Pasteles are Puerto Rican special occasion food. The whole family usually gets together assembly-line-style to make large numbers of these starchy, tamal-like cakes and get them ready for the boiling pot. No Boricuan Christmas is complete without pasteles

Makes about 12 to 15 pasteles, enough for 6 to 8 people

Masa (dough)

Green bananas, peeled and chopped -- 5
Green plantain, peeled and chopped -- 1
Yautía (taro root), peeled and chopped -- 1 1/2 pounds
Russet potato, peeled and chopped -- 1
Salt -- to taste

Filling

Onion, chopped -- 1
Green pepper, seeded and chopped -- 1
Garlic, peeled and chopped -- 3-4 cloves
Oil -- 2-3 tablespoons
Pork butt or shoulder, cut into small cubes -- 2 pounds
Tomato sauce -- 1 cup
Water -- 1/2 cup
Cilantro, chopped -- 1/2 bunch
Oregano, dried -- 2 teaspoons
Salt and pepper -- to taste

For Assembly

Banana leaves, hard spine removed and cut into 12x6-inch rectangles -- 15 pieces
Parchment paper, cut into 12x6-inch rectangles -- 15 pieces
Kitchen string --15 (20-inch long) pieces and 30 (10-inch long) pieces
Achiote or vegetable oil -- 1/4 cup

Method

Masa

As you chop the bananas, plantain, yautía and potato, place the chunks into a large pot of cold, salted water to keep them from browning.
Drain the water and puree the chopped ingredients in batches in a food processor. Add a little water or milk as needed to make a soft dough with the consistency of cooked oatmeal. You may have to let the processor run for a while, and make sure to scrape down the sides. Remove the masa to a large bowl and season with salt. Chill in the refrigerator while you make the filling.

Filling

Add the onion, pepper and garlic to a food process and pulse to chop finely.
Heat the oil in a large saucepan over medium flame. Add the onion-pepper mixture and sauté for 3-4 minutes. Add the rest of the filling ingredients and simmer over medium-low heat for 20 minutes. Remove from heat, adjust seasoning and allow to cool.

Assembly

Get the masa, the pork filling and all of your assembly ingredients together in a workspace. Lay out a piece of parchment paper, then center a piece of banana leaf over it. Wipe the banana leaf dry and then brush the top side with achiote or vegetable oil.
Scoop up 1/2 cup of the masa and place in the middle of the banana leaf. Spread evenly over the leaf, leaving a 1-inch border around the edges. Place 2-3 tablespoons of pork filling in the middle of the masa.
Fold the top edge down over the filling. Bring the bottom edge up over this. Then fold in both sides to make a rectangular packages. Be careful not to wrap it too tightly or the filling will squeeze out. Flip the package over on the parchment so it is seam side down.
Fold the bottom of the parchment up over the wrapped package. Fold in each side, then roll up, burrito-like, to complete the package. Tie one of the 20-inch pieces of string around the pastel lengthwise and then three 10-inch pieces across the short side.
Bring a large pot of well salted water to boil on the stove. Drop in the prepared pasteles and boil gently for 1 to 1 1/2 hours.
Remove from the water with tongs, remove the outer parchment and serve the pasteles with or without their banana leaf wrapping. Goes well with arroz con gandules.

Variations

The recipe above is a basic pasteles filling. Additional items are often added to the filling when the pasteles are wrapped. Add 5 or 6 capers and 1 pimento-stuffed olive to the filling of each pastel. Or add 5-6 cooked garbanzos.
Pasteles can also be made with chicken, shrimp or ground beef. For vegetarian pasteles, substitute 2 (15-ounce) cans of drained garbanzos for the pork.
Stir a little of the sauce from the filling into the masa to give it extra flavor.
Puree 1/2 pound of peeled, chopped calabaza squash with the masa if you like. Or substitute yuca (cassava root) for the yautía.
If you want to avoid all the string tying, use aluminum foil to wrap up the pasteles instead of parchment paper.
Wrapped, uncooked pasteles freeze well for later use. Cook them directly from the frozen state.

Notes

Pasteles are a favorite Puerto Rican dish. They are special occasion food, and no Boricuan Christmas table is complete without them.
Don't worry if your first few pasteles look kind of funny. The work will get easier and you will get better at it as you make more of them.
Spread the work over more than one day by making the masa and filling up ahead. Chilled masa is much easier to work with. Then gather some family or friends and make the pasteles in an assembly line. The work is much faster this way, and it makes for good family fun.
The special ingredients for pasteles--taro root, plantains, banana leaves--can be purchased at most Asian or Latino markets.

Rose ask what damage has been done that can't be repaired...beyond what is being done. Overall be more competitive throughout the World. The moral mindset of people who think that Corporations have gotten so big that there is a moral obligation to bail a company out. This damage has and should change through the governance of Congress but if the American People don't know how can they change.
THE TIME LINE
In this case a Time-Line is at the end of a century in Western Civilization calendar and thought. Which is used as a barometer of measurement...for historical and data compilation. From the gathering of this data, we are able to identify patterns of sequence which can narrow our direction, course and specific outcomes.

Paul Volcker comments on Charlie Rose.[PBS Charlie Rose ] A revealing interview embracing the power or lack of given power to the Federal Reserve. [In two parts...] As Volcker; would say the Fed are the only people who have the Money. The Federal Reserve has always been an independent agency made up of powerful financiers who regulate this fiat base system. Conspiracy talk would be that they control the wealth and power within the known Western World or the Banking System.
It does control the flow of the American Peoples currency regulated by Congress and the FDIC (Federal Deposit Insurance Corporation) With its 12 Regulation Boards located throughout The United States, [A Corporation] operated by the Federal Reserve which keeps a watchful eye on its Banks who set up and outlets our currency throughout the united states of America's banking world where...yes dollars and cents go in and out of communities. {How do we capture that ebb and flow?} The distinction in the way words are capitalized upper and lower are to make a distinction giving a understanding people can see how wording is used to deceive people.

..to listen to his son whine about being bored.
....to keep a straight face when people complain about potholes.
To be tolerant of people who complain about the hassle of getting ready for work.

...to be understanding when a co-worker
complains about a bad night's sleep.

..to be silent when people pray to God for a new car.

...to control his panic when his wife tells him he
needs to drive slower.

...to be compassionate when a businessman expresses
a fear of flying.

....to keep from laughing when anxious parents say
they're afraid to send their kids off to summer camp.

....to keep from ridiculing someone who
complains about hot weather.

....to control his frustration when a colleague gripes
about his coffee being cold.

....to remain calm when his daughter complains about
having to walk the dog.

.....to be civil to people who complain about their jobs.

....to just walk away when someone says they only get

When you think you are having a bad day... this just may be the source.... its probably not you, but them the HATERS!

A hater is someone who is jealous and envious and spends all their
time trying to make you look small so they can look tall.
They are very negative people to say the least. Nothing is ever
good enough!

When you make your mark, you will always attract some haters...

That's why you have to be careful with whom you share your
blessings and your dreams, because some folk can't handle seeing
you blessed...

It's dangerous to be like somebody else... If God wanted you to be
like somebody else, He would have given you what He gave them! Right?

You never know what people have gone through to get what they
have...

The problem I have with haters is that they see my glory, but they
don't know my story...

If the grass looks greener on the other side of the fence, you
can rest assured that the water bill is higher there too!

We've all got some haters among us!

Some people envy you because you can:
a) Have a relationship with God
b) Light up a room when you walk in
c) Start your own business
d) Tell a man / woman to hit the curb
(if he / she isn't about the right thing)

e) Raise your children without both parents being
in the home

Haters can't stand to see you happy.
Haters will never want to see you succeed.
Most of our haters are people who are supposed to be
on our side.

How do you handle your undercover haters?
You can handle these haters by:

1. Knowing who you are & who your true friends are

I had a helluva time getting my first book, Satin Doll, published, in fact, I wound up having to self-publish it. And back in 1999, there wasn't a lot of information on how to self-publish (yes, I did get the Dan Poynter book, and it was helpful, but incomplete -- for my particular needs, anyway!) and I found most of the people who went before me were quite stingy with information. Kimberla Lawson Roby was one of the few who was EXTREMELY helpful, but most people kinda brushed me off.
Yet and still, I managed to sell 3,000 copies of Satin Doll in six weeks, and ultimately 24,000 copies in eight months. I did so well that I eventually sold the publishing rights to Satin Doll and a second book at auction for six figures.
So, now it should be my time to gloat, and hold my cards close to my chest so that no one can copy my success. But instead I've decided to adopt the philosophy, "I shall do unto others as I wish others had done unto me!"
To that end, I've tried to kick out as much information about the publishing and self-publishing process as possible.
Hopefully you'll find a wealth of information on this page that will help you as you embark your publishing career. All of the info is free, and please feel free to others that might need it. All that I ask that you don't horde the information . . . that just wouldn't be nice considering you got the info for free, huh?

Okay so now . . . . let's get down to the nitty-gritty, folks!

Self-Publishing can be a lot more lucrative than being published at a small or even a large publishing house. For instance, self-publishing a book of about 200 pages in trade paperback, and having it retail for $15.00 will net you about $3.00 after deducting all the discounts given distributors/bookstores, the price of printing, and the costs of promotion. That doesn't seem like a lot, huh? But, if you sell 15,000 copies in a year you've netted a PROFIT of $45,000. Come on . . . that's not bad. And if you can manage to sell 24,000 copies in eight months you've made $72,000 in those eight months.
On the other hand, if you publish a 200 page trade paperback book through a large publisher, and it retails for $15.00 you only make $1.05 a book! Yep, that's right. About 1/3 of the amount of money you'd get if you self-published.
So then why would anyone go through a publisher rather self-publishing? BECAUSE SELF-PUBLISHING IS HARD AS ALL HELL! Sorry . . . . didn't mean to yell. Let me try that again. SELF-PUBLISHING IS HARD AS ALL HELL! There . . . I think that came out better.
When you self-publish you are not only the author, but you are the publisher; the bookkeeper; the person in charge of shipping and handling; the person in charge of collecting debts; the person who has to find a graphics designer for your cover; you find the printer and get all the materials he needs to him; you are in charge of promotion and trying to get the media to write or talk about your book; you are the all and everything! My biggest issue with self-publishing was that in doing all that I didn't have time to sit down and write my next book!
And let's face it, self-publishing isn't cheap! The printing costs for 10,000 copies of a 200 page book can be anywhere from $7,500 to $20,000 (Yes! Prices can vary by that much . . . which is why you HAVE to shop around for your printer!), and then typesetting can be as how as $1,000 and editing can be anywhere from $750 to $2,000.
And here's the real scary bottom line . . . 96 percent of the people who self-publish never make their money back! Uh huh . . . you read correctly. 96 percent of the people who self-publish lose money in doing so.
By the way . . . so many people think that they can bypass these costs if you use Print on Demand, but that's the worse type of self-publishing there is. And the chances of being your successful go from 4 percent to .3 percent! (I'll try write a paper explaining all the whys and wherefores that make this true and add it as a link to this page soon.)
On the other hand, when you book is published by a large publisher, they actually GIVE YOU MONEY IN ADVANCE OF YOUR BOOK EVEN BEING PUBLISHED! Sweet! LOL But then, of course, as we have seen above, it's still not as much as you can make if you self-publish . . . but that's only if you successfully self-publish.
Personally, I loved the self-publishing process, and I'm so thankful I went through it. BUT, it's not what I recommend for most people. Listen, if you think that you might want to self-publish because you don't want to go through the rejection process that most people go through trying to find a publisher . . HAH! You don't know the meaning of rejection until you've self-published!

'We didn't respond'Then this week, we received the following e-mail:Subject: DON'T DIAL AREA CODE 809 , 284 AND 876 THIS I S VERY IMPORTANT INFORMATION PROVIDED TO US BY AT&T. DON'T DIAL AREA CODE 809 This one is being distributed all over the US . This is pretty scary, especially given the way they try to get you to call. Be sure you read this and pass it on. They get you to call by telling you that it is information about a family member who has been ill or to tell you someone has-been arrested, died, or to let you know yo u have won a wonderful prize, etc. In each case, you are told to call the 809 number right a way. Since there are so many new area codes these days, people unknowingly return these calls. If you call from the US , you will apparently be charged $2425 per-minute. The Republicans are in the House trying to submit a resolution to start drilling off the shores of the U.S. as well as within our interior areas of the U.S. “I’m not convinced” I remember when I was a young lad when we had gas lines in 1973.

I heard a lot of talk about alternative energy such as corn and other substances to make bio-diesel and ethanol. What happen to hydrogen fuel cells? What happen to using industrialized hemp?

Can’t these other methods be explored? Those are some questions that we can ponder and look at after we the American people have supported the resolution that the Representative from Ohio put forth on the floor.
