Mix it up Monday!

Welcome to another week of Mix it up Monday! Last week you all amazed me by sharing 110 links! That is the most we've had so far and I can only hope that it continues to grow! This past Thursday on the feature day, I started The Spotlight of the Week. This will be the most viewed project or recipe of the week plus your picture and site will be featured at the top of the post. This will also allow me to feature one more site as well! Nutella & Cheese Danish

If you need a quick, easy and delicious dessert, this ones got ya covered! The use of canned croissant dough makes this recipe come together in a snap. The center is nutella and cream cheese that is baked up perfectly in the flaky dough. You could also serve this up for a breakfast treat too!

Ingredients:

1 (8 ounce) can croissant dough

1 (8 ounce) block of cream cheese, softened

2/3 C powdered sugar

3 Tbs. Nutella

some extra Nutella, melted

a little powdered sugar

Directions:

Preheat oven to 350 degrees; grease a cookie sheet.

Cream together the cream cheese and powdered sugar.

Mix in Nutella until combined; set aside.

Unroll croissant dough and arrange it into a circle onto the cookie sheet.

Spread the filling along the inside of the dough.

Take the dough and flip it over the filling; press to seal the edges.

Cut the excess edges off and place them over the rest of the openings.

Bake in preheated oven for 12-15 minutes; until golden brown.

Drizzle on the melted nutella and sprinkle with powdered sugar.

Slice, serve and enjoy!

I also love how I'm finding so many new blogs, so thank you for spreading the word. I hope you'll continue to tell your friends and share what you've created. Now onto the party!

Can I have S'more please?

My kids love s'mores! They have s'more turnovers at school and all four kids say it's one of their favorite things. I've tried several times to replicate the recipe, but for some reason I just can't get it. Every time they taste what I've made I always get the same "no, that's not it" look. When I found this recipe I thought I'd give it another shot and see what they say. They said it didn't taste exactly like the ones at school, however it was the best one yet! So for now this will be the recipe I use to pacify their love of s'mores! If you happen to have a recipe for s'more turnovers, I'd love to try it out!

Ingredients are as follows:

1/2 C butter, softened

3/4 C brown sugar

1 egg

1 tsp. vanilla

1 1/3 C flour

3/4 C graham cracker crumbs

1 tsp. baking powder

1/8 tsp. salt

1 (7 ounce) container marshmallow fluff

1 C chocolate chips

Directions:

Preheat oven to 350 degrees.

Cream together the butter and brown sugar.

Mix in the egg and vanilla.

Add flour, graham cracker crumbs, baking powder and salt; stir until a dough forms.

Take a piece of plastic wrap and place it in an 8 x 8 inch dish. Take half of the dough and press it into the bottom.

Remove dough (using the plastic wrap) and set it aside. Spray your pan with non-stick cooking spray and press remaining dough evenly into the pan.

Microwave the marshmallow fluff for 30 seconds then pour onto dough.

Sprinkle on the chocolate chips.

Take the dough you set aside and flip it on top of the chocolate chips.

Bake in preheated oven for 20-25 minutes; or until golden brown.

Slice, serve and enjoy!

Pineapple Sheet Cake from Gooseberry Patch (Giveaway)

The wonderful folks at Gooseberry Patch once again asked me to review their newest cookbook called Rush-Hour Recipes and it is great! There are more than 230 recipes that can be made in very little time. I know so many people are busy these days so this is the perfect cookbook to help you out! They've graciously offered one of you a cookbook and I'm adding a little gift to go along with it too! All you have to do is leave a comment below.

I decided to make the Pineapple Sheet Cake and it turned out delicious!

Ingredients are as follows:

2 C flour

2 C sugar

2 tsp. baking soda

1 tsp. vanilla

2 eggs, beaten

20 ounce can crushed pineapple (do not drain)

Optional: chopped pecans

Cream Cheese Frosting:

8 ounces cream cheese, softened

1/2 C margarine, softened (I used butter)

1 tsp. vanilla

1 C powdered sugar

Directions:

Preheat oven to 350 degrees. Grease a 15" x 10" jelly-roll pan.

Mix together the flour, sugar, baking soda, vanilla, eggs and pineapple.

Spread batter into prepared pan.

Bake 25-30 minutes or until a toothpick comes out clean. While the cake is baking, cream together the cream cheese, margarine (or butter), vanilla and powdered sugar.

Spread on the cake (I then put mine in the fridge to get it nice and cold).

Slice, serve, and enjoy!

Reese's Peanut Butter Hearts

I love Reese's Peanut Butter Eggs! It's one of my favorite things this time of year. With Valentine's Day coming up, I thought I'd make a batch and shape them into hearts! I did some in milk chocolate and some in white since my husband loves white chocolate. These are extremely easy to make and store well too...just put them in an airtight container and keep them in the fridge. Then take some out and share with your Valentine!

Ingredients are as follows:

1/4 C butter

1 1/2 C creamy peanut butter

1/8 tsp. salt

4 C powdered sugar

3 Tbsp. milk

Chocolate Bark (or white bark) for coating

Directions:

Cream together the butter, peanut butter and salt.

Slowly mix in the powdered sugar until it becomes crumbly.

Add the milk and mix until it starts to come together.

Pour out onto a flat surface.

Knead together until it forms a ball.

Roll out to desired thickness.

Cut out the hearts (I used a cookie cutter) and place onto a baking sheet.

Place in the freezer. Melt the chocolate bark, remove the hearts from the freezer and start dipping them into the melted chocolate.

Decorate however you like!

Take a bite and enjoy!

Double Chocolate Toffee Bread

If you're like me then you love chocolate! Cocoa, chocolate chips and toffee make this bread almost sinful. It's dense, yet very moist due to the addition of sour cream. And what I love about this recipe is that it comes together quickly and it's made in one bowl! Very little effort for a great tasting bread!

Ingredients are as follows:

1 C sugar
1/4 C butter, softened
1 C sour cream
2 tsp. vanilla
2 eggs
3/4 C cocoa
1 tsp. baking powder
1/2 tsp. baking soda
1/8 tsp. salt
1 3/4 C flour
1 C chocolate chips
1 C toffee bits

Topping:
1/2 C chocolate chips
1/2 C toffee bits

Directions:

Preheat oven to 350 degrees; grease a 9 x 5 bread pan.

Cream together the sugar, butter, sour cream & vanilla.

Mix in the eggs.

Incorporate the cocoa, baking powder, baking soda, salt, and flour.

Fold in the chocolate chips and toffee bits.

Pour into pan; top with remaining chocolate chips and toffee bits.

Bake in preheated oven for 50-55 minutes; remove from pan.

Slice, serve and enjoy!

Fibrelle Sweetener + a giveaway!

What if I told you that you could bake all your favorite recipes and cut down the calories while adding fiber too. Have you heard of Fibrelle? Fibrelle is a fiber rich sweetener that reduces calories, promotes digestive health, and helps manage blood glucose too. It's the perfect substitute for sugar!

When I was first contacted from Fibrelle, I kept thinking about a recipe I could come up with to do for the review. However, after awhile I thought, why not just bake everyday recipes and see how it works. So I started whipping some up and I was very surprised at the results!

The first thing I made was chocolate chip cookies. They turned out perfectly! They were crunchy on the outside, chewy on the inside and baked up beautifully too!

Then I tried banana bread and got the same result. The bread baked up nice and high, brown on the outside while the texture on the inside was moist and a little crumbly.

I also made a pound cake and had great results. It baked up nice and high, golden brown around the edges and dense inside.

I never told my family that I substituted Fibrelle for the regular sugar. They ate everything I made and not one of them said that something tasted different. This leaves no aftertaste and you can't tell the difference at all!

Fibrelle offers a lot of great benefits as well. One tablespoon has only 15 calories and 7 grams of fiber! It will activate yeast, caramelize, and brown just like sugar. It also has the same density as sugar so the substitution is cup for cup. All your baked goods will bake up beautiful...you can see from my pictures!

Cookie Dough Truffle Bites

This past week I celebrated my one year anniversary of starting this blog. To celebrate I wanted to make a special recipe and give away something special too! When I was thinking of a recipe to make I immediately thought of cookie dough; I love cookie dough, especially raw! This cookie dough tastes raw, however it doesn't contain any eggs so it's perfectly safe to eat! The addition of chocolate cake and a hard chocolate shell take it over the edge!

Ingredients are as follows:

Cake:

1 1/2 C flour

1/2 C cocoa powder

1/4 tsp. salt

1 tsp. vanilla

1 tsp. baking soda

1 C sugar

1 tsp. vinegar

1/3 C oil

1 C water

Cookie Dough:

8 ounces cream cheese, softened

1/2 C butter, softened

1 1/2 C powdered sugar

2 Tbsp. brown sugar

1 tsp. vanilla

1 C mini chocolate chips

Chocolate or white bark, melted

Directions:

Grease mini cupcake pans; preheat oven to 350 degrees.

Mix flour, sugar, cocoa, baking soda and salt together.

Add the vinegar, vanilla, oil and water; stir until combined.

Pour batter into prepared pans.

Bake for 10-12 minutes or until a toothpick comes out clean.

Allow to cool for about five minutes then remove from pans. While they're cooling, cream together the cream cheese and butter.

Add powdered sugar, brown sugar and vanilla; cream again.

Fold in the chocolate chips then take a spoonful and place it on top of the mini cake.

Dip into melted chocolate (or white) bark.

Top them off however you'd like!

Take a bite and enjoy!

A year ago today I decided to start this blog. Little did I know how it would have taken off...in such a great way! Over the past year I have learned so much, met so many wonderful people and found so many amazing blogs!

It all started with my raisin filled cinnamon rolls; very little detail, dark distorted pictures and only one comment (until recently!).

I've become more comfortable with talking, I've learned about social networking and most of all that lighting is key to having a great picture!

I started out with one follower and now have over 500! A few pageviews a day, has turned into a few thousand a day! It still amazes me that so many people choose to take the time out of their busy schedules to check out this blog!

So a big heartfelt thank-you goes out to you all!

It's the constant support and comments from you all that I continue to do this. I love hearing how you enjoyed a recipe or how they didn't turn out quite right! Through it all, it's been a wonderful experience.

Stay tuned this week for some exciting announcements about the new features that will be happening this year. Plus there be a wonderful giveaway to celebrate too!
