- A quarter of a teaspoon of lemon peel.</p>
<p>Method: In a large skillet, bring the water, oil, broccoli, and spice from couscous mix to the boil. Then stir in the couscous, cooked chicken, lemon juice, and lemon peel. Simmer until heated, then remove from heat. Cover and leave to stand for five minutes. Using a fork, fluff gently, then chill and serve cold. Serves 4 people.</p>
<p><strong>Dessert </strong></p>
<p>Ingredients:<br />
Lemon Peel Ricotta Cream.<br />
One half cup of part-skim ricotta cheese.<br />
One quarter teaspoon of fresh grated lemon peel.<br />
