Ingredients:
tilapia fillet (with skin preferably, or any fish you want)
flour seasoned with salt and pepper (1/2 cup flour with 1/4 tsp each of salt and pepper and some cayenne powder is a good way to start)
ginger root, minced
onion, minced
balsamic vinegar
soy sauce ( I used kikkoman)
red pepper flakes (optional)
salt and pepper to taste
honey
extra virgin olive oil (EVOO)

Directions
First, heat some EVOO in a frying pan (about 2 tablespoons) on medium high heat; while waiting for that, pat-dry fish fillet with paper towels and dredge fillet in flour. Gently lay each fillet on the frying pan and cook for about 3-4 minutes on each side.
Set aside cooked tilapia on a platter and on the same pan, add some oil if there’s none left from frying, about a tablespoon. Saute minced onion and ginger until onion becomes transparent.
Add about 1/4 cup balsamic vinegar, lower heat a little and let it cook for a minute (to get rid of vinegar-y taste) before adding in some soy sauce, about the same amount as the vinegar, add some water.
Season with salt and pepper to taste and let boil then lower heat to simmer and cook until the mixture has almost evaporated then and add enough water to your liking; add a little if you want a stronger or concentrated glaze, simmer for about a minute..
Add about a teaspoon of honey and simmer for about half a minute to finish the dish and pour glaze over the cooked tilapia. Sprinkle sliced spring onions for garnish.

I'll assume you don't grow sweet onions in your garden, but if you do, please use them. There are many people who do not like to put salsa in the refrigeratory because they feel that tomatos lose some texture and therefore flavor. I am in the middle on it. I like my salsa chilled, but then like for us to finish it in one sitting. We also like to add a little bit of light beer to this mixture but it is totally optional. If you do, I always like a really light Mexican beer. About a quarter of a cup is enough, as it adds just a little extra flavor.

Recipes

2 C roma tomatos, diced

1 small sweet onion, chopped

1/4 C fresh cilantro, chopped

2 jalapeno peppers, seeded and diced

1 T fresh lime juice

1 clove minced garlic

Salt to taste

Procedure

Combine all ingredients and mix thoroughly. You can chill for a short time in the refrigerator or cover with a cloth and let sit for an hour or so.

Serve with chips, rice, or surprisingly even with crostini. Of course Pico de gallo is awesome with many of your Mexican recipes.

Without doubt, the
best-known is going to be the prodigious paella ... that tasty,
adaptable, gregarious dish famed throughout Spain and the World.

And, what an impressive choice of recipes exist for a pleasurable
paella: seafood, chicken, rabbit ... or a mixture of all three!
Perhaps you are non-meat eating ... well, just opt for one of the
several vegetarian paella recipes. Bit of a health fanatic?
Then substitute white rice for whole-grain rice or wild rice.

Got a large family and not much money to feed them on? Use
plenty of rice and imagination along with a tasty stock, plus
whatever you can find in the cupboard! I have certainly enjoyed
many paellas where there have been more bones/shells than meat/
seafood! And, very tasty they have been too, the richness of
the company more than compensating for any paucity in the
ingrediants.

So ... how do you go about making the perfect paella? First of
all, you need to choose your rice. The short-grained rice from
Valencia - where most Spanish rice originates - is fine for
making paellas. However, the "bomba" rice grown in the
neighboring region of Murcia, is the "king" of paella rice: again,
short-grained, it has the ability to absorb the stock whilst
remaining firm.

Another "must" is to use saffron ("azafrán") to create the gentle,
yellow color for which this delectable dish is renowned. Yes, it
is possible to buy cheaper, artificial colorings but ... go for
the traditional - it will bestow a wonderful aroma and unique
flavor.

Many Spaniards swear a perfect paella can only be achieved when
using a tasty, home-made stock. Whatever you decide, allow at
least double the amount of liquid to rice. If, during cooking,
the dish becomes a little dry, just add a dash more water or
stock.

Another tip I have been told, on more than one occasion, is to
gently fry the rice for a few minutes before adding the stock,
ensuring that it is well-coated in oil. I think all Spaniards
would agree that, once cooked, it is best to leave your paella to
stand for a good five minutes before serving.

Perhaps the most important ingrediant for making that perfect
paella, is to use lashings and lashings of love whilst preparing
it - for surely, that is something we can all afford - and to
enjoy to the full the marvellous company of those who will share
it with you.

I shall now have to choose a paella recipe to offer you as an
example! I think I will opt for a seafood paella, typical of the
region of Valencia, where I live. The ingrediants are for a
hearty four servings. If you are not a hefty eater, or on a diet,
then reduce the amount of rice/stock slightly.

Paella Valenciana - Paella From Valencia

- 3 strands saffron, crumbled.
Dice the onion and the green and red bell peppers. Set aside.

2. Trim the stems from the okra pods, then cut the pods crosswise into slices 1/2 inch thick.

3. In a large, heavy soup pot over medium heat, warm 2 tablespoons of the canola oil. Add the okra and sauté, stirring occasionally, until golden brown and softened, about 15 minutes. Transfer to a bowl and set aside.

4. In the same pot over medium heat, warm the remaining 6 tablespoons oil for 2 minutes.

5. Whisk in the flour until incorporated. Cook the mixture, or roux, stirring constantly with a wooden spoon, until dark brown, about 4 minutes. Do not let the roux turn black.

6. Add the onion and bell peppers and cook, stirring occasionally, until softened, 8 to 10 minutes. Add the garlic and cook for 1 minute more.

7. Add the reserved okra, the tomatoes with their juices, stock, bay leaves, Creole seasoning, salt and pepper. Increase the heat to medium-high and bring to a boil. Reduce the heat to medium-low and simmer for 30 minutes to blend the flavors.

8. Stir in the sausage, shrimp and crabmeat and cook until the sausage is heated through and the shrimp are pink, 3 minutes more.

9. Sprinkle in the filé powder and stir for 30 seconds. Remove from the heat and discard the bay leaves.

10. To serve, spoon white rice into warmed bowls, ladle the gumbo on top and garnish with the parsley.

Chicken Diablo

Recipes

    * 1/2 cup hot pepper sauce
    * 1 cup reduced fat sour cream
    * 1/2 cup ketchup
    * 1/4 cup honey
    * 1/4 teaspoon paprika
    * 1/4 teaspoon cumin
    * 8 skinless, boneless chicken breast halves
    * 1/4 cup vegetable oil
    * 2 cloves garlic, minced

Directions

   1. In a medium bowl, mix together the hot pepper sauce, sour cream, ketchup and honey until smooth. Season with paprika and cumin. Set aside half of the sauce for serving later, then place chicken breasts in the remaining sauce to marinate. Cover and refrigerate for at least 2 hours.
   2. Heat vegetable oil in a large skillet over medium heat. Add garlic and cook until fragrant. Place chicken breasts coated with marinade into the skillet, and cook until nicely browned on each side, and meat is cooked through, about 20 minutes.
   3. Meanwhile, heat reserved marinade in a small saucepan or in the microwave. Serve chicken breasts over white rice, or over salad greens with sauce spooned over the top.
It doesn't take an accomplished chef to make them, just a little ingenuity. Sometimes a short cut is a cooks best friend. Begin by gathering the following:

Recipes
2 lbs ground beef
4 1/2 cups of water separated 3 cups and 1 1/2 cups
2 boxes of cornbread stuffing
3 packages of instant gravy mix
1/2 medium onion chopped
Edged cooking sheet
Large skillet
Mashed Potatoes:
8 medium thin skinned potatoes
3 quarts of water
4 quart pot
1 stick of margarine or butter
Milk for thinning
These ingredients are going to help you please your families hunger and impress them at the same time.
Begin by mixing the ground beef, water, onion and cornbread stuffing together. This is best done by hand. Once these ingredients are mixed well, begin forming your patties. You want these to be at least an inch thick and shaped into a rectangle. The best size is 2 1/2" wide by 3 1/2" long by 1" thick. This mixture should make no less than 6 steaks. Place them on the edged cooking sheet and bake at 350 for at least 30 minutes.
After the Salisbury steaks are finished in the oven, remove the baking sheet and place each steak in the gravy. Allow these to simmer for about 20 minutes turning them over to coat both sides of the steaks with the thickening gravy.
While the Salisbury steaks are baking, pour the 3 cups of water in the large skillet and empty the 3 packages of instant gravy mix into the water. Mix thoroughly until most of the powder is dissolved. Heat on medium low heat while the Salisbury steaks are baking. After mixing the gravy mix and water, pour 3 quarts of water in a 4 quart pot. Remove the skins from the potatoes and cut them into uniform pieces. This can be bite size pieces or whatever size you prefer. They are all going to be mashed. The uniform pieces allows all of the potatoes to cook evenly and at the same rate. Turn on the burner to high and allow to boil until they are fork tender.
When the potatoes are finished, drain and place them back in the pot they cooked in. Turn your burner on low and allow all water to steam out of the potatoes. Place 1 stick of margarine or butter in the potatoes and mash with either a hand masher or a mixer. Add milk to thin to the desired consistency.
Add any other vegetables you would like with the Salisbury steak and potatoes or you may add some mixed veggies or corn on the side and your dinner is ready.

Asparagus Crab Omelet
