2 cans Rotel tomatoes &amp;amp; chiles
1 jar Herdez red salsa (mild, medium or hot depending on your tastes)
1 box vegetable stock

DO NOT drain beans.
Put 2 cans of beans, 1/2 of the stock &amp;amp; 1 can of Rotel into blender.
Blend well.
Combine blended ingredients, other 1/2 of stock, salsa &amp;amp; 2nd can of Rotel into soup pot.
Bring to simmer.
Thicken with corn starch slurry if necessary/

1/4c. (1/2 stick) of salted butter

18oz Sugar
4tsp Baking Soda
4tsp Cinnamon
Sift &amp;amp; set aside.
1lb Grated Carrots
6oz Raisins
4oz Pecans (chopped)
4oz Shredded Coconut
6oz Grated Apple (with skin on)
Mix into the dry ingredients.

12oz oil

Yum!!! Honestly any fresh chopped or well drained canned fruit would work. I'm thinking peaches this summer....hmm.

1/2 tsp salt (plus 1 tsp for boiling water)
dash of pepper

4oz cream cheese (half a brick)
1 sleeve Ritz crackers (smashed to crumbs in a ziplock bag)

The addition of the beans helps cool it down a bit. You can also use more or less of the chipotles. We like to use it as taco or burrito filling, but for the little girls I also spread it on one edge of the tortilla, add grated cheese &amp;amp; shredded lettuce, then roll it up like a taquito. Seal the other edge with a little smear of filling.

No chopped onions or added veggies in the meat. Just straight up meatloaf...made "Italian style" with the addition of Italian sausage. That is all.

This recipe makes 12 muffin-tin sized individual meatloaves.
We top ours with your typical brown sugar/ketchup glaze (recipe follows) &amp;amp; then a scoop of mashed potatoes. Yes, they look like cupcakes &amp;amp;
