<p>小学课本里的一首《蜂》，很多年后才体会得最后那一句读来是如此别有滋味。</p>
<p>多了解一些蜂蜜的用途，也算是回馈一下蜜蜂们的辛勤工作了。=D</p>
<ul>
<li>蜂蜜是唯一一种非人工制造的甜味剂，它甚至对某些疾病有疗效。</li>
<li>蜂蜜的PH值大约是3到4，大约18%的成分是水。由于蜂蜜是一种非常稳定的物质，如果妥善保存，可以几百年不变质。</li>
<li>蜂蜜可以减少心血管系统的脂肪堆积。</li>
<li>蜂蜜不会像经过提炼的糖和蔗糖那样在胃里发酵。因此不会增加你被细菌感染的风险。</li>
<li>蜂蜜可能是糖类中最简单的分子形式，因此无法继续分解。这使它可以直接通过小肠进入血液，不会像蔗糖一样引起任何消化系统问题。</li>
<li>蜂蜜是睡眠时燃烧体内脂肪的最佳燃料，因为它的果糖含量跟葡萄糖的果糖含量是一样的。</li>
<li>蜂蜜是治疗烧伤的最好物质。蜂蜜可以有效缓解疼痛，使患处快速康复，而且不会留下疤痕。</li>
<li>科学家在蜂蜜里已经发现多种维生素和抗氧化剂，其中，抗氧化剂——松属素，只有蜂蜜里才有。</li>
<li>蜂蜜是治疗小儿咳嗽的一种既安全又有效的方法，它在这方面的疗效甚至比非处方药还好。</li>
<li>最近的一些研究显示，在锻炼前、后吃点蜂蜜的运动员，比不吃蜂蜜的运动员的体能恢复得要快。</li>

</p><p>曾经听过这么一句话，说爱的反义词不是恨，而是遗忘。突然觉得很真切。</p>
<p>对于一个人、一件事，爱着或恨着，夸着或骂着，其实都是一种关注。这一点，明星也许最清楚。待有一天，你说不上一个人的好或坏，描述不出他的模样，那就是真正的不在乎了。对人如是，美食亦然。</p>
<p>当我翻着电脑里照片，想写写AOBA的时候，突然发现我已经完全不记得它的味道，就连当时吃了什么也是记忆模糊。暗暗为AOBA叫了一声“哎呀”，这可是一个不太好的预兆。</p>
<p>不过虽然想不起它的味道，食评还是写得出来的。因为为食主义对所有食物都有记录呀，木哈哈～～</p>
<p>不知道为什么，AOBA一直都有一种门庭若市的现象，也许是因为它打得非常亮的灯光和水产市场的装扮吧，总让人觉得里面非常欢腾。<br />

<p>既然是拉面馆，我们就单刀直入说拉面。</p>
<h3>Hokkai Shio Cha Shu</h3>
<p><a href="http://www.foodeology.com/review/aoba-hokkaido-ramen-vivocity-singapore/attachment/hokkai-shio-cha-shu_aoba/" rel="attachment wp-att-5149"><img src="http://www.foodeology.com/wp-content/uploads/2010/09/Hokkai-Shio-Cha-Shu_AOBA.jpg" alt="Hokkai-Shio-Cha-Shu_AOBA" title="Hokkai-Shio-Cha-Shu_AOBA" width="510" height="327" class="aligncenter frame size-full wp-image-5149" /></a></p>
<p>AOBA的拉面总体上会让我想起<a href="http://www.foodeology.com/review/marutama-the-central-singapore/">Marutama</a>，但它不会像Marutama那么油，也不太有美极面的感觉，这是它应该被表扬的地方。而且这碗烧叉烧拉面，算是对得起它的名字，叉烧够多，肉也很嫩，比Marutama那<a href="http://www.foodeology.com/wp-content/uploads/2010/07/Ramen_Marutama.jpg">孤独的一片</a>叉烧要实惠。</p>
<p>可是你说它味道好吗？汤偏咸了，口味也没什么太大的特色，感觉就是“吃吃也就吃吃”。</p>
<p>不过AOBA的蛋倒是没有Marutama的专业。它也属于蛋白全熟蛋黄酱状的<a href="http://www.foodeology.com/wp-content/uploads/2010/07/Ajituke-Tamago_Marutama.jpg">Ajituke Tamago</a>，可是那蛋黄已经濒临全熟，没有它本来该有的感觉了。</p>
<h3>Hokkai Shio Seafoods</h3>
<p><a href="http://www.foodeology.com/review/aoba-hokkaido-ramen-vivocity-singapore/attachment/hokkai-shio-seafoods_aoba/" rel="attachment wp-att-5150"><img src="http://www.foodeology.com/wp-content/uploads/2010/09/Hokkai-Shio-Seafoods_AOBA.jpg" alt="Hokkai-Shio-Seafoods_AOBA" title="Hokkai-Shio-Seafoods_AOBA" width="510" height="347" class="aligncenter frame size-full wp-image-5150" /></a><br />
至于海鲜拉面，虽然菜单上写“推荐”，味道也是平平。汤依然偏咸，不过虾倒是很新鲜的。可是可是，虾上有黑乎乎的不明物，不知道是不是抽虾线的时候沾到虾身上去了。</p>
<h3>Corn Butter</h3>

这个纯属为食情况下的附带品。</p>
<p>做得比较素，黄油不是很多（你别看那么一块，其实涂开来没多少）。如果你是想吃那种像路边小吃那样喷喷香吃下去却很有犯罪感的Corn Butter，那它就不到位。如果你是把它当小菜吃，其实味道刚刚好。</p>
<p>不过这盘东西上来的时候太不专业了，边上汤渍很多，感觉那盘脏兮兮的，影响大家的为食心情。</p>
<p>综上所述，与一样价位的Marutama比，为食主义会选AOBA；可是要是推荐的话，还真是说不出它有什么好了。这就是现在众多评测中常用的“无功无过”吧。</p>

<h3>腊排骨火锅</h3>

虽然对腊食并不是很感兴趣，但既然来到这里，这么出名的一道丽江特色火锅还是要尝一尝。</p>
<p>所谓腊排骨火锅，就是之前把排骨制成腊食。上桌前用水把排骨煮上一小时左右，和西红柿等一起放入火锅中，锅开即食。当然，这些腊排骨火锅店里的排骨都是已经煮好了的，不然等上一小时，黄花菜都凉了。</p>
<p>丽江的饮食风范那叫一豪迈，让我们这种吃惯江南小菜的着实开眼。</p>
<p>点菜的时候老板问我们“要小锅吗？”我们心想，两人吃一小锅能够吗？看了看边上那桌满满一大锅排骨，问“那是中锅吗？”老板说，那是小锅。=.=” 无言数秒……“那还是小锅吧～～”</p>

一锅上来，我们是抱着“能吃多少算多少”的心开吃的，总觉得能吃完这一锅简直是神话了，更不要说我们还忍不住点了野山菌拼盘尝鲜。</p>
<p>虽然对腊食不太感冒，但不得不说它的味道还是很好的。本来总觉得腊食偏硬，吃了嵌牙缝。但这里的腊排骨非常香嫩，再添上独特的腊味，不枉一试。如果是在冬天吃，应该更有感觉吧。</p>
<p>吃着吃着，往下捣腾几下，发现原来和许多把一盘龙虾堆得老高其实下面全是冰的餐厅一样，熙熙攘攘的腊排骨下面，是巨无霸级的西红柿呀。</p>

为食主义估计了一下，那锅里大概有四五个西红柿。可是四分之一个西红柿就这体积，可想而知它们是如何铺陈了整个火锅底的。光吃西红柿都能吃个七分饱了。</p>
<h3>野山菌</h3>
<p>刚才说到野山菌，云南这边可是菌菇王国，这让有菌菇控的为食主义正中下怀。本来这家各种菌是单卖的，我们叫老板搞了一个拼盘。里面据说是有松茸、鸡纵菌等等。</p>

松茸是丽江地产菌类中的山珍，各地见到的松茸据说都是从丽江空运出口。<br />
鸡纵菌被称为菌中之王，因为它味道鲜得可以媲美鸡肉，所以叫鸡纵菌。</p>
<p>如此山珍，实在让人垂涎三尺。不过上来的时候都是撕好了的，也分不清谁是谁，吃顾着享受它的鲜美之味了。</p>
<p>最后要说说火锅调料。</p>
<h3>蘸水</h3>

和平时吃的水状或酱状的调料不同，这里的火锅调料上来的时候是干的。它有一个特别的名字，叫“蘸水”。蘸水有两种，一种是还要加汤料和水调着酱汁，一种就是这么干着沾，叫“干蘸水”。</p>
<p>调料包括葱、香菜、盐、胡椒、辣椒、腐乳、花椒等等等等，夯不啷当全放在一起，真是五味杂陈。</p>
<p>你可别看这么小小一碟，调料分量可是很足的。如果你把排骨丢进里面滚一滚，出来的味道一定咸得你咂舌。因为其实，只要轻轻点一点就好了。</p>
<p>如果你去丽江，走到哪里都可以看到腊排骨的招牌。但最好吃的据说还是在象山市场，因为那里的腊排骨火锅店最集中，竞争激烈了，质量也就上去了嘛。<br />

<p><span style="color: #0000ff;">在那个四季如春的地方，那个《还珠格格》里形容得“家家有草，户户有花”的地方，那个带着“shangri-la”如此梦幻的名字的地方，为食主义除了停停走走，就是捕捉每一道美食了。咔咔～</span></p>
<p><span style="color: #0000ff;">不评论大研古镇已经变得如何商业化；不嘀咕大老远的古镇与自己家这边江南的感觉有多少相像；不批判香格里拉镇上是多么不发达路上是多么尘土飞扬；不扼腕去传说中真正的香格里拉所在地时天空有多么阴霾扫兴……在为食主义，我们只谈吃喝。</span></p>

<span style="color: #0000ff;"> 不过这次去云南与上次去香港不同。去香港的时候为食主义做了极为深入地研究与规划，那些吃的地方基本都是闻名遐迩。而去云南，随意地连行程都是起飞前1天定好的，更不用说找那些有名的餐馆吃最地道的美食了。所以，“为食在云南”对食物没有评分只有评论，没有推荐只有介绍。</span></p>

<p>每个人都说丽江很美，说它是最适宜人类居住的地方云云。</p>
<p>其实，不知道有多少人了解过丽江纳西族的生活习俗。在一个母系社会中，男人只顾吃喝玩乐，家里家外的所有事情──不论是杀猪宰羊还是工作赚钱──都由女性包办；而这么强势的女性却连在结婚前被外人拍照的权利都没有，这样的生活为食主义是一定不喜欢的。</p>

<p>所以，只有当你把自然环境与人文环境完全孤立开来看的时候，丽江才是一个好地方，至少，有点“女权主义”的为食主义是这么觉得的。^_^</p>

<p>不过我承认，丽江是一个很闲适的城镇，是一个发呆的绝好地方。</p>
<p>也说不上为什么，反正在丽江，不论是站在狮子山上眺望大研古镇全景，还是坐在路边咖啡座看眼前人来人往，都觉得眼前很开阔，心里很平静，思维不知不觉就滑入了发呆的状态。待回过神来，发现自己什么都没有想，不像平日里的那种发呆，盯着一个地方依然思绪万千。</p>
<p>这样的心境，与其在人流如织的石板路上看大同小异的店铺，不如找一处咖啡座坐看云卷云舒。</p>
<p>随便找了一家被绿树环绕的雅座，一坐下来就被边上的小女孩吸引了。混血小美女在绿荫中撑开小红伞顾自涂鸦。还有什么比这更应丽江闲适之景的呢。</p>

<p>丽江的情调又何止于此。一杯拿铁是用米奇捧出的；一瓶啤酒有一个很香格里拉的名字叫“风花雪月”。<br />

<p>在你发呆的当儿，还会有人在那些弹唱很怀旧的老歌，实在是让那一份闲适更上一层楼。（有点诡异的拍摄角度，因为不好意思走过去对着人家直拍。）<br />

<p>在这么一个慵懒的午后，在丽江找这么一处悠闲的好地方发呆、看风景，可不是应了大研古镇里某枕河餐厅挂出的那句话么……<br />

<p>餐厅环境闲适，彩画、吧台、半开放式厨房……周日的中午没有太多顾客，餐厅里安静闲适的气氛伴着从玻璃门透进来的阳光，实在很是写意。<br />

<p>开胃小点是一种薄薄的饼，看上去是脆脆的，其实它又香又软，味道很好。貌似要沾着橄榄油吃，可是为食主义看到那层油的厚度，就望而却步了。<br />

<h3>Ravioli della Casa</h3>

菜单上的名字全是意大利文。Ravioli是意大利饺（又称意大利馄饨），加点馅把面皮对折捏紧，所以叫它饺子。不过它和中国饺子差多了，它扁扁平平，馅也不包得很结实。</p>
<p>这道意大利饺里是两种意大利奶酪Ricotta和mascarpone，加上一种蘑菇，外面淋的是淡帕马森（parmesan）奶酪汁。</p>
<p>咬下去口感饱满，馅很多汁，只是外皮一般般，感觉有点偏硬。因为奶酪比重很大，所以要慢慢吃，不然腻得快。</p>
<h3>Rucola e Prosciutto di Parma</h3>

这里的披萨饼薄，各种馅料压在上面，感觉那饼被压都喘不过气了，哈哈。</p>
<p>正宗的Parma Ham传说是一种十分天然的食品，是欧洲传统烹饪中的瑰宝。严格意义上来说，只有在意大利帕尔马城附近的山里出产的火腿才算是正宗的Parma Ham。它的加工仅仅依靠盐、空气与时间，没有任何其它添加剂，工程繁琐，完成一批要1年到1年半的时间。</p>
<p>这里的Parma Ham有多正宗为食主义无从考证，但从它粉嫩的颜色与薄薄的切片看来，也是做工细致。不过因为是盐腌的，吃在口中很咸很咸，务必把下面的饼裹着一起吃。</p>
<p>这道披萨里还有一点特别的就是那个Rocket Salad。它的中文名叫芝麻菜，分布在亚洲、欧洲、非洲及中国的东北与西北地区。但为食主义在那之前没尝过这种菜（后来老见着它了），第一口进去，感觉味道真是好特殊，不过多吃几口也还算能适应。它应该有的芝麻香味我没能分辨出来，但感觉这种香气很重的菜，就像香菜一样，一定会有人碰也不敢碰。</p>
<p>因为饼薄，所以把它和上面的馅一起送进嘴时的时候，各种味道中和得很融洽，香的菜、咸的肉、多汁的樱桃西红柿、奶味的parmesan奶酪加上果腹的饼，味道很不错。</p>
<h3>Tiramisu</h3>

此家的提拉米苏上得很大方，一来就是一大杯。味道还行就是酒味淡了一些。</p>
<h3>Lava Cake</h3>

Lava Cake的重点就是那火焰。第一次上来的时候为食主义正忙着吃披萨，来不及拍照。抱着侥幸的心理问了一下服务员能不能再点一次，她们居然同意了！她们真的把蛋糕拿进去处理了一下（或是换了一份）出来再点。好感动啊～～</p>
<p>蛋糕味道很好，表层不会太硬，底下松软并融化在舌尖的味道，让人流连。但一份一个人吃就太甜了，建议合点。</p>
<h3>Panna Cotta</h3>

意大利布丁，又称熟奶酪。</p>
<p>这款是所有甜品中的为食最爱。它甜得恰到好处，丝滑香软，入口即化，想要不爱它都难。</p>
<p>在阳光慵懒的午后，即使来这里点杯咖啡叫个甜品，也是很舒心的事。</p>
<p>La Braceria的老板就是一个意大利人，非常热情好客。为食主义在想，要不是因为它深陷富人区所以往往不顺路，也许可以考虑常去去哟。</p>
<p>哦，不过因为意大利餐中有些奶酪特别多，所以建议大家合点。以上这些，我们3个人吃完已经很饱了。</p>

</p><p>说到吃饭“占座”，新加坡可是有悠久的“历史”。</p>
<p>本来嘛，在人多的大排档等地方，先占个座再去找吃的也是理所应当，不然端着热腾腾的饭菜再找座是又累人又危险的事。可是新加坡的人们对于这种占座是尤为专业。</p>
<p>刚来这里的时候，为食主义看到一个食肆里空位一大把，桌上只是一瓶矿泉水或是一把伞，还当是有人落下了东西。殊不知，这其实是一些初级占座人员的占座方法。</p>
<p>但后来食肆进多了，发现空桌上出现最多的是<a href="http://static.stomp.com.sg/site/servlet/linkableblob/stomp/308634/thumbnail/use_tissue_paper_to_chope_seats_wait_till_you_see_this-thumbnail.jpg">一包包的餐巾纸</a>。但见有些人一进来就朝空桌上丢一包餐巾纸，丢得那叫一个顺手和理所当然。</p>
<p>他们不担心餐巾纸会被清洁工收走，因为清洁工早对这条默认规则烂熟于心；他们不担心有人会对那包餐巾纸熟视无睹，因为在新加坡，这是大家都知道的就餐规则。万一遇上一个不懂“道上规矩”一屁股坐在他们“预留”的位置上，虽然他们不能理直气壮说什么，但基本会投来了一个“有没有搞错，懂不懂规矩”的眼神。</p>

<p>为食主义一向反感这样的占座方法。一包餐巾纸能代表什么？上面没名没姓，任何人都能说那是属于他的。有些人丢下一包餐巾纸后就优哉游哉地去先聊聊天再排长队，一大张桌子空着没人坐，只有那包餐巾纸安静地霸着位。</p>
<p>尤其是就餐高峰场合，要是有个人在那里等着占位，其他人或许还能问问边上那个位有没有人坐；可是你丢一包餐巾纸在那里，难不成要人家和餐巾纸商量吗？也许我们可以装傻坐下去，但想一想又不服气，为什么一会儿平白无故地要遭别人的白眼呢。哎……</p>
<p>其实这个问题在星星国的论坛上有过好些讨论。基本上，大多外国人和一部分新加坡人都表示不理解。可是这个规则依然继续存在着，一点没有淡化的意思。某一次为食主义还看到某餐馆（谁知道是什么餐馆吗？我现在怎么想也想不起来了。如果你也有见过这样的餐巾纸包装，请告诉我）给的餐巾纸包装上就写着“seat reserved”，看来，像我们这些不习惯这个规则的人，也只能入乡随俗继续让餐巾纸做“占座王”了。</p>
<p>好啦，下面放几张所谓的创意“占座工具”（<a href="http://www.icanhasinternets.com/2010/08/seat-savers/">来源</a>），不过为食主义是觉得，它们会被清洁工收走的。<br />

<span style="color: #ff0000;"> 地点：Bar Bar Black Sheep (Robertson Quay) (各位，实在是非常抱歉～～～ Ah Loy Thai周日不开，所以换地方了。）</span></span></p>

</p><p>之前说着面包，那我们就继续面包吧。小篇幅大学问。</p>
<p>每次去面包店，看到有面包新鲜出炉，你是不是都会倾向于买刚出炉的呢？坦白说，为食主义会这么做哎。</p>
<p>可是可是，原来刚出炉的面包不好马上吃。</p>
<p>其实刚出炉的面包闻起来香，那是奶油的香味，面包本身的风味是在完全冷却后才能品尝出来的。任何经过发酵的东西都不能立刻吃。</p>
<p>刚出炉的面包含有许多二氧化碳，这是在发酵与烘培过程中产生的，如果立即食用，可能会吃进太多二氧化碳，不仅容易涨气，再者胃的消化功能较差的人食用后也容易产生胃酸。</p>
<p>面包刚出炉时因为仍在高温状态，面包的酵素作用持续进行着，约15分钟后，当面包的中心温度降至40度左右，酵素作用才停止，此时面包中的二氧化碳已充分排出，消费者可以安心食用。</p>
<p>另外，有的人挑选面包喜欢挑大一点的，觉得大而松软的面包口感好。话虽如是，但面包发酵也有一个度，体积过大也许是它发酵过度，不见得营养就多一些。</p>
