FANCY 3 CHEESE MACARONI WITH CARAMELIZED ONIONS & BACON!!!

4 cups of partially cooked gluten free macaroni (don't cook all the way) (I used Namaste brand-worked like a charm)
8 Tablespoons salted Butter
2 whole Medium Onions, Cut In Half And Sliced Thin
1/4 cup cornstarch
2 cups Whole Milk
1/2 cup Half-and-half
2 whole Egg Yolks, Beaten
Salt And Pepper, to taste
1/2 cup Grated Gruyere Cheese
1/2 cup Grated Fontina Cheese
1/2 cup Pecorino Romano Cheese
3 slices bacon, cooked crisp and crumbled for garnish
1 chopped scallion, garnish
Preparation Instructions

Preheat oven to 350 degrees.

Melt 4 tablespoons butter in a skillet and then saute onions over medium-low heat for 10 to 12 minutes, or until golden brown and soft. Set aside.

In a pot, melt 4 tablespoons butter. Sprinkle in corn starch and whisk to combine. Cook, stirring constantly, over medium heat for 1 minute. Pour in milk and half & half, then cook for 3 to 5 minutes or until thick. Reduce heat to low. Add generous salt & pepper to taste.

Beat egg yolks and drizzle 1/4 cup hot mixture into the yolks, stirring constantly. Stir to combine. Pour egg mixture into sauce and cook for another minute.

Add cheeses and stir until melted. Add onions and stir. Taste for seasonings and add more salt if needed. Add cooked macaroni and stir to coat.

Pour into a baking dish and bake for 15 to 20 minutes or until sizzling and hot. Sprinkle with bacon and scallions.

"NACHO" REGULAR TACOS! NACHO TACO CASSEROLE!!!

Ingredients

Casserole:

2 tablespoons olive oil
1 pound sweet Italian sausage, out of the casing
3/4 pound ground beef
8 ounces crushed tomatoes or tomato sauce
1 bag blue corn tortilla chips (or chips of your choice)
1 1/2- 2 cups shredded cheese - I used a combo of mozzarella and provolone
Toppings: shredded, lettuce, sliced avocado, chopped tomatoes, sour cream, if desired

For the casserole: Preheat the oven to 375 degrees F.

Heat the oil, in a large, deep skillet over medium-high heat. Add the sausage and brown, crumbling the meat. Add the beef and continue to brown and crumble the meat. Add 8 ounces tomato sauce and mix all together. Let cool a bit.

Lay the bag of chips in a casserole dish and top with the sausage and beef mixture. Top with cheese. Bake at 375 degrees F until bubbly and hot about 20 minutes. Add toppings and serve!

GLUTEN FREE CINNAMON ROLL CAKE

THIS CAKE WORKS OUT PERFECTLY TO BE GLUTEN FREE!! JUST REPLACE THE FLOUR WITH "CUP 4 CUP" FLOUR!! IT IS THE BESTTTTT!

Ingredients

3 cups "cup4cup" brand flour
1/4 tsp. salt
1 cup sugar
4 tsp. baking powder
1 1/2 cups milk
2 eggs
2 tsp. vanilla
1/2 cup butter, melted
TOPPING
1 cup butter, soft
1 cup brown sugar
2 Tbsp. "cup4cup" flour
1 Tbsp. cinnamon
GLAZE
2 cups powdered sugar
5 Tbsp. milk
1 tsp. vanilla

Instructions

Preheat oven to 350 degrees. Spray a 9×13 glass baking pan with cooking spray or coconut oil spray. Set aside.
In a mixer, add the flour, salt, sugar, baking powder, milk, eggs, and vanilla. Once combined well, slowly stir in the melted butter. Pour into pan.
For the topping, mix the butter, brown sugar, flour and cinnamon together until well combined and creamy. Drop evenly over the batter by the tablespoonfuls and use a knife to marble/swirl through the cake.
Bake at 350 for 35-40 minutes or when a toothpick inserted near the center comes out nearly clean.
****Note for gluten free, I did have to bake this about 10 minutes longer than written-cover loosely with foil the last few minutes if top browning too much.
Glaze: Whisk the powdered sugar, milk and vanilla. Drizzle evenly over the warm cake.

THE BEST GLUTEN FREE CHOCOLATE CHIP COOKIES!!!!

Surprising his daddy with some gluten free chocolate chip cookies!!!

COOKIE DOUGH!!!

I have a new technique for making extra thick cookies and I have had great success with this...

1. Preheat your oven to 425 degrees. (I use the convection setting but regular will work fine). Chill your cookie dough at least 30 mins but
longer = thicker!
2. Measure your cookie dough to 2 ounces for each mound.
3. As soon as you throw the cookies in the oven, immediately shut the door and lower the temp to 375 RIGHT AWAY. My theory is that the high heat of 425 immediately "sets" the base of the cookie to be thicker!!! Bake for 9-11 minutes or until the tops are getting nice and golden. Will continue to set up while cooling on cookie sheets. This recipe produces a crisp outside and a thick, soft, chewy center!!!

2 1/4 cups CUP 4 CUP flour
1/2 tsp. kosher salt
1/2 tsp. baking soda
1 1/2 sticks soft butter
1 cup light brown sugar
1/2 cup regular sugar
1 T. vanilla extract

1 egg
1 egg yolk
1 cup NESTLE semisweet chips plus 1/2 cup bittersweet Ghiradhelli chips and 1/2c Ghirardelli Milk chocolate chips.
Preheat oven to 425 degrees. Line cookie sheets with parchment.
Beat butter and both sugars until well blended. Add in vanilla, egg and yolk until light and creamy. Add in flour, salt and baking soda just until incorporated. Stir in chocolate chips by hand. Chill 30 mins or longer. Drop by 2 ounce mounds onto parchment. (If you like extra chocolate, place a few more chips in the top but beware that's a lot of chocolate!) Place in oven and IMMEDIATELY lower temp to 375. Bake 9-11 minutes or until tops golden. Let cool on cookie sheets.
MAKES 21 COOKIES (2 OUNCES EACH)

1 cup milk
1 cup water

CHEESY PASTA SKILLET BAKE

Ingredients

24 ounces Pasta sauce
1 lb dried pasta (I used Tinkyada, gluten free)
3 cups water
1 (8-oz) package shredded Italian cheese blend
scallions, for garnish

Directions

In a large (12-inch) skillet combine sauce, dried pasta, and water. Stir to combine, cover and bring to a boil. Boil until pasta is cooked.
Preheat oven to broil. Top skillet with shredded cheese and place in oven. Broil until cheese is bubbly and golden brown.
Top with scallions.

MOST AMAZING CHICKEN MARSALA

1 package chicken cutlets, thin
3 Tablespoons olive oil
1 1/2 cups cornstarch
1 small package sliced mushrooms
1 cup Marsala wine
2 tablespoons butter
1 cup chicken broth
1 Tablespoon cornstarch
1 Tablespoon heavy cream
salt/pepper to taste

Heat oil in a skillet on med-high. Dredge cutlets in cornstarch and season with salt/pepper. Pan fry to brown to both sides. Add mushrooms to pan and brown. Put heat on high and add marsala, butter and broth. Add the 1 T. cornstarch and cook until liquid reduces by half. Add cream, salt/pepper to taste and serve! Top with scallions for garnish, if desired!

5 OUNCES CREAM CHEESE, ROOM TEMP
1 bag ghirardelli bittersweet chips, melted for dipping

1. Food process the cookies.

2. Add the cream cheese and process until well combined. (If dry, you can add more cream cheese but this was the perfect amount for me.)

3. Scoop with a small ice cream scoop onto a cookie sheet and chill.

4. Roll each truffle into a ball and dip into melted chocolate.

5. Add sprinkles or candies while wet.

6. Chill in the fridge.

In a blender, combine until smooth:
1 cup water
1/2 scoop Protein Powder (I use Vega)

This stuff is completely DANGEROUS!!!! I am officially hiding it from myself!!!

Preheat oven to 350. Line rimmed cookie sheet with nonstick foil and place a small rack on top. Dredge both sides of bacon slices in light brown sugar. (I buy thick-cut.) Bake for 15 minutes on each side. Beware....this stuff is deadly good!!!!

I was going to stop here but the foodies on my facebook page made me do this. Dip the bacon candy in chocolate??!!!! It's all their fault!!! Their idea!! Yum!!!

MANCHEGO CHEESE MEATBALL PARM!!!!!!

This dinner was AMAZING!!!! To make it gluten free, I used Scharr brand bread crumbs but you can certainly use regular bread crumbs if you're not gluten free. Use your favorite sauce-homemade or jarred. I used Market Pantry brand from Target and was shocked by how delish it was!!!!

Hugs & Cookies Meatball Ingredients:

1 1/2 pounds ground beef (excellent from Costco)
4 cloves garlic,minced
a handful of chopped parsley
1 cup bread crumbs (I used Scharr brand)
1 cup shredded Manchego cheese (I grated it from a 1/2 pound piece and used the rest to grate on top on the meatballs and sauce later)
2 eggs
salt to taste

Other Ingredients:

Sauce of your choice (approx two 24-oz jars)
Rest of the Manchego cheese to top it off with!

Mix all of the above meatball ingredients and form your meatballs-not too large. I made approx 30 meatballs. Pan fry to brown them. Don't worry about cooking them through-they will finish cooking in the oven. Preheat oven to 375.

Pour some sauce in the bottom of your ceramic oven-safe dish. Lay meatballs on top of the sauce. Cover with more sauce and dress the top up with the extra manchego! Cover with foil and bake for 20 mins. Remove foil and bake an additional 15 mins or until meatballs are cooked through (depending on size you make them.)

Serve this sauce and meatballs right over some spaghetti pie muffins!!!

TIP: This would freeze really well! Make an extra batch and freeze for a busy work night!!!

ROASTED BRUSSEL SPROUTS WITH MARCONA ALMONDS

INGREDIENTS:
2 pounds brussel sprouts (ends trimmed and outer leaves removed)
3 Tablespoons Chosen Foods Avocado Oil
salt and pepper
Marcona almonds-a big handful!!!!

Directions:
Lay sprouts on a baking sheet and drizzle with oil. Sprinkle generously with salt and pepper and toss to coat evenly. Bake at 375 for about 30 minutes if you like them nice and crisp like we do! Sprinkle Marcona almonds on top when done!

FAT WITCH BROWNIES

Ingredients:

1 stick plus 6 more T. butter
1/2 cup + 2 Tbsp bittersweet chocolate chips (I used Ghiradelli)
1 1/4 c. sugar
4 eggs
1 tsp vanilla extract
1/2 cup + 2 T. CUP4CUP FLOUR
dash of kosher salt

Line 9x9 baking pan with nonstick foil. Preheat oven 350F. Melt all of the butter and chocolate chips together in the microwave. Do 30 second intervals and stir so you do not burn it! let cool.

In a bowl, mix sugar, eggs and vanilla. Add the cool chocolate and mix until well blended. Add flour & salt. Marry all the ingredients :-) by stirring! Pour into the pan and bake 30-35 minutes until toothpick does not come out wet. Cool completely and cut into Large squares. Can dust with powdered sugar or serve warm with ice cream!

MINI CHICKEN POT PIES......OUTRAGEOUS!

The beauty of this pie machine is that it keeps the bottom of your pies crispy-what a concept! You can't get that in the oven with a huge pie! lol

I started with a store bought rotisserie chicken and chopped the white meat.

1. Roast 5 ears of fresh corn-click here for recipe Once finished, cut kernels off the cobs.
2. Make your pie crust-can be made ahead of time and frozen. I made my dough, cut my rounds and froze them individually wrapped. To make this dough gluten free, use CUP4CUP flour-it's the best and is what you see pictured above for our pot pies!

3. Peel and chop 1 pound fresh carrots. Toss with olive oil and roast at 375 for 25 minutes or until soft.

4. Make Filling:
In a pot, melt 4 Tablespoons butter and sprinkle in 1/4 cup flour, stirring to combine very well. Cook 1 minute. Add 2 cups chicken broth and 2 Tablespoons heavy cream. Stir to combine and simmer on low to thicken a bit. Stir in the corn kernels, chicken, 1/2 can peas (optional), carrots and salt/pepper.

5. Use the directions on your pie maker machine and bake each mini pie until golden! (No pie maker? use mini tins and bake in the oven at 400 until golden-remember to cut slits to vent pies)

CRISPY, DELICIOUS HASHBROWNS

4 Potatoes, peeled
3 Tablespoons Chosen Foods Avocado Oil (Or oil of your choice for frying)
salt, pepper, paprika

1. Shred potatoes in a food processer.
2. Squeeze excess water from the potatoes-I did this using a potato ricer!
3. Heat oil in a large skillet on medium high.
4. Lay shredded potatoes on the hot oil, spreading in a thin layer.
5. Season with salt, pepper and paprika.
6. Let cook about 10 minutes until browned but lift and peek underneath to check it as it cooks.
7. Once golden, cut in half with spatula and flip each half. Season again
8. Fry until golden and break into smaller pieces!

DEEP DISH CARAMEL APPLE PIE CRUMB CAKE

MAKE CARAMEL AHEAD OF TIME (CAN BE REFRIGERATED FOR DAYS!!!) CLICK HERE FOR RECIPE!

Crust & Topping:
2 cups CUP 4 CUP flour
1 cup light brown sugar
2 sticks butter, soft (16 Tablespoons)
1 tsp. cinnamon

FILLING:
5 POUNDS APPLES (I like honeycrisp & Fuji)-peeled, cored and sliced thinly
2 Tablespoons lemon juice
1 tsp. cinnamon
Toss apples, cinnamon and lemon juice in a huge bowl.

Press 2/3 crumbs into a 9" springform pan. Press along the bottom and 1 inch up the sides. Fill with apples. It will be packed high!!! Sprinkle on rest of crumbs as a crumble. Lay on a baking sheet lined with foil and bake at 350 for 1 hour and 15 mins. Run a knife around the edges and keep in the pan. Drizzle the top with salted caramel and let cool completely before removing the springform sides. Serve with the extra caramel for drizzling and whipped cream!

ASIAGO MEATBALLS

1 1/2 pounds ground beef (excellent from Costco)

1 cup bread crumbs (I used Scharr gluten free brand)
1 cup shredded ASIAGO cheese (not grated)
2 eggs
salt to taste

Mix all of the above meatball ingredients and form your meatballs-not too large. These can be made ahead and stored covered in the fridge over night. I made approx 30 meatballs. The next day, pan fry to brown them. Serve with your favorite sauce on the side or continue on to make meatball parm.

FIESTA CORN DIP:

Ingredients:
8 ounces Monterey Jack cheese, shredded
3 cups frozen corn, defrosted
2 cups Hellman's mayonnaise
1/4 cup chopped green chiles (small can), drained
1/2 cup roasted red bell peppers, minced
1 cup grated Parmesan cheese
Directions:
Preheat oven to 375º. Mix all ingredients together. Spread evenly in casserole dish and bake 45-60 minutes till top is golden. Serve with tortilla chips.

CHICKEN SAUSAGE & AVOCADO FRITTATA

Ingredients:
6 chicken sausage links, broiled and sliced
1 Tablespoon avocado oil
1 large handful of Kale, chopped
1 onion, roughly sliced/chopped
1 1/2 avocados, sliced
3/4 cup mozzarella cheese
4 eggs
8 egg whites
salt & pepper to taste
handful shredded asiago cheese
parsley for garnish

Directions:

Heat oil in a skillet and sautee onions and kale about 5-7 minutes until soft. Let cool.
Whisk eggs & egg whites. Add mozzarella cheese, salt and pepper.
Pour cooled onions and kale into the egg mixture.
Grease a 9-inch springform pan or line a cake pan with nonstick foil. *Important note* Although, I used the springform this time-I had some leaking egg problems with it and would use a cake pan next time. If you opt for the springform, make sure you it doesn't leak and wrap it with foil along the bottom. Bake on a sheet pan just in case!!!
Pour the mixture into the pan and gently arrange the avocados pressing them into the egg.
Bake at 350 for about 35 minutes.
Remove, sprinkle asiago all over the top and return to the oven for an additional 5 minutes. Be sure it is set in the center.
Garnish with parsley.

IT IS FUN TO DISCOVER WHO HAD YOUR BLOG AND TO REVEAL THE ONE YOU WERE SECRETLY BAKING/COOKING FROM ALL ALONG!
THIS MONTH, I RECEIVED SIMPLY. FOOD
WHAT A FUN AND ADVENTUROUS BLOG WITH SOME VERY FANCY DESSERT TECHNIQUES TO TRY OUT!!! I DECIDED TO MAKE THE CHOCOLATE SAUCE BECAUSE WHO DOESN'T LOVE A DESSERT DRIPPING IN CHOCOLATE SAUCE!!!! I HAPPENED TO HAVE SOME EXTRA CHEESECAKE TO TEST DRIVE IT ON AND IT WAS A HIT!

CHOCOLATE SAUCE:

75ml (1/3c) heavy cream
40g of dark chocolate roughly chopped
½ tsp vanilla
Put the cream into a small heavy-based pan and heat gently, stirring frequently. When the cream comes to the boil, remove from the heat. Let it cool for a minute and then stir in the chopped chocolate. Stir gently until smooth, stir in the vanilla. Let cool to thicken a bit. Pour over cake or strawberries. Mmmmmm!!!

Here is the cheesecake recipe I used.

CHICKEN WITH MUSHROOM & ONIONS IN AN ASIAGO CREAM SAUCE...LIGHTENED UP!

Recipe:

1 1/2 lb boneless skinless chicken breast, cut into pieces
2 cups sliced mushrooms
1 large onion, sliced
1 cup white wine
1/2 cup cornstarch
1 Tablespoon butter
3 Tablespoons olive oil
1/4 cup heavy cream
1/4 cup shredded Asiago cheese
salt & pepper to taste

Heat 2 Tablespoons olive oil in deep skillet over medium.

Dredge chicken in cornstarch. Add to hot oil and sprinkle with salt & pepper. Saute until golden on each side, about 5 minutes per side. Remove from pan.

Add the other Tablespoon olive oil and 1 Tablespoon butter to the hot skillet. Saute mushrooms and onoins until mushrooms begin to brown.

Add white wine to skillet, return the chicken to the pan. Bring to a boil, then reduce to a simmer and cover for 15 minutes.

Remove the chicken again from the pan. Add the cream and cheese and heat them through, stirring to melt cheese. Once all combined and reduced a bit, add the chicken to the pan for a minute or two. Sprinkle with salt and pepper. Serve over brown rice or pasta.

COCONUT CASHEW GRANOLA!

2 cups old-fashioned oats
3/4 cup shredded sweetened coconut
1/2 cup raw cashews
2 tablespoons coconut sugar
1 teaspoon cinnamon
1/4 teaspoon salt
4 tablespoons melted coconut oil
1/2 cup pure maple syrup

2T. hemp seeds

2T. flax seeds Directions:

1. Preheat the oven to 300 degrees F. Line a large baking sheet with parchment paper.
2. In a large bowl, combine oats, coconut, almonds, brown sugar, cinnamon, and salt. Pour in the coconut oil, maple syrup, & vanilla. Stir well until dry ingredients are well-coated.
3. Pat the granola onto a nonstick sheet pan so it looks like one huge cookies keeping it even in thickness. Bake for 30-40 minutes or until granola is golden brown, stirring occasionally. Tip: If you like large, clumpy granola-do not stir. Let cool completely and break into large clumps.

HIBACHI STYLE FRIED RICE

2 cups cooked brown rice
4 eggs
grapeseed oil
Tamari Sauce (No measuring, you'll just pour it in!!!)
small package mushrooms
1 large onion, diced
roasted corn on the cob, sliced off the cob into kernels. Click here for oven roasted recipe!

1. Heat 1 T. grapeseed oil and cook the mushrooms and onions until soft. Push to the side and add a drop more oil. Cook the 4 eggs making them into scrambled eggs! Once cooked through, add the cooked rice & corn and stir all together. Pour in the Tamari sauce to moisten it all! Serve hot with chopsticks!

PARMESAN ROASTED GREEN BEANS & PLUM TOMATOES

WASH AND TRIM YOUR GREEN BEANS. WASH PLUM TOMATOES. LAY BOTH ON A SHEET PAN AND DRIZZLE WITH OIL OF YOUR CHOICE. (I USED AVOCADO OIL-BUY IT HERE, BUT OLIVE OIL IS FINE.)

SPRINKLE WITH SALT AND PEPPER AND TOSS TO COAT.

INGREDIENTS:
2 pounds brussel sprouts (ends trimmed and outer leaves removed)
3 Tablespoons Chosen Foods Avocado Oil
salt and pepper

Directions:
Lay sprouts on a baking sheet and drizzle with oil. Sprinkle generously with salt and pepper and toss to coat evenly. Bake at 375 for about 30 minutes if you like them nice and crisp like we do!
