Spring arrived... according to the calendar but not the weather. We had a little more snow and I wanted something to warm our tummies. {I love soup 365 days a year}

YUM. I love pasta.




Ingredients needed, in addition to pasta sauce:

1 # box of Mostaccioli pasta [or Penne]
16 oz Ricotta [your choice of whole or low fat]
1 1/2 C of Shredded Italian blend or Mozzarella
1 1/2 C of Shredded Cheddar [I used Sharp]

Cook your pasta sauce. I cooked mine 3 hours.

This is made in a crock-pot.

Ingredients:
8 to 10 boneless, skinless chicken thighs
2 cans black beans, rinsed
1 can corn, drained
1 can diced tomatoes, drained [reserve juice]*
1 jar mild chunky salsa*

I&#39;m not a fan of a lot of sweets but this is yummy.

Peach Bread

Preheat oven to 350*
Grease a loaf pan or mini pans

Ingredients:
1 Cup flour
1 Cup sugar
1 Stick butter or margarine
2 Eggs
1 Teaspoon vanilla
1 Teaspoon baking soda
1 Cup peeled, mashed peaches [about 2 to 3 depending on size]

Cream sugar and butter.
Add eggs and vanilla.
Add peaches.
Add flour and baking soda.

Ingredients:

I found them in 8 and 16 ounce sizes. I envisioned using them for picnics and in our travel cooler.




Today I made the large box [.60 oz] of Jell-O and used the 8 ounce size to create single servings.&amp;nbsp;Just grab one and top with whipped cream and you&#39;re ready to enjoy a snack - quickly!&amp;nbsp;Filling about 2/3 to the top made six servings.

1 pkt hidden valley ranch dressing
2 cups water. More or less based on desired thickness

Cook hamburger and onion. Drain fat.

Sinfully good!

1 cup chicken broth: I try to get fat free &amp;amp; low sodium when I can find it.
3 cups water
1 1/2 cups quick cooking grits
1/4 to 1/2 cup of cream or half/half
1/2 stick of butter
S&amp;amp;P - to taste

Heat broth and water to simmer.
Add cream.
Add grits and stir constantly until done.
Remove from heat and add butter and S&amp;amp;P.

Optional: Add cheese.
