As of today, I&#8217;ve posted six of them. I love being able to take a can of chickpeas, mash it up and have a quick sandwich filling or salad topping. And as my days get more and more hectic, my chickpea salads have become quicker and quicker. Don&#8217;t get me wrong&#8211;when I have the time, I still prefer to fill my chickpea concoctions with lots of fresh veggies (as in my <a href="http://blog.fatfreevegan.com/2010/09/sea-sational-chickpea-salad.html">&#8220;Sea-sational&#8221; Chickpea Salad</a>) or fresh herbs (as in <a href="http://blog.fatfreevegan.com/2008/10/two-chickpea-salads.html">Creamy Chickpea Salad</a>). But when I&#8217;m rushed, trying to get a lunch packed for my daughter or looking to add interest to my own lunchtime salad, I&#8217;ve learned to simplify chickpea salad down to 4 essential parts: chickpeas (naturally), something creamy, something crunchy or sweet, and some basic seasonings. </p>

<p>One of the questions I&#8217;m frequently asked about following an oil-free diet is &#8220;What do I use on baked potatoes or steamed vegetables or grits if I don&#8217;t eat butter or margarine?&#8221; Sometimes I mention salsa or <a href="http://blog.fatfreevegan.com/2008/11/mushroom-lentil-and-wild-rice-timbales.html#gravy">mushroom gravy</a> or the sauce from my <a href="http://blog.fatfreevegan.com/2007/10/easy-macaroni-and-cheeze.html">Mac and Cheeze</a> as options, but from now on, I&#8217;ll point people to this, my family&#8217;s new favorite all-purpose sauce. That&#8217;s right, all of us&#8211;including my picky teenager&#8211;prefer this cauliflower-based sauce to our old cheesy sauce. Daughter E put it best: &#8220;It&#8217;s less heavy, almost fluffy, and mixes into a baked potato better.&#8221; And that&#8217;s coming from someone who doesn&#8217;t like cauliflower very much.</p>

<p>Here&#8217;s a soup for those times when you want something light in calories but filling and nutritious and quick. You wouldn&#8217;t think that such a simple soup could taste so delicious, but superfoods are &#8220;super&#8221; in more ways than one!</p>
<p>I&#8217;ve called this &#8220;Superfoods Soup&#8221; because it contains 4 of the 6 foods that Dr. Joel Fuhrman calls &#8220;the most nutrient-dense, health-promoting foods on the planet&#8221;: Greens, Onions, Mushrooms, Berries, Beans, and Seeds&#8211;<a href="http://www.diseaseproof.com/archives/healthy-food-gombbs-greens-onions-mushrooms-berries-beans-and-seeds.html">GOMBBS</a> for short. I managed to pack in bok choy, mushrooms, tofu, onions, and garlic&#8211;all for under 100 calories. (If I could have figured out a tasty way to add berries I would have. You&#8217;ll just have to eat it with a dessert of berries topped with flax seeds!) </p>

<p>It&#8217;s been a week full of tragedy and fear. My heart aches for the families of everyone hurt or killed in Boston and Texas, and my reaction to everything that&#8217;s happened (and continues to happen) is to plant myself in front of the news in search of the answers to &#8220;What?&#8221; and &#8220;Why?&#8221; It&#8217;s not a healthy response in a number of ways. Seeing the number of mistakes that the media has made, I&#8217;m becoming convinced that it&#8217;s probably better to check the news only once a day to avoid all the speculation and outright errors. And on a personal level, being holed up in front of a TV or computer screen has made me more sedentary than usual and less inclined to pry myself away and create a new recipe.</p>
<p>So it was lunchtime yesterday before I was finally able to drag myself off the couch and back into what I call &#8220;The Voisin Test-Kitchen.&#8221; I wanted something fresh and cold and under 200 calories, so I came up with this pasta salad that doesn&#8217;t use pasta. </p>

<p>Even though I&#8217;m not a breakfast eater and I don&#8217;t eat eggs, I love omelets. Tofu omelets, that is. I can eat them morning, noon, or night; plain or stuffed with as many veggies as they can hold. My <a href="http://blog.fatfreevegan.com/2007/09/vegan-omelette-for-one.html" title="Vegan Omelette for One">Vegan Omelette for One</a> and all my <a href="http://blog.fatfreevegan.com/tag/eggless-eggs" title="Eggless Eggs Recipes">&#8220;Eggless Eggs&#8221; recipes</a> are, to me, the definition of comfort food: flavorful, filling, and familiar. But they all depend on tofu, and I know some of you reading this can&#8217;t or don&#8217;t eat soy. So what do you do if you crave an omelet and can&#8217;t have tofu? </p>
