&lt;h2&gt;&lt;b&gt;How to Bake a Cookie in your Cast Iron Skillet&lt;/b&gt;&lt;/h2&gt;
&lt;p&gt;One of our favorite ways to eat a cookie is straight from a cast iron skillet with a spoon. It’s as easy to make as it is to eat – just use your favorite chocolate chip cookie recipe and spread it into a cast iron skillet with a spatula. Bake it for 20-25 minutes (or under bake it slightly for a softer cookie). There’s no need to oil your pan or preheat it. We used an &lt;a href="https://www.lodgemfg.com/pans-and-presses/11-inch-blue-skillet.asp" target="_blank"&gt;11-inch skillet&lt;/a&gt; and &lt;a href="http://allrecipes.com/recipe/216016/clementines-oatmeal-chocolate-chip-cookies/" target="_blank"&gt;this oatmeal chocolate chip cookie recipe&lt;/a&gt;. Let it cool for 5-10 minutes, scoop your favorite ice cream on top and dig in!&lt;/p&gt;

We’ve seen it with avocados and bacon, with blue cheese and buffalo chicken, with cranberries and oranges and much more. Sometimes, though, you want to keep it simple, and this recipe is for those times. All you’ll need is three ingredients and your cast iron skillet. &lt;p&gt;&lt;b&gt;Elizabeth’s Basic Cornbread&lt;/b&gt;&lt;/p&gt;
&lt;p&gt;&lt;i&gt;Serves 6&lt;/i&gt;&lt;/p&gt;
&lt;p&gt;&lt;b&gt;INGREDIENTS&lt;/b&gt;&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;1 cup white self-rising cornmeal&lt;/li&gt;
&lt;li&gt;1 egg&lt;/li&gt;
&lt;li&gt;Enough buttermilk to make batter very thin (about 1 cup)&lt;br/&gt;&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;Oil a cast iron skillet and place it in the oven as oven preheats to 450°F. Mix all ingredients together to make the batter. Pour batter into hot skillet. Bake for 20 minutes or until nicely browned. &lt;/p&gt;

They taste like regular buttermilk biscuits, but the texture is rather gummy. I hate that.&lt;/p&gt;
&lt;p&gt;Recipe adapted from &lt;a href="http://amzn.to/1Bc4mbF" target="_blank"&gt;My Favorite Gluten Free Bread Recipes&lt;/a&gt; by Beth Davis. All I changed was I left out the 1 tablespoon of sugar. Recipe for the &lt;a href="http://cakedarla.tumblr.com/post/107806410995/those-who-follow-my-facebook-page-have-already" target="_blank"&gt;gluten-free dinner rolls&lt;/a&gt; I made the other day are from the same book.&lt;/p&gt;
&lt;p&gt;Here&amp;rsquo;s what you&amp;rsquo;ll need:&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;&amp;frac12; cup potato starch (&lt;a href="http://www.cakedarla.com/2010/11/22/gluten-free-focaccia-attempt-2/" target="_blank"&gt;NOT potato flour&amp;ndash;big difference&lt;/a&gt;)&lt;/li&gt;
&lt;li&gt;&amp;frac34; cup cornstarch&lt;/li&gt;
&lt;li&gt;1 &amp;frac34; teaspoons &lt;a href="http://amzn.to/1xxl8dO" target="_blank"&gt;xanthan gum&lt;/a&gt;&lt;/li&gt;
&lt;li&gt;1 tablespoon baking powder&lt;/li&gt;
&lt;li&gt;&amp;frac14; teaspoon baking soda&lt;/li&gt;
&lt;li&gt;&amp;frac12; teaspoon salt&lt;/li&gt;
&lt;li&gt;1/3 cup cold butter, cut into cubes&lt;/li&gt;
&lt;li&gt;&amp;frac34; cup buttermilk&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;Here&amp;rsquo;s what to do:&lt;/p&gt;
&lt;p&gt;Preheat oven to 375 degrees and spray a baking sheet with cooking spray.&lt;/p&gt;
&lt;p&gt;Put dry ingredients into bowl of food processor and pulse to combine.&lt;/p&gt;
&lt;p&gt;Add butter and pulse until mixture looks like coarse crumbs.&lt;/p&gt;
&lt;p&gt;Pour in buttermilk and pulse until dough comes together in a moist clump.&lt;/p&gt;
&lt;p&gt;Wet hands and form scoops of dough into biscuit shapes, and drop them onto the baking sheet.&lt;/p&gt;
&lt;p&gt;Bake 12-15 minutes (recipe says 10-12 but that wasn&amp;rsquo;t long enough in my oven) until lightly browned.&lt;/p&gt;
&lt;p&gt;Here&amp;rsquo;s how they came out. They look fine, taste good, but unfortunately they have a rather gummy texture. If I ever make these again, I&amp;rsquo;ll only add &amp;frac34; teaspoon &lt;a href="http://amzn.to/1xxl8dO" target="_blank"&gt;xanthan gum&lt;/a&gt;. I really don&amp;rsquo;t like working with that stuff much. &lt;/p&gt;
