I like to serve it both ways, either chilled or hot from the oven. Ritz Crackers are the perfect vessel to enjoy the creamy dip! I can't always find fresh crab, so unfortunately I had to use canned crab meat here. The trick is to soak the crab meat in ice water for 10 minutes. Then, pat it dry with paper towels. This makes such a difference! Otherwise, use fresh crab meat if you can!

Ingredients:

8 ounce package cream cheese, room temperature

<span style="box-sizing: border-box; I love how they put everything in mason jars and on ice to keep things cold. There were so many options. You could really make your favorite bloody mary! The bacon was definitely the best part! It was candied smoked bacon and was absolutely amazing!!! Some other things to put on your bloody mary bar: steak sauce, variety of hot sauces, horseradish (I always put extra of this), black pepper, lemon and lime wedges, variety of olives, shrimp, pepperoncini peppers, pickles, cheese, and celery! Your guests can have fun putting together their own cocktail.

I put together a bumble bee themed diaper cake. I have searched all my life for the perfect chocolate chip cookie
recipe. I think I finally found it! It has the right amount of saltiness
and sweetness. It is so soft and chewy. It is absolutely perfect!

I
am usually not a baker - it is usually to precise and specific for me.
I am also not a dessert person, but for whatever reason, chocolate chip
cookies are my favorite! Especially when they come straight out of the
oven! You can't get any better than that!

Ingredients:

2 sticks of unsalted butter, room temperature

3/4 cup packed light brown sugar

1/2 cup granulated sugar

1 large egg

2 teaspoons vanilla extract

1 3/4 cups all-purpose flour

2 tbsp non fat milk powder

1 teaspoon kosher salt

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1 (12 oz) bag of semisweet chocolate chips

Recipe:

Preheat the oven to 375 degrees F.

Mix together the butter, brown sugar and granulated sugar in a bowl using a hand mixer. Add the egg and vanilla and mix until combined.

Add the flour, milk powder, salt, baking powder and baking soda to the bowl and mix until combined.

Finally, mix in the chocolate chips.

Scoop out dough using a spoon or ice cream scoop (which helps to keep the cookies uniform in size) on a lined baking sheet. Bake for 11 minutes.

This is by far the best banana cream pudding you will ever have! It is so incredibly delicious. My recipe is based off of Paula Deen's 'Not Yo' Mama's Banana Cream Pudding.' I have made some changes here and there.

Please keep in mind that the bananas will go bad if they are exposed to air for too long! You can make this ahead of time, but I would recommend enjoying the banana cream pie within 12 to 24 hours. Otherwise, the bananas will get too brown.

Ingredients

1 (8-oz) carton of heavy whipping cream

2 tbsp of sugar

1 (14-oz) can sweetened condensed milk

1 (8-oz) package cream cheese, softened

2 cups milk

1 (5-oz) box instant vanilla pudding mix

8-10 bananas, sliced

3 bags chessmen cookies

Recipe

In your first bowl, combine the cream cheese and condensed milk together until smooth using a handheld electric mixer.

In a second bowl, mix together the heavy whipping cream and sugar until the cream reaches stiff peaks.

In a third bowl, combine the milk and pudding mix and blend well. Please do not follow the pudding recipe on the box of the instant pudding mix (only add 2 cups of milk).

Fold the majority of your whipped cream into the cream cheese mixture. Save about 1/4 of the whipped cream on the side to fix any "oops" that happen along the way.

Then, add the pudding mixture to the whipped cream/cream cheese and stir until well blended. This makes your custard.

Line the bottom of a baking dish or trifle dish with 1 bag of cookies. Then, layer 1/2 of the custard on top. Then, a layer of bananas. Then, a thin layer of whipped cream (if there is any remaining left). Layer the dish with cookies, bananas, then custard. Finally, place a finishing layer of cookies on top.

Refrigerate until ready to serve.

This is my go-to party appetizer, because it is super easy to make and always a crowd pleaser. I discovered it once at a friend's party, and I have been addicted ever since.

You probably recognize this appetizer because I've posted it on my blog before. I wasn't thrilled about how the pictures in the original post turned up, so I decided to do an update post. I love this appetizer so much that I had to do it justice with better pics!

Slice each date on top, stuff with as much blue cheese as it can hold, wrap in bacon, and secure with a tooth pick. Repeat with the remaining dates. Simple right?

Place on a baking sheet and bake for about 15 minutes, or until bacon is crispy. Usually i also like to turn the dates halfway through so that they crisp up evenly on all sides.

Serve warm.

Yesterday we had a SNOW DAY!! I can't believe it's the middle of March and I have 2 feet of snow outside my door. I love being snowed it because I dedicate my time to recipe testing, watching movies, and eating delicious homemade food.

This is a copy cat recipe of one my favorite breakfast spots called Sunset Cafe. I love going to Sunset Cafe but some days it is absolutely impossible to get in. Lines are usually out the door, and during the winter, standing outside is usually not an option. So, I decided to recreate the dish myself. It wasn't hard to make as the ingredients are extremely simple! Not only is this dish flavorful but there are so many beautiful colors on the plate. It definitely brightens your day!!

Note: The onions are pickled overnight so you'll want to prep this ahead of time.

Serving: 4 people
Ingredients:

8 Slices of Toast

2-3 Avocados

1/2 of a Red Onion

2 Limes

Goat Cheese, crumbled

1 Jalapeno, sliced

4 Eggs

Recipe:

Overnight, you will want to pickle your red onions. This is what gives the onions a bright pink color. Thinly slice the red onion and squeeze the lime juice of two limes over the onions. Let it sit overnight (or for at least 4-5 hours).

Toast your bread and set aside.

Mash together the avocados to achieve a smooth consistency. Add a tad of salt and pepper.

Cook your eggs to your preference. I love over easy or poached so you can get that glorious runny yolk.

Assemble your toast by spreading the avocado onto the toast, then place your egg in the middle.

Finally, add your sliced jalapenos, crumbled goat cheese, and picked red onions.

It's the combination of the buttery bread, salty corned beef, crunchy sauerkraut, creamy dressing, and melted swiss cheese that gets me every time. Since I can always get the perfect reuben sandwich at my local irish pub, I've never tried to make it at home before. In honor of Saint Patrick's Day this year though, I decided to give it a try. It turned out even better than I expected. The hardest part about this recipe is waiting all day for it to cook in the crockpot! Patience is certainly not one of my best qualities.

I wish the picture showed a little bit more of the corned beef because it is definitely the star of the sandwich. I decided to cook it in the slow cooker so that the corned beef would be super tender. The recipe below is for a classic reuben sandwich. You'll see pickled onions in the picture too because I LOVE pickled onions and I had some extra in the fridge. If you'd like to add some pickled onions to your reuben as well, squeeze lime juice on top of thinly sliced red onions, and let it sit for a few hours ,or overnight if you can, in the fridge. Add the onions in place of the sauerkraut, or with the sauerkraut like I did!
I love this slow cooker recipe because you can make so many fun dishes with the extra corned beef like irish nachos, a reuben dip, or even reuben potato skins! There are so many options! Below I included the slow cooker corned beef recipe along with how to make the classic reuben sandwich.

Slow Cooker Corned Beef
Ingredients

2 corned beef briskets with spice packets (about 3 pounds each)

1/8 cup of black peppercorns

7 garlic cloves, peeled

2 bay leaves

2 beers

water

Recipe

Place beef briskets in a slow cooker with one of the spice packets (discard the other one), black peppercorns, garlic cloves, and bay leaves.

Cover brisket with beer. If beer does not fully cover the top of the briskets, then add water until liquid is covering briskets.

Cook on low for 8 hours.

Reuben

Ingredients

corned beef from slow cooker recipe above

sauerkraut (I found mine by the pickles in the deli section of my grocery store)

sliced swiss cheese

sliced marble rye bread

thousand island dressing

butter

Recipe

Once beef briskets are cooked, take the briskets out of slow cooker and let it rest on a cutting board.

Discard the liquid in the slow cooker and cut out any excess fat from brisket.

Slice the corned beef.

Take two slices of bread. On each slice of bread, butter one side.

Place one slice of bread butter side down in a skillet on medium heat.

On top of the slice of bread add one slice of swiss cheese, then sliced corned beef, then sauerkraut, then thousand island dressing.

Top with a second slice of swiss cheese, then the second slice of bread butter side up.

Cook for a couple minutes letting the bread on the bottom to become golden brown, then flip.

Cook for another minute or two until both sides are golden brown and cheese is melted.

I absolutely love this dip! It's a cheesy cream cheese dip, but still tastes fresh since it is topped with salsa, lettuce, and tomatoes. Everyone always seems to love it.

It is definitely one of my favorite party appetizers to make. It's fast and easy, and I can throw it together in no time. I also love that it is a cold dip. Since I don't have to worry about baking it, I can transport it easily to someone else's house. It's also great to make if I know my oven will be crowded with other things.

You can top the cream cheese mixture with any of your favorite taco toppings. I usually stick with mild salsa, cheddar cheese, tomatoes, and lettuce since most people tend to approve of those toppings. If you and your crowd are a fan of olives, scallions, and jalopenos, however, then I would add them too! I have a friend who hates onions and a boyfriend who hates spicy things so I always have to keep them in mind! If it was up to me, I'd be using jalopenos, spicy salsa, and hot sauce on top! I like thinks spicy, but since most people don't, I usually keep this dip as mild as possible. Don't be afraid to customize the dip based on what you love. Hope you enjoy!!
Here is a recipe in honor of National Cheeseburger Day. Yes, there is such a day and yes, it is in fact today! I have no idea who makes up these days, but I'm not complaining because I get to share this amazing recipe with you. You might be thinking that there is no way pickles on a pizza would taste good. In fact, it is probably one of the most amazing combos ever. And of course, I had to turn it up a notch by adding bacon and making it a BACON cheeseburger pizza. So delicious!!
Summer completely flashed before my eyes, and I'm trying to get all my last summer recipes in before the cold weather hits. I'm not sure if you got the memo, but today was in fact national guacamole day. I was so excited to make guacamole! I went to the store to get all the ingredients and low and behold the avocados were hard! I went to two different grocery stores and I couldn't find ONE ripe avocado. SO I improvised, and made the next best thing, salsa. I spruced it up a bit by adding some mango (my fave!) and it was DELICIOUS.
Before it gets to be too late, I wanted to share with you some pictures from our camping trip over labor day weekend. We had the most amazing time. It was great to go up north for a few days and experience some of that cooler weather. We got to snuggle up in flannels next to the fire, and it was amazing. I am so ready for fall!

While we were there, we cooked the most DELICIOUS food. That smoky flavor from the fire pit just can't be beat. I also realized that I am missing something from my life, a castiron skillet. I know I've been saying that for a while, but I think its finally time to bite the bullet and do it. We basically cooked all our food in Ericka's cast iron skillet, from bacon and eggs to nachos, and of course my FAVORITE beer brats with a cheddar sauce. Unfortunately, it was too dark to get a picture of the brats so you'll just have to take my word on it that it was delicious.
The views while we were camping were unbeat. It was so great to just relax by the river or go hiking through the woods. It was such a nice and relaxing weekend.

We also made this simple but delicious salmon. We simply wrapped it up in tin foil with some salt, pepper, butter, and a squirt of lemon. It cooked right on top of the fire pit grate, and turned out beautiful!

I'm hoping we can get out another camping trip before it gets TOO cold, but even if we can't, this trip was certainly one for the books.
Sometimes its the little things in life that mean the most, like picnics in the park with your best friends. Today was such a beautiful day. It was warm and sunny, and besides my zebra-like sunburn that I came home with, things were just as perfect as these pictures.

My friends and I relaxed, talked, went for a beautiful walk in the park, and enjoyed this yummy (and healthy!!) pasta salad. We set up our picnic right next to the water, and had the most beautiful view.

The park also has great walking paths, and the scenery is just GORGEOUS. I'm so blessed to live five minutes away from this place. It's a great place to just come by yourself and clear your mind, or enjoy it with friends like I did today.
Now back to what you probably came here for...THE FOOD. For lunch, I made us ham and cheese sandwiches, fruit salad, and this pasta salad. I didn't want to make anything heavy so this pasta salad was just PERFECT. Hope you enjoy!
If you are unfamiliar with cuban sandwiches, you are missing out. Normally, a cuban has ham or shredded pork, cheese, mustard and pickles. Then, it is pressed on a panini grill. So yes, this recipe isn't authentic by any means, but it is super fun and delicious. It is SO easy and fast to put together and is great finger food so it is perfect for a potluck or on game day. We ended up having it for dinner with a side, which was also great. No matter when you make it, I'm sure everyone will love it. I'm definitely going to be saving this for game day. I get so excited for football season for the sole reason of getting to make yummy and fun dishes like this, and I already have SO many recipes saved. I can't wait!!
I love mac and cheese more than anything and for YEARS I've been trying to find the perfect mac and cheese recipe. I like my mac and cheese creamy and cheesy (but who doesn't?!), and I will NOT settle by using velveeta. As I may have mentioned before, I hate the stuff. In order to find the perfect recipe, I am constantly trying different techniques, but nothing seems to do the trick. Usually, the mac and cheese turns out to not be creamy enough, or taste cheesy enough. Fear not though!! After continuous trial and error, I have FINALLY found the million dollar winner. THIS recipe is BY FAR the BEST mac and cheese I have ever had. As you can see, it is ridiculously rich and creamy, and it is SO flavorful. If you want to treat yourself, or impress someone special, make this recipe. If you follow the recipe perfectly, I can GUARANTEE you will love it!! This is the only mac and cheese recipe you will ever need.
Just a side note, this is a stove top recipe. If you like baked macaroni and cheese, follow these directions after making the mac and cheese: 1. Preheat the oven to 350 degrees; 2. Spray a baking dish with Pam; 3. Pour the mac and cheese in the baking dish; 4. Mix panko bread crumbs with melted butter or olive oil; 5. Top the mac and cheese with shredded cheddar; 6. Sprinkle the panko on top; and 5. Bake the mac and cheese for 25-35 minutes, or until the mac and cheese is golden brown.
The best thing about living around the corner from friends is getting free dinner. Okay, there are other benefits to living close to each other too...but really...that food though. My friends Ericka and Cornelius are THAT couple who you always want to hang out with because they are thoughtful, outgoing, positive people, and overall a fun time to be around. Not to mention, they love food as much as I do and feed me, so thats always a win win. (As you can see, I'm TOTALLY trying to butter them up so they make me more food lol. No, but really, love you guys.) Yesterday, Cornelius made this amazing Irish Beef Stew and I just had to share it on the blog. Gotta love a man that cooks. This was such a comfort food meal. I can't wait to save it for those cold fall and winter nights. Cornelius made it with irish soda bread, and it was the perfect pair. Can't wait to see whats for dinner tomorrow guys!! lol just kidding....but not really.
Well it's that time of year again! Get out your shamrocks and Kiss Me I'm Irish Tshirts because Saint Patrick's Day is here! I didn't have a
chance to try any new recipes this year, but I wanted to reshare these two recipes that I posted a couple years ago. They are oldies but goodies!! My
friend Sarah and I went through a phase where we absolutely LOVED girls scout cookie shots. They are like a sweet dessert. I think they are absolutely perfect for Saint Patrick's Day because of the festive color. Also, who doesn't love dirt pudding? I love pistachio pudding so this dessert is most definitely a favorite of mine!! If you are looking for some more Saint Patrick's Day desserts check out my Jameson Cake and Irish Car Bomb Cupcakes!

Today is a repeat recipe that I posted a while back. I made it again this week and I loved it so much that I decided to repost it. A vegetarian chili is perfect for those that want to eat a little lighter. This recipe is especially easy to make as I used the ingredients that I already had in my freezer and pantry. Not to mention, this is a one pot meal which means easy clean up!! A healthy and low maintenance meal is always a favorite with me!

Ingredients:

Bag of frozen onions and peppers (bought in the frozen food aisle)

Taco seasoning packet (have 2 of the packets on hand just in case you need some more flavor)

Corn Starch

Can of corn (15 oz)

Can of black beans (15oz)

Can of pinto beans (15oz)

Recipe:

Spray a deep pan with pam and place on medium to high heat

Pour in about 3/4 of the frozen onions and peppers

While the onions and peppers are cooking, rinse the black beans and pinto beans in a strainer

Pour the beans into the pan with the onions and peppers

Pour the entire can of corn into the pan including the liquid

It should look liquidy at this point but that is good!

Sprinkle in the taco seasoning and let the mixture boil for about 5 minutes, stirring occasionally

In a small dish, mix a tablespoon of corn starch into water

Pour corn starch mixture into the pan, stirring frequently

If the corn starch does not thicken the chili to your liking then you can add some more!

Serve with your favorite chili toppings

Last weekend we got our first snowstorm of the season. I made sure to stop at the grocery store beforehand so that I could spend the weekend testing new recipes. I figured if I was going to be snowed in, I might as well be snowed in with a loaf of bread stuffed with cheese. I posted pictures of this appetizer on my instagram account, and I got tons of requests for the recipe. So, here it is as promised! I've made this a couple times since then, and so far its a hit. I'm thinking this might even be a contender for a superbowl party appetizer. It definitely makes for great football food, and I can assure you this appetizer would go perfectly with your favorite beer.
I absolutely love saffron rice. I have so many memories of my grandmother making this dish every holiday. I would eat plate fulls of it at a time. She was an incredible cook and estimated all her recipe measurements by hand. Unfortunately, her recipes are often difficult to recreate (at least for those of us who are amateur cooks) because she rarely wrote down her recipes. My dad was on a mission though to make saffron rice for thanksgiving, and it turned out pretty darn good. I liked it so much that I decided to share it with all of you. I hope you enjoy it as much as we did.

Ingredients:

1 box of saffron (usually comes in 1 gram or .03 ounce boxes)

Pinch of sugar

1 cup water

Salt

4 cups basmati rice

5 cups chicken broth

Slivered almonds

Raisins

Olive oil

Recipe:

Place saffron in a pestle and mortar. Add a pinch of sugar. Grind until the saffron is in powder form (or grind it as fine as you can).

Pour saffron mixture into a mug, add 1 cup of hot water, cover, and let it sit for approximately 20 minutes until you
see the dark rich saffaron color.

Rinse the rice thoroughly with water to remove any excess starch.

Soak the rice with plenty of water for about 30 minutes.

Drain the water.

Add the soaked rice to the pot.

Add the liquid to the pot with the rice: 1 cup of the saffron water and 5 cups of chicken broth.

Bring to a boil under medium-high heat, uncovered.

When it starts boiling, cover and lower the heat to low.

Keep the top of the pot on at all times, but stir the rice occasionally to make sure you have enough liquid. If you don't, add more liquid as needed.

After fifteen minutes, take the lid off. If there is any excess water, allow it to boil off. Fluff with a fork.

Place about two tablespoons of olive oil in a pan and add slivered almonds. Fry the slivered almond at low temperature. Once they start browning, take it off the stove top. Repeat with raisins.

Add salt as needed.

Serve the rice garnished with almonds and raisins.

I was on the fence whether or not to post this. First, the picture isn't the best quality, and second, I made this literally 4 months ago (around the same time that I disappeared from the blogging world whooooops.....). I figured I would post this anyways because one..I LOVE IT and two...these posts seem to be very popular. It's really such a great DIY gift. I made something similar for my brother's 21st birthday three years ago and it remains one of my most popular blog posts yet. You can see that here. I had so much fun making this birthday gift. I love making bouquets/baskets (or whatever you call it) for birthdays or other special events because you can personalize it and decorate it based on the their favorite things. It also looks so darn good.

What you'll need:

Some type of pot or can

Styrofoam ball or block to fit in can

Wooden skewers

Tape

Lottery Tickets, Liquor, Decorations (your choice!)

It is really quite easy to assemble! Place the styrofoam ball or block into the can. You can cut around the edges to ensure that it fits. Tape the lottery tickets and liquor bottles to the skewers. Stick the skewers into the styrofoam, arranging it so that small items are in the front and large items are in the back. Decorate around the bouquet with ribbons and other decorations.
I love football Sundays. It gives me the excuse to hang out in my sweatpants and indulge in my favorite comfort foods. Even though you may not like football...I know you love cheese..and pizza..and yummy goodness. Voila....pizza dip. It is so delicious and requires minimal effort..the best of both worlds. I've been making this dip for a while now. In fact, it was one of the first recipes that I posted on this blog. Back in the day, my pictures were not the prettiest, so I decided to respost this yummy creation again. It's crazy what a DSLR camera and some good lighting can do. Now excuse me while I get back to this......

It's hard to believe that its been almost 2 months since I last posted. I have been so busy this summer and it is just flying by!! After a busy long weekend with ongoing activities the only thing I wanted to do on Sunday was to rent a couple movies, enjoy some comfort food, and relax. I came up with this amazing baked gnocchi recipe. It's the next best thing, if not better, than mac and cheese. This recipe is especially creamy, cheesy, and indulgent. I'm telling you, the best thing I ever learned to make is a good cheese sauce. This girl loves her cheese, and I use it as a base for so many things!! I usually take the general gist of the recipe and use whatever cheese I have on hand. You can also add so many things to it (like the ham and peas I used in this recipe!). Hope you like it (actually I know you will !!)

Ingredients:

1 pound gnocchi

1 bag frozen peas

1 ham steak, cubed

2 cups shredded cheese (i used pepper jack)

1 cup Gruyere cheese

2 cups whole milk

1 cup heavy cream

3 tablespoons flour

3 tablespoons unsalted butter

1/2 yellow onions, chopped

Olive oil

Panko bread crumbs

Recipe:

Preheat the oven to 375°F. Lightly grease a pan with nonstick spray.

Place chopped onions, cubed ham, and half a bag of frozen peas into a skillet with about 2 tablespoons of olive oil. Sautee on medium heat until onions are sauteed and ham is browned.

Bring a large pot of salted water to a boil. Add the gnocchi and cook for about 2 minutes . Drain the gnocchi, toss with olive oil, then
set aside. Return the pot to the stove.

In the large pot, melt the butter then add the flour. Wisk until
combined. Add milk and cream gradually, whisking to incorporate. Bring
the sauce to a simmer and cook until it thickens, 2 to 3 minutes. Add
the cheese gradually, whisking until the cheese is melted.

Once cheese sauce is thickened to your liking, add the ham, onion, and pea mixture. Then, stir in gnocchi until everything is coated with the cheese sauce.

Place gnocchi cheese mixture in the greased pan.

Coat the top of the gnocchi with panko bread crumbs.

Drizzle olive oil on the top of the panko bread crumbs.

Bake in oven for 15 minutes, then place the dish under broiler for a couple minutes to brown the top.

True or False...I should just make this a mexican food blog? Sorry for the similar recipes lately but I warned you that I L-O-V-E mexican food. Plus, I had leftover ingredients from the flautas I made on Thursday. Sometimes you just need to work with what you got!

I have to admit..I've never been a huge fan of quinoa. I've always found it kinda tasteless and boring. Its probably because I only make it when I'm on a diet and diet food just makes me sad. I've never had quinoa with enchilada sauce though, and now I'm kinda in love with it. The enchilada sauce, chiles, and everything else gave it so much flavor. Crazy goodness! Who would have thought quinoa could taste so good?!
