MY NEW COOKING CLASSES SCHEDULE IN ABU DHABI

MY RECIPE: GLUTEN FREE OR NOT CHOCOLATE FONDANT WITH PISTACHIO

RECIPE FOR 8 PORTIONS

Ingredients

- 200g dark chocolate
- 100g butter
- 4 eggs
- 150g sugar
- 100g gluten free flour or regular flour
- 50g pistachio

Preparation

Stir the eggs with the sugar during 3 mn until you obtain a fluffy mix.
During this time put the chocolate cut in small pieces in a bowl with the butter.
Make it melt in the microwave.
Add the flour in the eggs and sugar mix and stir.
Now put the batter in a small cake mould and add the pistachio all over the surface.
Bake for 20mn at 180° preheated oven.

Visiting the Abu Dhabi's fish Market is always amazing!

It's situated at Mina Zayed Port, on the opposite of the fruits and vegetables market: look at the map!
This time I went there with my french friend Isabelle who is used to deal with the talented fish sellers.
She loves cooking fish too.

Here is what I bought this day:

Local big shrimps and Calamaris

Then I decided to cook stuffed Calamaris with rice and french black olives. I like to mix the ingredients from diferents countries.

As I know, many of you have gluten intolerance and simply would like to test the gluten free diet.

DATES SOUK ABU DHABI

At the end of January, I discovered a wonderful place for gourmet in Abu Dhabi: the Date market at Mina Zayed.

The souk is located just in front of the fruit market.

THE DATE SOUK, ABU DHABI

Personally I'm a date lover, but I'm far to know the 300 different varieties that exist in the world!

I think it's very interesting to discover that all have a different texture and a different taste.

So I started with 2 types, and I would like to reveal to you the taste and the texture they have.

"DABBAS" DATES

I bought a local and cute emirati date called "Dabbas".

They are tiny like olives and have a pretty dark shinning color.

They are pretty firm in mouth and fruity, with a grape flavor.

They are not too sweet, so kind of an everyday date!

Also, delicious for your children lunch boxes!

To cook: add it in your cakes cut in 2 pieces, they will keep firm after baking.

"SUKKARI" DATES

These are called "Sukkari", they come from Saudi Arabia.

They are my favorite because their texture is very creamy and their taste is fantastic like a toffee.

It's "The One" when you need a sugar shot.

They are translucid-like and look like they are full of sun!

A sour and sweet recipe:

wrap a slice of bacon around a date and bake in a preheated oven for 8 mn to 180°c.

Taste it with a cup of red wine!
