			<content:encoded><![CDATA[<p>How long do you let the Japanese milk bread rise and at what temperature? When you say 150%, do you mean doubled in bulk plus another 50%? I let it rise about an hour and twenty minutes @ between 87 and 90 degrees. It is moist, but not wet and doesn&#8217;t appear to be as light as your pictures make it look. It is very good and not at all unpleasant texturally I just wondered if I&#8217;d let it rise enough or if my pan was just too big.  The pieces of dough were very loose before I set it to proof. I used a 9 x 5 inch pan. It is not as high as yours. This is the first GF bread I have tried, other than quick breads and while I am an experienced baker of wheat products this is a whole new game. </p>

<p>I just made the chocolate chip cookies from your cookbook and they are FABULOUS! I also turned your pecan shortbread recipie into the basis for lemon bars&#8230; wow, they were incredibly rich and irresistable. Thank you!</p>
<p>My favorite GF flour mixture for cake/cookies/muffins: 2 parts oat flour, 1 part almond flour, 1 part rice flour, with some flax meal thrown in too. It browns and crisps up nicely! I know many gluten-sensitive people cannot tolerate oats, but luckily my son can.</p>
