Bence İstanbul'da ve Boğazda yaşamanın en keyifli yanı, istediğin zaman her cins balığı bulabilmek . Geçen gün bir televizyon programında hamsinin denizden çıktığı anda ölen tek balık türü olduğunu, onun için hamsiyi canlı görmenin mümkün olmadığını söylemişti. Ama ben geçen gün Sarıyer'de bir balıkçı teknesinin içinde binlerce hamsiyi canlı olarak gördüm. Sahilde bir yürüyüş yapıyorsunuz balıkların üzerinden atlayarak, kaldırımlar bile balık dolu. Böyle olunca da balık yiye yiye yakında herhalde kaldırımlarda bile yüzmeye başlayacağız. :) Dün de değişiklik olsun diye somon balığı aldım. Yerli diye satıyorlar ama somonun yerlisi nasıl oluyor açıkcası pek anlamadım. Ama çok lezzetli olduğu gerçek. &lt;br /&gt;

Tabii mayonez hariç. Acaba sarımsaklı yoğurt yerini tutar mı? Benim gördüğüm tarifte sebze olarak sadece karnıbahar vardı ama Cevahir'deki koca Migros'ta karnıbahar yoktu. Karnıbahar, brokoli, brüksel lahanası, havuç aynı paketteydi, mecburen onu alınca salatadaki çeşit de arttı. Geçen gün Lale tarif etmişti.Bugün ne pişirsek diye düşünürken aklıma derin donrurucuda pişmiş et sote ve sebzelikte az miktarda ıspanak olduğu aklıma geldi. Bu yemeğin şöyle bir güzel tarafı var. Hem et, hem sebze, hem de patates yemiş oluyorsunuz. Yani yanında bir salata yeterli oluyor. Pişirmesi biraz uzun sürüyor ama çok lezzetli. Yapmanızı tavsiye ederim.&lt;br /&gt;

Tuz ve karabiberini koyup ocağının altının kapatalım.&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: justify;"&gt;Tavaya biraz sıvıyağ koyalım. Küçük doğranmış soğan ve eti koyarak iyice kavuralım.Etler suyunu salıp tekrar çekince sivribiberi ekleyelim. Biraz karıştırıp domatesi ilave edelim. Arada karıştırarak etler iyice yumuşayana kadar pişirelim. Tuzunu,karabiberini, kimyonu, kekiği koyalım, 2 dakika daha kavurup ocağı kapatalım.&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: justify;"&gt;Fırın kabını altına etleri koyalım, üzerine ıspanakları yayalım, onun üzerine de püreyi koyalım. Eğer Karadeniz yemeklerine aşinaysanız&amp;nbsp; soğuk günlerde bu çorba hem çok besleyici, hem de lezzetli oluyor. Galiba kara lahananın da tam mevsimi. Doğru dürüst sebze meyve bulunmayan 'Bim' markette bile bulunduğuna göre zamanı gelmiş. İçinde kullanılan malzemelerden biri de mısır yarması. Semt pazarlarında bulunduğu söylendi ama ben bulamadım, haşlanmış mısır kullandım. Eğer acı seviyorsanız , küçük acı biberler çorbanın yanında çok yakışıyor.&lt;br /&gt;

Eğer kereviz sevmeyen bir çocuğunuz varsa ve senede hiç olmazsa 1 - 2 defa yese ne iyi olur diye düşünüyorsanız bu tarifi mutlaka deneyin. Rahatlıkla börek diye veya tavuk diye hatta balık diye yutturabilirsiniz. Buna ne gerek var bilmiyorum ama rahmetli annem sevmediğim bir yemeği bana böyle yedirmeye çalışırdı. Sanki kereviz veya ebegümeci veya her neyse yemek şartmış gibi. Ben kerevizin her halini severim. Kerevizleri soyalım, yarım santim kalınlığında yarım ay şeklinde doğrayalım ve limonlu suyun içine atalım. Soyma işlemi bitince bir tencereye su koyalım, biraz limon suyu ekleyelim, kerevizleri içine atalım. Kerevizler yumuşayıncaya kadar pişirelim. Pişince süzgeçe çıkaralım. &lt;/div&gt;&lt;div&gt;Kaselere un, mısır unu ve çırpılmış yumurtayı koyalım. Yumurtaya tuz ve karabiber koyup karıştıralım. Tavada sıvı yağımızı kızdıralım. Kerevizleri önce una, sonra yumurtaya, en son da mısır ununa bulayım yağda kızartalım. Hem meze olarak ilginç, hem de kahvaltıda güzel oluyor. Kullandığınız beyaz peynir ne kadar yağlı olursa o kadar lezzetli oluyor. İlk yaptığımda zeytinyağı kullanmadım, çok ağır olacak gibi geldi. Ama yapa yapa anladımki zeytinyağsız olmuyor. Zaten bütün Yunan yemek ve mezelerinde zeytinyağı baş rolde. Malzemeleri sayarken miktar belirtmedim. İsteğe göre ayarlanabilir. Balkonda saksıda çıkmış tek domates, çocuk elinde şemsiyeyle domatesini yağmurdan koruyor. İşte aynı o şekilde ben de yukarıda görmüş olduğunuz domateslerimi öyle koruyorum. Hatta kızaranları koparmaya kıyamıyorum. Birçok tarifi var ancak ben klasik olanı seçtim.. Yalnız anlamadığım bir nokta, hepsinde su koyuyorlar. Ama kabak ve şeker zaten yeterince, hatta fazlasıyla su salıyor. Neyse netice bence çok başarılı oldu. Daha sonra 3 -4 kere daha yıkayarak içinde çok az su olan tencereye alalım ve kapağı kapalı olarak yaklaşık 3 dakika haşlayalım. Ispanakları çıkaralım, süzelim ve istediğimiz şekilde doğrayalım.&lt;br /&gt;&lt;br /&gt;Başka bir tencereye tereyağını koyalım, unu yavaş yavaş karıştırarak ilave edelim. İki dakika sonra soğuk sütü, karışıma yedire yedire dökelim. Boza kıvamına gelinceye kadar bu işleme devam edelim. Tuz ve karabiberini koyarak karıştıralım ve ocağın altını kapatalım.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Soğuyan ıspanakları tuz ve pul biberle harmanlayalım. Sosumuzun yarısını ıspanaklara katarak iyice karıştıralım. Kare bir borcamın içini yağlayalım ve ıspanakları içine yayalım. Kalan sosumuzu da üzerine koyalım, en üste rendelenmiş kaşar peynirini gezdirelim. Geçen gün bir gazete ekinde tarife rastlayınca yapmaya karar verdim ve kendime göre bir takım değişiklikler yaparak pişirdim. Çok da güzel oldu ve kalan dolmaları derin dondurucuya koyduk, Tunca Fransa dönüşü yesin diye. Sirkenin yarısını ve tuz koyalım. Patlıcanları suya atalım. Yaklaşık üç dakika sonra patlıcanları çıkaralım ve soğumaya bırakalım. Derin bir kaseye kıymayı koyalım. Rendelenmiş kuru soğanı, pirinci, nar ekşisini, zeytinyağını, kalan sirkeyi, sumağı, karabiberi, tuzu, salçayı ilave edip yoğuralım.&lt;br /&gt;&lt;br /&gt;Soğumuş olan patlıcanları alıp, içlerini kıymalı karışımla dolduralım.Ağız kısmına domates dilimi koyabiliriz. Tencereye ağız kısmı yukarı gelecek şekilde yan yana yerleştirelim. Kaseye 1 yemek kaşığı salça koyup, üzerine sıcak su ilave ederek karıştıralım ve salçayı eritelim. Salçalı suyu da tencereye aktarıp, patlıcanlar yumuşayıncaya kadar pişirelim. Yukarıdaki tarhanayı Güzel Otelde Firuzan yaptı. Bizzat şahit olduğum için söylüyorum çok zahmetli ve uzun bir süreç. Hatta son kuruma aşamasında otelde bir odanın balkonuna koymuşlar, biz de bilmeyerek o vaziyette odaya müşteri aldık. Bence bu kadar uğraşa değmez, pazarlarda ev yapımı biraz pahalı ama herzaman bulunuyor. Bilmiyorum Ankara'ya özgü bir pişirme yöntemi mi , rahmetli annem ilk önce yağda kıymayı bol sarımsakla kavurur, sonra da domates rendelerdi. Ne şekilde pişerse pişsin soğuk kış günlerinde ilaç gibi geliyor. Yaklaşık üç dakika sonra rendelediğimiz domatesleri ilave edelim ve domatesler suyunu salıp, tekrar çekene kadar kavurmaya devam edelim. Tencereye suyu aktaralım, su kaynadıktan sonra, bir saat önce soğuk suya ıslattığımız tarhanayı yavaş yavaş ve hızla karıştırarak dökelim. Bu arada tuzu, kırmızı pul biberi ve karabiberi koyalım. Tahanalar iyice eriyinceye kadar pişirelim. Zaten pazarlarda pırasanın yanında mutlaka bir tane  yapraklarıyla kereviz de oluyor. Pırasayı da, kerevizi de son senelerde yemeye başlamış biri olarak bu ikiliyi beraber görünce ilk zamanlar yemedim. Ama seneler geçip de Bodrum'lu olmaya başlayınca diğer yöresel yemeklere olduğu gibi buna da alıştım, hatta artık severek yiyorum. Pırasanın burada diğer bir pişirme şekli de nohutla yapılanı.&lt;span style="font-weight: bold; font-style: italic; color: rgb(255, 0, 0);"&gt;&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold; font-style: italic; color: rgb(255, 0, 0);"&gt;Malzemeler:&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;1 demet pırasa&lt;br /&gt;1 adet kereviz&lt;br /&gt;1 adet havuç&lt;br /&gt;2 adet domates&lt;br /&gt;1 su bardağı zeytinyağı&lt;br /&gt;1 adet kesme şeker&lt;br /&gt;Tuz&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold; font-style: italic; color: rgb(255, 0, 0);"&gt;Tarif:&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="color: rgb(0, 0, 0);"&gt;Pırasanın dış kısımlarını soyup atalım ve pırasaları  bir santimetre kalınlığında doğrayalım. Tencereye zeytinyağını koyalım, küçük doğradığımız havucu ve pırasaları ekleyip yaklaşık üç dakika kavuralım, yapraklarıyla beraber küçük doğradığımız kerevizi de ekleyip kavurmaya devam edelim. Böyle olunca evimizde kaldıkları sürece bilgilerinden faydalanmak için her türlü fırsatı değerlendirmeye çalıştım. "Fatoş'un defterinden" diye ayrı bir etiket açtım, söz verdiler ara sıra tarif gönderecekler. Sıvı yağ ve yoğurdu da katıp tekrar karıştıralım. Karıştırmaya devam ederken un, nışasta ve kabartma tozunu ilave edelim. Meyveleri de koyarak tahta kaşıkla karıştıralım. Çerkez'ler hem cevizli hem de cevizsiz yapıyorlar ve cevizsiz olanı yemeklerde kullanıyorlar. Ben çerkez tavuğunu acıkalı yedim, biraz yadırgadım. Alışık olduğumuz çerkez tavuğu tadından farklıydı. Cevizli olanını sabah kahvaltılarda ekmeğe sürerek veya akşam çayın yanında gene ekmekle veya sandviç içinde yiyebilirsiniz. Yalnız kilo sorununuz varsa çok kötü, çünkü inanılmaz iştah açıyor. Bir de tariflerde "poy" diye bir baharat adı geçiyor. Bodrum'daki baharatçılarda bulunmuyor, hatta bilmiyorlar bile. Bugün poy hariç diğer malzemeleri aldım ve akşam yaptım. Bir taraftan zayıflama hapları, diğer yandan acıka. Yeni taşındığımız zaman bahçenin ortasında sararmış ve yırtılmış yapraklı, rüzgarda rahatsız edecek kadar ses yapan, kocaman bir ağacın varlık sebebini anlamakta zorluk çekmiştim. Ama sonradan kendini toparladı ve görkemli yapraklarıyla, çiçeğiyle, meyvesiyle bir doğa harikası çıktı ortaya. Eskiden sadece Ege bölgesinde bilinir ve yapılırmış. Şimdi herkes öğrendi ve büyük şehirlerin semt pazarlarında da satılıyor. Aslınde pişirmesi çok kolay ama pişirme öncesi zorlukları var. İlk şart sabah çok erken toplanması gerekiyor, yoksa buruşuyor ve hemen pişirilmesi gerekiyor. Kabak çiçeklerini teker teker alarak , hazırladığımız karışımdan içini dolduralımve çiçeğin püsküllü kısmını kapak yapalım. Yukarıda görüldüğü gibi ince kenarlı bir tencereye kabak çiçeklerini dizelim.Tencerenin yarısına kadar su ilave edip kısık ateşte suyunu çekene kadar pişirelim. Ocağı kapatmadan önce üzerine zeytinyağı gezdirelim. Bütün yaz süresince de böyle olacak galiba. Yukarıdaki köpoğlunu otelde Mustafa yaptı, daha doğrusu hergün yapıyor. Basit ve çok bilinen bir meze olmasına rağmen görünüşü ve tadı çok güzeldi, bloğa koymaya karar verdim.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Malzemeler:&lt;/strong&gt;&lt;br /&gt;&lt;strong&gt;&lt;/strong&gt;&lt;br /&gt;3 adet patlıcan&lt;br /&gt;7-8 adet çarliston biber&lt;br /&gt;5 diş sarımsak&lt;br /&gt;7-8 adet domates&lt;br /&gt;2 su bardağı süzme yoğurt&lt;br /&gt;Tuz&lt;br /&gt;Karabiber&lt;br /&gt;&lt;br /&gt;Patlıcanları alacalı soyalım. Uzunlamasına dörde bölüp, kuşbaşı doğrayalım , tuzlu ve limonlu suya atıp yarım saat bekletelim. Yarım saat sonra sudan çıkarıp elimizle sıkalım ve kızgın yağın içine atıp arada karıştırarak kızartalım. Aynı  yağa küçük doğradığımız biberleri de atıp kızartalım.&lt;br /&gt;Derin bir kasede dövdüğümüz sarımsakları, yoğurtla karıştıralım. Patlıcan ve biberleri de kaseye alarak iyice karıştıralım. Bu karışımı dikdörtgen bir cam kaba çıkaralım.&lt;br /&gt;Tavaya çok az sıvı yağ koyarak, ikiye böldüğümüz sarımsakları ve rendelediğimiz domatesleri ilave edelim. Tuzunu da koyarak, domatesler suyunu çekene kadar pişirelim.
