We like a variety of breakfast foods. We get tired of eating just eggs. These are really good. You can do fruit and yogurt, or make a breakfast burrito with these. My son's favorite it the strawberries and yogurt.

Coconut Flour Crepes

2 eggs
2 tablespoons of butter or coconut oil, melted
1 tablespoon maple syrup or honey
1/2 teaspoon vanilla extract
1/8 teaspoon salt
2 tablespoon coconut flour
pinch of nutmeg and cinnamon
1/3 cup raw cow's milk or coconut milk

In a medium bowl whisk together the eggs, oil, honey, vanilla, and salt.

Add the coconut flour, nutmeg, and cinnamon.

Mix in the milk until no lumps are left.

Heat a skillet over medium heat. When hot add a little butter or coconut oil in the pan. Pour 1/8 of the batter onto the pan making sure it spreads out nice and thin.

Cook 1-2 minutes or until the edges are cooked, then flip ( I used 2 spatulas to flip, it breaks easily) and then cook for another 1-2 minutes.

Fill the crepes with yogurt, honey, maple syrup, mixed berries, bananas, eggs, or bacon. Whatever you guys enjoy!

We love biscuits and gravy around here! But when you are trying to eat healthier biscuits and gravy usually is not in your diet. These really hit the spot. They are very filling too!

Biscuits and Gravy

Biscuits:
1/2 cup coconut flour
1/2 teaspoon salt
1 teaspoon baking powder
1 tablespoon cold butter or coconut oil
6 egg whites

Gravy:
16 oz. breakfast sausage
2 tablespoons arrowroot
14 oz. coconut milk or raw cow's milk
1/4 teaspoon fennel seeds
1 teaspoon sage
1/4 teaspoon pepper
1/4 teaspoon salt

Preheat Oven 400

Grease 6 cups of a muffin tin.

In the food processor mix flours, salt, and baking powder. Add butter and mix well.

In a separate bowl with a handle held blender beat egg whites until fluffy. Add the egg whites with the flour mixture, pulse until just mixed together.

Spoon mixture into muffin tin filling them 3/4 full. Cook 15 minutes or until browned. These do not rise.

In a skillet cook sausage over medium-high heat. Breaking it up well. When the sausage is done remove it from the skillet leaving the grease.

Whisk the arrowroot in the skillet with the grease for about 1 minute.

Slowly add the milk stirring constantly so not to make lumps.

Add the seasonings and then the sausage. Heat until warm. Serve over biscuits.

I works very well.
Whey is used as a starter culture for lacto-fermented vegetables and fruits, for soaking grains and as a starter for many beverages. The cream cheese, which is a by-product, is far superior to the commercial variety, which is produced by putting milk under high pressure and not by the beneficial action of lactic-acid-producing bacteria.

Whey and Cream Cheese

2 quarts yogurt or raw milk

If you are using yogurt, no advance preparation is required. You may use homemade yogurt or good quality commercial plain yogurt. If you are using raw milk, place the milk in a clean glass container and allow it to stand at room temperature 1-4 days until it separates.

Line a large strainer set over a bowl with a clean cheese cloth. Pour in the yogurt or seperated milk, cover and let stand at room temperature for several hours(longer for the yogurt). The whey will run into the bowl and the milk solids will stay in the strainer.

Tie up the cloth with the milok solids inside, being careful not to squeeze. Tie this little sack to a wooden spoon placed across the top of the container so that more whey can drip out. When the bag stops dripping, the cheese is ready.

Store whey in a mason jar and cream cheese in a covered glass container. Refrigerate, the cream cheese keeps for about 1 month and the whey for about 6 months.

3 medium or 2 large organic beets, peeled and chopped up coarsely
1/4 cup whey
1 tablespoon sea salt
Filtered water

Place beets, whey and salt in a 2-quart glass container.

Add filtered water to fill container. Stir well and cover securely.

Keep at room temperature for 2 days before transferring it to the refrigerator.

Drink 4-ounces in the mourning and in the evening.

* Do not use grated beets in the preparation of beet tonic. When grated, beets exude too much juice resulting in too rapid fermentation that favors the production of alcohol rather than lactic acid.

Coconut Flour Waffles

I think waffles is my son's favorite breakfast food. He asks for them all the time. This is a wonderful recipe for some good waffles. I found this recipe off of Health Home Happy. I added a couple things to it though. These waffles taste good topped with some plain yogurt and maple syrup.

Pour batter a little at a time, into a preheated greased waffle iorn.

Cook for around 3-4 minutes or until golden brown.

The longer you cook this stock the better it is for you. The Nourishing Traditions says, "When you cook the stock for a long time it will contain the minerals of bone, cartilage, marrow, and vegetables. These ingredients seems to be of use in the treatment of many disorders, including anemia and other diseases of the blood, diabetes, muscular dystrophy and even cancer. Other important ingredients that go into broth are the components of cartilage, which recently have been used with remarkable results in the treatment of cancer and bone disorders, and collagen, used to treat rheumatoid arthritis and other ailments. In folk wisdom, rich chicken broth is a valued remedy for the flu. The 12th century physician Moses Maimonides prescribed chicken broth as a treatment for cold and asthma. Modern research has confirmed that broth help prevent and mitigate infectious diseases."
We should all make an effort to bring in more chicken stock in our daily meals. This is the recipe from Nourishing Traditions.

Chicken Stock

1 whole free-range chicken
4 quarts cold filtered water
2 tablespoons vinegar
1 large onion, coarsely chopped
2 carrots, peeled and coarsely chopped
3 celery sticks, coarsely chopped
1 bunch parsely

Place chicken in a large stainless steel pot with water, vinegar and all the vegetables except parsley.

Let stand 30 minutes to an hour. Bring to a boil, and remove scum that rises to the top.

Reduce heat, cover and simmer for 6 to 24 hours. The longer you cook the stock the richer and more flavorful it will be.

About 10 minutes before finishing the stock, add parsley. This will impart additional mineral ions to the broth.

Remove chicken. Strain stock into large bowl and reserve in your refrigerator until fat rises to the top and congeals. Skim off this fat and reserve the stock in covered containers in your refrigerator or freezer.

I found this recipe from "The Nourishing Gourmet". It is pretty simple and very satisfying. I have been trying to get myself to eat more soups. There are numerous benefits to the broth and vegetables that goes in soups. Plus, I can make a batch of soup and it will be my lunch for the week. Which makes it easier on me. This soup is perfect for those cold winter days.

Chicken "Noodle" Soup

8 cups homemade chicken stock
2 tablespoon coconut oil or olive oil
1 small onion, peeled and chopped
2 large celery sticks, thinly sliced
salt and pepper
1-3 cloves garlic, peeled and finely chopped
4 carrots
2-3 zuchinni
handful of finely chopped parsley
2 cups of shredded chicken

Heat fat or oil of your choice in a large soup pot over medium heat until hot, but never smoking. Add the onion and celery and sprinkle with unrefined salt. Sauté, stirring frequently to prevent browning, until the vegetables are soft. Then add the garlic and sauté one more minute.

To make carrot and zucchini noodles, wash well, cut off the ends, and peel carrots. Lay the carrot or zucchini flat on a cutting board and run a vegetable peeler all the way from one end to the next to create a noodle. Repeat until you have reached near the middle of the vegetable and then turn over and start from the other side.

Add the chicken broth and place the lid on your pot. Bring to a boil. Add the carrot noodles and simmer for about 3 minutes. The carrot noodles should be softening up nicely, but still have a slight firmness to them-like a noodle!. Add the zucchini noodles and chicken (and optional parsley) and cook for 2 more minutes. Salt and pepper the soup to taste. Serve and enjoy.

Peanut Butter Pie

Okay, so I have been slowly trying to get myself to start posting again. I have had my hands full with church, my son, and the holidays. Now that is has slowed down a little bit I thought I would try to post something here and there again. I am trying to go grain free, and get my family to eating better and maybe shed a few pounds. So there should be coming some good grain free recipes.

I made this pie yesterday and it turned out amazing!. It is very rich were you only need a small piece with a big glass of milk.

Peanut Butter Pie

Whipped Cream
16 oz. whipping cream
2 teaspoon vanilla
3 tablespoon maple syrup

4 oz. 72% cacao dark chocolate

In a food processor mix all of the pie crust ingredients together until, it starts to form a ball.

Push down the pie crust in a pie pan to form the crust. Bake at 350 for 15-20 minutes, or until golden brown. Cool.

For the vanilla pudding in a medium sauce pan put 2 cups of milk over medium high heat. Pour honey over the milk, do not stir. Heat until boil then remove from heat.

While the milk is heating, mix together 1/2 cup milk and arrowroot. Then add 2 egg yolks. Mix well.

Once you remove the milk from the heat add the yolk mixture and then return to heat and cook stiring continually for 1 mintue.

Remove from heat at vanilla, salt, and butter. Add the softened cream cheese and mix well. Chill.

In the food processor combine the peanut butter filling ingredients. Pulse until mixed completely.

In a large bowl with an electric hand held blender mix the whipping cream until peaks form. Add the vanilla and maple syrup and mix well.

In a small sauce pan melt chocolate over low-medium heat. Pour over pie crust. Chill until the chocolate hardens.

Smooth the peanutbutter filling over the chocolate. Pour the pudding over the peanut butter. Chill.

My pie was to full to add the whipped cream, so I just added it as I sliced the pieces. Enjoy!

This is an easy activity to do with your kid. Not to much of a mess and it doesn't take a lot of supplies. My son decided that this was much funner as a frisbee.

Pumpkin Masks

Paper Plates
Washable Paint(to make an easy clean up)
Box Cutter

Cut the face out with the box cutter.

Paint however you would like. Then let dry.

Heb 11:13 These all died in faith, not having received the promises, but having seen them afar off, and were persuaded of them, and embraced them, and confessed that they were strangers and pilgrims on the earth.
I want to encourage you to be persuaded, embrace and confess what the word says about you. We need to believe the word spoken about us more than what our own thoughts are. Believe the divine more than the natural! It is so easy to listen to our flesh and become discouraged, but be persuaded by God's word of who you are. Embrace what He has promised His children. Confess who He says you are and stop speaking what your mind says that is contrary to His word!
God says I am healed, anointed, called, loved, sent, blessed, able, clean, righteous, holy, filled, powerful, joyful, etc.
My mind says I am none of these things and the opposite of all these things. This is false humility and so destructive. True humility to God is believing His word over my own thoughts, even about myself! So I am persuaded to embrace what God says about me and walk in it with a positive confession.
Isn't this what we would call "faith"?

Inspirational Dissatisfaction by Chad Duvall

Once we have set this new spiritual goal we must then become inspirationally dissatisfied with our old state so that we will be motivated to act. Satisfaction is the death of action, so if I am satisfied with the old me, I will not put out the effort to reach my new goal. If I am dissatisfied with my current relationship with Christ, then I will be inspired to do whatever it takes to reach that new spiritual goal.
No one can develop my relationship with Christ for me. If I am going to grow, it is in my hand. The rewards to those who diligently seek Him are out of this world, but if it is to be, it is up to me!

Meatloaf with Kale

This is a perfect recipe if you have a kid who wont eat their greens very well. The kale gets baked right into the meat and you can't taste it. My little boy ate it right up! This turned out very flavorful!

Meatloaf with Kale

1 cup water
4 cups kale, chopped*
1 lb. ground beef
1/2 cup chopped onions
2 eggs
1 large garlic clove, peeled and chopped
1/2 teaspoon sea salt
20 grinds of pepper
1 tablespoon rosemary
1 teaspoon sage
1 piece of bread, crumbled, I used Ezekiel Bread
1 tablespoon dijon mustard
1/2 teaspoon honey

Preheat Oven 375

Bring the water to a boil, then add the chopped kale and cook until wilted(about 5 minutes).

Mix together beef, onions, eggs, garlic, salt, pepper, rosemary, sage, bread. Add cooked kale, and mix well.

In a separate bowl mix together dijon mustard and honey.

Put the meat mixture into a loaf pan. Spread the mustard mixture on top.

Cook for about 1 hour or until the center is no longer pink.

* You can substitute spinach.

Dog Shampoo

I have an indoor outdoor dog. So he gets smelly and dirty pretty quick. With having a 2 year old who picks his food up off the floor and sticks it in his mouth before I can stop him, I wanted to find a dog shampoo that actually got my dog clean. So I found a good homemade dog shampoo. I was tired of spending the money on the store bought shampoo that didn't take any smell out of the dog. This recipe works! It is also very inexpensive and easy to make.

Dog Shampoo

A bottle to store it. (I used the dish soap bottle)
White Vinegar
Dish Soap (I just bought the cheapest kind)

You just mix equal parts of the dish soap and vinegar together, and then wash your dog. Make sure you rinse it all off.

Apple Cobbler

I am sorry that I haven't posted anything in a while. I have been so busy. A lot of new stuff is about to be going on for me and my husband and we have been busy trying to get everything together. Hopefully I will be able to start posting more again.
So this recipe is delicious. I love apple desserts, and this one is on the top of my list. It goes wonderfully with homemade vanilla ice cream!

Apple Cobbler

8 tart apples, chopped
juice of 1-2 lemons
grated rind of 1 lemon
1 tablespoon arrowroot
2 tablespoons honey
1/2 teaspoon cinnamon
3/4 cup almonds
3/4 cup arrowroot
6 tablespoons butter, softened
1/4 cup honey
1/4 teaspoon sea salt
1 teaspoon vanilla extract

Preheat Oven 350

Toss apples with lemon juice.

Mix 2 tablespoons honey, lemon rind, arrowroot and cinnamon together and toss with apples.

Place in a buttered baking dish.

Place almonds in a food processor and process to a powder. Add butter, arrowroot, 1/4 cup honey, vanilla and salt and process until smooth.

Crumble mixture on top of the apples. Bake for 1 hour.

Chili always seems to make it to our plate every month. It just never gets old. If you are like my husband then your chili requires a lot of cheese and crackers. My little boy even knew what I was cooking before I told him. I know chili is one of those meals that everyone can make, but I thought I would give you my version of it.

Chili

1 lb. ground beef
1 medium onion, chopped
1 clove garlic, finely chopped
1 can diced tomatoes, undrained
1 can tomato sauce
1 tablespoon chili powder
3/4 teaspoon ground cumin
1/2 teaspoon cinnamon
1/2 teaspoon red pepper
1/2 teaspoon salt
1/4 teaspoon pepper
2 cans pinto beans, kidney beans, or black beans (I mix and match)

Cook beef, onion and garlic over medium heat, until beef is done.

My husbands favorite dessert would have to be chocolate cake. This recipe makes a very rich and dark chocolate cake. You should keep a big glass of milk at hand. I made all of this in my food processor.

Chocolate Cake

12 oz. dark chocolate
1/2 cup milk
2 tablespoons vanilla
2 tablespoons cinnamon
1/4 cup unsweetened cocoa baking powder
1/4 cup honey
1/4 cup coconut flour
2 sticks of butter, at room temperature
6 eggs

Preheat Oven 350

Ground up the dark chocolate in the food processor.

Add remaining ingredients.

Place in a butter spring foam pan.

Bake for 50 minutes or until a toothpick is inserted and comes out clean.

Flourless Chocolate Cake

Whole Wheat Biscuits

I found these biscuits from Nourished Kitchen. We love biscuits in this house! These are some amazing biscuits. My husband loves these and asks for me to make these. They go wonderful with scrambled eggs and cheese.

Whole Wheat Biscuits

2 1/2 cups whole wheat flour
1/2 cup cold butter
1 cup buttermilk
1 teaspoon baking soda
1 teaspoon sea salt

Mix butter and flour together until it resembles cornmeal. Add buttermilk until all the flour is moist and forms a thick dough. (You may need to add a little more than 1/2 cup buttermilk)

Allow this to sit in a warm spot with a towel covering it overnight.

Preheat oven 450.

Knead baking soda and salt into dough.

Flour your hands and you can either roll the dough out and cut it with a biscuit cutter, or you can roll drop them on a buttered baking sheet.

Bake the biscuits 10 to 15 minutes, or until they turn golden brown.

Makes 16-18 biscuits.

Lacto-fermented foods normalize the acidity of the stomach. If stomach acidity is insufficient, it stimulates the acid producing glands of the stomach, and in cases where acidity is too high it has the inverse effect. Lactic acid helps break down proteins and this aids in the assimilation by the body. It also aids the assimilation of iron. The decomposition in the stomach of the organic forms of iron depends on the quantity of hydrochloric acid present as well as the amount of vitamin C, which is why sauerkraut and other lacto-fermented vegetables rich in this vitamin have such flavorable influence...Lactic acid activates the secretions of the pancreas, which is particularly important for diabetics...Sauerkraut contains large quantities of choline, a substance the lowers blood pressure and regulates the passage of nutrients into the blood...Choline has another interesting property in that it aids the body in the metabolism of fats. If choline is lacking, fats accumulate in the liver...Sauerkraut also contains acetylcholine which has a powerful effect on the parasympathetic nervous system. It helps reduce blood pressure, slows down the rate of heartbeat, and promotes calmness and sleep. As acetylcholine is destroyed by cooking, raw sauerkraut and it's juice is preferable to cooked. Acetylcholine also has a beneficial effect on the peristaltic movements of the intestine.
I love sauerkraut on my burgers, hot dogs, and other sandwiches. It is really simple to make.

Sauerkraut

1 medium cabbage, cored and shredded
1 tablespoon caraway seeds
1 tablespoon sea salt
4 tablespoons whey (if not available use and additional 1 tablespoon salt)

In a bowl, mix cabbage with caraway seed, sea salt and whey. Pound with a wodden pounder or a meat hammer for about 10 minutes to release juices.

Place in quart-sized jar and press down firmly with a pounder or meat hammer until juices come to the top of the cabbage.

Cover tightly and keep at room temperature for about 3 days before transferring to cold storage.

Makes 1 quart

"Rye" Bread

I am a big fan of bread. But most of the time the bread we eat isn't really that good for us. I found this recipe from Elana's Pantry. It turn out so good. I love making it for hamburgers. You can use this bread for and sandwich. Flax seeds have a lot of benefits for you too.
The flax seed carries one of the biggest nutrient payloads on the planet. And while it’s not technically a grain, it has a similar vitamin and mineral profile to grains, while the amount of fiber, antioxidants, and Omega-3 fatty acids in flax leaves grains in the dust. Additionally, flax seed is very low in carbohydrates, making it ideal for people who limit their intake of starches and sugars. And its combination of healthy fat and high fiber content make it a great food for weight loss and maintenance -- many dieters have found that flax seed has been a key to keeping them feeling satisfied.

"Rye" Bread

1 cup blanched almond flour
¾ cup flax meal
½ teaspoon sea salt
½ teaspoon baking soda
¾ teaspoon cream of tartar
3 eggs
2 tablespoons olive oil
¼ cup water
1 teaspoon honey
1-2 tablespoons caraway seeds

In a large bowl almond flour, flax, salt, baking soda and cream of tartar

God will always reward our faithfulness to His commands. He is a great rewarder of those who obey Him. The way of the darkness may seem like a short-cut to health, wealth, and happiness, but it will only lead to heart break and disappointment. Follow the way of Light and you will be blessed.

The average expenditure on cleaning products and other housekeeping supplies in the United States is $647 per year, based on the Consumer Expenditure Survey from 2007 to 2008 by the Bureau of Labor Statistics. So I thought that I could make my own cleaners for a fraction of that price. Plus homemade cleaners are less toxic. Something I care about when my 2 years old touches everything, then puts his fingers in his mouth. I found this recipe from another site. I used this all around the house. On my cabinets, on my smooth top stove, on my dinning table. It works great!

All Purpose Cleaner

For a 32 ounce spray bottle
4 tablespoons vinegar
2 teaspoons borax
1/4 cup liquid dish soap
15 drops of essential oils, optional

Mix vinegar with the borax. Put it in the spray bottle

Fill the bottle up with hot water. Let the borax dissolve.

Add the soap and the essential oils.

I ordered me some more coconut flour so now I can make a lot more goodies! My first to make where these banana muffins. Which my 2 year old loves. They are so moist! And if you have gluten problems these are perfect for you. These will be gone by the end of today!

Banana Muffins

3 eggs
2 tablespoons butter, melted
2 tablespoons raw milk
3 tablespoons raw honey
1/4 teaspoon salt
1/2 teaspoon vanilla
1/2 cup coconut flour
1/2 teaspoon baking powder
1 ripe banana, mashed up

Preheat Oven 400

Blend together eggs, butter, milk, honey, and vanilla.

Add flour, salt, and baking powder. Stir until all the lumps are gone.

Fold banana into mixture.

Pour batter into muffin cups, filling about three quarters full.

Bake at 400 for 15 minutes.

Mine made about 8. Yours may make a little less.

I haven't cooked anything good lately so I thought I would tell you about one of the products that I use. Coconut flour.
Coconut flour is fiber from the coconut meat after most of the oil has been extracted. It is high in dietary fiber and protein, and it is gluten-free. It has more fiber than gluten-based grains. Coconut flour contains over 19% non-gluten protein. Coconut flour is naturally sweet so you don't have to use as much sweetener.
I use it all the time for muffins, breads, and cakes. I would recommend this if you are wanting to eat healthier or if you are wanting to stay away from grains.

Slow-Cooked Cabbage and Meatballs

Since ancient times, cabbage has been a source of vitamin C. Cabbage is a good source of fiber as well as of carotenoids, B complex, vitamin C , potassium, magnesium and calcium. Cabbage is rich in substances that block the formation and spread of tumors. Folk medicine values the cabbage for the stomach; Irish girls traditionally drank cabbage water for the complexion. Recent research has shown the juice of cabbage to be highly therapeutic for ulcers.
My husband and I love cabbage. And as you know now cabbage has so many health benefits for your body. So I try to make cabbage pretty often. I found this recipe from Mark's Daily Apple.
I love cooking with my slow cooker. It makes the house smell like wonderful food all day. I can just get up in the morning and throw a few things together and go about my day and know that a wonderful meal will be ready for me by dinner time and I get to use my canned tomatoes from the garden.

Slow-Cooked Cabbage and Meatballs

1 large head of cabbage
1 lb. ground beef
1/2 lb. spicy sausage
1/2 cup minced onions
1 teaspoon caraway seeds
1 teaspoon ground coriander
1 tablespoon garlic powder
2 16 oz. can tomatoes, including juice
3 tablespoons apple cider vinegar
1 carrot, unpeeled and ends chopped off*
salt and pepper to taste

Cut cabbage into large chunks. Place half of the cabbage on the bottom of the crock pot.

In a large bowl mix the meats, onion, caraway seeds, ground coriander, garlic powder, and salt and pepper.

Using your hands tightly roll the meat into meatballs. Place on top of cabbage and cover with remaining cabbage.

In a food processor place the tomatoes(with juice) and vinegar in and pulse a few times so that the tomatoes are broken down and not pureed.

Place the mixture over the cabbage and add the carrot. Cook on low for 6-8 hours.

*Due to the acidic nature of this recipe, most stuffed cabbage recipes call for sweeteners to be added. However, a carrot will actually soak up the acidic flavor without adding any sugar. Just be sure to discard it before serving.

Blueberry Muffins

I got this recipe from Nourishing Traditions. It is a wonderful cook book that contains so much information on how to nourish your body. I think everyone should have a copy of this cook book!
These muffins use soaked flour. If you are wondering why soaked flour, then I will tell you what Nourishing Traditions has to say about it.
"Housewives of old knew that the most delicious pancakes, muffins and cakes could be make by soaking flour in sour or cultured milk, buttermilk or cream.........Because they are acidic, buttermilk, cultured milk, yoghurt and whey (as well as lemon juice and vinegar) activate the enzyme phytase, which works to break down phytic acid in the bran of grains. Sour milk products also provide lactic acid and lactobacilli that help break down complex starches, irritating tannins and difficult-to-digest proteins. Soaking increases vitamin content and makes all the nutrients in grains more available."
These muffins do taste delicious! But I am a big fan of muffins.

Blueberry Muffins

3 cups spelt, kamut, or whole wheat flour
2 cups buttermilk, kefir, or yogurt
2 eggs, lightly beaten
1 teaspoon sea salt
1/4 cup maple syrup
2 teaspoons baking soda
1 teaspoon vanilla extract
3 tablespoons melted butter
1 cup blueberries, fresh or frozen*

Soak flour in buttermilk, kefir, or yogurt in a warm place for 12 to 24 hours-muffins will rise better if soaked for 24 hours. (Those with milk allergies may use 2 cups filtered water plus 2 tablespoons whey, lemon juice, or vinegar in place of undiluted buttermilk, kefir, or yogurt.)

Preheat oven 325. Blend in remaining ingredients.

Pour into well-buttered muffin tins, filling about three quarters full.

Bake at 325 for about 1 hour or until a toothpick comes out clean.

* To prevent blueberries from falling to the bottom of the muffins, do not mix into batter but place 5-7 blueberries on top of the batter in each muffin tin.

Note: I used yogurt because that is what I had, but buttermilk or kefir would work just as good. Also my muffins were done after 35 minutes so I would start checking them around that time.
