Triple Layer Bars

The other night I was thinking about all the flavors that I like and decided to combine them into one dessert. First there is a fudgy layer of brownie, then a decadent layer of cheesecake, and to top it off...cookie dough frosting (there's no egg in the frosting so it's perfectly safe to eat.) It's so rich that you only need a little piece to satisfy the sweet tooth!

Ingredients are as follows:

brownie layer:

1/2 C butter

3/4 C sugar

2 eggs, beaten

1 1/2 tsp. vanilla

1/3 C cocoa powder

1/2 C flour

1/4 tsp. salt

1/4 tsp. baking powder

cheesecake layer:

8 ounces cream cheese, softened

3 Tbsp. butter, softened

1/3 C sugar

1 egg, beaten

1 tsp. vanilla

1 Tbsp. flour

cookie dough frosting:

1/2 C butter, softened

8 ounces cream cheese, softened

1 C powdered sugar

4 Tbsp. brown sugar

1 1/2 tsp. pure vanilla extract

1/4 C flour

1/4 C cool whip

1 C mini chocolate chips

Directions:

Preheat oven to 350 degrees; grease an 8" x 8" pan.

Over low heat, melt butter in a pan.

Remove from heat; stir in the sugar, beaten eggs, vanilla, cocoa powder, flour, salt and baking powder. Mix until combined.

Pour into prepared pan and set aside.

For the cheesecake layer, cream together the cream cheese and butter.

Add the sugar, egg, vanilla and flour; mix until creamy.

Evenly spread on top of the brownie layer.

Bake for 28-30 minutes; until the edges get a little brown. Allow to cool.

For the frosting, cream together the butter and cream cheese.

Mix in the powdered sugar, brown sugar, pure vanilla and flour.

Fold in the cool whip and chocolate chips.

Once the brownie/cheesecake layer is cool, spread the frosting on.

Place in the fridge for about two hours to set up. Slice, serve and enjoy!

Today I'd like to introduce you to my friend Seta. She has a wonderful blog called dish-away that specializes in International Cuisine. We thought it would be a great idea to do a guest post on each others blog as a way to introduce our reader's to a whole new world of flavors...I hope you enjoy!

Hi, my name is Seta and I’m a Jordanian Armenian who is passionate about food. As a working mom, I don’t have much time to spend in the kitchen but didn’t want that to prevent me from preparing tasty, homemade and healthy food for my family. Years ago I started collecting and trying out quick and easy recipes and adapting them to our taste. Layali Libnan

The meaning of the word “Layali” is nights and “Libnan” is Lebanon, so the verbal translation for this recipe is Lebanese nights. I tried to research from where it got its name but was disappointed to find nothing! Why disappointed? Well Lebanon is known among the Arab world as being the most lively and interesting city, especially it’s nightlife with the various clubs and parties. Given that the name of this famous Arabic sweet is Lebanese Nights, I was expecting an interesting story….

If you google Layali Libnan you will find different variations for this sweet. Some of the recipes include Semolina and some don’t. In our family Layali Libnan is the sweet without semolina, the one with semolina we call Halawat Al Smeed, meaning semolina sweet. Both sweets are very similar and are served with Ater (sugar syrup).

Layali Libnan is an amazingly easy recipe to make. It consists of three layers, the bottom layer is a light and refreshing pudding that includes slices of fresh bananas. This is topped with a layer of whipping cream that is covered with coarsely chopped pistachios.

What you will need:

5 cups of milk (either full-cream milk or low-fat milk, but not skimmed milk)

¾ cup corn flour

3 tablespoons sugar

1 tablespoon orange blossom water

3 large bananas

1 package dry whipping cream mixture, prepared and whipped as per instructions

¼ cup peeled and crushed unsalted pistachios

How to make it:

Put the milk, corn flour, sugar and orange blossom water in a pan over medium-high heat and mix well with a whisk until it boils and thickens. Usually it needs about 4 to 5 minutes after it boils to thicken; during this period reduce heat to medium and mix continuously.

Pour the pudding into a glass dish, I use an oval shaped dish that is 35cm X 23cm (approximately 14 inches X 9 inches).

Quickly slice the bananas and layer them over the pudding. After I layer the bananas I like to push them with the tip of the knife so they sink in the pudding as this will protect them from turning black-brown.

Set the dish aside to cool completely.

Once the pudding is cold, spread a layer of the prepared whipping cream on top. Cover the dish with cling nylon food wrap. Put dish in the fridge for a few hours before serving.

Before serving, sprinkle the crushed pistachios on top. To crush the pistachios I put them in a nylon bag, wrap the bag with a kitchen towel and then use a garlic hammer to crush them.

Serve Layali Libnan with Ater (sugar syrup) on the side. Each person can pour as much syrup as they like. Personally, I prefer my pudding without any syrup, I find the cool and light texture quite refreshing.

Buttermilk Pound Cake with Buttermilk Syrup

I love pound cake! My favorite recipe is cream cheese pound cake and that's what I was going to make until I looked into the fridge and found out that I didn't have any cream cheese...yikes! So I took the basic pound cake ingredients and swapped out the cream cheese for some buttermilk and sour cream. To go with the buttermilk theme, I topped it off with some delicious buttermilk syrup. This cake is dense, not too sweet and the syrup...well let's just say you'll have a hard time not eating it straight from the bowl!

Ingredients are as follows:

cake:

3 C flour

1/4 tsp. baking soda

1/2 tsp. salt

1 C butter, softened

2 C sugar

1 C brown sugar

6 eggs

2 tsp. vanilla

1 C buttermilk or (1 C milk + 1 tsp. lemon juice)

1/2 C sour cream

syrup:

1/2 C butter

1 C sugar

1/2 C buttermilk or (1/2 C milk + 1/2 tsp. lemon juice)

1 Tbsp. maple syrup

1/2 tsp. baking soda

1/2 tsp. vanilla

Directions:

Preheat oven to 325 degrees.

Sift together the flour, baking soda and salt; set aside.

Cream together the butter and sugars for about five minutes.

Add the eggs one at a time, making sure to mix well after each one.

By hand, stir in half of the dry ingredients.

Mix in the vanilla, buttermilk and sour cream.

Stir in the remaining dry ingredients.

Grease a bundt pan and sprinkle in a little sugar to evenly coat it.

Pour batter into the prepared pan.

Bake for 65-70 minutes; until a toothpick inserted in the center is clean.

Allow to cool for a little bit. While it's cooling, place the butter, sugar, buttermilk and maple syrup in a pot and place over medium heat.

Bring them up to a boil, continue boiling for about three minutes.

Remove from heat and stir in the baking soda and vanilla.

Pour some syrup over the cake while it's still in the pan.

Remove from pan; brush the cake with the remaining syrup. I brushed it on several times and still had some left over. I then just poured it onto the sliced pieces!

Slice, serve and enjoy!

Danish Cherry Cheesecake

We loved this dessert! So much that I made it twice in two days! I wasn't quite sure what to name it so I just called it how the layers were done. A layer of cake danish dough, then cherries, then a decadent layer of cream cheese that turns out like creamy cheesecake. We ate it while it was a little warm and it was perfect! This would be a wonderful dish to make for Mom this Sunday :) Happy Mother's Day to you all!

Ingredients are as follows:

6 Tbsp. butter

2 eggs

6 ounces greek vanilla yogurt (this gives the dough a little tart flavor)

3/4 C sugar

1 tsp. vanilla

1 1/2 C flour

2 tsp. baking powder

1/2 tsp. salt

21 ounce can of cherry pie filling

16 ounces cream cheese, softened

3/4 C sugar

Directions:

Preheat oven to 350 degrees; grease a 9 x 13" pan.

In a medium size bowl, melt the butter (on low heat) in the microwave.

Whisk in the eggs, yogurt, sugar and vanilla.

Mix in the flour, baking powder and salt.

Spread batter into greased pan.

Spread the cherry pie filling evenly on top, leave an inch border around the pan.

In a separate bowl, mix the cream cheese and sugar together.

Place dollops of the cream cheese mixture on top of the pie filling.

Spread it out a little, it doesn't have to be perfect :)

Bake for 35-40 minutes; until the edges are golden brown.

Allow to cool in the pan for about 15 minutes. Slice, serve and enjoy!

Polvorones de Canele - Happy Cinco de Mayo!

Happy Cinco de Mayo everyone! I had plans to make a unique dessert to celebrate, however after having four sick kids at home this week, my plans had to change. I needed to make something that didn't require a lot of time and this recipe definitely doesn't. These cookies taste like shortbread and snicker doodles rolled into one! They melt in your mouth and taste delicious. I look forward to making these a lot more!

Ingredients are as follows:

1/2 C powdered sugar

1/2 tsp. cinnamon

1 C butter (no substitutes), softened

1/2 C powdered sugar

1 tsp. vanilla

3/4 tsp. cinnamon

1/4 tsp. salt

1 1/2 C flour

1 Tbsp. granulated sugar

Directions:

Preheat oven to 350 degrees.

Mix together the powdered sugar and cinnamon; set aside.

Cream together the butter, powdered sugar and vanilla.

Add the cinnamon, salt and flour. Mix until incorporated.

Take a spoonful of dough and roll it into a ball.

Roll into the powdered sugar/cinnamon mixture.

Place onto an ungreased cookie sheet.

Bake for 16-18 minutes; until golden brown around the edges.

I had some leftover powdered sugar mixture (and I hate to waste) so I stirred in a tablespoon of granulated sugar and rolled the warm cookies into it.

Take a bite and enjoy!

Tea Time with Donsuemor & Davidson's

Last year I participated in Donsuemor's Dessert a Day and loved doing it! So when they asked me to participate in a tea party, I was more than happy to oblige! I told my daughter about it and she asked if she could have the party for her furry friends, however after they had their tea my family sat down and had a tea party as well. The tea and cookies were delicious! We had such a great time that we're going to do it more often.

We received the Variety Pack of Madeleines which had Traditional, Lemon Zest and Dipped. Plus three packs of Davidson's Tea; Vanilla Cream Spice, Bing Cherry with Almond and Tulsi Hibiscus Flower. Donsuemor Madeleins are always so moist and tender while the teas were so unique in flavor. The madeleines and tea were perfect together!

I wanted it to be a special tea party so I even used the fine china!

The place settings were beautiful! That is my late grandmother's china ♥

Doggie dove right in and took a bite of his Traditional Madeleine.

Miss Lady Bug sat there and nibbled on her Lemon Zest.

While Teddy sat there patiently waiting for his!

Once they were done my family enjoyed some tea and cookies of our own. All three flavors of tea were smooth, not bitter and they left no after taste. The madeleines melted in your mouth because they are so fresh! They are the perfect accompaniment to tea!

Pap's Poppyseed Cake

Today is my dad's birthday and he loves Poppyseed cake. I've never made one before so I thought this would be the perfect time and a nice surprise for when we visit. This recipe is simple to make and it bakes up beautifully! I hope he enjoys...Happy Birthday Dad :)

Ingredients are as follows:

recipe adapted from Baker

3 C flour

1/4 tsp. salt

1 1/2 tsp. baking soda

1 3/4 C sugar

4 eggs

1 1/3 C oil

1 (12 oz.) can evaporated milk

1 tsp. vanilla

1 (10 oz.) jar of Poppyseed filling (found in the baking aisle)

Here's a picture of it for ya :)

Directions:

Preheat oven to 350 degrees; grease a 10 inch tube/bundt pan.

Mix together the flour, salt, baking soda and sugar; set aside.

In another bowl, beat eggs until light and fluffy.

Stir in the oil, evaporated milk and vanilla.

Slowly stir the wet ingredients into the dry until they're combined.

Mix in the jar of poppyseed filling.

Pour into prepared pan.

Bake for 50-60 minutes; until golden brown.

Cool in pan for 10 minutes; remove and allow to continue cooling.

Slice, serve and enjoy!

I am so excited to tell you that I got to do a review from Chicago Metallic; The Baking Experts! If you haven't heard of this company then you're missing out. They have an array of products, from cake pans to specialty pans, to the baking essentials! Chicago Metallic is your one stop shop for all your baking needs!

I was sent the Surprise Pan, a cupcake pan that has little posts in the center. This allows you to stick something on the post so it will then be baked inside. This is such a great idea and I can think of a million recipes that I can make with this pan. It's heavy duty and has a non-stick finish so even if you don't use liners, your creations won't stick. Chicago Metallic is graciously offering one of you a chance to win one too. ~~If you'd like to win, all you have to do is enter the contest!~~

Ingredients are as follows:

Batter:

2 C flour

1 Tbsp. baking powder

1/2 tsp. salt

1 1/2 C sugar

1/2 C applesauce

1 C milk

1 tsp. vanilla

1/2 C crushed pineapple, with juice

3 egg whites

24 Pina colada marshmallows, here's a picture so you know what they look like :)

Frosting:

1 C butter, softened

3 ounces cream cheese, softened

3 C powdered sugar

1/2 C crushed pineapple, drained well

toasted coconut and cherries for the top

Directions:

Preheat oven to 350 degrees.

Sift together the flour, baking powder, salt and sugar; set aside.

Mix together the applesauce, milk, vanilla and pineapple with juice.

Slowly incorporate the wet ingredients into the dry; set aside.

Beat egg whites until soft stiff peaks form.

Slowly fold into the batter.

Pierce cupcake liners through the posts.

Pour about a tablespoon of batter into each cupcake.

Pierce a marshmallow onto the posts.

Fill with batter until three-fourths full.

Bake for 12-15 minutes; until golden brown. The marshmallow will melt into the batter! Allow to cool for about five minutes then remove from pan.

While they are cooling, cream together the butter, cream cheese, powdered sugar and drained pineapple.

Place in the fridge until the cupcakes are completely cooled. Once they are, pipe some icing on top. Sprinkle on some toasted coconut and add a cherry on top. Enjoy!

Oh My Peanut Butter Pie!

A couple weeks ago I made the Chocolate, Strawberries & Cream Dessert and I only used half a pack of the cream filled cookies. So I decided to grind the other half up, put them in the cupboard and use them another day. However, after opening the cupboard and seeing them day after day they started to work on my mind. All I kept thinking about was how I was going to use these crumbs up! My kids like peanut butter so a peanut butter pie it was :) This pie is a quick and simple dessert that you can throw together in no time at all.

Ingredients are as follows:

1 1/2 C chocolate cookie crumbs, reserve about a tablespoons for the top

2 Tbsp. butter, melted

8 ounces cream cheese, softened

3/4 C powdered sugar

3/4 C creamy peanut butter

8 ounces cool whip

Directions:

Mix together the cookie crumbs and melted butter.

Press into a nine inch pie plate and stick in the freezer.

Cream together cream cheese and powdered sugar.

Mix in the cool whip.

Fold in the peanut butter.

Spread into the chilled cookie crust.

Sprinkle on the reserved crumbs and place in the fridge for an hour.

Slice, serve and enjoy!

I’m currently a stay at home Mom with two gorgeous boys, Alec and Asher, who are five years apart. I’m married to a wonderful husband, Jay, who works in IT for a major retail chain. I became a stay at home Mom in November of 2008 while my first son was 2 1/2. I’ve never considered myself “crafty” and then…PINTEREST! Now I host a monthly Pinterest girls night and I love to create things. I am the only girl in the house and any chance I can use glitter I do. I am hoping we can glitterize this world together! 5 Funny Facts:

This might be dating me a bit but in high school, I was nicknamed Boxcar from the Boxcar Willy infomercials. I loved country music and all I wanted to do was be a country music singer. I was country, when country wasn't cool! Moved to Nashville like everyone else and didn't follow my dream. Now I rarely listen to country music unless it's one of my favorite artists.
We have a cat and she actually was going to be called Lucky. When we took her to the vet, they begged us to change her name because most animals with that name aren't so "lucky." Her name is Happy.
I was a band geek in high school and I absolutely loved it!
I was well known in college for a Pete's Dragon imitation (don't ask!)
I have a very long tongue. I can touch the tip of my nose.
