing, Poetry, Publications Staff, Literature, and Spanish. The latter two are online and not my absolute favorite, but they're not bad. Nonfiction is probably the best. Learning about and writing creative nonfiction is fascinating and exciting to me; I love drawing from my own experiences and creating stories from them. You can read my first story &lt;a href="http://www.associatedcontent.com/article/9039425/its_not_easy_being_red.html"&gt;HERE&lt;/a&gt;. And while you're there, you can take a look around at some of my other essays and poems. Editing has given me a lot of writing and editing practice. Poetry is tedious but good. Publications Staff is great. Check out my article in the latest newspaper edition &lt;a href="http://lionschronicle.uafortsmith.edu/navigation/campus.htm"&gt;HERE&lt;/a&gt;. Actually, check out the whole thing! We have a new editor and have re-vamped and improved the newspaper this semester and have gotten a great response from it. My adviser found out that I am able to declare Spanish as a second minor, so I'm pretty happy about that. I've been accepted into Sigma Tau Delta, the English Honors Society, and am looking forward to being involved in it.&lt;br /&gt;

My latest tragedy: We won't go into everything except to say it's been an interesting two and a half weeks full of tears, friends, doctors visits, medicine, and vet visits. The only thing I'll go into here is the vet visits. Some of you know my cat, Tinkerbell LaTasha Bojangles... or Tink for short. Anyhow, last Friday while I was at Wally World filling some prescriptions after my own visit to the Dr., my mom called me and told me Tink had been hurt badly and I needed to get to the clinic, where, fortunately, she and I both work. Panicking, I sped down there and found her on the x-ray table meowing loudly. Immediately in tears, I asked what happened and mom explained that she had been pinned under my garage door since I'd left that morning - for about 2 1/2 hours. Long story short, nothing was broken or crushed, and though her back half was paralyzed at the time, she is now recovering miraculously and is able to walk a little, although she looks pretty funny. And super easy! After getting the ingredients, it only takes ten minutes or less. There are tons of recipes out there, but here is the one I used.&lt;br /&gt;

I actually couldn't find any roasted garlic or garlic cloves so I just used minced garlic, and I think it turned out great. The downside is that from what I've read you can only keep it in the fridge for about 2-3 days. &lt;br /&gt;
&lt;br /&gt;
&lt;h3 id="rI"&gt;Ingredients:&lt;/h3&gt;&lt;ul&gt;&lt;li class="ingredient"&gt;1 can chickpeas/garbanzo beans (15 oz.)&lt;/li&gt;
&lt;li class="ingredient"&gt;2 tablespoons roasted garlic&lt;/li&gt;
&lt;li class="ingredient"&gt;1/2 tablespoon lemon juice&lt;/li&gt;
&lt;li class="ingredient"&gt;1 tablespoon olive oil&lt;/li&gt;
&lt;li class="ingredient"&gt;1/2 teaspoon oregano&lt;/li&gt;
&lt;/ul&gt;&lt;h3 id="rP"&gt;Preparation:&lt;/h3&gt;In  a food processor, process beans, garlic, olive oil, lemon juice and  oregano until desired consistency. I got an incense burner today :) And some incense, of course. It smells gooooddd. I'll be honest, many of the scents I smelled were pretty bad. But I got strawberry, honey almond, rose, cinnamon, and love... I think.&lt;br /&gt;

I'm going to attempt to make hummus tomorrow. I know I could buy it, but I think it would be more fun to make it, plus it would make me feel more accomplished ;P I'm also skeptical of the nutritional value of anything packaged. If it turns out, I'll post the recipe.&lt;br /&gt;

Speaking of nutritional... I just watched this documentary called &lt;a href="http://www.fatsickandnearlydead.com/"&gt;Fat, Sick, and Nearly Dead&lt;/a&gt;. It was actually pretty interesting. Makes ya think how easy and quick it can be to "reboot your system" and lose a ton of weight (if applicable) or just get much healthier. Obviously it probably wouldn't be smart for someone of my size to fast and have nothing but fresh fruit and vegetable juice, but it certainly wouldn't hurt to add that in!&lt;br /&gt;

I kinda love my job. Really, caring for and helping animals all day... not too bad. It's sad at times, and frustrating at times, and tiring at times... but also a lot of fun. :)&lt;br /&gt;

I have been cracking my knuckles and popping my back and neck for really as long as I can remember. With some strong discouragement from Josh and after looking into some of the effects of doing it, I'm making an effort to stop. It's hard because it's such a HABIT, and also because it does hurt when I don't pop it. But I've already noticed that I feel like I need to pop them less and that they hurt less. My back is sore a lot, and I've found that some yoga moves can realign my spine and make me feel much better. I don't do it often, but I'd like to get back into it.&lt;br /&gt;
&lt;br /&gt;
I think that's enough randomness for now.&lt;br /&gt;

It was so sweet, taking these little tiny kittens and rubbing them and getting them to breathe. Yesterday we had someone come in with 9 black and white half boxer, half pitt bull puppies. Adorable! And I've been babysitting a coworker's baby all day Monday and all day today. He's sweet.&lt;br /&gt;
&lt;br /&gt;
We've been making more bracelet orders! I'll put some pictures of some new color combinations we've made. Yesterday Josh and I went hiking at Mount Magazine again. We hiked 10 miles up the highest mountain in the state.. it was fun, but pretty tiring! It was some rough terrain, too.&lt;br /&gt;

The point of these (besides that they look cool!) is that paracord is a super strong, durable, multi-purpose cord. It holds up to 550 pounds and has seven strands inside of a soft outer wrap. It is also fast drying, flame resistant, and doesn't mildew. Because of it's durability, it can be really useful in many situations and is good to have on hand. A good way to do that is to have a bracelet made out of it. :) These bracelets can be unraveled, producing 8 to 10 feet of paracord good for any use!&lt;br /&gt;

But, here I am.&lt;br /&gt;
Several things have happened since I last posted. One big (and awesome!) thing is that I got a job working at a vet clinic and quit working at the pizza place. It pays better, is a much better environment, and I like it much, much better. Praising the Lord for that. :)&lt;br /&gt;
I took a summer class, Earth Science, which kind of sucked but I was glad to get it done and over with. I'm even more glad, though, that it's over and I don't have to go for hours every evening after work anymore.&lt;br /&gt;
Josh and I have been doing a lot of hiking and stuff lately. The weekend before last we went to Mount Magazine and hiked to the highest point in AR, as well as several other paths... about 8 miles in all. Saturday we kayaked for about three hours at Montgomery Lake and found some neat islands and other places along the shoreline that we stopped at and hiked around in. We're planning to go back to Mount Magazine in the next couple weeks to hike the big, 9 mile trail, which may end up being 18 miles if we have to hike back to get to our truck. I even bought a pink fishing pole, on the terms that he would show me how to fish and, if I caught anything, take it off the hook for me. ;)&lt;br /&gt;

As I was sitting at my desk (in my finally-cleaned room!) working on a paper for Advanced Comp, I was struggling with how to give personal examples without ratting out people I know. So my question is, how personal can/should a personal or familiar essay be? How can one be honest and open with their readers, without sharing too much personal information?&lt;br /&gt;
&lt;br /&gt;
I also struggle with topics. I have a million things I could write about, yet I take forever to choose a topic for anything: essay, poem, story. I always want my topic to be good, interesting, and original. I really need to start on my fiction story for Imaginative Writing (actually, I should have already started on it). I just can't come up with a story that I really want to write about. If worst comes to worst, I can pull out something from my senior creative writing class and revise it a little. We'll see.&lt;br /&gt;
&lt;br /&gt;
On a different note, Josh finished CPR and First Responders last week, passed with flying colors, and came home for the weekend. We got to hang out Friday night and Saturday, but it went by way too quickly. Plus, we both had to work for a while. He's on his way&amp;nbsp; back right now and starts Firefighter Standards tomorrow.&lt;br /&gt;
&lt;br /&gt;
Midterms went very well, I didn't really have midterm tests, but the grades were taken from everything I've done so far. Straight A's, and I plan to keep it that way til finals. I'm taking a class this summer and between that, the extra hours I've been taking, and the classes I CLEPed out of I'm hoping to graduate a semester early, even if I need to take one more extra class.&lt;br /&gt;

Josh left yesterday morning for the Firefighter Academy. It's 9 1/2 weeks long, and I'll only see him on weekends during that time, so it's sad.... BUT, I'm happy for him and proud of him and I know he'll do well. :)&lt;br /&gt;

Short school day today, as one class was canceled. I met with my advisor and registered to take Earth Science this summer. Ooh fun... :/&lt;br /&gt;

Secondly, they didn't hate my other poem, either! I was nervous about that one because it was really different from the first and also because it was partly in Spanish. I wasn't sure what they would think about it. But they liked it better than the first, and they all loved the Spanish!&lt;br /&gt;

Which is a problem when you're in writing classes with peer review sessions and workshops.&lt;br /&gt;
Yesterday two of my Advanced Comp classmates had to read and review my essay, Midnight Adventures, that I posted on here before. Their response said they were interested, but I failed to explain geocaching, so they wanted to know what sort of game that is.&lt;br /&gt;
Today my poem was in the packet we workshopped in Imaginative Writing. AH! They didn't hate it though!! My teacher even said he really liked parts of it! I got a lot of good feedback on it, which was great.... except they TOTALLY misunderstood the poem, lol! I had no idea that it seemed to mean what they took it to mean... an outsider's perspective is very valuable, lol.&lt;br /&gt;

An hour after posting this, I picked up Harvey's &lt;i&gt;The Nuts and Bolts of College Writing&lt;/i&gt; to read my assignments from Advanced Comp and read this:&lt;br /&gt;
&lt;b&gt;2 Clarity&lt;/b&gt;&lt;br /&gt;
Most of us think our writing is clearer than it really is. We know what we mean, so we see it in what we write. But good writers see their words from the reader's perspective, because clarity, like beauty, is in the eye of the beholder. Good writers ask, "Does my reader understand the words I'm using, the way I'm using them? Have I explained enough so that she knows what I'm talking about?..."...&lt;br /&gt;
&lt;b&gt; &lt;/b&gt;&lt;br /&gt;

Never watch the movie &lt;i&gt;Frida&lt;/i&gt;. And if your college Humanities class requires you to watch a Spanish movie, don't choose that one. The Spanish language and culture was cool, but the movie was awful. You know it's gonna be bad when the professors get up and warn you that it will probably be disturbing, troubling, and offending. Why does society want to numb everyone to the horrible wrongness of adultery, homosexual activities, and lust?&lt;br /&gt;
&lt;br /&gt;
Why can't there be a trade school for writers? So I wouldn't have to take all of these other classes?&lt;br /&gt;
&lt;br /&gt;
I wish I didn't suck at playing guitar. Maybe if my hands weren't the same size they were when I was 12, it would help. &lt;br /&gt;
&lt;br /&gt;
You know what I hate? Decisions. Ask anyone who knows me, I suck at making decisions. I would almost always rather someone else just decide things for me. I especially hate important decisions. I never feel like I can get a clear, sure answer of what I'm supposed to do.&lt;br /&gt;

It has been a splendid Valentines day for me. I realize this is an extremely commercialized holiday but I love it. I think some people go crazy and spend way too much money... I prefer sweet and simple gifts and spending quality time together myself. :)&lt;br /&gt;
Which is what it's been for me this year. Saturday night Josh took me out. The first restaurant we tried had a line all the way outside and around the sidewalk... so we left and went somewhere else. It was nice and good and we enjoyed ourselves. We then went to the coffee shop to listen to a friend of his play and sing, then hung out with another friend over cups of coffee at IHOP. Yesterday he played worship at a church and we ate at La Huerta. The Orchard... that's pretty. Last night after work we hung out until after midnight when we exchanged Valentines gifts. He gave me the Valentines blanket and pillow set ever, and chocolates :) He found the prettiest chocolate box, with First Corinthians 13:13 on it. "And now these three remain: Faith, Hope, and Love. But the greatest of these is love." Isn't that the coolest? And a big dark chocolate bar. The best.&lt;br /&gt;
Today after school I surprised my mom at work with flowers and chocolate.&lt;br /&gt;

I have no idea if this movie is popular or not, but I was just bored and it looked somewhat interesting. It was different, and pretty good. Not the best I've ever seen, but pretty original and pretty well done. Anyway, one of the characters in the movie plays and sings a couple of songs that I really liked, so I looked it up and found out that the actress actually wrote and played the songs herself. I looked up some more of her music and really liked that, too. Later on I was telling Josh about it and played one of her songs for him and he said "Oh, Schuyler Fisk, I know who that chick is. She plays on the radio all the time." So, most likely, you all already know who she is. But I didn't. She's good though, check her out if you've never heard her.&lt;br /&gt;
