I, too, experienced a problem with the bread rising properly and made some adjustments based on others&amp;#39; comments. I reduced the water to just under a cup, resisted the urge to open the oven door at any point :-) and set the timer to 36 minutes.  I loved the taste - and I cheated a bit p...</title><content type="html">Hi all-&lt;br /&gt; I loved the taste - and I cheated a bit per a recipe i had that was a no rise wheat breat i make for the holidays for my non gluten free peeps (I have to cover my face for fear of the flour puffing up,  but I cut the shortening in first so it stopped that from happening quite alot) and I am digressing- sorry, what I add to this recipe is add a teaspoon and a half of baking powder- I had tried 2 tsps but I could taste it. Why are eggs weirder than... xanthan gum, for instance? We all know that most GF bread needs gums to taste right. I get that you have an ethical issue with eggs, and that&amp;#39;s fine, but there&amp;#39;s nothing unusual about using eggs in bread - Especially for people who are used to eating challah (this is a Jewish blog after all).&lt;br /&gt;&lt;br /&gt;There are lots of GF vegan bread recipes on the blogosphere. Your description of what is wrong with gluten free bread is spot on, it&amp;#39;s both dry and gummy (how do they even manage to combine those two unsavory qualities!), and it&amp;#39;s too dense and hard.  But if a substitute  has to have eggs to be like real bread, then it&amp;#39;s not like real bread- before celiac diagnosis I could easily buy my choice of delicious breads that were vegan, without even having to bake it myself.  So if it was really like real bread, there would be no need for eggs to make it work.  Who cares how good it tastes if you have to be cruel to other creatures to enjoy it?  I&amp;#39;m willing to bake if it means I can make something that has a taste and texture like real bread, but, I&amp;#39;m not willing to torture chickens just for my own pleasure.  I&amp;#39;m sure there is a recipe out there somewhere for a gluten free bread that is both delicious and vegan, without having to sub in egg replacers (egg replacers don&amp;#39;t seem to work that well for inexperienced bakers), because bread does not need eggs. I ended up using the Bob&amp;#39;s Red Mill All Purpose Flour, as I had it on hand and it had many of the ingredients in your mix.  I also used Pumpkin spice...again it was handy.  And I didn&amp;#39;t have oranges for zest (though I did have OJ) but I did have GF Orange flavoring, so I used a drop of that.&lt;br /&gt;&lt;br /&gt;I put it all in a bundt pan and it came out great.  Took a little longer than suggested.  Came out moist and very tall...usually GF baked goods don&amp;#39;t fluff up like this. Just made this for Rosh Hashanah 200...</title><content type="html">THANK YOU!!!  Just made this for Rosh Hashanah 2009 for my 9-year-old GF daughter and it was not only a hit with her, but with others as well!  However I changed the flour and used 1 3/4 cups of a homemade version of Bette Hagman&amp;#39;s GF flour (superfine brown rice flour, potato flour and tapioca flour) and then 3 extra tablespoons of tapioca flour. Also already had xanthan gum, so I used that instead of guar gum. And - I used butter instead of oil since I didn&amp;#39;t care if it was pareve.  The idea to put the dough into balls in the pan is brilliant!!  Gives it much lighter texture and those beautiful bumps on top! It looked GORGEOUS and was a smash hit!  The only problem with it is that I now think that I&amp;#39;ll be making GF challah a lot!&lt;div class="feedflare"&gt;

But I think I just took a very ripe plantain, mashed or pureed it well, and added it to pancake mix (made with a little less liquid than usual), then cooked them up - You have to fry on pretty low heat or they&amp;#39;ll burn, if I remember right. I think this photo is of pancakes I made from scratch but I&amp;#39;m sure you can do this with pancake mix.
