While I am in the middle of training for the Surf City Marathon in February and both my wife are extending that training for the Way Too Cool 50K the first week in March, we were looking for something "meaty" for dinner. To met this hankering I got a couple of Rib Eye steaks and wanted to do mushrooms. To keep with the meaty theme, I through in some bacon and whola a new dish was born.

What you will need:

4 or 5 strips of applewood bacon gotten from the meat counter. (this provides the best flavor)
1 half medium onion - diced
2 cups of mushrooms ( your choice, I used the typical run of the mill white mushroom)

Slice the bacon into small pieces and put in a hot pan. Cook until the bacon is almost crisp. Throw in the onions and sweat them a bit. Follow up with the mushrooms. Cook the mushrooms until browned.

You will find that due to the bacon fat, the meal is pretty filling by itself, but definitely provides a great addition to any meal.

Enjoy!!

When it comes to spaghetti sauce, I am not one just to pour it out of the jar or can. Mind you, I also will not claim that I make it from scratch either. That said, I took my aunt by surprise when we had them over for dinner.

While anyone can do this and it is a pretty no nonsense embellishment, I am surprised when I hear that most people don't add to their favorite sauce except for the occasional meatball or sausage.

The basic ingredients are as follows:

1 bottle of Spaghetti sauce (I prefer Mushroom Prego, Ragu tends to be to sweet)
2 cups sliced fresh mushrooms
4 cloves of crushed garlic
1 pound of ground turkey (or beef of course)
2 cup red wine (two buck chuck is just fine)

For extra spice, I add fennel (not my wife's favorite)

So what you want to do is brown your meat with the crushed garlic (I use a garlic press). In a separate pan (most likely the one you will cook your sauce) saute your mushrooms in a little bit of butter and 1 cup of wine. Once they are to your preferred texture, combine the browned meat and spaghetti sauce into the pan and the second cup of wine. Bring to low heat, and start the spaghetti.

For properly cooked spaghetti, bring the water to a boil, place the pasta in the pan and cook for exactly 10 minutes. The pasta will be a perfect al dente.

Now I am not big on stiring the sauce in with the noodles. Serve the pasta then the sauce over. If you must add Parmesan, you must. That's it! Tell me what you think!

A couple of years back we got a waffle maker. Now for some reason I thought you needed to get waffle mix. Silly me. But what do you do when you want to make them for your kids and you don't have the mix. You improvise!!

What I do is take your standard pancake mix, we use Target's Market Pantry Pancake mix, which you just add water. This is what I do to make it a waffle mix:

2 Cups Market Pantry Pancake mix
1.5 cups water
2 eggs
1 Tablespoon Vanilla Extract
1 Tablespoon Cinnamon
1 packet sweetener or 1 tablespoon sugar

Mix together and pour in a oiled waffle maker and enjoy!

Ever since I was a kid, I have loved brussels sprouts My parents made them pretty simply by boiling them whole, then serving them drenched in butter. Simple but good.

However, I quickly learned when I married my wife that not everyone likes brussels sprouts. In fact, she shares a common discription, they taste like dirt!

So I have played around with them in different ways and finally have found a great recipe that the whole family loves.

What you will need:

3 cups brussels sprouts, sliced in half
2 cups mushrooms, also sliced in half
1 cup white wine
2 tablespoons oil oil.
3 or 4 cloves of freshly crushed garlic
Salt to taste

Place all the ingredients in a pan. Make sure you mix in the crushed garlic and oil. Cover the pan, and bring to medium heat. This will cause the wine to steam the sprouts and the mushrooms. Let them cook for about 10 minutes, until the sprouts are tender. Then remove the lid, allowing the rest of the liquid to cook out, stirring occasionally to caramelize the remaining wine.

Your sprouts should be slightly brown while the mushrooms are firm and not slimy. Serve hot and enjoy!

Boy time flies. I have neglected this blog for too long. So to revive it, how about a nice Oatmeal Berry Shake?

This is a recipe I developed when the protein powder I got at Costco increased from $28 to $48. I just can't justify paying that much when I can create something just as satisfying as well as healthier.

The ingredients are as follows:

1/2 cup Trader Joe's French Style Organic Yogurt
1/2 cup Knudsens 2% fat cottage cheese
1 1/2 cups fat free milk
1/2 cup oatmeal
1 banana
1/2 of either Trader Joe's Fancy mixed berries or Organic Blueberries
2 cups ice
1 small handful of fresh baby spinach.
3 to 4 packets of Splenda

So basically you combine all the ingredients in a blender. The key is blend the ingredients until the oatmeal will be suspended within the ice as well as completely chopped up.

Try other ingredients. Other items I include to replace the berries include peaches, Trader Joe's pineapple tidbits, a tablespoon of peanut butter.

The ingredients above will get you a shake that is about 500 to 550 calories. By leaving out the banana you can reduce the shake by 100 calories.

I hope you enjoy!!!

So a couple of months we bought a bag of lentils. I am a big fan of Indian food and lentils are such a great source of protein without any fat. So I finally decided to put them to use. This is a pretty simple recipe and very versatile for experimenting with.

Ingredients:

2 boneless skinless chicken breasts

1 cup dried lentils

1 cup mushrooms

1 bell pepper

1 red onion

3 or 4 cloves of garlic

1 bottle Trader Joe's Yellow Curry sauce

2 tablespoons of olive oil

Place the 1 cup lentils in 3 cups water. Bring to a boil, then cook on low for 25 minutes.

While the lentils are cooking, dice the onion, bell pepper, and mushrooms. Cube the chicken. In a pan, place oil and heat to medium high heat. Place the onion and garlic (pressed in a garlic press) in pan and cook a couple of minutes. Add the chicken, cook for a couple of minutes, then add the mushrooms, bell pepper, then the curry sauce. Bring down to medium heat and cover.

At 25 minutes, take the lentils off the heat, and drain. Then stir in the curry chicken sauce. Cook for another 5 minutes. Let cool for 5 or 10 minutes (the lentils hold their heat).

This is a great tasting dish!!!
I am a firm believer that having a diet high in protein helps in so many ways. Either in appetite control or exercise recovery, for me I try to have at least 150g of protein a day. I typically start the day with a chocolate banana protein shake in the morning with my blueberries and oatmeal. The problem is that protein powder can be expensive.

Over the past three years, though, we have been getting our Wellments protein powder from Costco. With 25 grams of protein, it was a great way to start the morning. Each bag had 78 servings so it would last awhile.

Well as things typically go with Costco, they have changed their protein powder. They now sell 100% Whey Protein Powder from Cytomax (the makers of Muscle Milk). And to be honest, this is a nice change. The powder dissolves very nicely. There is no chemical taste and has a very smooth texture. The powder has 27g of protein and has less cholesterol. While it costs about $4 more a bag than the previous powder, it does have the 78 servings and tastes great!!!

This is how I make my shakes. In a blender put:

1.5 cups non-fat milk
1 banana
3 cubes Ice

Blend until banana is liquefied, add one scoop powder. When added to the non-fat milk, there are 41 grams of protein in this shake.

Tonight we had an awesome dish. We love enchiladas; however, sometimes we just want the flavor without all the hassle. This dinner is like having chicken enchiladas without the tortillas. Here is the recipe.

Ingredients:

2 Boneless Skinless Chicken Breasts
1 can green enchilada sauce
1 can red enchilada sauce
1 cup total sliced green, yellow, and red peppers
green onion to taste
cilantro - to taste
two slices of extra sharp cheddar

Place the chicken in a deep pan. Combine the green and red enchilada sauce and pour over the chicken. Cook at medium high heat for 20 minutes. Add the peppers and cilantro. Cook an additional 5 minutes. Top the chicken breasts with sliced sharp cheddar and green onion. Let cool for 5 minutes. The cheese will melt making a nice creamy sauce.

For a heartier sauce, include black beans.

Enjoy!!!

So after running the Surf City Half Marathon, we decided to have diner at one of our favorite Anahiem Mexican food restaurants, Casa Gamino. Located 1228 S. Brookhurst St., cross-street W. Ball, it has become one of those can't miss restaurants everytime we are in the area. What is even better, it is only a couple of miles from Disneyland!!!

Picture found at OCweekly.com

This was on Superbowl Sunday, so the restaurant was pretty empty. That was ok, since the service was excellent as usual and we got to watch half-time with diner.

Normally I pick either the pork or beef chimichanga; which is big and very good. However, this time I decided to have the carnitas and wasn't disappointed. They were full of flavor and properly prepared.

Beth had the awesome nachos. The kids were for some reason not into Mexican food this trip, so they had burger and fries.

In the past we have had the humongus burritos which again are very good.

If you are ever visiting the area, going to Disneyland, or just visiting Southern California, this place is worth the trip.

So on a recent trip to Anaheim, we decided to try out a restaurant we saw on Triple D (Diners, Drive-ins, and Dives). Being close to where we were staying and needing to carb load before the Surf City Half Marathon, we thought that it was worth a visit.

The decor is full of picture memorabilia, with a huge picture of Guy Fieri. Mama Cozza's is your typical classic Italian restaurant, down to the bread sticks at the table.

The service was excellent. Our server took our order as well as was very helpful in making selections with our younger kids. Mama Cozza's does not have a children's menu, so our server suggested we order two sides of pasta and one meatball, which was huge.

Mama Cozza's makes it the fifth restaurant we have eaten at that has been featured on the show. I had the minestrone soup followed by spaghetti and sausage.

The portions were definitely huge; however, the food was just OK. The pasta in both the soup and spaghetti was far from al dente. The sauce was basic tomato sauce with very little flavor. The sausage was good though and filling.

Beth had the Chicken Fettuccine Alfredo. While it was extremely rich and thick, it lacked flavor. That said, the portion size was again huge. Emma had the meatball pizza, which was great and satisfying.

Overall it was a good but not great restaurant. We will probably stick to our favorites in the area, like Casa Gamino, which is surprisingly next door.

So you can tell in the last couple of recipes we are in a bit of a baking mood. Well, we also want to do it smart. So this recipe is low in fat (the chocolate chips, 1 tablespoon oil, and 1 egg) and is pretty tasty.

So I have taken the opportunity to perfect a pumpkin pie recipe. What I like about this recipe is that, besides the crust, is pretty low fat and makes perfect use of the pumpkins. So now anytime there are pumpkins at the store, we get two or three.

While making the pumpkin puree takes the longest to prepare, the recipe is rather simple. It is not overly sweet and has the full rich flavor of the pumpkin.

2 Tablespoons flour

2 Frozen Pie Crust shells (the cheating part)

To make the pumpkin puree, do the following:

Cut pumpkin in half and remove seeds. Place cut side down on a cookie sheet lined with lightly oiled aluminum foil. Bake at 325 degrees for 30 to 40 minutes, or until the flesh is tender when poked with a fork. Cool until just warm. Scrape the pumpkin flesh from the peel. Either mash, or puree in small batches in a blender.

A medium pumpkin should give you about eight cups of pumpkin puree. You will use 4 cups. The remaining 4 cups can be frozen, or used in other ways. We use the pumpkin puree in other dishes, so we save the extra for this or other pumpkin pies.

Increase oven temperature to 450 degrees F (230 degrees C.)

Set out the pie shells to defrost.

In a large bowl, slightly beat the four eggs. Add the brown sugar, white sugar, salt, pumpkin spice, cinnamon, and flour. Stir until completly mixed. Stir in the 4 cups of pumpkin puree until smooth.

Pour in pumpkin mixture evenly into 2 pie shells. Place a strip of aluminum foil around the edge of the crust to prevent over browning.

Bake 10 minutes at 450 degrees, then reduce the oven temperature to 350 degrees. Bake an additional 40 to 50 minutes, or until a toothpick inserted near the center comes out clean. Remove the strip of foil about 20 minutes before the pie is done so that the edge of the crust will be a light golden brown. Cool pies. Place in refrigerator.

This is a very tasty, extremely healthy coffee cake. I love baking, but typically cannot find recipes that are this simple and oh, so good. I just had to share this one.

Keep in mind, you can substitute the eggs with egg whites, change out different fruit and berries, change out the walnuts for other nuts, or no nuts at all. It is a very versatile recipe to work from.

You can find this recipe here.
Please try it out, it is so very good. Tell me what you think.

So the key question is what do you do with them? Do you only use the juice? What do you do with the seeds? Can you do anything with the rind? Can you do anything with them?

So I am introducing a new feature to this blog... the ingredient challenge. The rules are simple, you must come up with a recipe using pomegranate. Extra credit is given to the recipe made entirely of items in your pantry.

Please post your recipe in the comments. Once we have enough recipes, I will post a poll to see which one everyone likes.
So what do you do when you have chicken, Trader Joe's Yellow Curry sauce, and garbanzo beans? Throw in spinach and you have an excellent curry dish.

This is a crock pot dish and is excellent with either a flat bread or with brown rice.

Ingredients:

3 boneless skinless chicken breasts
1 can chicken broth
1 can garbanzo beans (chick peas)
1 bottle yellow curry sauce
1 box of frozen spinach

In a crock pot, place the chicken breasts, chicken broth, curry sauce, and frozen spinach. Cook at the eight hour setting. After cooking for 5 hours, shred the chicken and place back in sauce, add the garbanzo beans. Cook the remaining 3 hours.

So we got our won ton wrappers, spring roll wrappers, and lumpia wrappers. They were in the frozen food section. Make sure you check the nutritional value. The wrappers we got were 27 calories a piece with 0 fat. There were others though that were as high as 65 calories a piece and high in fat.

The spring roll and won ton wrappers come in a packet that looks like American cheese.

We also got our rice paper for our steamed spring rolls.

This is the recipe we used the other night. They are definitely a light spring roll:

Ingredients for the filler:

2 boneless skinless chicken breasts
1 bunch cilantro
1 onion
1 tablespoon lime juice
1 tablespoon lemon juice
garlic salt to taste

To make the filler, dice the chicken into cubes. Dice the cilantro and onion. In a pan, cook all of the ingredients together until done.

Then place the ingredients in a food processor. You will want to grind the ingredients down, almost to the consistency of hamburger.

Ingredients for the Spring Rolls:

Spring roll wrappers
1/4 cup Extra Virgin Olive Oil

We found that you will want to fill your wrappers first before heating the oil. This process goes rather fast. Place a tablespoon of filler on a wrapper. Then wrap. Place on a plate. You should have about 20 to 25 spring rolls.

Once you are done, heat the olive oil on medium high heat. Olive oil has a low burn temperature, so if it begins to smoke, it is off course too high. Not high enough and the spring roll will absorb the oil. Place the spring rolls in the pan, turning about 1 minute. The wrapper should be golden brown. Place on paper towel to remove excess oil.

Plate and serve. We normally have a chillie sauce we get at Trader Joe's to dip in.

Black Bean Coconut Soup

OK, so this probably sounds like an odd recipe, but it tastes SO good. Basically it is a play on a Thai Tom Kha soup. We didn't have any lemon grass but we had some coconut milk sitting around just begging to be used. So this is the recipe.

2 Boneless skinless Chicken Breasts
1 Can Light Coconut Milk
1 Can Pineapple Chunks
1 Can Black Beans

1 Cup mushrooms
Chopped green onion to taste.
Chopped cilantro to taste
1 Table spoon Olive oil

Cut up chicken and cook to done. In same pan, add the ingredients and simmer. Cook for 15 to 20 minutes.

OK, so this was definitely a night before grocery shopping recipe. But it really tastes good. When you look at the ingredients you are going to say "huh?" If you like Indian or Thai food, you will probably really like this like we do.

Ingredients:

1 lb. ground turkey (like I said, this is a bit different)
1 large or 2 medium sweet potatoes
1 box of frozen spinach
2 cups Trader Joe's yellow curry (or the Thai curry if you prefer)

Defrost the spinach. Chop the sweet potatoes into bite size chunk, place in boiling water and let cook for 10 minutes. Brown the ground turkey. Combine the spinach with the ground turkey, add the curry, let simmer. Drain and add the sweet potatoes. Continue to simmer for a additional 5 minutes, stirring occasionally.

The flavor is pretty amazing, you really need to try this.

So it has been awhile since I posted; however, Beth has come up with an excellent vegetable dish. We use a spicy dry rub to season; however you can choose anything to taste. It is a very light dish and is pretty simple too!

Ingredients:

2 cups cauliflower
1 cup baby carrots
1 crookneck squash, sliced
1 zucchini, sliced
1/4 cup extra virgin olive oil
Dry Rub for BBQ& Grill (we get ours from the Salt Lick, thank you Gordon's)

In a casserole dish, combine the vegetables with the olive oil and stir in the dry rub. Cook at 425-degrees for 30 minutes. Vegetables will slightly al dente but tastes very good.
By the way, we were introduced to the Salt Lick Dry Rub by our friends the Gordon's when they lived in Austin. This place has been featured on the Food Network on several shows and looks like an awesome place. I especially use the dry rub with the country style pork ribs (rub then BBQ sauce).

A couple of years back we decided we needed to get healthy. Healthy didn't mean a short term weight-loss goals or exercising so we could eat whatever we wanted. It meant making healthy choices both in food and activities.

So we have shifted from eating red meat to boneless skinless chicken, turkey, and pork. The problem we face that if you are not adaptable, it is easy to get board. Thus a further reason to experiment.

This another chicken recipe; however, with a different spin. To keep costs down, we typically get our chicken frozen at Costco or Safeway (when it is below $1.89 lb). You have less risk of food poisoning from frozen chicken, surprisingly, since the way the chicken is frozen kills much of the bacteria.

2 to 3 boneless skinless chicken breasts
2 cups Baby Bella mushrooms (Costco again)
1 cup snap peas

2 to 3 chopped garlic cloves
1 Tbsp diced fresh ginger

1/4 white wine
1 Tbsp soy sauce
1 Tbsp lime juice
1 Tbsp olive oil

Cut the chicken into cubes. Heat the olive oil at medium high heat, then add the garlic and fresh ginger. Then add the chicken. Cook thoroughly. Chicken should be slight browned.

Add the mushrooms and snap peas. Stir in the soy sauce, lime juice, and white wine. Continue stirring until all the liquid has either cooked into the food or evaporated.

Prep time 10 minutes, Cook time:10 minutes.
