There are two colour variations which i have used in my pot.You can choose your own colours I have used single colours for my flowers you can also use multicolored decoration for your pot.

Lots of people have queries about making recipes the best.Here are some of my recipes.You can make and try for yourself.I will keep adding recipes in this post with query.So please join and lick your lips with tasty Indian recipes on line.

Chutneys:

1.Coriander chutney

Coriander Chutney (Kotimiri Pachadi )
2 big bunches of fresh coriander leaves (washed and chopped)
2 green chillis (slit lengthwise)
2 dry red chillis
1 tbsp channa dal (senaga pappu, Bengal gram)
1 tbsp urad dal(minappa pappu, black gram)
¼ tsp cumin seeds (jeera, jeelakara)
1 ½ tbsp tamarind paste
pinch of sugar (optional)
salt
oil
Seasoning- 1 tsp mustard seeds and few curry leaves
1. Heat 1 tbsp oil in a pan. Add cumin seeds, let them splutter. Add the dry red chillis, urad dal, channa dal and fry till brown (approx 3 minutes on medium heat).
2. Remove from pan. To the same oil add the coriander leaves and green chills and fry for 3-4 minutes on medium heat. Cool.
3. Add the fried dals mixture, coriander leaves, green chillis, tamarind and salt to a coarse paste.
4.This chutney goes well with hot steaming rice and ghee as well as idlis/dosas/pesarattu and vadas.
My son loves this chutney as a spread for his sandwich. It tastes good believe me!
It goes well with toast too. Try it!

Raw Coriander Chutney (Pachi Kothimiri Pachadi)
2 big bunches of fresh coriander leaves (washed and chopped)
4-5 green chillis (slit lengthwise)
2 tbsp tamarind paste
salt
1 tsp sugar
Grind all the above ingredients and use the chillis according to your spice standard.This chutney has a tangy taste and goes well with idlis/dosas and any tiffin of your choice.This is an excellent dip for bajjis, stuffed mirchi bajjis.I have to make this chutney when I make bread rolls(potato stuffing) as it makes a very tasty dip for the rolls.This chutney is a must when I make Pesarattu (moong dal dosas)which is a speciality of Andhras....I will share this recipe too.:):)With chicken tandoori dishes this chutney has always been a hit with my family.

2.Gongura pachadi or chutney(Red sorrel leaves)

Ingredients:
4 big bunches fresh gongura leaves (red sorrel)
7-8 whole dry red chillis(de-seeded)
1 tsp methi seeds (fenugreek)
7-8 green chillis(less spice ones)
1 tbsp minapppapu (black gram dal)
1 tbsp senaga pappu (bengal gram dal)
1 tbsp coriander seeds
12-15 cloves garlic (peeled and lightly crushed)
4 tbsps oil
salt to taste

Tempering:
3 tbsp oil (yes,its 3 tbsps as its a pickle)
1 tsp mustard seeds
2 whole dry red chillis
10 curry leaves

Seperate the gongura leaves from the stalks and leave them in an open cool and dry place for 2 days so that the leaves wither.After 2 days wash the leaves.Spread over kitchen towel.
Heat 2-3 tbsp oil in a thick bottomed vessel.Add the leaves and fry them till rawness disappears and it becomes soft.Remove and cool.The fried leaves should look like shown in the picture.

In the same vessel add 1 tbsp oil and add methi seeds and fry till light brown and then add coriander seeds,urad dal(black gram),channa dal (bengal gram lentil) and dry red chillis and fry stirring constantly till light brown.Add the slit green chillis and fry for 2 minutes.Remove from fire and cool.
Grind these above ingredients with salt.Now add crushed garlic and the fried gongura leaves and grind very coarsely.It should not be soft.

Now heat 3 tbsps of oil in a pan and add the mustard seeds and let them splutter.Now add the whole dry chillis and curry leaves and fry for 20 seconds.Remove from fire and add to the ground gongura pachadi along with the oil.This pachadi does require a wee bit more oil like most pickles.

This particular pickle can be stored in the refrigerator upto 3-4 weeks and goes well with hot steamed rice and a liberal dose of ghee and sliced raw onions.

Note:I have used the red stemmed variety of leaves which is more sour than the white stemmed.If you are using the leaves of the white stemmed variety,you can add approx 1-2 tbsp tamarind extract while grinding the ingredients.

3.Dhokla

Dhokla ingredients:-

Besan/Gram flour - 1 cup
Curd - 1/2 cup
Eno powder - small pouch
Salt to taste
Lemon juice - 1 tsp
Black Mustard seeds - 1 tsp
Green Chilies - 2/3
Sugar - 1/2 tsp
Curry and coriander leaves.

Preparation Method:-

In a bowl put besan, salt, curd, and Eno powder and mix well. In a cooker or a steamer take 1 cup water and put the stand in it. Put the batter to a greased bowl and place in the cooker on the stand. Now close the lid, cook it for 15-20 minutes and check with a knife, if the batter doesn’t stick, it is ready. Take it out from the pan and cut into pieces. In a pan, take 1 tbsp oil, put mustard seeds and curry leaf when they start cracking add 2-3 green chilli, let them turn golden brown.Put the dhokla pieces and mix nicely. Serve it with few drops of lemon juice with sugar and coriader leaves.

Gobi Manchuria

Gobi Manchurian Recipe

Prep & Cooking Time: 40 mts

Serves 4-5 persons

Cuisine: Indo-Chinese

Ingredients:

1 medium sized cauliflower, cut into flor

ets, placed in salted hot water for 10-12 mts, drained

2 tbsps maida/all-purpose flour

2 tbsps cornflour

1/2 tbsp rice flour (optional)

1 tbsp ginger-garlic-green chilli paste

approx a littl

e less than 1/2 cup war

m water

salt to taste

For sauce:

1/4 cup spring onions, finely chopped,

1/2 capsicum, finely sliced

1 1/2 tbsps finely minced garlic

1/2 tbsp finely s

liced ginger

2 finely chopped green chillis

1 tsp red chilli pwd (preferably Kashmiri)

2 tsps soya sauce

1 tbsp chilli sauce

2 tsps vinegar

3 tbsps tomato sauce

1/2 tsp brown s

ugar (optional)

salt as required

1 1/2 tbsps sesame oil

1 tbsp finely choppe

d coriander leaves

1 Heat oil for deep frying in a heavy bottomed vessel.
2 In a bowl, combine maida, cornflour, rice flour, salt, ginger-garlic-green chilli paste and water to make a thick paste. Dip the washed and drained florets into the batter such that its well coated. Place each floret that is well coated with the batter into the hot oil. Do not crowd the vessel. Reduce flame and deep fry till the gobi is almost cooked. Increase the flame towards the end of the cooking process and fry the gobi till it turns golden brown. Remove onto absorbent paper and keep aside.
3 Heat oil in a large

wok and once the oil is piping hot, add the chopped garlic and stir fry for a few seconds. Add the green chillis and ginger and stir fry on high for a few seconds.
4 Add the whites of spring onions and stir fry on high for 3-4 mts, constantly tossing them. Add the sliced c

apsicum and stir fry for another 3 mts. They should retain their crunch.
4 Reduce to medium heat and add the brown sugar, soya sauce, tomato ketchup, chilli sauce and vinegar. Combine well and cook for 2 mts. Add 3-4 tbsps of water and cook for 2 mts.
5 Add the deep fried

gobhi and combine. Toss on high flame for 1-2 mts. Turn off heat. Garnish with the chopped spring onion greens and coriander leaves.

ecipe of Paneer Chatpat

Paneer Chatpat recipe ingredients:

Paneer - 150 gms
Curds - 200 gms

Onion - 1
Tomato - 1

Ginger and garlic paste - 1 tsp
Turmeric powder - 1/2tsp

Garam masala powder-3tsp
Chilli powder -4tsp
Oil - 1 tbsp
Salt to taste

Paneer Chatpat preperation method:

Cut the paneer into small cubes and take a bowl and add the curds, turmeric powder, chilli powder, garam masala powder and salt into it and shake it well and keep the paneer marinated in it for an hour. Grind onion, t

omatoes and ginger/ga

rlic in to a fine paste and keep aside.Take out the paneer from the curd mixture and deep fry them. Now take a pan and add some oil and after it becomes hot add the paste into it and fry it nicely un

til golden brown. Then add the curd mixture and salt into it and fry it for some time until both the mixture gets blended well. Add the fried paneer and bring to a boil and serve this hot Indian recipe of Paneer Chatpat with roti or paratha.

Matar pulao

Matar pulao recipe ingredients (indian recipe)

Basmati rice - 2 cup

Green peas - 2 cup

Onions (chopped) - 2 large

Green chilli - 2-3

Ginger (grated) - 1 inch

Cinnamon stick - 1

Butter or ghee - 4 tbsp

Water - 4Â½Â cup

salt to taste

Matar pulao reci

pe preparation method (indian recipe)

Heat butter in a large heavy-bottomed vessel. Add green chilles, ginger and cinnamon. Fry for a few seconds. Add onions and fry onÂ for few minutes till the onions are golden brown. Add the rice, green peas, water and salt. Mix well. Bring to boil

on high heat. Reduce heat and cover for 10-15 minutes or till all water evaporates. Serve this indian food of matar pulao with dal and raita.

Mixed Vegetable curry

Ingredients:

2 cups onions
1 cup cauliflower
1 cup carrots
3/4 cup french beans
1 cup potatoes
3/4 cup green peas
1 cup tomatoes
1 tbsp ginger garlic paste
3 green chillis slit length wise
1 tsp cumin seeds (jeera,jeelakara)
3 cloves
4 green cardamoms
2" cinnamon stick
1 tsp red chilli pwd
1 tsp coriander pwd
1/2 tsp cumin pwd
1/4 tsp garam masala pwd
2 tbps brown onion paste(fry 2 sliced onions till brown and make a paste of it)
2 tbsp curd (yogurt)
3 tbsp tomato paste
salt
oil
coriander leaves for garnishing

For cashewnut paste:
2 tbsp cashewnuts
1 tbsp melon seeds
1 tsp poppy seeds
Soak the cashewnuts,melon seeds and poppy seeds in water for 20 minutes and make a smooth paste.Keep aside.

Chop the veggies.Parboil the vegetables except onions and tomatoes adding some salt.
Heat 1 tbsp oil in a cooking vessel and add the par-boiled veggies and fry for 3-4 minutes.Keep aside.
Heat 2 tbsp oil in a ve ssel.Add the whole garam masala (spices) and jeera.Let it splutter.Add chopped onions and slit green chillis and fry till transparent.
Add ginger garlic paste and fry till oil seperates.
Add red chilli pwd,coriander pwd,cumin pwd,salt.Mix well.
Add the chopped tomatotes and fry till oil seperates.You need to stir fry the paste really well...for a longer period than usual.
Add the parboiled veggies and mix well.Cover and cook for 2 minutes.i.e the veggies need to be well coated in this onion-tomato masala.
Add the tomato pa ste and mix well.
Add brown onion paste and curds and mix well.
Add the cashewnut paste and mix well.Cook covered for 2-3 minutes.
Add 1 1/2 cups of water and mix well and cover and cook for 10-12 minutes.
Add garam masala pwd and garnish with fresh coriander leaves.

This curry does take some time to prepare and calls for some work..:).If you want the typical curry flavour ..you should not omit any of the ingredients like brown onion paste and cashewnut paste.Its a rich dish but full of flavour.

Paav bhaaji

Ingredients:

For Bhaji:
2 onions chopped finely
1 tsp ginger garlic paste
2 green chillis slit length wise
1 capsicum finely chopped
2 tomatoes finely chopped
1 small cup each of chopped mixed vegetables (french beans, carrots, cauliflower, beetroot,potatoes,green peas,cabbage)
3 tsps pav bhaji masala (any good brand,I used Everest)
1 1/2 tsp red chilli powder
1/4 tsp turmeric powder
1/2 tsp sugar (optional)
salt to taste
2 tbsp oil
1 tbsp butter
1/2 lemon juice
2 tbsps chopped fresh coriander leaves,onion rings and lemon wedges for garnish

8 pavs (buns)with butter to shallow fry the pavs

Pressure cook all the vegetables except onions,capsicum and tomatoes.Once they are cooked till soft,mash them with a masher while they are hot.Dont drain away the left over water from the cooked vegetables.
Heat oil in a heavy bottomed vessel and add onions. Fry till the onions turn golden brown in colour. Add ginger-garlic paste and green chillies and fry for 2-3 minutes.Now add the bell peppers and fry for another 2 minutes.
Add pav bhaji masala,red chilli pwd,turmeric pwd,sugar and salt.Stir to combine and then add the tomatoes and fry till oil separates.
Add the mashed vegetables and stir to combine.Add a cup of water and adjust salt, let it cook on slow fire for 20 minutes.Turn off heat and add butter and lemon juice.Combine.
Garnish with onions rings and chopped coriander leaves.
Serve this bhaji with hot pavs lightly toasted in butter.

Note: Bhaji can be prepared with even 2-3 vegetables like carrots,peas,cauliflower or bottle gourd.You can serve this bhaji with plain bread or roti too.

Letter on talangana issue

I am exaggerated to know that even Andhra Pradesh is been divided now.There were lots of agitations from the people on forming Telangana.

Minutes after home minister P Chidambaram's announcement that the Centre will initiate the process of forming the state of Telangana, spontaneous celebrations broke out at Osmania University as well as in the Telangana districts. The rally scheduled for Thursday has been converted into a victory rally. The entire TRS top brass assembled at Nizam's Institute of Medical Sciences, and much to the inconvenience of other patients in the hospital, burst crackers. But nobody seemed to mind.

TRS president K Chandrasekhara Rao called off his 11-day fast at a hospital in Hyderabad in the wee hours of Thursday soon after the Central Government announced that the process of forming a separate state of Telangana will be initiated.

Hundreds of students at Osmania University were seen dancing and raising slogans of "Jai Telangana" soon after Chidambaram announced in Delhi that a resolution would be moved in the state Assembly.

All these things have bursted me out.I am afraid I do not want to be a part of all this.This is bull shit.. I wonder why these people never understand the strength of unity.K C R is just like another Jinnah dividing andhra into two,so why should we feel bad about Jinnah then if we are supporting KCR.He is a leader and he should understand that playing with young minds will pay him one day for sure.I never discuss any political issue with anybody but here i would love all Indians to discuss about the topic.

This is not only for the people of Andhra pradesh but to all the citizens of India who believe in "Unity is Strength".

There is a famous saying "United we stand,Divided we fall".I don't think these people will ever realise this.The same thing happened 200 years back when all the states were on their own and the Britishers took the advantage of our division.As a result,they were ruling us for more than 100 years.Only when we realised the meaning of unity we were able to drive them back away from our country.

We call our country as "Bharat maata".Is this the gift we are giving to all those soldiers,who fought for us and our freedom and to our Mother Nation.I Know I cannot change anything but I think We all together can drive and change the opinions of forming new Telangana.

The sole reason to break up states is for the politicians to have their own personal fiefdoms - much like the old time Samanthas who used to declare independence with the sole intention of keeping all the tax revenue for themselves...in this case it is the money one could make as a CM by way of horse trading, contracts & a zillion other easy-cash ops.

If formation of Telangana IS inevitable, then Hyderabad should be made into a Union Territory - If this takes another struggle so be it - at least one city in the whole game will retain its charm & image and continue growing & not suffer becos' of the muddle headed petty political.

When we were young there were 25 states but If telengana is made there would be 29 states.

Hindu Religion-A divine religion.

Hindu - How do you explain it?‏
Next time you can give this answer if you are asked to explain a HINDU:

This year, I was travelling back to my home An American girl was sitting on the right side, near
window seat. It indeed was a long journey - it would take nearly seven
hours. I was surprised to see the young girl reading a Bible unusual of
young Americans.

After some time, she smiled and we had few acquaintances talk. I told her that I am from India .

Then suddenly the girl asked: 'What's your faith?'

'What?' I didn't understand the question.

'I mean, what's your religion? Are you a Christian? Or a Muslim?'

'No!' I replied, 'I am neither Christian nor Muslim'.

Apparently she appeared shocked to listen to that. 'Then who are you?'

'I am a Hindu', I said.

She
looked at me as if she was seeing a caged animal. She could
not understand what I was talking about. A common man in Europe or US
knows about Christianity and Islam, as they are the leading religions
of the world today. But a Hindu, what?

I explained to her - I am born to a Hindu father and Hindu mother. Therefore, I am a Hindu by birth.

'Who is your prophet?' she asked.

'We don't have a prophet,' I replied.

'What's your Holy Book?'

'We don't have a single Holy Book, but we have hundreds and thousands of philosophical and sacred scriptures,' I replied..

'Oh, come on at least tell me who is your God?'

'What do you mean by that?'

'Like we have Jesus and Muslims have Allah - don't you have a God?'

I
thought for a moment. Muslims and Christians believe one God
(Male God) who created the world and takes an interest in the humans
who inhabit it. Her mind is conditioned with that kind of belief.

According
to her (or anybody who doesn't know about Hinduism), a religion needs
to have one Prophet, one Holy book and one God. The mind is
so conditioned and rigidly narrowed down to such a notion that anything
else is not acceptable. I understood her perception and concept about
faith. You can't compare Hinduism with any of the present
leading religions where you have to believe in one concept of god.

I
tried to explain to her: 'You can believe in one god and he can be
a Hindu.. You may believe in multiple deities and still you can be
a Hindu. What's more -you may not believe in god at all, still you can
be a Hindu. An atheist can also be a Hindu.'

This
sounded very crazy to her. She couldn't imagine a religion
so unorganized, still surviving for thousands of years, even
after onslaught from foreign forces.

'I don't understand but it seems very interesting. Are you religious?'

What can I tell to this American girl?

I
said: 'I do not go to temple regularly. I do not make any
regular rituals. I have learned some of the rituals in my younger days.
I still enjoy doing it sometimes.'

'Enjoy? Are you not afraid of God?'

'God is a friend. No- I am not afraid of God. Nobody has made any compulsions on me to perform these rituals regularly.'

She thought for a while and then asked: 'Have you ever thought of converting to any other religion?'

'Why
should I? Even if I challenge some of the rituals and faith
in Hinduism, nobody can convert me from Hinduism. Because, being a
Hindu allows me to think independently and objectively,
without conditioning.

I remain as a Hindu never by
force, but choice.' I told her that Hinduism is not a religion, but a
set of beliefs and practices. It is not a religion like Christianity or
Islam because it is not founded by any one person or does not have an
organized controlling body like the Church or the Order, I added. There
is no institution or authority.

'So, you don't believe in God?' she wanted everything in black and white.

'I
didn't say that. I do not discard the divine reality. Our scripture, or
Sruthis or Smrithis - Vedas and Upanishads or the Gita - say
God might be there or he might not be there. But we pray to that
supreme abstract authority ( Para Brahma) that is the creator of this
universe.'

'Why can't you believe in one personal God?'

'We
have a concept - abstract - not a personal god. The concept
or notion of a personal God, hiding behind the clouds of secrecy,
telling us irrational stories through few men whom he sends as
messengers, demanding us to worship him or punish us, does not make
sense. I don't think that God is as silly as an autocratic emperor who
wants others to respect him or fear him.' I told her
that such notions are just fancies of less educated human imagination
and fallacies, adding that generally ethnic religious practitioners in
Hinduism believe in personal gods.

'Good that you agree God might exist. You told that you pray. What is your prayer then?'

'Loka Samastha Sukino Bhavantu.. Om Shanti , Shanti , Shanti ,'

'Funny,' she laughed, 'What does it mean?'

'May all the beings in all the worlds be happy. Om Peace, Peace, Peace.'

'Hmm ...very interesting. I want to learn more about this religion. It is so democratic, broad-minded and free' she exclaimed.

'The
fact is Hinduism is a religion of the individual, for
the individual and by the individual with its roots in the Vedas and
the Bhagavad-Gita. It is all about an individual approaching a personal
God in an individual way according to his temperament and inner
evolution - it is as simple as that.'

'How does anybody convert to Hinduism?'
'Nobody
can convert you to Hinduism, because it is not a religion, but a set of
beliefs and practices. Everything is acceptable in Hinduism because
there is no single authority or organization either to accept it or to
reject it or to oppose it on behalf of Hinduism.' I told her - if you
look for meaning in life, don't look for it in religions; don't go from
one cult to another or from one guru to the next.

For
a real seeker, Loving each and every creation
of the God is absolute and real. 'Isavasyam idam sarvam' Isam (the God)
is present (inhabits) here everywhere - nothing exists separate from
the God, because God is present everywhere... Respect every living
being and non-living things as God. That's what Hinduism teaches you. That is
where you can find the meaning of life.

Hinduism
is referred to as Sanathana Dharma, the eternal faith. It is based on
the practice of Dharma, the code of life. The most important aspect of
Hinduism is being truthful to oneself. Hinduism has no monopoly on
ideas. It is open to all & moreover Natural. Hindus believe in
one God (not a personal one) expressed in different forms. For them,
God is timeless and formless entity.

Ancestors of
today's Hindus believe in eternal truths and cosmic laws and these
truths are opened to anyone who seeks them.
The British coin the word
'Hindu' and considered it as a religion.

I
said: 'Religions have become an MLM (multi-level-marketing) industry that has been trying to expand the market share by
conversion. The biggest business in today's world is Religions.

I am a Hindu primarily
because it professes Non-violence - 'Ahimsa Paramo Dharma' - Non
violence is the highest duty. I am a Hindu because it doesn't condition
my mind with any faith system.

A man / woman who change's his / her
birth religion to another religion is a fake, and does not value his /
her morals, culture and values in life. Hinduism was the first religion originated.

I am proud of my religion and proud of who I am.
