Interestingly enough the 3,200,000 tones of tea produced worldwide come from only one plant species, named &#8220;camellia sinensis.&#8221; But how a plant becomes a beverage? Tea is made by steeping processed leaves, buds, or twigs of the tea bush in hot water for a few minutes, a great variety of tea tastes, aromas and colors can excite even the more skeptical drinker. If you do like tea drinking, but simply never had the opportunity to learn more about it beyond the fact that you enjoy it, you should know that there are thousands of kinds of tea offered on today&#8217;s market. Shades in flavor derive from the region of cultivation and the method of processing the tea leaves. It is the processing techniques that produce the four simple tea categories are considered the art of tea making. In its most basic form, processing is the taking of the raw green leaves and deciding whether or not, and how much oxidation (or fermentation) should take place before drying them out. Oxidation is the reaction of the enzymes contained in tea leaves when they are broken, bruised or crushed.</p>
<p>The first category is that of black tea. Black tea is nothing more than the leaves of the camellia sinensis after being exposed to 8-24 hours of open air. After the leaves are picked up they are spread out to let the water they contain evaporate. You have probably witnessed it happening to a flower that is left without being watered. The foliage curls up and begins to dry. After this part of the process, the tea leaves are balled into rolls that encourage oxidization. When fully oxidized, the leaves turn into a rich black color. Tea producers then put the tea leaves into the final drying period before sorting and packaging them.</p>
<p>Oolong tea is another tea category and is considered to be the most difficult of the four types of teas to process. The best way to describe oolong tea is that it is somewhere in between green and black tea. This is because the leaves are only partially oxidized during the processing. As with black tea, the leaves are spread out to dry for 8-24 hours, but after that, they are tossed about in a basket in order to create a bruising and partial exposure to the air. The final step involves steaming the leaves, which neutralizes the enzymes in the tea and prevents further oxidization.</p>
<p>Green teas, like white teas, are closer to tasting like fresh leaves of grass that the other two tea categories. This type of tea is also lower in caffeine and has higher antioxidant properties. The whole process of creating green tea revolves around preventing oxidization from taking place in the leaves. Though the tea leaves are sometimes laid out to dry for a few hours, then, in order to neutralize the enzymes and prevent further oxidation, the leaves are steamed or pan fried. It is this very technique which results in the preservation of the enzymes which have recently become the focus of medical research. After steaming, the leaves are rolled up, still quite green in color.</p>
<p>Finally, white tea has recently become a popular item in the west as it is the least processed tea and thus tastes the most like fresh leaves or grass. White tea is made of the little buds of the tea plant. Again like green tea, white tea is steamed or pan fried to prevent any kind of oxidization, and great care is taken to avoid bruising or crushing the tea. The dried buds have a silver-like appearance because the tiny white hairs of new growth are still present.</p>

<p>CLASSIC FRIED CATFISH</p>
<p>3/4 cup yellow cornmeal</p>
<p>1/4 cup all-purpose flour</p>
<p>2 teaspoons salt</p>

<p>1/4 teaspoon garlic powder</p>
<p>4 U.S. Farm-Raised Catfish</p>
<p>fillets</p>
<p>Vegetable oil</p>
<p>For garnish: sliced tomato</p>

<p>Combine cornmeal, flour, salt, cayenne pepper and garlic powder. Coat farm-raised catfish with mixture, shaking off excess.</p>

Chef Curtis Stone is making his debut on American television, ambushing unsuspecting shoppers with an offer they simply can&#8217;t refuse. Each episode in the series called &#8220;Take Home Chef,&#8221; shown Fridays at 8:00 p.m. on TLC, begins with a covert Stone racing through a grocery store as he searches for the perfect culinary partner. Once he&#8217;s found one he turns on the charm, offering to accompany the shopper home and prepare a gourmet meal using the items in his or her shopping cart-plus a few savory extras.</p>
<p>Once participants seem willing to go along with this culinary adventure, they take Stone home and work with him in their own kitchens or out at the grill to create a delicious dinner. And, as Australians are known for &#8220;throwing another one on the barbee,&#8221; Chef Stone is likely to be sharing a lot of his grilling secrets from Down Under, while at the same time learning how to function in an average American kitchen.</p>
<p>Some of the grilling tips offered in &#8220;Take Home Chef&#8221; include:</p>
<p>• When cooking larger pieces of meat, like roasts, pile the coals on one side and place the food on the other. This allows for indirect cooking and reduces charring.</p>
<p>• Don&#8217;t use charcoal lighter fluid or briquettes that have added starter fluid built into them. This will leave an unpleasant taste in the smoke.</p>
<p>• Rubs are one of the best things you can use to add flavor to your meat. They are combinations of spices that seal in the flavor of the meat, form a tasty crust, enhance color and pull moisture from the air while drawing juices from inside the meat, causing the meat to marinate itself as it cooks.</p>
<p>Chef Curtis Stone started his culinary career at The Savoy Hotel, in his hometown of Melbourne, Australia at the age of 18. The European and British chefs he knew there taught him the importance of working abroad to increase one&#8217;s experience and skills. That&#8217;s why, once he&#8217;d qualified as a chef, he set off for Europe to experience Italy, France and Spain before finally arriving in London.</p>
<p>There, he was eventually promoted to be head chef at the critically acclaimed Quo Vadis, a London institution since 1926.</p>
<p>So what&#8217;s this new American TV show like for Chef Stone? &#8220;Cooking in someone else&#8217;s home can be absolutely anything; it can be fabulous or a complete disaster,&#8221; he says. &#8220;It&#8217;s the fear of the unknown that makes it so exciting.&#8221;</p>

<p>In a 5 quart mixing bowl place 2 pounds of cream cheese and 1 cup granulated sugar and mix on low speed until cream cheese is softened and smooth, place in bowl 8 ounces sour cream and continue mixing until well blended, at this time add 2 eggs, mix for 2 minutes then add 1 cup flour, 1/4 cup cocoa, and 3/4 cup heavy whipping cream, mix on second speed until smooth and creamy.</p>
<p>At this time your cheesecake mixture should be fluffy like ice cream as it comes out of the ice cream machine. Prepare your 10 inch x 2 inches spring form pan, in a large bowl place your graham cracker crumbs and 2 tablespoons sugar, and your melted butter or margarine, then with a wire whisk, whisk them together until well combined, brush onto the sides of your spring form pan a little softened butter so the crumbs have something to hold to, place the crumbs on the sides and bottom of the pan. Now you add slowly to the pan your cheesecake mix as not to disturb the crumbs too much, now you should have a full pan.</p>
<p>Preheat your oven to 275 degrease and not more, when your oven is hot place the cake in it and bake for 55 minutes then shut off the oven and let it in there for 3 hours, at the end of this time you should have the most beautiful cheesecake you ever seen, let the cake on the table for 1 1/2 hours then place it in the refrigerator for about 2-3 hours. Now remove it from the pan and enjoy. You can put a coconut pecan topping on it if you like.</p>

Now that wasn&#8217;t wine tasting but there are wine enthusiasts that can tell you the strain of grape, the area it was produced in and in some cases, the specific vineyard. What you say? You make your own wine and you consider yourself a wine enthusiast. But do you ferment your own grapes and look down on the people that use kits? Yes there are a few definitions of wine enthusiasts. You may even consider yourself a wine enthusiast if you go to lots of wine tasting events such as the Los Alto Arts and Wine Festival. There are many more events in wine regions all over the world. At these events, wine enthusiasts can go to taste the new offerings of both domestic and foreign wineries.</p>
<p>Imagine my Surprise</p>
<p>Before my wine enthusiast stage, I pictured wine tasting as a gathering of stuffy looking men with moustaches who would look at and smell the wine, take a sip and spit it out. I thought it was all quite stuffy and high-brow, something akin to polo. Another view of the wine enthusiast was the one portrayed in TV and movies, that of the cork-smelling, glass swirlers with a superiority attitude. I remember my wife asking me to go to a winery for tasting. I relented after a few words and resigned myself to the fact that I was going to &#8220;taste&#8221; wine. Happily I went and discovered the joy of wine tasting. I had no idea it would be that much fun. My God, they weren’t all stuffy. Most of them were good people who had a love of wine in common.</p>
<p>A Changing of the Times</p>
<p>In the past, the public generally took their wine choices from so-called wine experts. That has changed because of more wine tasting opportunities and the fact that most community education programs include wine education classes. This has taught the general public to judge the wine on its own merits, after all each person has individual taste.</p>
<p>Here Taste This</p>
<p>There are lots of conversations that go on while wine tasting. Wine enthusiasts are generally very social animals who love nothing better than to discuss the merits of the favorite wine of the day. They take great joy in introducing new offerings to complete strangers within the wine tasting room. They discuss different vineyards and wineries. The may steadfastly claim their love for a certain blend but they are open to at least trying new wines. Back in the day, wine enthusiasts were depicted as unrelenting about trying new blends.</p>
<p>So what&#8217;s in it for me?</p>
<p>These days there are advantages to being a wine enthusiast. People get paid well as tasters. Another more likely source of benefit to the wine enthusiast is in educational forums, teaching other people what to look for in a good wine. With this multi billion dollar industry, there are lots of spin-offs. Wine accessories are a huge business and growing by leaps and bounds.</p>

One of them is Bacillus cereus. While not usually life threatening, this common form of food poisoning can cause diarrhea, nausea, cramps and vomiting. Symptoms usually appear 8-16 hours after exposure to the bacteria, and can disrupt your life for a few days.</p>
<p>Bacillus cereus is usually caused by improper cooking. The problem can be exacerbated by improper refrigeration, which just allows the spores to further grow. Cooked rice that is improperly refrigerated is one of the most common carriers of bacillus cereus.</p>
<p>However, researchers are learning that there may be ways to protect our bodies from the ravages of such bacteria. It appears that tea’s catechins may protect our bodies from bacteria like bacillus cereus. Tea has far more anti-microbial properties than previously realized.</p>
<p>One particular study reported by the UK Tea Council evaluated the anti-microbial activity of seven green tea catechins and four black tea theaflavins, both important anti-oxidants. They also evaluated actual infusions of 36 commercial black, white, green and oolong teas, as well as herbal teas.</p>
<p>These anti-oxidants and infusions were evaluated to determine their anti-microbial activity against bacillus cereus. This study concluded that all eleven of the anti-oxidants evaluated contained anti-microbial properties.*</p>
<p>In fact, most of the compounds were more active than medicinal antibiotics such as tetracycline or vancomycin at comparable concentrations. The study also concluded that the brewed infusions of true tea that contained these catechins and theaflavins also had anti-microbial properties as well, particularly freshly brewed infusions. However, herbal brews did not have anti-microbial properties.</p>
<p>So, just what does this mean to our real life? Well, it means that drinking tea can protect your body against certain harmful bacteria like bacillus cereus. If we consume tea on a regular basis, we may be able to ward off these harmful bacteria before they wreak havoc on our bodies.</p>
<p>The presence of the anti-oxidants in tea may be enough to keep us from getting sick from these bacteria, or at least be sufficient to lessen their effects.</p>
<p>This is likely just the tip of the iceberg. We already know that green tea prevents many serious illnesses, such as heart disease, Alzheimer’s disease and some forms of cancer.</p>
<p>And, if we’ve determined that it can kill bacteria such as bacillus cereus, then there’s certainly potential that it can act as an anti-biotic against other harmful bacteria, as well.</p>
<p>Certainly it has been determined from this along with many other studies that tea is an important part of living a healthy life. In Japan, the medical community recognizes green tea as a known cancer preventative, and it’s likely that medical communities in other countries will soon follow suit.</p>
<p>This information, combined with the other studies that have shown green tea to be effective in preventing heart disease should be enough to convince us that drinking a few cups of green tea each day is a simple way to protect our health.</p>
<p>But, why is does it seem that so many of the positive findings are associated with green tea, and not black tea too? Well, it stems from the way the tea is processed. While the study noted here on the anti-microbial activity of tea didn’t find a difference between the two, in most health studies green tea beats black tea every time.</p>
<p>Black tea is fermented during processing; green and white teas are not. The fermentation process changes the anti-oxidants in the tea from their natural, original state, into a slightly different compound.</p>
<p>While black tea is still healthy, and still contains important anti-oxidants, the more natural anti-oxidants in green and white tea are far more powerful.</p>
<p>The research done so far has mostly been performed on green tea because it is much more widely consumed. However, it is likely that researchers would find that white tea is just as healthful, since its anti-oxidants are preserved in their natural state, just like those in green tea.</p>
<p>Green tea first gained notice as a health preserver because of the much lower incidence of heart disease and cancer in Asian countries, where green tea is a staple. Scientists decided to back up this anecdotal evidence with research and the findings have been astonishing.</p>
<p>In addition to evidence suggesting that green tea protects our health, there has also been evidence to suggest that green tea may even be effective as an alternative cancer treatment. Some studies have shown that green tea slows the growth of certain cancers.</p>
<p>Other studies have shown that administering green tea along with chemotherapy makes the chemotherapy more effective than when it is administered alone.</p>
<p>So, it appears that green tea may be one of the most promising natural health products we can consume. As time goes on, and more studies are conducted on human subjects, we’ll learn more definitive information about this wonder beverage.</p>
<p>It’s amazing to think that something many of us have been drinking all our lives just for the taste could hold so much power to protect our health.</p>

Some parents respond saying their kids have no problem eating fruits and vegetables and like them, while others do look for ways to help their kids get the nutrition they need. The question has been raised whether or not societal stigmas are to blame for this problem of unhealthy eating by kids. Perhaps kids are just meeting expectations, or trying to fit in, by not &#8220;liking&#8221; fruits or vegetables. If a parent expects that a kid might prefer a cookie to an apple, and has one on hand, it&#8217;s likely the kid may choose the cookie &#8211; because they are expected to. While man-made products such as cupcakes and cookies have been loaded with sugar may be appeasing to kids, other parents suggest that the media is to blame for marketing such snack foods to kids more often than healthy choices.</p>
<p>Well, kid-friendly brands like Nickelodeon and Disney have been fighting back, trying to put their famous cartoon characters on healthier foods like fruits and vegetables instead. Nickelodeon, owned by Viacom, just announced they joined the &#8220;help kids make healthy choices&#8221; bandwagon by restricting its cartoon characters from being found on any sort of junk food, according Reuters article. Nickelodeon characters such as Sponge Bob Square Pants, Jimmy Neutron or the Rugrats will only be used as marketing tools for foods that meet their advised dietary guidelines. Sponge Bob Square Pants now circulates the vegetable aisles instead of snack aisles, as he has been found on snack packs of baby carrots, and other vegetables. However, Nickelodeon still plans to license their characters to be used on holiday treats or snacks like Valentine&#8217;s Day chocolates, for example.</p>
<p>Whereas Nickelodeon is restricting its licensing of characters, Disney has released its own whole line of Disney Garden products that include a number of bagged fruits and vegetables like cut up apple slices and even cauliflower. Disney Garden hopes to help kids make healthier choices by choosing their fruits and vegetables. They hope to make the lives of parents easier by creating some incentive to want these fruits and vegetables with their characters. Their Web site offers recipe ideas for kids, as well as hints and tips for parents to help their kids make healthier choices.</p>
<p>But, who benefits more from these relatively new marketing ploys? Have parents fallen to a trap where they buy these products to unsuccessfully appeal to their kids, or have kids actually now been eating their vegetables? In other words, is this &#8220;humanitarian&#8221; effort really just putting more money in the pockets of Viacom and Disney, or is it actually helping kids to become healthier? Maybe a little bit of both.</p>
<p>Food blogger Kate Hopkins of Accidental Hedonist believes these new marketing concepts have kept public school systems out of the know. Kids are surrounded by food choices while at school, and the school system has a large bearing on what food choices are the right ones to make, as well as what foods show up in vending machines, etc. Questions such as these raise further issues as to what&#8217;s behind these new marketing schemes.</p>
<p>All in all, these efforts can&#8217;t necessarily hurt much, unless you&#8217;re an adult forced to eat Sponge Bob Square Pants carrots instead of a regular old bag of carrots, like me <img src='http://www.gindicafe.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
