Grand Met's Celebrity Chef for the Day at Cowboys Stadium

The Cowboys Stadium Celebrity Chef Program began last season, and its goal is to give the fans a unique chef experience while promoting local talent and their restaurants in the DFW area.

The Celebrity Chef Committee discussed who the top chefs and restaurants are in the city and who would be good representatives of the program to fill the 16 coveted spots available.

We are so proud of Grand Met restaurant's Chef de Cuisine, Heather Sinese, who was among the chosen group. She and her team worked hard in preparing for their "Celebrity Chef of the the Day" experience at the November 6 match-up between the Dallas Cowboys and Seattle Seahawks.

Serving over 200 guests in the Silver Club, Heather and her team presented Berkshire ham pulled pork sliders, jicama slaw and sweet potato chips.

Heather was also featured in the Dallas Cowboys Star magazine and was interviewed live during the game, appearing on the stadium's massive HDTV video board.

Special thanks to Cowboys Stadium, Legends Hospitality Management Team and of course our game day culinary team from the Grand Met restaurant. They certainly made us proud!

MOKA - 24-HOUR COFFEE CAFÉ

Located directly off of the lobby, the first outlet you'll find is Moka, our 24-hour coffee café. Once attached to the end of the M Lounge bar, the newly re-conceptualized space has its own walk-up counter featuring beautiful glass display cases of the tempting grab-n-go options.

INSIDE GRAND HYATT DFW: Renovation Series - Artwork

Hard to miss, easy to appreciate - I'm referring to the 1,300 pieces of new artwork adorning the walls of our newly enhanced hotel.

Brought to the project by Dallas design firm Seifert Murphy, Richard Bettinger has shared with us his style of Decompressionism™ in unique, light-based images.

I'll let Richard explain Decompressionism™:

"By using a finely crafted combination of camera movement, shutter speed and lens manipulation, I am able to take a subject away from being real, or compressed, into something having the appearance of being decompressed and set free. This way I have recorded movement with my still camera, making my subject appear as if it were echoing itself or being followed by its own history revealing a delightful ambiguity."

This style can also be described as "the capture of light reflecting off of objects." For example, one of the stunning pieces on our ballroom level, entitled "Bronze Flow", is actually light reflecting off of bronze statues. See a time-lapse video of the installation of this piece below.

Bettinger also created a few pieces especially for the hotel using unique and unusual views of aircraft and flight related objects. A good example of this can be seen in our guestrooms, each containing four pieces of art.

There are a lot of exciting happenings occurring at the Grand Hyatt DFW. We can see the finish line in our $13 million renovation, and leading us to it is our new General Manager, Lance Marrin. Read an excerpt from the official press release to learn more about Lance.

"Marrin brings more than 24 years of senior management experience in the hospitality industry to Grand Hyatt DFW. He began his career with Hyatt in 1987 and has held various management and executive positions throughout his career.

“I’m honored to join an award-winning hotel with a worldwide reputation for excellence,” says Marrin, who officially stepped into the position on Aug. 5, in the middle of the hotel’s $13M renovation. “I look forward to carrying the hotel’s renovation vision to completion.”

Marrin’s results-driven management style has proven successful for a number of high-profile properties. As rooms director, Marrin played a key role in opening the 1,100 room Hyatt Regency in Denver. He also assisted in the opening of the Hyatt Regency in Trinidad and the Grand Hyatt in San Antonio.

“Lance will step into the Grand Hyatt without skipping a beat,” says Marc Ellin, senior VP of field operations, Hyatt Hotels Corporation. “We are excited to have him lead the management of the hotel and continue to deliver the highest level of service our international and business travelers expect from the Grand Hyatt DFW,” Ellin adds."

We are pleased to announce the appointment of a new director of food and beverage, Matthew Brink. Please see an excerpt from the press release to learn more about Matthew.

“Matthew has excelled with Hyatt for many years, and we’re excited to welcome him to our exclusive property in Dallas. The food and beverage director has a highly visible role, and we are confident in his ability to provide excellent service and meaningful experiences to our guests,” says recently appointed General Manager, Lance Marrin.

Brink has worked in the food industry since 1989 and has been with the Hyatt hotel group since 1995. He has held positions at the Grand Hyatt Kauai Resort and Spa in Koloa, Hawaii; the Hyatt Regency Lake Tahoe Resort; the Hyatt Westlake Plaza in California; and most recently, the Hyatt Regency in Long Beach, California.

The new hire is well timed with the recently announced renovation of the M Lounge and Moka dining areas, which will include a dedicated sushi bar and 24-hour coffee bar serving illy® Café beverages, pastries, quiches, hearty sandwiches, gourmet desserts and gluten-free options.

GIVING BACK: Hyatts of Dallas Partner with GroundWork Dallas

In celebration of the launch of Hyatt Thrive, Hyatt's new global corporate responsibility platform, Hyatt Regency Dallas, Hyatt Regency DFW and Grand Hyatt DFW will partner with GroundWork Dallas this Thursday for a community clean-up event, benefiting the Dallas Trinity River Corridor Project.

This volunteer day is part of Hyatt's first global volunteer initiative, which brings Hyatt associates from all around the world together in a common effort to make an impact and help the communities, in which they call home, thrive.

With 120 associates from three Metroplex Hyatt hotels and volunteers from GroundWork Dallas, we will be helping to improve the ecosystems along the Trinity River by collecting debris.

Along with all the great amenities that will be available to residents once the project is complete, this area will also feature two eco-classrooms to be utilized by nearby Williams Preparatory School.

I'll be utilizing my (self-proclaimed) photography skills to bring you all a behind-the-scenes look at the day, so stay tuned for that update!

Drum Roll Please: Grand Hyatt DFW Announces Renovation

I know, I know. This hotel opened in 2005, and it is only the middle of 2011. How can this already fabulous hotel already be undergoing a renovation? Well, whether or not you can believe it, it's happening.

Maybe you already read about it from Barbara DeLollis, here. But just in case you haven't, here's an overview of all the exciting enhancements to come during this $13 million, four-month renovation commencing on May 15, 2011.

New Guestroom Landing

New in-room features include:

Upscale, residential ambiance with touches of granite, wood and leather
Sleek, minimalist bedding which eliminates the use of decorative pillows and bedspreads
High-end art pieces by Dallas-based photo artist Richard Bettinger, who invented and trademarked the De-Compressionism style. His art will also be displayed in all the hotel’s public areas, including the meeting space.
Dedicated recycling sorting bins
Energy saving features: Window shade system that automatically opens upon entrance and closes upon exiting; In-room lighting that is a combination of LED and compact fluorescent bulbs, which also automatically turn off once the room is unoccupied.
Convenient bed-side touchscreen panels that control A/C, lighting and window shades

Don't worry though. We realize the word "renovation" can cause concern for some people, but we want you to know that we are going to make this process as seamless as possible with virtually no disruption to our guests. Trust me, we know you're really going to love it!
I think our General Manager, Andrew Davidson, puts it best. “From a design aesthetic, we really want our guests to feel like they are walking into their own home that could be anywhere in the world,” explains Davidson. Morgan Spurlock's new documentary "POM Wonderful Presents: The Greatest Movie Ever Sold" hits theaters in Dallas tomorrow, April 29th. We had the pleasure of attending an advance screening this past Monday, and I'm pleased to report that it is LOL funny. If nothing else, this movie is hilarious.

Hyatt was one of the three main sponsors, along with JetBlue and obviously - POM Wonderful. Here's a video explaining how and why Hyatt decided to get involved in this potentially risky venture. Enjoy!

TRAVEL TIPS: Construction North of DFW Airport Entrance

If you live in the metroplex, chances are that you've noticed the construction around the north entrance of the airport. It's all part of the DFW Connector Project; projected for completion in 2014. But for those of you who are new to or just visiting the area, below is some helpful information for navigating the construction zone.

The takeaway for travelers using the north entrance? DFW Airport would like you to remember: "Leave early. Fly happy." They even created a fun video to illustrate that point.

Just wanted to pass along a link to a web site we discovered via a tweet from @thetripchicks today.

The web site is OneBag.com. It is a comprehensive look at the art of traveling light. As the author, Doug Dyment, describes in the "About OneBag.com" section of the site, the information is not geared toward any type of traveler in particular, but many people will find the information helpful in packing for their next trip. I'm all for making traveling easier. How about you?

The biggest annual sporting event in the United States is quickly approaching (33 days from the creation of this post, to be exact).

Don't make me say it (and for trademark/copyright reasons, I CAN'T say it). You know what I'm referring to, right? If you are not from the U.S., or just really don't know what I am referring to, click here.

Just so we are clear, this "Super Event" (I think that is okay to say), will be referred to as "The Big Game!" in this post. The Dallas/Ft. Worth metroplex has been preparing for this day since the announcement of the host city selection on May 22, 2007.

GIVING BACK: Susan G. Komen Race Update

After overcoming the traffic and parking obstacles, Race Day was a success.

Our team was decked out in pink and ready to run!

One of our HR managers, Jessica, had the honor of sounding the starting horn for the race.

And (drum roll, please). . . From our bake sale and race fundraising,

the Grand Hyatt DFW proudly donated $2,896 to this worthy cause!

THANK YOU to all our associates, families and friends that participated and donated!

I don't know how we are going to top this next year, but it will be fun trying!

GIVING BACK: Grand Hyatt DFW Assisting with Wishes

We had the opportunity recently to work with two great organizations that grant wishes to children with life-threatening diseases.

Due to our hotel's location inside Dallas/Ft. Worth International Airport, it provides easy access for the families coming and going from their trips.

a Wish with Wings has worked specifically with children from Texas since 1982. They contacted us for accommodations for Jeramy and his family prior to his Wish Trip to Hawaii to visit Pearl Harbor. A little bit about Jeramy, courtesy of a Wish with Wings:

"We received a Wish request from a very special 18 year-old boy named Jeramy who is being treated at Children’s Medical Center of Dallas. When we met with Jeramy to learn what his one special Wish would be, he shared he would like to go to Hawaii to see Pearl Harbor. He is a big history buff and really into anything military. His dad is a retired military man. Unfortunately, due to Jeramy’s medical condition he is not able to follow in his father’s footsteps and join the military.

In December 2009, at the age of 17, JeramyJeramy started chemotherapy treatments that month. In March 2010, he underwent a stem cell transplant. His dad, retired Navy veteran, Pat, was his donor. In May 2010, Jeramy was able to go back home just long enough to attend his Elton High School graduation where he graduated with honors."

Since 1997, Kids Wish Network has been making dreams come true for thousands of children all over the country. The charity started out with the single purpose of granting wishes to children suffering with life-threatening conditions.

A similar request for accommodations for the beginning and end of a Wish Trip was received from Kids Wish Network. This one is for Spencer, a 12-year old, from Oklahoma. Here is a little bit about Spencer, courtesy of Kids Wish Network:

"Spencer is a bright 12-year-old who loves to smile. He’s talkative and friendly with a wonderful attitude. Spencer enjoys playing guitar and piano, and he’s also quite good at math. When he’s not playing games on his game systems or computers, Spencer likes to watch baseball, basketball or golf on TV.

In 2008, Spencer was diagnosed with Vascular Ehlers-Danlos Syndrome, which is a disease of the vascular tissues that causes his blood vessels and his organs to become more prone to tearing. In addition, Spencer also suffers from Bilateral Hip Dysplasia and has suffered through reconstructive hip surgery for this condition. After the surgery, Spencer was in a full body cast for 6 weeks and had to endure yet another surgery to remove the rods, screws and plates in his femurs. Spencer bruises very easily because of his condition, he must visit his doctors frequently and will most likely have to have his hips replaced in the future.

For his wish, Spencer just wants to relax away from the hustle and bustle of everyday life by taking a cruise. Get out your sunscreen, Spencer, because you’re about to hop on board!"

You hold in your hands the opportunity to make a big difference in this child’s life."

Hats off to all those families that endure similar situations. We applaud your courage, drive and love for your children.

On October 16, 2010, I will join thousands of others playing a part in the annual Komen Dallas Race for the Cure^®. It’s a 5k run/walk event to raise money for breast cancer.

As you know, the month of October is Breast Cancer Awareness Month. Last month we did a Bake Sale for Breast Cancer Awareness and raised over $800 for the Dallas County affiliate of Susan G. Komen!

It was such a hit with our associates that we will be doing the bake sale again on October 1; hoping to surpass last year's donation. But for the first time, this year we are also raising money via donations for our Race team, made up of the Grand Hyatt DFW's Diversity Council members.

Our goal is to raise $1,000.00. As of today, we are at 25% of our goal, and there are 22 days until the race.

2011 CHANGES: DFW International Airport - Grand Hyatt DFW's Home

The Grand Hyatt DFW opened its doors for business on July 1, 2005 as part of the new International Terminal D at the Dallas/Ft Worth International Airport. We are proud to be a part of the DFW Airport family and look forward to the exciting new changes, beginning in 2011, that we think travelers will appreciate. But before we get into what the future holds, I thought it would be fun to see just how far the airport has come since January 1974.

If you've flown through this airport recently, you've seen the sign that states "DFW Airport is larger than the island of Manhattan". Don't believe it? DFW’s acreage is 18,076.297 (or 29.8 square miles), while Manhattan Island is 22.7 square miles in area. See more fun facts below!

DFW AIRPORT FUN FACTS (excerpts taken from 2004 DFW Airport press release):

From DFW, a traveler can reach all major cities and 95% of the U.S. population within 4 hours or less.
The following airports combined can fit within the confines of DFW Airport: LAX, ORD, and MIA.
1989- Space shuttle Atlantis is piggybacked into DFW on May 16, making it the first landing by a space shuttle at a commercial airport.
The Airport has protected more than 60 acres of existing watershed on its property and constructed 15 acres of new wetlands.
The fossilized bones of a marine reptile, or plesiosaur, were found during the preliminary excavation of the Airport. They are now on display in the Airport’s Central Utilities Plant. (See photo below).

INSIDE GRAND HYATT DFW: skySPA & FITNESS CENTER

A closer look at the day-to-day operations of the Grand Hyatt DFW hotel.

The Grand Hyatt DFW is a AAA 4-Diamond hotel that just happens to be integrated into an airport terminal. This is not your typical airport property. Evident from the moment you enter the lobby, the Grand Hyatt DFW provides an escape from the stress and exhaustion of travel.

Today I thought I’d give you a closer look at one of the Grand Hyatt DFW's more relaxation inducing outlets - skySPA. Aptly named because of its location on the 9th floor of the hotel, skySPA is part of the rooftop fitness center.

skySPA's spa coordinator, Ann, has been a registered, practicing massage therapist for five years. When asked to describe the benefits of massage, she said, "Massage is therapeutic for the mind, body and soul. It helps with muscle tone, detoxification and stress relief." Who couldn't use all of the above?!

Ann says that skySPA's menu was designed with the weary business traveler in mind. "A relaxing spa service allows decompression for relaxation after a long day of traveling. Working on sore or tired muscles can help revitalize and restore the body to help maintain good health," she added.

skySPA offers massages, body wraps, and facials. Ann notes that 80% of our spa patrons requests massage services. Our most popular massage treatment is the Deep Tissue Massage. Available in 50 and 80 minute sessions, this relaxation massage incorporates firmer pressure and precise massage techniques to allow tight, overstressed muscles to relax.

WHAT WE WANT YOU TO KNOW ABOUT skySPA/FITNESS CENTER:

1. OUR STAFF: skySPA is a small but mighty operation. We have 2 treatment rooms and services are by appointment only; however, every effort is made to accommodate a walk-in spa guest. Ann is at the spa desk Monday-Friday during daytime hours, and we have an expertly trained and certified on-call staff consisting of 2 estheticians and 5 massage therapists. "We accept appointments 7-days a week, and we are not limited to regular business hours," Ann said. "For example, if you have a late arrival and want to have a spa treatment before retiring to your room, we can accommodate."

2. THE PROCESS: When a guest arrives to the spa for his or her appointment, the therapist does a short consultation to confirm the requested treatment. The guest is then escorted to the appropriate locker room, where he or she can change into a robe and slippers. Standard for every massage treatment session is the use of a heated treatment table, warm neck and eye wrap, cleansing foot scrub, aroma therapy, and hot towels. Lotion, massage oil, or a combination of the two, is used during the massage treatment. The brand we use is SoothingTouch®, and it is hypo-allergenic and scent free.

After the treatment, the guest is free to use the fitness center amenities that include showers, steam rooms, outdoor saline pool and fitness equipment, featuring: weight machines, free weights, balance balls, yoga mats and brand new Lifecycle® treadmills & stationary bikes (equipped with TVs and i-Pod® adapters that will play and charge your device at the same time).

3. PURE DECADENCE: No guilt allowed; you deserve to be pampered every once and a while! As mentioned above, our most popular services are the massage treatments. But the truth of the matter is, the body treatments are the real superstars! If I could incorporate “smell-o-vision” into this post, I wouldn’t have to type any further.

Cranberry, Mango, Coconut Lime, Chocolate . . . I’m talking about the most heavenly, fresh scents you can imagine (the chocolate products, one of our most popular, literally smell like dessert). 5. NOT A GUEST? DAY PASSES AVAILABLE: When interviewing Ann for this blog post, I was surprised to hear about how many day passes are utilized at this hotel. For $30 (plus tax), a traveler has complete access to all of the fitness center's amenities. Ann said that this offering is especially popular with international business travelers. Grand Hyatt DFW Celebrates Earth Day

Today marks the 40th Anniversary of Earth Day. It began in 1970 and was founded by U.S. Senator, Gaylord Nelson. In Earth Day ceremonies at the University of Wisconsin, Senator Nelson declared:

"Our goal is an environment of decency, quality, and mutual respect for all other human creatures and for all living creatures. . .The battle to restore a proper relationship between man and his environment, between man and other living creatures will require a long, sustained, political, moral, ethical, and financial commitment- -far beyond any effort made before."

If anything, since 1970, people seem to be even more environmentally aware. More people subscribe to the practice of recycling at home and they are more conscious about the products they purchase. As a result, we have seen a small shift from manufacturers touting things such as packaging made from post consumer materials. I think the main thing to take away from that is that consumers control it all! We have a say, and we make those choices every time we make a purchase.

In honor of Earth Day, our associates were asked to share their Green Tips with the rest of the hotel. We hope to educate our staff on all the options they have in helping to sustain the earth and its resources. As a hotel, we also try to make a difference by making small changes that add up to a big impact.

Low Flow Showerheads - Our showerheads use 2.8 gallons per minute and slash bathing water consumption by 50-70% over regular showerheads.
Energy Management System (EMS) - Our AC automatically shuts off when the guestroom in not checked in. It is triggered by motion in the room.
Replace Toilet Flapper Annually - Flappers can disintegrate over time, and that causes the toilet to run and use excess water. We replace flappers every year to help conserve water.
Fluorescent Light Bulbs - Compact fluorescent light bulbs are used throughout the hotel. These bulbs use less energy and have a longer life.
Curtains - It is the housekeeping standard to maintain curtains 95% closed in vacant rooms to prevent sunlight from coming in and warming up the room.
Natura Water Filtration System - Engineered in America, Natura's patented three-step purification system is set up in our restaurant, Grand Met. We also utilize this system in our employee cafeteria where we encourage employees to skip the water bottles, and bring refillable water bottles.
Recycling - Recycling bins for paper, plastic and cardboard can be found throughout the Grand Hyatt DFW, including meeting rooms, back of the house spaces, offices and the employee cafeteria.
Vendors - We strive to do business with other companies that maintain the highest standards in green initiatives.
