<p><span style="widows: 2; text-transform: none; text-indent: 0px; border-collapse: separate; font: medium 'Times New Roman'; white-space: normal; orphans: 2; letter-spacing: normal; color: #000000; word-spacing: 0px; -webkit-border-horizontal-spacing: 0px; -webkit-border-vertical-spacing: 0px; -webkit-text-decorations-in-effect: none; -webkit-text-size-adjust: auto; -webkit-text-stroke-width: 0px" class="Apple-style-span"><span style="line-height: 20px; font-family: Georgia, 'Times New Roman', Times, serif; font-size: 16px" class="Apple-style-span">I had no idea what to expect when I read the menu at this place.  It said, &#8220;non-classic onion soup, with cheese and a slow-cooked egg.&#8221;  What was brought to me was the bowl you see above, with a poached egg, and 2 or 3 tiny shards of cheese from a grater.  On top of this was poured some onion soup broth with much fanfare.  This is apparently an invention of master chef José Andrés.  It is visually appalling, and unfortunately tastes not much better than it looks.  Although they seem quite proud of the presentation, it is certainly not helped by the fact that the bowl looks like a commode.  I would say that this theme continues in every aspect of this dish.</p>

<p>I&#8217;ve been searching for a soup that falls into this category for years: one that is available in the terminal of an airport.  This place is located in terminal C of the Newark Liberty International Airport.  I&#8217;ve always been very strict about soups that are ineligible for rating on this blog.  In particular, if the restaurant does not serve soup as a regular item on the menu, I will not rate it.  If the restaurant is not generally open to the public, I will not rate it.  There was a question in my mind as to whether or not this is an eligible soup.  Since it is &#8220;airside&#8221;, that is, you must pass through security to eat it, is it generally open to the public?  I was leaning towards not reviewing it.  In fact, I&#8217;ve decided not to&#8230;just kidding.  Actually, if you really want to have this soup and not get on a plane, it is still possible.  It&#8217;s simple: just by a refundable ticket for a flight.  That will get you through security, and then when you&#8217;re done, ask for a refund.  Fortunately, this is in Continental&#8217;s terminal, and they are very quick with crediting refunds back to your credit card.  Just make sure that you don&#8217;t do it too close to departure time for the flight you are on.  There is some cutoff where it is too late to get a refund.  I think it is 1 hour before the flight.  Oh, the soup.  It is pretty awful.  Completely tasteless mozzarella cheese, and broth probably from a can.</p>

<p>Located at the Fairmont in Banff Springs, Alberta, this German take on the French classic is interesting.  The cheese was absolutely delicious (combination of gruyere and emmentaler, just like in their fondue).  However, there was very little of it, as it was cut to fit the shape of the piece of bread.  The broth was also delicious, and very meaty.  It suffered the same problem, as there was only around a millimetre of it (that&#8217;s Canadian for &#8220;millimeter&#8221;, which is also Canadian for &#8220;very little&#8221;).  The bread you see in the picture is not floating.  You could really only get around 5 or 6 spoonfuls of broth.  Excellent ingredients, though!</p>

<p>I&#8217;ve always said that Daniel&#8217;s should serve onion soup.  I mean the place just &#8220;screams&#8221; for it.  I had assumed that if they were to add it on the menu, that they would do a great job, and I was right.  Added on 9/2/2009, it&#8217;s a veal stock soup, with three cheeses: Gruyere, Mozzarella, and Parmesan.  The broth has a good amount of sherry, which really works well with the stock.  This is a great addition to the already excellent choices at this restaurant, and to my F.O.S. favorites!</p>
<p> Edit (10/02/09): Having had this several times now, I can say with some certainty that the mozzarella tastes very much like it is *smoked* mozarella.</p>

<p>Located in the Mirage hotel, Cafe Caribe is the main restaurant/coffee shop.  The onion soup seemed to contain provolone, with perhaps some swiss mixed in.  The broth was pretty good.</p>

<p>I have been avoiding trying the French Onion Soup at Applebee&#8217;s for years.  I had heard that their version is a &#8220;diet&#8221; version, using fat free cheese, among other things.  I figured it would be horrible.  So, my mission here was to balance out my blog a bit, and bring the average down.  The time had come to sample this monstrosity.  What would the rating be, 2.0?  1.0?  I laughed maniacally, as I walked in.  I was shocked to learn that they actually have two versions of the soup: regular, and diet.  That was a surprise.  So, I ordered both.  See below for my review of the diet version.  The regular version was at least as good as other chain restaurant versions.  The cheese was a decent swiss, and the broth was tasty.  It could have used more cheese, however.</p>

Sorry about the picture.  We tried moving candles around, but it didn&#8217;t help.  The broth was interesting, and used a veal stock.  The gruyere was quite good, and tasted expensive, but there was very little of it.  I would ask for extra cheese next time, and see how it goes.

<p>You may be wondering why there are two pictures above.  Well, the soup came out, and I immediately noticed that the broth was delicious.  I mean really delicious.  However, it was cold.  So, after sending back the soup, a new one was brought out.  Thus, the two different pictures.  I hadn&#8217;t tasted the cheese in the original soup (I like to drape hot soup over the cheese before tasting), and I was delighted at the quality of it in the second soup.  Unfortunately, the second soup&#8217;s broth was lacking the sweetness of the onions that the first had!  It&#8217;s a shame, because this soup could have made the top 10 if you combined the first and the second.  I intend to revisit, to give it another shot.</p>

<p>A very interesting Intenet recommendation!  As you may be able to tell from the photo (click on it for a larger picture), the soup is served in an <strong><em>actual onion.</em></strong>  Typically, I don&#8217;t enjoy the soups that are served in &#8220;bread bowls&#8221; (e.g. Panera Bread), but this one was quite good.  You may be able to make out the rock salt on which the onion with its soup in it was baked.  The salt remains extremely hot (so hot that you can easily get burned by trying to pick it up).  The only real problem with the soup is that the excess cheese runs down the onion and attaches itself to the rock salt.  It becomes very difficult to enjoy the excess cheese, since you can&#8217;t really separate it from the rock salt granuals.  You end up putting the cheese and 3 or 4 granuals in your mouth, which is painfully hot, and extremely salty.  It works really well to keep the soup and cheese hot, though.</p>

The tour of Indianapolis F.O.S. begins at Shula&#8217;s, a high-end chain.  This one is located in the Westin Hotel in downtown Indianapolis.  The soup has an interesting mix of cheese, described to me as Gruyere, Provolone, Swiss, and Parmesan.  The parmesan was way, way overpowering.  I couldn&#8217;t really taste anything else about this soup.

			<content:encoded><![CDATA[<p>Some people have mentioned that Trader Joe&#8217;s sells a pre-packaged french onion soup, so I decided to try it out and publish a study here (without rating it, since it is not at a restaurant).  The package is frozen, including the cheese and croutons, and it is placed in an oven-safe bowl, and then either baked for 45 minutes as-is, or microwaved for 7 minutes.  If you microwave it, you must then add your own cheese and put it in the oven for around 2 minutes.  I tried it both ways, and the baked one had better broth, but the microwaved version has the benefit of being able to choose your own cheese.  In any case, I wouldn&#8217;t recommend this unless you have no alternative.</p>

<p align="left">It really was delicious.  The sherry stood out, and it was really hard to believe it wasn&#8217;t a beef-based broth, as it was so incredibly tasty!  I hereby reverse my assumption that all vegetable broths don&#8217;t stand a chance.</p>

<p>This traditional greek-style diner has what I remember eating growing up in New York.  It&#8217;s &#8220;comfortable&#8221; onion soup, while not French traditional.  Provolone cheese, nice and browned, and salty soup.  One of the top of the pedestrian soups.  This particular diner is the place that has become a regular stop for folks travelling from the NYC metropolitan area on their way to some of the upstate colleges (Cornell, Syracuse, Binghamton, etc.)</p>

<p>I have a history of giving very, very little leeway to soups which venture into non-traditional presentations or ingredients.  But I found this soup to be amazing.  It is described on the menu as &#8220;French Onion Soup Baked with Puff Pastry&#8221;.  They have been serving the soup this way for over 20 years, and it&#8217;s very popular in the Fremont area.  The pastry is delightfully light and flakey.  The cheese is cooked under the pastry, resulting in a sort of &#8220;upside down&#8221; onion soup.  It was like &#8220;bizarro f.o.s.&#8221;.  Because the cheese is not exposed when the soup is baked, the cheese cannot become browned and loses some of the flavor potential.  It&#8217;s a &#8220;double broiler&#8221; effect.  The soup is served in a Crème brûlée bowl, and when it comes to the table it looks like a chicken pot pie (as you can see from the picture).  The cheese is a mix of gruyere and standard swiss, and tastes great.</p>

<p>Excuse the picture &#8220;tone&#8221;, as we were seated next to bright yellow neon signs.  If that isn&#8217;t an indicator of the expected quality of the soup, I don&#8217;t know what would be.  Decent amount of cheese (provolone and swiss), and browned nicely.  However, the soup was like drinking a bowl of salt water with some black pepper and onions thrown in.   The onions were nicely caramelized.  This is another entry in my recent tour of chain restaurants.</p>

<p>This restaurant is a Mecca for those of us who love cheese.  They use a blend of a few of their hundreds of cheeses on hand to make a fabulous F.O.S.  This makes it a bit non-traditional, yet delicious.  I would <strong><em>never</em></strong> say that an F.O.S. has too much cheese, but I will say for this one that it has not enough soup!  I think a bigger bowl is called for.  However, this would make it tough to tell the difference between their soup and their fondue.  Oh well, such problems!</p>
<p>Edit (11/18/2007): The three cheeses are emmentaler, beaufort, and hoch ybrig.  Picture added.</p>
<p>Edit (09/19/2009): The mystery thickens!  Today I visited Artisanal&#8217;s newest location in Bellevue, Washington.  Everything tasted the same, which is a great thing!  However, I asked about the cheeses in the soup, just to make sure.  The server checked with the kitchen, and three different cheeses came back: Emmentaler, fontina, and compté.  Could the Bellevue location make a different soup than the NYC location?  The server said, &#8220;non&#8221;, and that Chef Brennan makes all of the recipes.  It certainly tasted the same.  So, I called the NYC location, and they now say that the server there made a mistake, and that the cheeses quoted to me were from the fondue, not the onion soup.  That they actually use gruyere and parmesean.</p>
<p>Perhaps they are just trying to hide their recipe?  Who knows.  In any case, a new picture is attached.  The soup/cheese ratio is now perfect!  Please comment on this thread if you manage to find out anything more about my top rated soup!</p>

<p>As you can see, it arrived as what appeared to be some sort of &#8220;soup mutation&#8221;.  It looked like it might be the start of something good, and I sent it back for some more cheese.  On the second try, it came back looking much better, and I have to say that the broth tasted excellent.  I imagine they use one of their own beers.  The cheese was decent swiss, and eventually the quantity was adequate.  I suppose you need to ask for &#8220;extra cheese&#8221; as a practice here. </p>

<p>The presentation of the F.O.S at this restaurant has something very unique.  In my opinion, they&#8217;ve done something here that is long overdue, and secretly wished for by all who love this dish.  They actually serve the soup with a pair of scissors (click on the picture to see a better view).  That&#8217;s right&#8230;there&#8217;s no need for the secret glances to make sure nobody is watching as you separate a particularly long string of cheese with your fingers.  This feature alone would warrant a very high rating, but the soup also happens to be excellent.  It is a perfect combination of Gruyere and Swiss.</p>
