BBCC?

What's BBCC if you may ask, well that's what I call in short for Blue Berry Cheese Cake. Anyone care to have a bite? It was an eggless cake for me so it is healthy. I am not that fuzzy about BBCC. As long as its soft and fluffy, that will all be fine.

Care for a bite?

By the way, the one you see on top of the cake was not a slice or piece of cheese but white chocolate. I thought, at first glance, it was a cheese. But when I touch it, it was hard and when I smelled it, it was white chocolate.

White chocolate on top, not cheese

Of course, like most blue berry cheese cakes, it is with blue berry syrup and blue berries. Not that creamy and cheesy though. Just enough texture and not that sweet, that is okay for me. This piece costs only Rs55.00. I don't know if that is cheap for you, but worth it cost its eggless.

This recipe is not what I prepared in the eve of New Year. I cooked this last week and I was just late to post it here but at least I am not late to share it with you. I was just busy on preparing some of my blogs.

I just included the chickens bones, but in others recipe only meat, no bony part

Anyway you can do a lot of versions in cooking your chicken ala king. You can use carrots, mushroom, red bell pepper and other colorful veggies you like to include. What I have available that time was green peas so this is the veggie I used.

To make the sauce thick, you have two options for this one, use milk and flour or use an all purpose cream and fresh milk. What I did use was milk, all purpose cream and cheese which is really yummy.

Steamy and hot Chicken ala King

It is also easy to prepare here are the ingredients I used for this recipe:

Chicken Ala King Recipe

green peas
onion
garlic
chicken (breast part) or any meaty part
fresh milk
all purpose cream
chicken broth cubes
cheese
salt
ground black pepper
oil

Boil the chicken and cut them into pieces. On a pan put oil and once its hot, saute garlic, onion and chicken. After this put some salt and pour the green peas in. Put the sauce, wait for 3 minutes and put your ground black pepper and salt for seasoning. Add half cup chicken broth into your sauce.

For the sauce:

1 cup fresh milk
3/4 cup all purpose cream for 1/2 kilo chicken
stir the two ingredients

Creamy as this, as I want to

Make it creamy as you like it. You don't need flour if you used all purpose cream. But if you don't have a creamer, then use milk and flour and stir it well before pouring. The strawberries were really fresh and big in sizes and I decided to make it a salad. Just an easy dessert that I have shared here before.

Just clean the strawberries first using fruit and vegetable wash and then cut of the strawberries into half or to whatever cut you like. Put all purpose cream, sweetened milk or condensed milk and cut cheese in cubes and put into ref, simple and that but the delight is really wonderful.

You can also add some more fruits along with your strawberries, but its better if you put a fruit that is crunchy to munch like the spanish turnip (singkamas) or pear (the yellow one). But since pear does fade in color after some time, I still suggest spanish turnip to be best to pair with this dessert.

These fruit cakes which are colorful serves as a wonderful dessert for the family during the festive season. I have featured some of the fruit cakes before which are also colorful.

Colorful assorted Fruit cakes

Fruit cakes depends on different countries. Some are with alcohol content like rum and wine included while some fruit cakes are without alcohol content. These fruity and delicious cakes are without alcohol and are good for all including kids.

These are non-alcoholic fruit cakes

What hubby bought was kiwi cake, orange, lemon and pineapple. Its just a piece but per piece costs about Rs50+ in the cake shop of Hypercity here in Mumbai. Well, I enjoy eating cakes in the morning as breakfast, dunno why but I sure do enjoy having it with yakult, am I strange or what.

Anyway, have a blessed New Year to all. Hope your New Year will be happy and joyful and be safe. God bless.

Wanton Soup

Anyway, going back to the topic, what I have for today is mushroom fried rice which is non vegetarian because it contains egg and tidbits of chicken pieces. It was kinda greasy though but just fine to have when your tummy is hungry.

Hakka noodle on the other hand is another vegetarian dish or meal which is an all around favorite here in India. Every local restaurant you go to, you can just order hakka noodles.

For the soup, what I ordered was wanton soup which is sprinkled with coriander leaves and with spring onions. It is not the usual wanton soup you know of since it is not made of grocery bought wanton wrappers but a regularly made wanton wrap from the restaurant but their sizes were not uniform at all like these one that I have ordered. Just enjoying the day I can still have a short break from cooking and in the kitchen.

If only I have the time and gadget to bake a cake, I would be delighted to make one for Christmas. Anyway, I first took a bite on chocolate cake.

It was already that chewy because it was there in the ref for two days. The rest of the cake were still wrapped and I plan to eat them maybe in the afternoon snack. Cakes were not that sweet so I don't get used of eating it since some cakes here were eggless, some are not that sweet so it is also good to health.

Three more days to go before Christmas. Kids do like cakes and pastries even the colorful ones. But I still like to eat cakes with fresh fruits. It is also great to match these cakes with your favorite beverage like hot coffee or tea, milk, soda drinks and fresh fruit juice.

Fruity eggless cake, one for me and hubby

Its a creamy eggless cake topped with fruits like cherry, kiwi and ripe papaya which is worth Rs 32 a piece at Monginis cake shop. I also like the double chocolate that hubby bought at that same day but I just didn't take a snap because I think I already featured it here on my other blog.

Fruits on top were cherry, kiwi and ripe papaya

The fruits on top was healthy and just fine with the creamy vanilla flavor of the cake. Four days before Christmas, wow! didn't notice how fast time flies by and this cake is also a good cake to have because it is colorful yet simple and good also for vegetarians.

Vanilla flavored icing on this wonderful cake

Men should be eating a lot of pumpkin seeds in order to add their sperm count. Whether this one is true, I find it interesting since eating pumpkin seeds has something to do to help our reproductive system.

Pumpkin Seeds are really healthy as snacks

It is also good for women to include this in their snack. It is rich in folic acid as well and can increase the chances of getting fertile so if you want to conceive and have a baby, be sure to include healthy and nutritious food in your diet which includes your snack.

Most of us just much on junk foods that can harm our body. If you want to be healthy, kick off those soda and carbonated drinks. It will never do good to your body. Instead you can try on drinking nutritious drinks such as fresh juice from fruits, milk, water, green tea (depends on what brand) and other organic foods which is free from pesticides and harmful chemicals such as preservatives in foods.

Hubby always consider buying this pumpkin seeds because he likes the taste and at the same time, help in his digestion. Pumpkin seeds can also help prevent prostate cancer, helps your bladder and has zinc which is good for a healthy eye sight and hair.

Indeed I did cook Chopsuey. I just added the remaining veggies in the ref like cauliflower and cabbage. We do have remaining broiled chicken and beef liver that day and that was the one I used to saute with onion and garlic and my chopsuey was colorful and perfect.

Colorful and Yummy Chopsuey perfect for Christmas

Just that you don't need to over cook your veggies when it comes to cooking Chopsuey. I just want to say that Chopsuey is prepared differently in other countries. Here in India, when we ordered chopsuey, it was served with fried noodles and the soup was creamy white and thick and the veggies included were only green bell pepper, cabbage and carrot.

Mushroom, broccoli, cabbage, red bell pepper, cauliflower, chicken bits and beef liver makes this dish a winner

Why not try to cook chopsuey this Christmas? It will be a colorful dish to serve and is very healthy too for the family. Actually it's yellow in color but they call it Golden Indian Apple. The price is just the same with the regular red apple. It's just the same in taste if you would ask me, crunchy and tasty too.

Its lovely if you will include this in your table during Christmas, colors of red, yellow or golden and then the green apple, what a colorful fruit isn't it. It's also a healthy choice if you favor fruits and veggies included in your festive season and minimize eating fatty meat and preserved meats to prevent high cholesterol.

Golden apples with pears

During Christmas and New Year, people tend to eat a lot of unhealthy food. That includes sweets which are difficult for the body to flush out and which leads to diabetes. I really suggest mothers to prepare garden salad and fruits and fish during Christmas and New Year celebrations instead of pork ham, bacon and other meat with preservatives which is unhealthy. Nine more days before Christmas!

I like how Hypercity have come up with this recipe. In fact when we do order chicken tandoori for them, its also tasty. If ever I have my own oven I will try to create my own dish like this one, its really two thumbs up for Christmas recipe especially if you have that big turkey.

Broiled Chicken in Olive Oil, Yummy!

I don't know if hubby would have his duty during Christmas season, if ever I won't be so fuzzy on what to cook and prepare since we don't have any invited guest to come along since this country is not even bothered about Christmas and there's no Christmas rush for them.

A Good Christmas Treat for the Family!

Anyway, I like how the herbs and spices savor in this Broiled Chicken cooked in Olive oil. It is healthy and I like how chicken is cooked this way. It was about 489 grams in weight and the cost was Rs108.00 only, still cheap if you were to ask me. It only shows Veg Cake but pertaining to vegetarian people are okay to eat this cake. It does not include any vegetable as you may think it is as what it shows on the label.

Fruit Cake or Veg Cake?

The green label on the side tells its for vegetarians

It was vegetarian in the sense that the cake itself is eggless and it contains fruits instead of veggies. It's like more of a fruit cake if I may call it and as to what I assume that the title should be Fruit cake because it contains bits and pieces of dried fruits.

I do like this cake since it is healthy plus it reminds me of Christmas since fruit cakes are being sold in the market, well except for the wine treated fruit cakes, this one is just simple as it claim.

Care to have fruit cake? I mean veg cake? I always like to treat myself every time I feel hungry at wee hours and I have nothing else to prepare for a snack, this one is perfect for me. I really do wake up in the early morning when baby needs attention. Most of the time, my baby is awake in the wee hours so I tend not to sleep and whenever I feel hungry and I am so lazy to eat food, I just grab the easiest delight that I can treat myself and that is the energy bars or nutrition bars that most people working on a gym would be munching.

Energy Bar to the rescue

Hubby bought two packs of these since most of the time, I am just the one to look after baby and it is really difficult since I do tend to do my work slow or little by little. At times that I need to cook, I see to it that baby is asleep. But whenever he is awake, it will be difficult for me to continue the work that I have to do particularly cooking, so the tendency is that I get hungry.

Nutrition bar anyone?

I do like to snack on nuts and dried fruits as well as cakes and some biscuits. Aside from that I do have my yakult or the fermented milk and what else, these energy bars to keep me going. This is also the reason why I have been stagnant on updating my food blog since I cannot attend to cooking and most of the times, I let hubby cook our food or he orders our food.

What I don't like much in this energy bar is that it looks like its all rice crispies coated with chocolate syrup and chocolate. I still like granola bars even if they are hard to chew but they have bits and pieces of fruits. Anyway, I still have one more pack to go before I finish it. Although this was not the usual food that can be found outside since it is non vegetarian, I find it yummy. It is a food rich in iron since I needed that in my daily meal, I opt to have this one on my menu.

Grilled beef liver

Actually I don't have a recipe yet to tell you, this one was bought and we did not prepared it. It was grilled beef liver which is tasting deliciously and I can remember the recipe that my mom used to make back home. She used to cook us beef liver steak and it was almost the same taste like this one.

I enjoy it with my buttered garlic palak (spinach) recipe (Easy Spinach Recipe) which I have already shared here on my blog and you can just search it if you want to know the recipe. Of course eating this food is not complete without rice or chapatti (flat bread). Have a nice day everyone!

I call it maskipaps in short for the tagalog word "Maski papaano" or in English it means anything goes. Yes, you heard it right, I call it a recipe called maskipaps because hubby was the one who cooked it as a soup since I don't want to eat anything spicy because it is not allowed because I am breast feeding my baby.

Anyone care for a boiled chicken soup

So I told him to cook me some soup and this is what he prepared. He combined the veggies like potato, broccoli, tomato and cabbage and boil it in a cooker. The seasoning was just salt and black pepper. I cannot complain anymore, I really can't cook when I started to attend baby's needs like breastfeeding, my hands are already tied up.

Boiled Chicken with veggies

Anyway, going back to the food prepared, it was just a quick one since he used a cooker, the chicken and the other veggies were all done in 5 to 6 minutes. I was even scared for the outcome of putting broccoli in a cooker since broccoli were suppose to be eaten crunchy and greenish not yellowish or darker in color. I was just thankful that I have something to eat that day!

Sometimes when you buy it does look like tilapia but it was just the cousin of tilapia. Hubby bought this fish for Rs 50.00 only. I was excited to taste tilapia but after hubby cooked it, it wasn't tasting like the tilapia that I used to like back home, I was thinking if this was just another cousin of that fish.

Another headless fish, dunno if it was really tilapia or its the cousin

It taste a lot like "gilik" sorry I don't know what is the equivalent English word for gilik. But definitely I really did not enjoy this fish that looks a lot like tilapia. Anyway, if you ask me what is the best recipe for tilapia fish, I would say Simple fried Tilapia and another one is with Coconut milk and green chili.

I also miss milk fish (bangus) since it is not available here. What most fishes sold here in the local market and grocery were sole fish, baby shark, pomfret and other unknown fishes for me that I don't eat.

One more day to go before hubby gets his off day, my supply for food is running dry, can't just get out to buy since I am taking care of my little one. My MIL already went home and there was no one to look after me and baby if hubby is at work that is why, I still struggle to prepare foods and blog it here, probably when baby gets a bit bigger or if I will have someone to take care of baby, I can get back for more blogging and writing, but anyway I enjoy every moment with my baby.

I will just greet my relatives in USA a Happy Thanksgiving day. What I always see on television during thanksgiving day, American people usually prepare Turkey for dinner and with pumpkins.

DesiComments.com | Thanksgiving | Forward this Picture

For me everyday should be a Thanksgiving Day because God gave His son for us to be save. This is the real reason why we should be thankful, the love of Christ for us and the salvation He paved way for us who are sinful.

Enjoy everyday that God gives us no matter how hard life is. Anyone care to share their turkey or pumpkin pie here? This time, hubby bought again fresh sardines but for the sake of frying it in masala. In India, fresh sardines are always available in the market and they are also cheap. Although you will need work to clean the fish out and don't expect the local vendor to clean it for you.

Fresh sardines anyone?

My MIL and hubby used to remove the head of the fish unlike what my mom taught me. In here they don't eat the head of the fish the way we enjoy eating it in Philippines especially when it is fried.

Masala is just a combination of turmeric powder, chili powder and salt that you will mix together with your fish. Marinate it for thirty minutes to savor the masala. Now if you don't like it hot, perhaps you can just use paprika powder instead of chili powder.

Sorry if I haven't posted the finish product since I did not cook it but hubby since my hands were all tied up for baby, whew really did not expect mom's work is difficult since I don't have a nanny or a private nurse to look after baby, but anyway worth it. Just write me if you want to know more recipes about fresh sardines. Have a pleasant day!

Chicken Broccoli with Mushroom and Oyster Sauce

It was like preparing Chopsuey but different is that the only veggie I have was broccoli and I put chicken and mushroom and oyster sauce with soya sauce and season it with salt and ground black pepper.

The first thing that you need to do is to clean the chicken. In here I included the bones because it is much more tastier. After cleaning it with salt, then put into the pan, let the water juice out first before putting cooking oil. If the chicken is light brown in color, you can now saute it in garlic and onion.

After sauteing, you can now add the mushroom and once it is cook, you can now add broccoli and cook it in 3-5 minutes only. Do not over cook your broccoli, it will look brown and so soft and it will never be good.

After this you can now add oyster sauce, water (depends how much you want), salt and ground black pepper. You can also use butter instead of cooking oil when preparing this meal. But for me, what I use was just vegetable oil. You can also put cornstarch into it if you wanted it to be creamy a bit and not watery.

Hope you do enjoy this recipe. Broccoli is simply nutritious and even if it looks a lot like a tree and most kids have a difficult time to eat veggies, we as parents can motivate them by preparing veggies in a delightful and creative way and tell them about the nutritious content of broccolis.

I also have stocks of fruits and other foods that I can easily prepare whenever I feel hungry.

Cookies for a cookie monster

It is indeed difficult to move around when your focus is only your baby and you don't have anyone to look after you. This is really the time I appreciate my mom and other siblings to be around me but I am geographically away from them.

Cookies with mini cakes

Going back to those snacks, I really like chocolate chips ever since I was in College. I used to dip it in milk, be it hot or cold milk. I also like the vanilla, chocolate and butter sponge flavored mini cakes. It tastes the same like the local mamon (chiffon) cake that I used to buy in the local bakery where I grew up.

Ribbon cake with some cookies

What is good in these types of snacks is that anytime of the day you can eat it and pair it with your favorite beverage or drink such as tea, coffee, juice or soda drinks. By the way most of the cookies I have was with bits and pieces of chocolate chips or somewhat similar with Oreo cookies. I do like to pair it with ice cream too, but for now, I will be skipping on eating cold drinks and desserts.

Beginning September, it has been around Rs50 plus for a kilo which is only 3 big pieces but it was deliciously sweet and creamy to me.

Atis or Custard Apple

I am not an avid fan of atis or custard apple because I feel so lazy on removing seeds one by one when I eat it. But I surely like how sweet it is plus how creamy and quite grainy it was when I eat it. It has vitamins A and C which is good for our body plus it helps lower cholesterol. It is also said to be high in magnesium and potassium content good to prevent from any heart problems. It also helps cure constipation and helps treat dysentery.

Custard Apple, not likely favorable but is sweet and delicious fruit

What I usually don't like when buying atis or custard apple is that there are sometimes white flaky in between the skin of it. Pests are just common in custard apple trees not unless the farmer has taken care of it by spraying pesticides so I am really careful of washing off custard apples before eating it.

Custard apple is just easy to detect if it is already ripe. You can see it from its outer color and it will always be soft. If you buy it unripe, then what you can do is to place it inside a rice dispenser and keep it for some time and it will get ripen.

I was waiting for my husband to come home after his work to find out what his company has given them since every year they do have goodies, I mean sweets!

SWEETABLES FOR SWEET TOOTH MONSTERS!

Now, I will post it here since this was my first time to taste some sweets made from wonderful nuts like cashew and almonds included into it. It was in a red box with their company logo printed in front of the box and a Diwali greeting card.

Diwali Greetings

In this box are assorted Bengali Sweets such as Kaju Katli, cham cham, sandesh and Gulab Jamun. I still don't know the rest which is foiled in silver coating but that itself was also eatable. The box was heavy which seems more than a kilo in weight. If I will not be lazy to eat I will be able to finish this box within a week especially if hubby will help me finish it since he is not fond into eating sweets, it will take again a month to be stock inside the fridge not to mention the other sweets that was given to us yesterday.

Most of these sweets are made out of milk and some Indian spices which is good for vegetarians. It does not contain any egg which the Hindus don't consider adding on their sweets even if they bake cakes. Care to help me out eating these sweets? Lols!

It is also called as Festival of Lights and so it looks like New Year celebration here because of fireworks and a very disturbing fire crackers all around. Most Hindu houses were filled with Christmas lights and decorations on their door posts called Rangolis.

Soan Papdi

Neighbors keep on giving sweets and it was part of their tradition. What we have for sweets last time was a Kaju Katli box from our land owner, now what he gave us was a Soan Papdi, it is a kind of sweet that melts to your mouth with green cardamoms and pistachio.

I am just waiting for hubby to come home and see what their company would give him since last time, what we have was a combination of a lot of sweets from Kaju katli, jalebi and many more. What our neighbor just give me was some famous snacks here in India like shankarpale, besan ladoo, karanji, chakli and some more that I am not familiar with their name.

Some Indian Snacks and sweets

I feel like Christmas and New Year here now, but I am more concerned on my baby who's sensitive and gets jumpy on those fire cracker blasts and sounds, anyway it happens only once a year.
