<p><strong>Breakfasts</strong></p>

<p>These were filled with cottage cheese blended with honey and lemon.</p>

<p>This is seriously one of my most favorite breakfasts EVER!</p>

<p><strong>Dinners</strong></p>
<p>Chicken with creamy blackberry sauce.  This is a new recipe I came up with and still needs a few tweaks.  I&#8217;m really excited to share it when I&#8217;m done.  SO GOOD.</p>

<p>Last week a friend was selling fresh sea bass.  Seriously, like right off the boat.  We grilled it and topped it with mango salsa.</p>

<p>4th of July dinner was my favorite chicken:  chicken grilled in a marinade of olive oil, honey, mint, and citrus.</p>
<p>I also had grilled summer squash, grilled bread topped with <a href="http://www.girl-heroes.com/2010/03/09/perfect-pesto/" target="_blank">my favorite pesto</a> again.  This <a href="http://www.girl-heroes.com/2010/03/09/perfect-pesto/" target="_blank">pesto</a> makes anything good.</p>

<p>We love kebabs around here.  This one was even simpler just olive oil, lemon, and garlic salt.  The super <a href="http://www.girl-heroes.com/2010/06/30/summer-salad-series/" target="_blank">fresh veggies from the CSA</a> made the meal!</p>

<p>Overall I&#8217;m happy with my food choices.  I feel very balanced even while tracking calories which is nice.  The scale could be moving a bit faster&#8230;of course&#8230;but it is moving.  <a href="http://www.girl-heroes.com/2010/07/07/crafts-service-workout/" target="_blank">Since I&#8217;m out with my husband shooting the videos</a> and we&#8217;ve gone out to eat with his mom the last two night, I&#8217;ve had way more sodium and less water  than normal so it&#8217;s hard to tell. Once I get back to my regular food routine ,I think it will be down lower than I expect.  Normally, I&#8217;m NOT concerned this much with the scale but with my certification in less than 8 weeks away I need to stay FOCUSED on reaching that goal.</p>

<p>It feels good to be eating more vegetables.  I&#8217;m really trying to make 50%+ of my food veggies but it can be hard especially on busy days.  I just not crazy about &#8220;grab and go&#8221; types of veggies like carrot sticks but it&#8217;s worth the effort.</p>

<p>After breakfast we did a bit of school before rushing out the door to deliver groceries to an elderly lady.  We volunteer for an organization that delivers groceries to homebound elderly.</p>

<p>I wanted to pack our lunch but didn&#8217;t have time so I we decided to stop by Subway for the SECOND time this week.  I know.  #FAIL  ;-)</p>
<p>I ordered my favorite.  The exact same sandwich I had on <a href="http://girlheroeats.com/2010/06/21/fathers-day/" target="_blank">Sunday</a>.</p>

<p>I pop my popcorn on the stove using coconut oil and sea salt.</p>
<p>I warm 1/4 cup of coconut oil over high heat.<br />
Add sea salt and 1 cup of organic kernels and cook over high heat until popping slows down.<br />
I shake the pan continuously while I pop.  It sounds like a 9.9 earthquake is happening right under my house.</p>
<p>I like Nutiva coconut oil.</p>

<p>Father&#8217;s Day was a bit rushed this morning because I had forgotten that it was my morning to serve as an usher at my church.  (And you thought ushers were only old men in polyester suits.)  Still I wanted to make Brent something special for Father&#8217;s day since he is a special dad so I quickly made him some french toast.  I made it special by adding boysenberry jam and cream cheese, like a peanut butter and jelly, in the center before cooking.  It was SO GOOD.</p>

<p>Since we had an 1.5 hour drive to his parent&#8217;s house we stopped at Subway.  I ordered my favorite: turkey, on whole wheat, no cheese or mayo, spinach, onions, green peppers, lettue, tomato, LOTS of pepperoncinis, LOTS of olives, LOTS of pickles, and a little vinegar and oil.   YUM!</p>

<p>So journaling my food has turned out to be a bit more difficult than I thought.  I&#8217;ve been tracking my calories almost religiously through The Daily Plate but I can&#8217;t seem to remember to snap a picture of my food before it&#8217;s half way gone.  Since I bought my <a href="http://www.girl-heroes.com/2010/05/11/fast-as-a-slug/" target="_blank">Bodybugg</a> I&#8217;ve lost about 4 pounds by simply watching my calories and moving more.   Funny how that works.</p>

<p>It was a pretty light day over all and even thought the bean salad  has veggies it wasn&#8217;t close to my ideal amount.  I&#8217;m one of those people who enjoy eating the same thing for a few meals and then switch it up.  It&#8217;s just easier in terms of cooking and I hate to throw out food.</p>
