Volvemos con una receta que ya tenía publicada en el blog, en el 2011 y que os traigo renovada. He ido probando distintas versiones hasta encontrar la que en casa se ha instaurado como definitiva y esta ya ha pasado a ser la LASAÑA en mayúsculas.&lt;br /&gt;

Aunque es una receta que requiere de bastante tiempo de elaboración, puesto que una buena boloñesa, elaborada como lo hacen los italianos debe cocer durante mucho tiempo para que la carne quede tierna, merece la pena pues el gusto que tiene poco tiene que ver con lo que en algunos locales denominan boloñesa y no deja de ser carne picada mezclada con un sofrito de tomate, muchas veces de bote.&lt;br /&gt;

Siempre podéis hacer el doble de cantidad de boloñesa (puesto que el tiempo de elaboración será el mismo y poco esfuerzo más os requerirá) y congelar esa mitad de más en porciones para utilizar en otras elaboraciones como espaguetis, berenjenas rellenas...&lt;br /&gt;

Creo que la lasaña es uno de los platos que todos adoramos desde pequeños, esta versión que os traigo es la italiana (no lleva ricotta, la versión con ricotta es una versión americanizada de la italiana).&lt;br /&gt;

Yo usé un molde de 36x26x7 cm y salen aproximadamente unas 10 porciones.&lt;br /&gt;

&lt;i&gt;Ragú de boloñesa:&lt;/i&gt;&lt;br /&gt;
1 c.s. de aceite de oliva&lt;br /&gt;
1 cebolla, cortada finamente&lt;br /&gt;
1 zanahoria mediama, pelada y cortada a cubos pequeños&lt;br /&gt;
1 tallo de apio, cortado a cubos pequeños&lt;br /&gt;
2 dientes de ajo, finamente picados&lt;br /&gt;
500 g de carne picada de cerdo&lt;br /&gt;
500 g de carne picada de ternera&lt;br /&gt;
800 g tomate triturado&lt;br /&gt;
3 c.s. de tomate concentrado&lt;br /&gt;
235 ml de vino negro&lt;br /&gt;
3 cubitos de caldo de carne&lt;br /&gt;
2 hojas de laurel secas&lt;br /&gt;
1/2 c.c. de tomillo seco&lt;br /&gt;
1/2 c.c. de orégano seco&lt;br /&gt;
2 c.c. de salsa Worcestershire&lt;br /&gt;
2 c.c. azúcar (sólo si es necesario, yo no utilicé)&lt;br /&gt;
Sal y pimienta negra&lt;br /&gt;
&lt;br /&gt;
&lt;i&gt;Bechamel de queso:&lt;/i&gt;&lt;br /&gt;
60 g de mantequilla&lt;br /&gt;
75 g de harina&lt;br /&gt;
1 litro de leche entera&lt;br /&gt;
110 g de parmesano rallado&lt;br /&gt;
Una pizca de nuez moscada&lt;br /&gt;
Sal y pimienta blanca&lt;br /&gt;
&lt;br /&gt;
&lt;i&gt;Lasaña:&lt;/i&gt;&lt;br /&gt;
250 g de placas de lasaña (unas 18)&lt;br /&gt;
150 g de mozzarella rallada&lt;br /&gt;
Albahaca para adornar&lt;br /&gt;
&lt;br /&gt;
Para hacer el ragú en una olla a fuego medio poner el ajo, la cebolla, el apio y la zanahoria y rehogar unos 10 minutos, hasta que este blando pero sin dorarse.&lt;br /&gt;
&lt;br /&gt;
Agregar las carnes y subir el fuego. Cocer mientras vamos rompiendo hasta que este dorada. Agregar el resto de ingredientes del ragú excepto el azúcar.&lt;br /&gt;
&lt;br /&gt;
Remover y ajustar el fuego, que hierva muy lentamente. Poner una tapa y dejar cocer 2 horas, removiendo de vez en cuando. Luego quitar la tapa y dejar cocer 30 minutos más. El ragú estará listo cuando la carne esté muy tierna y la salsa haya espesado y esté concentrada. Rectificar de sal y pimienta si es necesario, agregar el azúcar si está un poco ácido.&lt;br /&gt;
&lt;br /&gt;
Para hacer la bechamel en una olla grande a fuego bajo derretir la mantequilla. Agregar la harina y mezclar constantemente durante 1 minuto.&lt;br /&gt;
&lt;br /&gt;
Añadir un poco de leche sin dejar de remover con unas varillas para evitar grumos. Ir añadiendo la leche sin dejar de remover hasta que esté toda incorporada. Subir el fuego a media potencia e ir conociendo sin dejar de remover durante unos 8-10 minutos o hasta que la bechamel esté más espesa y nape la parte posterior de una cuchara.&lt;br /&gt;
&lt;br /&gt;
Sacar del fuego y agregar el queso, la nuez moscada, la sal y la pimienta, remover bien. Debe tener una consistencia espesa pero que se pueda echar en la fuente y repartirla bien para crear una capa. Si estuviera muy espesa agregar un poco de leche y remover.&lt;br /&gt;
&lt;br /&gt;
Precalentar el horno a 180ºC.&lt;br /&gt;
&lt;br /&gt;
Cocer las placas de lasaña.&lt;br /&gt;
&lt;br /&gt;
Usar una bandeja de horno (la mía era de 36 x 26 x 7 cm).&lt;br /&gt;
&lt;br /&gt;
Poner una pequeña capa de ragú en la base. Poner encima las placas de lasaña, rompiendo algunas si hace falta para rellenar todos los huecos. Poner otra capa de ragú, bien fina y encima una capa de bechamel. Cubrir con placas de lasaña, pero esta vez las colocaremos en sentido contrario (giro de 90ºC) así aguantará mejor la forma la lasaña. Repetir el proceso una vez más. Cubrir con el resto de bechamel.&lt;br /&gt;
&lt;br /&gt;
Espolvorear la mozzarella por encima y hornear durante unos 25 minutos o hasta que esté burbujeante y dorado.&lt;br /&gt;
&lt;br /&gt;
Sacar del horno y dejar reposar 5-10 minutos. Servir adornado de albahaca fresca.&lt;/blockquote&gt;

2 tsp Worcestershire sauce&lt;br /&gt;
2 tsp sugar (if needed)&lt;br /&gt;
Salt and black pepper&lt;br /&gt;
&lt;br /&gt;
&lt;i&gt;Cheese bechamel sauce:&lt;/i&gt;&lt;br /&gt;
60 g &amp;nbsp;butter&lt;br /&gt;
75 g flour&lt;br /&gt;
1 litre full-fat milk&lt;br /&gt;
110 g shredded parmesan cheese&lt;br /&gt;
Pinch of nutmeg&lt;br /&gt;
Salt and white pepper&lt;br /&gt;
&lt;br /&gt;
&lt;i&gt;Lasagna:&lt;/i&gt;&lt;br /&gt;
250 g dried lasagna sheets&lt;br /&gt;
150 g shredded mozzarella cheese&lt;br /&gt;
Fresh basil for garnish&lt;br /&gt;
&lt;br /&gt;
For the ragu heat oil in a large heavy based pot over medium heat. Add garlic, onion, celery and carrots. Cook for 10 minutes until softened but not browned.&lt;br /&gt;
&lt;br /&gt;
Add beef and pork and turn heat up. Cook breaking it up as you go until all the meat has turned brown. Add the rest of ragu ingredients except sugar.&lt;br /&gt;
&lt;br /&gt;
Stir then adjust the heat so it is bubbling very gently. Place the lid on and cook for 2 hours stirring every now and then, then remove the lid and simmer for 30 minutes. The ragu is ready when the meat is really tender and the sauce has thickened and is rich. Adjust salt and pepper and add sugar only if required.&lt;br /&gt;
&lt;br /&gt;
Fort the bechamel cheese sauce in a large saucepan melt butter over medium low heat. Add flour and mix constantly for 1 minute.&lt;br /&gt;
&lt;br /&gt;
Pour a little bit of the milk in, and mix as you go to incorporate it into the flour mixture. Add remaining milk without stopping whisking until all is incorporated and is lump free.&lt;br /&gt;
&lt;br /&gt;
Turn heat up to medium high and stir constantly for 8-10 minutes until sauce thickens. It should coat the back of a wooden spoon.&lt;br /&gt;
&lt;br /&gt;
Remove from the heat, add cheese, nutmeg, salt and pepper. Mix until the cheese is melted. The sauce should be thick but still easily pourable. If it&#39;s too thick add a splash of milk and mix well.&lt;br /&gt;
&lt;br /&gt;
Preheat oven to 180ºC.&lt;br /&gt;
&lt;br /&gt;
Cook lasagna sheets,&lt;br /&gt;
&lt;br /&gt;
Use a baking dish (mine was 36 x 26 x 7 cm).&lt;br /&gt;
&lt;br /&gt;
Smear a bit of ragu on the base, then cover with lasagna sheets. Tear sheets to fit.&lt;br /&gt;
&lt;br /&gt;
Spread over half of the ragu, the drizzle off a layer of bechamel sauce. Cover with more lasagna sheets (doing a 90º turn so it assembles better when cooked). Repeat the process and cover with bechamel sauce.&lt;br /&gt;
&lt;br /&gt;
Sprinkle with the shredded mozzarella cheese and bake for 25 minutes or until golden and bubbling.&lt;br /&gt;
&lt;br /&gt;
Stand for 5 to 10 minutes before cutting and serving. Garnish with fresh basil leaves.&lt;br /&gt;
&lt;br /&gt;

Cada vez voy intentando más recetas veganas como veis. Debo confesar que la remolacha no la probé desde hace poco y que decir, ojalá la hubiera probado antes porque me encanta. Como ya os comenté el año pasado, a un familiar nuestro le diagnosticaron celiaquía. Por eso, siempre que viene a casa intento preparar un menú para todos sin gluten. Así él puede disfrutar de la misma manera que lo hacemos el resto.&lt;br&gt;

Este año la cosa se presentaba más complicada. Quería hacerle un postre típico de nuestro país para las fechas navideñas, pero nunca había preparado ninguno sin gluten. Tenía claro que la harina iba a ser sustituida por harina Schär sin gluten.&lt;br&gt;

Un pastel de cumpleaños enormeeeeee. El día 16 de noviembre empezaba bien temprano, aunque iba a merecer mucho la pena. A las 5 de la mañana me recogían en mi casa para dirigirnos a San Sebastián. La ciudad, aunque con una temperatura bastante más baja que la de Barcelona, nos recibía con un sol espectacular que realzaba aun más los bonitos colores de su paisaje y edificios.&lt;br&gt;

Últimamente estoy incorporando desayunos más saludables a mi día a día. Ya sabemos desde hace tiempo que el desayuno es la parte más importante de cualquier comida del día, pues necesitamos que nos aporte la energía necesaria para afrontar la jornada que nos pueda esperar.&lt;br&gt;
