Tomatoes, ricotta, grilled bread

2012-05-10T05:00:00.000-07:00

Alexandra's Kitchen shared this meal and it's officially on my "to create" list. I bet the ricotta could be replaced with fresh mozzarella or burrata.

Tomato Salad with Fresh Ricotta and Grilled Bread
Serves 1

A couple of tomatoes
extra-virgin olive oil
balsamic vinegar
kosher salt
fresh basil
homemade ricotta
a loaf of bread suitable for grilling

1. Cut tomatoes into nice chunks and place in a bowl. Season with salt. Drizzle with olive oil and balsamic. Toss with fresh basil. Place in a bowl with a nice dollop of fresh ricotta on the side.

2. Heat a grill or grill pan. Brush with olive oil. Grill bread until nice and toasted. Serve along side your salad and cheese.

Creamy avocado, arugula, broccoli soup

2012-04-20T05:35:00.000-07:00

I love fresh meals. I came across this recipe on Honest Fare. It looks amazing and easy to create.

Here it is:

YOU NEED:

1/2 haas avocado
About 8-10 decent sized broccoli clusters = to almost 1 full head (stems kept at least an inch long)
1/3 onion of choice
2 hand fulls arugula
1 Tablespoon olive oil
Salt (about 1 teaspoon) or to taste

1 Tablespoon apple cider vinegar
Red pepper flakes (about 1/4 teaspoon) or to taste
Drizzle of honey or agave
Juice from half a lemon
1 inch minced ginger root
1 cup water

DIRECTIONS

Lightly steam the broccoli. Remove from heat when bright green. Saute onions in olive oil until just soft.
Place cooked broc and onions and all the other ingredients in a blender, food processor or use hand emersion blender. Add 1/2 cup water and blend. Keep adding more water until reachers desired consistency. Add any additional salt to taste.
Enjoy hot or cold!

We're flirting with spring right now in San Francisco. Not that it's ever "really warm" here, but we can pretend, right?

Scarves are an essential. They add the perfect finishing touch to any outfit. And, they're perfect when the sun goes down for a little extra warmth. Here's a great selection I found via Kelly Market all available by Virginia Johnson.

With Style & Grace shared this unbelievable sandwich. Why did I not think of this sooner?

Easy, here's what you do:

1. Toast your favorite type of toast, set aside.
2. Mush up avocado topped with a lil' salt and pepper.
3. Slice up a tomato or two.
4. Fry (or poach) an egg and place on top.
5. Enjoy.
