As we were passing by Kiehl’s where they were having a promo of bath body products (I think it was), we got handed one of these. That’s right, candy floss. How adorable!

Or should I say, how sweet! The next thing my daughters said was, this is too sweet, we can’t eat this! And you know what, there’s no greater satisfaction than knowing your kids know what’s good for them.

Over the past few weeks, I’ve gotten lazier in terms of working my weekend bakery. I was baking bread and cakes every weekend for the past few months, and then all of a sudden, I lost my baking mojo . I’m not surprised. It was only a matter of time. Don’t get me wrong, I love the baking, I just hate the washing up.

That and the fact that a food miracle happened in our household. My picky eaters are finally getting to enjoy eating oats so that means I don’t have to bake bread any more. Hohoho, what a Mother’s Day gift that is for me. Now to get me cranked up again, it looks like I might need more than just a simple chain hoist to drag all my utensils and supplies out.

2 ingredient grilled chicken

Everyone loves a grilled chicken. We certainly do. Here’s one of our family favorites which I made up on the fly and which, to be completely honest, is so easy it barely needs a recipe.

All you need are:

chicken thighs, skin on
your favorite meat rub

I usually use Cajun rub for that kick we love but feel free to use whatever seasoning or rub you fancy. To prep the chicken, simply marinate it for a few hours. When you’re ready, just grill it in the oven for between 35-45 minutes, and that’s it.

Of course you can go ahead and drizzle on some oil and season with salt and pepper to taste. But then it won’t be a 2-ingredient chicken then, would it ?

I don’t use any oil, salt or pepper because grilling with the skin on, the meat is kept wonderfully moist, and the Cajun rub provides all the flavoring we need. We eat it without the skin and it tastes as good as it looks.

Picking healthy over fast

I had breakfast at McD’s recently. Haven’t been in there for years now since we started trying to eat healthier. I remember when the kids were younger, we used to go there quite often because that’s what the kids liked to eat.

But now that they’re older, they have gotten more vain and want to slim down and I guess eating less fast food is the place to start. I’m happy the kids are more conscious of their nutrition from their biology classes which is more than just the fun of putting on a lab coat.

My kids are such picky eaters I still can’t believe they’re willingly eating vegetables and fruits, and cutting out the fries and pastries.

Baking is quality time
