New York, NY, January 12, 2015 — The Kings Theater announced today programming for its inaugural 2015

year, as the newly revitalized entertainment palace reopens in February. Kicking off with a grand opening

concert on February 3 by internationally acclaimed artist Diana Ross, the Kings will feature performances by

major national, international, and local talent across a range of disciplines—from leading popular and classic

rock music, to jazz, theater, and dance. Highlights of the Theatre’s inaugural programming include

performances reflective of Brooklyn’s diverse neighborhoods, including music legends Crosby, Stills & Nash;

Gladys Knight; Sarah McLachlan; the Moscow Ballet; dancehall reggae sensation Mavado; Tales from the Silk

Cotton Tree, a celebration of world music; and theatrical family favorites Three Classic Fairy Tales, presented

by Disney Live!, and Annie.

Shuttered for almost four decades, the Kings Theatre—one of the five Loew’s ‘Wonder Theatres’ constructed in

New York and New Jersey— will reopen to the public on January 27 for a free ticketed performance by local

performance groups, including the Brooklyn Ballet and the Brooklyn Youth Chorus. Additionally, a free open

house tour of the Kings Theatre will be held on February 7. Details for both events will be available on

KingsTheatre.com beginning January 20.

“As we look towards celebrating the reopening of this gorgeous theatre and important part of New York’s

Known to the world as Mavado or more recently “The Gully God,” the singer behind the eerie wails of

“Anywayyy!” and “Gangsta for life!”, which have dominated the airwaves, was born David Constantine Brooks

in 1981 in the micro-ghetto community “Cassava Piece” in Kingston, Jamaica. Before getting his break in the

music business, Brooks worked as a barber and cites his two main influences on the direction of his young life

as his grandmother and the music of Bounty Killer. Brooks’ ability to give voice to his experiences and capture

the imagination of Jamaican youth has caught the ears and eyes of a new and broader fan base.

Capleton is a Jamaican reggae and dancehall artist. He is also referred to as King Shango, King David, The

About the Kings Theater

The historic Kings Theater will reopen its doors in 2015 as one of New York’s premier performing arts venues.

Providing a destination for large-scale popular entertainment and serving as a resource for local arts groups and

community organizations, the City-owned Theatre will be a cultural and economic cornerstone of the Flatbush

community and add a major fixture to Brooklyn’s vibrant cultural landscape. The Kings Theatre was originally

New Jersey during that period. Featuring high curved ceilings, ornate plaster walls, wood paneling, pink marble,

is provided by the City of New York, through the Office of the Mayor, the Office of the Brooklyn Borough

The Fall season brings Wine Festivals across New York and New Jersey that celebrate the harvest, colors and scents that are truly unique.

Brooklyn Crush, was all to be expected. While the Fall sun went down it shone through the large windows of Industry City in Sunset Park where wine enthusiasts came from all over to celebrate and sample. With over 250 wines and a spread fit for a King and Queen there was no doubt it was going to be an experience of caliber. Rosemary rubbed top round, an assortment of grilled personal pizza's, specialty cheese's, pasta and antipasta salad to accompany the vino.

The wine was flowing as you made your way through the flavors that were quite tantalizing to the palette. One of my favorites by far was the Bellaforma from the Caribbean, with a line of romantic wines, as they put it, were just as gorgeous to look at as they were to taste.

It didn't stop there though, Brooklyn is also known for the artisan fare that you can find in every corner, nook, and cranny of this borough. Back in the day you had your grocers, little meat markets and specialty stores that were know for their distinctive food Italian, German, and so on.

Nowadays you will also find little artisan shops making chocolates, cookies, and caramels. Smorgasburg's Opening Weekend in Brooklyn, NY

Brooklyn is known for many things; old school, traditions, trendy, to so much more. From historic sights on Old Fulton Street to the new craze of Smorgasburg that is held on the waterfront in Williamsburg at East River State Park (where Kent Street meets N. 7th St.) on Saturdays & in Dumbo at Brooklyn Bridge Park Pier 5 with the backdrop of the Brooklyn Bridge and the Empire State Building from lower Manhattan .

What makes this unique is the overload of such an eclectic menu of street fare, all in a close proximity to each other. With over 140 vendors between the both locations ranging from American, Italian, Greek, Asian, Mexican, Colombian, and Thai to Seafood, Brisket, baked goods and everything in between, sure to please every palette, young to old and everyone in between.

It was my first time visiting the Smorgasburg, walking off Joralemon Street, the smells of what was cooking just ahead of me filled the air. Making my way through the gates of a foodie heaven I automatically came upon Bon Chovie www.BonChovie.com who was cooking up a fried Cod sandwich with there own slaw topping and homemade potato chips,

Chedbred www.chedbred.com offered a German Kasewurst Sausage with three year aged Cheddar Cheese & whole grain mustard coated in cornbread.

The Bruffin www.thebruffin.com is a combination of ingredients from all around the world stuffed into muffin sized pastry cups that were savory & sweet with each one being distinguished by their countries ingredients, but they don't stop there, how about a Red Velvet Yodel now there's a twist on tradition.

This year's "Choice Streets" will feature three tiers of ticket options. The Village Voice has done it again, this time bigger and better!! The 7th Annual Choice Eats 2014 was held at Pier 36 in Basketball City. During the year, Basketball City, which houses 7 courts is the host to adult leagues, youth programs, court rentals, even better, take the walls down to create an event space that has been used for non profit fundraisers, corporate events and in tonight's case, a gathering place to sample fare from over 100 restaurants in all five boroughs of NYC.

The night started out upstairs in the VIP section with just a handful of restaurants offering the best of their best.. Owner Ron Johnson of Mrs Dorsey's Kitchen is putting a twist on the traditional Grilled Cheese and served up a Jarlsburg Onion Jam Grilled Cheese!! Grandaisy Bakery, their motto, "all we knead is love" you can taste it in their handcrafted rustic Italian breads & Roman-Style Pizza's that are topped with either mushrooms, zucchini, thinly sliced potato's and more. Morgan's Brooklyn Barbecue was slicing and serving Beef Brisket with a side of slaw that was slightly sweet with just a hint of tang. Then there was the sweet from Carlo's Bakery to Doughnut Plant, which has been in business since 1994 and was offering yeast & cake doughnuts. These light, fluffy delicate doughnuts were filled with the most intriguing flavors from; Cashew & Orange Blossom, Coconut Cream, Blackberry Cream to a Chocolate Hazelnut. All I need to say is, spread the love Doughnut Planet.

That was just the tip of the iceberg, and we're not just talking lettuce. As I made my way downstairs it all started out with the Meatball Shop, then one of my absolute favorites "SCRATCHbread". I have been known to do some traveling for a good pastry or two, even a loaf of prosciutto bread. So if your not in Brooklyn, then you need to take a ride to try Matthew's baba ganoush, red roasted pepper spread, along with the rosemary bread, you won't be disappointed there. Red Hook Lobster Pound was serving up their Lobster Bisque while on the other side, Luke's Lobster offered Crab Rolls. Ovelia Psistaria Bar,marinated skirt steak with coffee, light and delicate Ginger Dumplings, tapas of Chicken Pate, to a company called Dirt Candy, who is all about the vegetable's, dished out Broccoli Hot Dogs, yes you read it right, Broccoli Hot Dogs. Don't be to scared, it is in genius, healthy and not just for the Vegan alone.

The hotter the better, then you might want to make your way to Queens Comfort in Astoria for their Atomic Mac & Cheese. Traditional thick, creamy Mac & Cheese, but they took it to a whole other level by bringing on the heat factor.

A Date wrapped with premo Bacon then topped with a Blue Cheese creama is a little bite of sweet & salty from Swine.

So far, I haven't even made my way half way through and wound up along the back wall where all the decadent sweets were. Cake, Cupcakes and Ice Cream, ohhh my.

and then there was Ample Hills Creamery with flavors like Gather Round the Campfire, Sweet as Honey and Salted Cracked Caramel that will surly turn you into an Ice Cream addict.

Round up on the East coast, there might have been just as many barbecue joints under one roof then in Texas. Glad to say this is not just for Southerns anymore. John Brown's Smokehouse in Long Island City, "Liquid Country Gold" from Mable's Smoke House to Fletcher's Brooklyn Barbecue, which has become so popular with us east coast folks.

One must not forget, while there was plenty of fare for sampling, there was just as much Spirit's to wash it all down. Barefoot Wine & Bubbly, Stella Artois Beer Garden, Four Roses Bourbon, White Pike Whiskey, New Holland Brewing plus much, much more.

Before the night was over I made my way over to Butter & Scotch, these girls are genius!! Not only were they the first to discover that alcohol can be infused into a cupcake batter, now this!! With three flavors; Green Chili Margarita Caramel Corn, The Dark & Stormy Caramel Corn & The Hot Toddy Caramel Corn, there is no reason to go back to our childhood days of eating regular popcorn.

Tonight attendees sampled some of the most eclectic, innovative & traditional fare, old to new, from across the borough's, combined it with great spirits and live music made it one of the biggest gatherings of the year.

With the upcoming threat of a major winter storm rolling on in did not stop droves of people from flooding through the glass doors of the Jacob Javits Convention Center in New York City on Sunday.

Opening day of The International Restaurant & Foodservice show of NYC brought together restaurant owners/operators and foodservice professionals to sample products from vendors who were offering energy drinks to gluten free breads and everything in between. The Japan Pavilion which offered; sake, ram-an noodles, spicy wasabi egg rolls(which were my favorite!) to every type of knife you could even imagine, yes they take there cutlery very seriously... Pride of New York/Taste NY Pavilion brought to you purveyors who are specifically from the New York region bringing products like maple syrup to artisan cheeses. There was the Barista Challenge, not only was it about the primo coffee that you drink in your local corner cafe or coffee shop, but the composing of beautiful works of drinkable art that if your spontaneous enough Lavazza could hook you up with a beautiful espresso machine and you too can invite family and friends over for a not your typical cup of Joe.

There were culinary demonstrations on innovative ways to prepare dishes, what is trending in 2014, not only in fare, but how restaurant equipment has become more state of the art, more high tech, including a tablet on the tables at you local restaurant that could be replacing not only the menu but the waitress and waiter coming over to take your order. Not really a fan of that one, only because it will put people out of work but probably inevitable and will happen in the near future.

The highlight of Sunday's event's was the 25th Annual U.S Pastry Competition presented by Paris Gourmet. America's most prestigious pastry competition brought together twelve leading pastry chefs from across the country to compete this year creating chocolate sculptures in the theme of Film Animation. The Chefs brought you through Film Animation that started with Steamboat Willy, for anyone who does not know, that was Mickey Mouses original name, under the sea in Finding Nemo, through the jungle with The Lion King, to Mulan and Up. Unbelievably beautiful with intricate detail, defining the lines of gravity to precise perfection, beauty in Chocolate, does it get any better then that?

Honestly, there is so much I can tell you about Eataly, but one must experience it on their own. Taking in the different sight's, sounds, and smells. It is one of the most wonderful experiences and an addition to the wonders of the world, food world that is, here in the states.

Oscar Farinetti opened his groundbreaking food and wine market in Turino, Italy followed by three other locations in Bologna, Florence, and Rome.

In 2010 there was a merging of the minds and culinary talent when Oscar teamed up with Mario Batali, Joe Bastianich, and Lidia Matticchio opening their first location, the largest artisan Italian food and wine marketplace in the world at 51,000 square feet. Located in New York City at 200 5th Ave. between 22nd and 23rd Streets, with a second opening in Chicago by the end of 2013.

I had first walked through the doors of this amazing place on the advice of a friend. Have you ever been to Eataly? No, I replied... Well, you need to go!

My son and I had gone to The NYC International Car Show while there we decided to make our way over to Eataly. But being pressed for time that day, we could not stay. As I was walking around for the short time we were there an employee approached me. Hello! she said, with a smile. Can I help you? Yes, I am trying to find the Gelato. Hold on she replied, I will get you a map. As she walked away I had thought to myself, a map! How big is this place? It was no more than a week later I made my way back for a two and a half hour tour. If anything, here is where you want to be lost forever.

With all the hustle and bussel that is going on in the streets of New York City, the people rushing to get from one place to another, cars and trucks beeping in the midst of day. Once you open the doors to Eataly, take your first step in, you are drawn to a way of life, a culture "it is in the air" with the outside becoming no more. "Eataly is Italy" in every aspect. With many ways to describe this grand market I would start off with "beautifully scrumptious".

This is not just a market place with exceptional products, but a gathering place, that hosts seven restaurants, including Birreria, a rooftop restaurant and brewery that offers quality beer and food under the stars at night and skyline during the day. Each brew is served through traditional hand pumps and the perfect temperature just 30 feet away from where you are eating.

The restaurants inside are located just behind their specialty counters of products.

Pranzo, meaning lunch in Italian is one of the newest restaurants. In Italy "Pranzo" is the highlight meal, the big meal of the day. Tradition is to sit, relax, not for 1 hour, but maybe 2 or 3 hours, savoring, enjoying each and every bite while taking in what life has to offer. This restaurant focuses on educating guests about Italian cuisine with hosting cooking classes at night. Open only from 12- 3pm .

Il Pesce has a seated counter area and table service. With a raw bar, using their selection of seafood in Italian Antipasti and creative dishes.

Le Verdure, also a seated counter with table service serves vegetable dishes that include soups with warm and cold dishes mirroring the flavors of Italy.

La Pizza and La Pasta, serves dried and fresh pasta's along with Rossopomodoro pizza, topped with the best San Marzano tomato's that are grown on a particular hillside in Naples, cooking them in brick ovens that were brought over from Italy makes these 10" individual pizza's primo. Close your eyes, take a bit while your taste buds transcend to another part of the world.

Manzo Ristorante, Manzo; meaning beef in Italian, brings it to the table in the highest of quality. A formal dining experience with white linen table cloths, a grand bar with an extensive wine list or a mixed cocktail if you choose.. You can experience modern Italian beef dishes to traditional Piedmont's beef antipasti. Also specializing in wild game with boar sausage and rabbit..

In the heart of Eataly is "La Piazza" meaning "the square" a gathering place that every little town in Italy has, where meeting or making new friends goes hand in hand with traditions. I Salumi and I Formaggi serves up tastings with a variety of salami's, cheeses, fresh mozzarella, and a raw bar that can be paired with a nice glass of wine or a beer of your liking. Stay a while eat, drink, and converse while enjoying the experience of the food and company in the La Piazza.

But that's not all, looking for a quick pick me up accompanied by something sweet, Caffe' Vergnano 1882 an espresso bar and The Pasticceria which offers small bite desserts and pastries that are delicately beautiful and sinfully delicious...

Italy is also known for there nuts, finding them in mostly everything. In the North, the Piedmont region are Hazelnuts, in the southern region, Sicily, you will find pinoli, pine nuts, and pistachios. At Venchi you can order a shot of Gianduja, here in America the familiar name would be Nutella, which is nothing like what they are serving up, indulge in the purest form of what is true that includes an assortment of fine chocolates.

Gelateria, brings to you that rich, creamy, silky gelato in traditional flavors of Italy right there at your fingertips..

We are not just "talking" artisan Italian food, they are "doing" artisan Italian food. Starting with the bread baking in the heart of the market that beats 24/7 round the clock in a brick oven that was brought over from Spain. Focaccia, Semolina, and Rustic Fig are just a few of the choices, making that panini all the more delicious.

The Rosticceria offers meats from the butcher counter that are slowly roasted, maintaining their wonderful flavors accompanied with fragrant herbs. Most popular, the prime rib sandwich tender, juicy, perfect in every way.

Not only do you taste the quality of the product, but they posses a passion, a love for this wonderful food and culture as well, that resonates in each and every bite.

The Village Voice: Choice Eats 2013 Tasting Event

I had the honor this year of attending and covering the Village Voice's 6th Annual Choice Eats 2013. Held at The 69th Armory, Lexington Ave, NYC it was the perfect venue for this year's event.

Bringing together over 80 restaurant's from the five borough's, with every form of alcohol one could consume. Being it was my first time covering this spectacular event I was excited, intrigued, and "ohhh so curious" on the different types of fare that was going to be presented.

Upon entering, the Armory itself was a sight to take in. Located between 25th & 26th Street on Lexington & Park Ave. in the heart of Manhattan is this brick structure that literally is a block long and also deep. With many floors of artifacts gracing the walls. That alone should be on the list as a sight to take in on your trip into the city. Then The Village Voice decides to host Choice Eats 2013 there making it all the more spectacular!

As I walked through to the, as I call it, the Grand Hall there were rows of restaurant's all handpicked by The Village Voice that stood out for being innovative, unique, creative, and down home fare. As I made my way down the first row catching myself waiting in line for one sampling and looking at the next to try. All looking so wonderfully scrumptious it was hard not to. There were tastings, as they called it; I personally thought mini meals, offered in all cultures.

Exchange Ally, located downtown, prepared a dish that was fresh & light, bringing the flair of Louisiana style to the City in an eclectic environment. Owner Paul, who I had the chance to speak with, has been cooking all his life in many different styles. Taking a break from the grind of the food business ventured off into Corporate America. That didn't last long when he realized his true passion was food. Brought it back to NYC and opened up Exchange Ally.

Home on the Range, Farm to Fork presented a slider of braised farm raised Pork that was topped with a pickled red onion on a mini chaibata roll. Yes, you can taste the difference to where one bite and you too will be saying "time to go Organic"...

Matthew Tilden, the founder of SCRATCH bread Brooklyn, which is located in one of the best area's in my eyes, Park Slope. Listening to his story, Matthew has the heart of any baker in the business and the product to go along with it. Matthew specializes in the art of bread making. He brings his love for doing things the old-fashioned way including the Brick Oven he uses to make the Bread & Scones, into an area that is Old New York, which is a beautiful marriage. The Focaccia that was topped with candied Prosciutto, Kale, and a little Danish Blue Cheese was crazy good, wishing I had some right now!

Nom Wha Tea Parlor was serving up Shrimp & Pork Dumpling's that were little pillow puffs of goodness and if you choose they doused it with a sauce that had some kick to it. Porchetta was dishing out Porchini Ravioli in a Truffle Oil Cream Sauce, Ohh my goodness and this was just the beginning of the feeding frenzy...

Did someone say, Greek Coffee Marinated Skirt Steak? Hearing that, I quickly made my way over to Ovelia Psistaria, which is located in Astoria. That is where you will find this delicious, tender, juicy, cooked just right to medium rare, and if memory serves me correctly, I think they might have been cooking them on a George Forman Grill! I have seen and tasted it all!

I have this new found passion for Thai. Choice Eats brought out the "best of the best" to name one I would have to say Qi, Thai Grill. They have been going strong now for 2 years and are sprouting up all over the place with already 3 locations... There is a fantastic, full menu with lots of choices. The Peanut Sauce on the Chicken Satay was rich in color with tons of flavor and texture. Not what you might be used to, but after speaking to Yo, he had explained; it is more traditional to the region. I say; bring it to us, which is what they are doing.

Pulino's Bar & Pizzaria doing it the Old School Italian way with cured Meats, Cheeses and Pizza...

Looking for a Lobster Roll made with ingredients straight from the Mainland. Look no further then Red Hook Lobster, Located, of course, in Red Hook they are importing those sweet, juicy, meaty Lobster's right from Maine, tossing with a little mayo, filling a slightly toasting bun, then topping with a slaw and sprinkling just a tad of Paprika.. One bite and you'll be hooked!

There were many, and I do not exaggerate, many other offerings in the Grand Hall with eats that would make your mouth water just by looking. Mini Lamb Meatballs, Tofu Pasta, and Stuffed Grape Leaves. Creative combo's like Beer infused Cheese Fondue accompanied by sliced Carrot, Red Onion, and a Small Baby Gerkin. Beautifully displayed item's to a Hard Boiled Egg marinated in Red Wine, very different and way to good.. Then there was the fun stuff including Hot Dogs topped with Macaroni and Cheese .

Keep in mind, while sampling all of this great food, there was pretty much anything you wanted to wash it down the old hatch. Stella Artois, Barefoot Wine & Bubbly, and Asahi Beer were a few of the sponsors. So there was a stream of filling the glass all night long "not being a problem" also included were a variety of Beer, Wine & Spirits tastings throughout..

As I finally made my way downstairs for desserts, there too was an array of delectable goodness in every corner. Danny's Macaroons, S'more Bakery, EMVI Chocolates, Butter Lane, and The Good Batch.

A twist to the old dessert, talk about being creative and innovative at the same time. Butter & Scotch who incorporates alcohol in their cakes and cupcakes including the frostings, and The Blue Stove that was serving up Bourbon laced Banana Pudding on top of a Graham Cracker Cookie Crust topped with a rich Chocolate Ganache. Seriously, it is like two world's colliding, having a new place to live and is the apitimy of perfection!

DJ: Vito & Druzzi (The Rapture DJ's) brought it. Playing music that was just a diverse as the fare beating to the rythym of a different drum. The culmination of food from every culture, distint music and venue made this experience extrodinary and what New York is in every way.

I ate a lot, drank a lot, met all kinds of people, and made new friends with having the opportunity to experience this great event.

It is well worth the cost of the ticket weather it is a VIP or general admission. A hint of advice, if you have never attended, put this on your calendar for next year. Remember the trays from the cafeteria at school? Find one and bring it, you will be able to gather quite a few things at one time, eat, and then gather again. Don't be like the stallion right out the gate, he never wins the race, well most of the time.. Pace yourself, take your time, taste, experience and look. Believe me the food is not going to run out. Bring your appetite, and if you can find a ride home, do so, when this eating, drinking extravaganza is over, you will be glad you did.

The 2013 International Restaurant & Foodservice Show of New York came to an end on Tuesday March 5.

As expected the show definitely brought to the table everything that a foodies heart desires. Some 500 plus exhibitor's filled the Jacob Javit's Center for 3 full days of tasting and bringing new and innovative equipment to restaurateurs. Included in the extravaganza was the whole top floor dedicated to Wine from all over the country.

Opening day started off with the 24th Annual U.S Pastry Competition presented by Paris Gourmet which was established in 1983 and is a leading specialty importer or Gourmet & Pastry ingredients. "Women" this years theme, brought together fifteen rising star pastry Chefs to compete for the coveted title, Pastry Chef of the Year. All with there distinctive design brought forth wonderfully beautiful masterpieces.

Exhibitors included, just to mention a few small companies that have a distinguished product; "Primo" Truffle Oil from Urbani Truffles, Lorenzo #1-5 Olive Oil , "Silky" Gelato from mec3, and Blue Marble Ice Cream. Big companies that have been in business for decades; Master Purveyors since 1957, who's home is in the Bronx, N.Y. "meat that is a cut above the rest" from natural grass feed stock, Micro-Vegetables & Flowers from Koppert Cress is an innovative way to bring "fresh to the dish", Boneworks Culinarte Stock, masters at making stock in big batches and Pastrami Sandwiches that would put a frown on some of New York's best.

Across the food map everything was covered including beverage's. There were Beet, Carrot & Cucumber Juice, Dr. Smoothie Pour & Blend Natural Smoothies, a company called Sea Breeze who has mastered the Egg Cream out of the Soda Fountain! Which I would highly recommend. The Coffee's from all over the world including Lacas Coffee Co.

Also included were newbies such as Hey Shuga "not refined but defined as liquid gold", The Teaologist who hand blends different Herbs & Spices to make unique tea's.

  Not only was it about food, but equipment that could squeeze 100 pounds of Oranges for fresh squeezed Orange Juice, Convection Ovens, Tableware, Furniture, Paper Products and even a Company that is in the business of designing Food Trucks.

As the show closed on Tuesday it was bittersweet. Make sure to keep your calander open for next year. With more new and innovative products that will be brought to you..

Bringing Back; Tradition Taste & Art "The Sicilian Cassata Cake"

Long before America knew what the Sicilian Cassata Cake was, Sicily was celebrating with this luscious, rich dessert for many centuries. Dating back between the fourteenth to fifteenth century medieval times the Cassata was, and has always been, a cake of celabration.

There is many that debate Cassata came from the Latin word caseus, which means cheese, one of the main ingredients in this decadent cake. Back in 1348 Angelo Senisio, a Sicilian vernacular who wrote a dictionary that included the definition of cassata: as a torte which is another form of a cake then later as an ice cream. The Sicilian word cacio: meaning cheese which derived as a food of bread and cheese. Back in the fourteenth-century a Tuscan cookery book came to surface titled "Libro Della Cucina" that included a recipe for casciata with a base of cheese and beaten eggs. But was clearly a savory pie and not a cake at all. Around the Fifteenth century"La vito di lo Beato Carrado" written by Andriotta Rapi of Noto, records the word cassata which defines as “a cake with a base of cheese.

All of the above sounds like it would be of it's origin, but the truth being, cassata is more than anything, born of a fascination with sugar, not cheese, and sugar was not cultivated in Sicily during the Roman era.

In the tenth century the Arabs brought sugar to Sicily and an energetic sugar industry took root, creating sweet inventions and use of this product appeared all over. The Sicilian cassata may very well be traced to the Arab era, or shortly afterwards to the Arab-influenced kitchens of Norman-Sicilian monasteries and more likely is probably proposed from the word for the large baking tray or earthenware bowl that the primitive cassata was cooked in.

A very simple concoction of eggs and flour. After some centuries of evolution, it is today a richly decorated cake of aristocratic proportions.

The foundation of the cassata is an egg cake or pan de sponge—known by the English as “sponge cake.” It is sprinkled with a sweet liqueur such as Grand Mainer or Maraschino cherry juice and orange flower water, has a filling made from fresh ricotta mixed with sugar, pistachios, cinnamon, candied fruits, and chocolate. Completely covered in a sugar icing glaze, decorated with baroque decorations using sugar icing then colored candied fruits, and marzipan delights such as miniature pears, cherries, kumquats and slices of candied citron that are twisted are placed on top. A grand and wonderful display when it's finally assembly.

Pair it with an extensive beverage menu that includes Frost Bite Martinis where the liqueur & glass are chilled to -2 degrees, several choices of Beer, Red & White Wine, Champagne, to Margarita’s, Chic & Unique combinations with titles like En Fugeo, French Toast, Millionaire, The Induction, and The Kings Lunch which includes Van Gough PB&J “All Naturally Infused” Vodka, Adult Chocolate Milk, & Banana Liqueur that is fit for a King. Ripe & Fresh bearing fruit infused Vodka cocktails, to Classic Indulgence, or better yet, The Ultimate Indulgence of Black Forest Cake & Tiramisu just to name a few.

After sitting for a few taking in the sights and sounds decided to order, which I was very excited about after looking over their beautifully orchestrated menu.

For cocktails it had to be the Double Cross "Frost Bite Martini". Chilled to the perfect -2 degrees and topped off with not one, but 2 huge Olives stuffed with blue cheese! Smooth to the palette and just right taking bites of the olive after every sip.

For sampling, the Salmon Sliders, “The Indulge” Bar Pie, & the Cucumber Wrapped Tuna Tartare were the choices.

While waiting our server Allie, who is very pleasant, friendly and knew the menu by heart brought us out The Nacho Sliders to start, explaining how they are the most popular and we just had to try them.

All their sliders are served three on a plate and made with Prime Beef. The Nacho Sliders are blended with Habanero Jack Cheese, topped with a tortilla chip, avocado salsa, and cheese sauce. After taking the first bite I now know why they are the most popular! Juicy, tender Prime Beef combined with all the flavors were insanely over the top! After devouring the three was wishing there were more, not for any other reason but because they were that good! Not long after we had finished the rest of our order was up.

The Salmon Sliders are these delectable little Salmon Cakes that were topped with Mango Salsa, a Dried Lemon Slice and Pesto Aioli on a whole grain bun. Moist, delicious and gently seared made these running pretty close to the Nacho Sliders in my book!

The Tuna Tartare when ordering it, I had just assumed it was going to be four to six individual bites of Tuna that were individually wrapped with Cucumber Slices. To my surprise it was a centerpiece on a plate that could have easily served 2-4 people as an appetizer or enough to be replaced as a main entree. Bite size pieces of Tuna with thinly sliced Cucumber surrounding the massive mound, topped off with cracker noodles, and then drizzled with Sweet Chili Sauce & Wasabi Dressing all around. The Tuna was the freshest I have ever tasted, making it a light fare and the perfect combination of flavors!

As for “The Indulge” Bar Pie, like everything else this establishment has to offer, was a collaboration of flavors and not your typical bar pie at all. Thin crust that was dressed with a Marinara Sauce, then topped with Sun Dried Tomato, Arugula, Ricotta, and Fresh Mozzarella & Basil. All the flavors melded together with a bite of pepper from the Arugula which was then taken over by the Ricotta Cheese that was smooth as silk.

To end this delectable tasting there were several desserts to chose from including the classic Ice Cold Milk & Chocolate Chip Cookies, Berries & Cream, Raspberry Torte, Red Velvet Cake & Sugar Glazed Waffles that could be drizzled with Chocolate Sauce!

Owners Joseph Squillaro, Kal Zohni and Ted Kutzen knew exactly what they were doing when opening INDULGE. A vision that was planned years prior by bringing flavorful fare, an extended cocktail menu and combining it with the flare of Miami & Las Vegas all wrapped up in one. Christina the designer behind the decor took the vision and turned it into a reality for the three partners. Slated to open in July it took a couple of more months to get it to perfection. Now that the doors are opened there is no way you would not want to “INDULGE”

As they say “all good things come to those who wait” as for the Jersey Shore, it has waiting long enough for a hot spot like this to plant roots.
